The response time to cimaterol (CIM), a beta-adrenergic agonist, by broiler chickens for carcass characteristics, muscle composition, muscle fiber size, catheptic enzyme activity, and tenderness was determined. Two trials were conducted in which chickens were fed a control diet (CON) containing 0 ppm of CIM or a diet containing 1 ppm of CIM. Trial 1 consisted of 55, 31-d-old broiler chickens individually fed for up to 48 h. At 0, 6, 12, 18, 24, and 48 h, five CON and five CIM-fed chickens were killed. Trial 2 consisted of 160, 33-d-old broiler chickens group-fed for up to 14 d. At 2, 4, 6, 8, 10, 12, and 14 d, 10 CON and 10 CIM-fed chickens were killed. The breast muscle (BM) and leg muscle (LM) weight, cathepsin B and L activities, DNA, RNA, and protein concentration, and BM shear force value (SFV) were measured in both trials. Thigh muscle (TM) SFV were measured in Trial 2 only. Fiber size of BM was measured (five birds per treatment) at d 2, 6, 10, and 14. In Trial 1, BM weight and SFV were lower in CIM-fed birds at 6 h (P less than .05). In Trial 2 BM SFV were higher at d 8 (P = .06) and d 10 (P less than .05) in CIM-fed chickens. Muscle protein turnover and tenderness in broiler chickens fed cimaterol   总被引:3,自引:0,他引:3  
To investigate the impact of cimaterol (CIM) on muscle protein turnover, carcass and muscle composition, muscle cathepsin B + L activity and meat tenderness, 21-d-old broiler chickens (n = 88) were assigned to dietary treatments of either 0 or 1 ppm CIM. Fractional synthesis rates (FSR), fractional accretion rates (FAR), proximate composition and collagen content were determined in the breast muscle (BM); pectoralis major) and a group of leg muscles (LM; gastrocnemius and peroneous longus) from groups of six birds per treatment within each of two time periods (age = 38 or 56 d). Whole body composition, serum hydroxyproline content and BM cathepsin B + L activity also were measured. Fractional degradation rates (FDR) were calculated as the difference between FSR and FAR. Feeding CIM increased (P less than .01) whole body protein content. Weights of LM and percentage of body weight as BM and LM were increased (P less than .05) when CIM was included in the diet. Although FSR was not significantly reduced by CIM feeding it decreased (P less than .05) with increasing age. Due to decreases in FAR, FDR thereby was reduced by CIM 31.5% and 11.9% in BM and 38.2% and 37.4% in LM at 38 d and 56 d of age, respectively. Cathepsin B + L activities also were reduced 33.6% (P less than .01) and shear forces were increased by 41% (P less than .05) by CIM feeding. For chickens fed CIM, the correlation between cathepsin B + L activity and shear force was -.63 (P less than .01). Feeding CIM improved carcass leanness and muscling due to reductions in FDR and proteolytic enzyme activity. Feeding CIM also reduced meat tenderness.  相似文献

Angus x Hereford steers (n = 48) similar in frame size and in muscle thickness were allotted to eight groups (n = 6) of similar mean live weight for serial slaughter at 28-d intervals (0 to 196 d). Except for d-0 steers, which served as grass-fed controls, all steers were fed a high-concentrate diet during the finishing period. Upon slaughter, one side of each carcass was trimmed of subcutaneous fat in the wholesale rib region. Postmortem longissimus muscle (LM) temperature was monitored for each side during the 24-h chilling period. After quality and yield grade data were collected, rib steaks were removed and aged (7 d) and sensory traits of the steaks were evaluated. Most carcass grade traits increased linearly (P less than .01) with days on feed, whereas most sensory panel variables and marbling increased curvilinearly (P less than .05). Generally, after 56 d on feed, carcasses chilled at slower rates (P less than .05) with increased days fed. Taste panel tenderness, amount of perceived connective tissue, and shear force values peaked at 112 d and were slightly less desirable for cattle fed longer than 112 d (quadratic term, P less than .01). Postmortem muscle temperature at 2.5 h was the chilling time most highly correlated with tenderness values among untrimmed sides. Correlations for shear force with 2.5-h LM temperature, marbling score, days fed, fat thickness, and carcass weight were -.63, -.61, -.56, -.55, and -.53, respectively.(ABSTRACT TRUNCATED AT 250 WORDS)  相似文献

