中文摘要:为比较华南鲤、尖鳍鲤、三角鲤和须鲫等的营养价值,采集并测定华南地区6个鲤亚科鱼类种群的氨基酸质量分数。结果表明,6个群体的总氨基酸(TAA)、必需氨基酸(EAA)、半必需氨基酸(SEAA)和鲜味氨基酸(DAA)的质量分数最高都是须鲫,分别是15.88%、6.31%、1.50%和6.07%;根据CS和AAS评分,6个种群的第一限制氨基酸都为缬氨酸(Val),赖氨酸(Lys)的质量分数较高,其ASS都大于1.50。必需氨基酸指数(EAAI)中,6个群体得分都在74以上,依次为海南鲤(77.77)>须鲫(77.52)>榕江鲤(76.70)>珠江鲤(75.27)>尖鳍鲤(74.75)>三角鲤(74.66)。可以认为须鲫是一种优质的蛋白质来源,在所测定的6个鲤亚科鱼类种群中,须鲫综合营养价值最高,具有养殖推广的潜力。 |

Amino Acid Analysis of Six Kinds of Genus Cyprininae Fish Populations in Southern China |

Abstract:In order to analyze the nutritional value of various genus Cyprininae fish populations in Southern China,the contents of amino acids in six kinds of genus Cyprininae fish populations in Southern China were measured. The results showed that contents of total amino acid (TAA),essential amino acid (EAA),semi-essential amino acid (SEAA) and delicious amino acid (DAA) in Carassioides cantonensis Heincke were the highest,ratios of them were 15.88%,6.31%,1.50% and 6.07% respectively. At the same time,contents of DAA in Carassioides cantonensis Heincke were consistent with those in Hainan population (carp). Based on the chemical score (CS) and the amino acid score (AAS),the first limited amino acid was valine (Val) and there was a high content of lysine (Lys),scores in ASS were above 1.50. As for the essential amino acid index (EAAI),the scores of the six kinds of fish populations were all above 74,the scores were Hainan population (carp) (77.77) > Carassioides cantonensis Heincke (77.52) > Rongjiang population (carp) (76.70) > Pearl River population (carp) (75.27) > Cyprinus acutidorsalis Wang (74.75) > Cyprinus multitaeniata (74.66). It could be considered that the Carassioides cantonensis Heincke was a good source of protein. Based on the the above multiple nutritional indexes ,the nutritional value of Carassioides cantonensis Heincke was the highest and therefore it was most potential for extension. |