The effect of age and sex on live performance, processing yields, and footpad quality of broiler chickens was evaluated by rearing 2 commercial strain-crosses (SC) to 56 d of age on 2 diets varying in nutrient density. Each strain cross was placed in 10 replicate pens of 50 birds (25 males and 25 females per pen). Equally distributed among the replicate pens were high- and low-density starter (0 to 21 d) and grower (22 to 42 d) diets with a common finisher fed from 43 to 56 d to all birds. Body weights, adjusted feed conversion, and mortality were determined at 21, 42, and 56 d of age. Processing yields, foot weights, and yields, and the incidence and severity of footpad dermatitis were evaluated on d 35, 42, 49, and 56.No differences (P > 0.05) were seen in mortality between the SC and diet density treatments throughout the course of the study. Strain-cross had a significant effect on body weights at d 21 and feed conversion at d 42, but no differences remained at d 56. Significant SC effects were present for carcass without giblets at d 35, 42, and 56. Diet density effects were limited to carcass without giblets at d 35 and abdominal fat content at d 56. As expected, females had higher abdominal fat yields than males at all ages examined.Foot weight and yields were significantly affected (P < 0.05) by SC and sex at d 42, 49, and 56. As expected, foot weights increased with age. The proportion of birds with footpad dermatitis tended to increase until 49 d of age after which they started to decline. Male broilers had significantly higher incidence of footpad dermatitis than female broilers at d 49 and 56. Footpad dermatitis response to diet density and pigmentation of the feet was dependent on SC.  相似文献

Because of the increasing demand for raw cuts and processed products, there is a trend to producing very heavy broilers. Breeds that are used for such kinds of production have been intensively selected for growth rate and breast meat yield, and birds are reared for a longer period than standard broilers. This study was to evaluate the effects of increasing slaughter age on technical and economic factors, including production efficiency and environmental costs, bird welfare, and breast meat quality in a modern heavy broiler line. Five groups of 300 male Ross 708 chickens were reared until slaughter ages of 35, 42, 49, 56, or 63 d. Increasing age at slaughter from 35 to 63 d resulted in a 7.4-fold increase (P < 0.01) in mortality rate (5.21 vs. 0.70%). It also increased (P < 0.001) the slaughter weight and ADFI of birds 2.5- and 1.4-fold, respectively, without affecting their G:F. Under our experimental conditions, economic profit evaluated through the net gain reached a maximum at 42 d. The moisture and ammonium content of litter increased (P < 0.05 and P < 0.01, respectively) rapidly during rearing concomitantly with increased (P < 0.05) occurrence and severity of contact dermatitis and decreased (P < 0.05) walking ability and activity of birds. Thermal comfort also decreased (P < 0.05) greatly as early as 42 d of age. Changes in carcass quality occurred mainly between 35 and 56 d of age, with a progressive increase (P < 0.001) in breast and leg yield, whereas body fatness was barely affected by age. Major changes in breast meat traits were observed between 35 and 49 d of age, with an increase in muscle pH at 15 min (P < 0.01) and 24 h (P < 0.001) postmortem and reduced (P < 0.001) lightness and drip loss. The protein and lipid content of raw breast meat also increased (P < 0.05 and P < 0.01, respectively) with age. Taking into account the main aspects of sustainability, we could recommend slaughtering chickens of heavy line at 42 d of age.  相似文献

Fourteen fall-born lambs were used to determine the effects of diet before and after weaning on intake, growth, serum hormones, and metabolite profiles. Before weaning, lambs were intensively sampled for 6 h at 35 and 42 d of age. Before sample collection, lambs were allowed to suckle, and milk intake was recorded. At 42 d of age, lambs were weaned and randomly allotted to ad libitum access to either alfalfa or grass hay. Blood samples were collected at 49 and 56 d of age for 6 h. Milk intake did not differ (P greater than .10) between groups. After weaning, lambs fed alfalfa hay consumed more (P less than .05) hay and had greater (P less than .05) ADG than lambs fed grass hay. Postweaning diet had no effect (P greater than .10) on serum insulin, growth hormone (GH), insulin:GH ratio, prolactin, cortisol, glucose, or nonesterified fatty acids (NE-FA) concentrations. Lambs consuming alfalfa had higher (P less than .05) serum urea nitrogen (SUN) at 49 and 56 d of age than lambs consuming grass. At 35 and 42 d of age, (P less than .05) serum insulin and insulin:GH ratio were higher (P less than .05) after milk intake than at 49 and 56 d of age after hay intake. Serum GH was higher (P less than .05) in lambs at 35 and 42 d of age for 2 h postfeeding, but by h 3 through 5, lambs consuming milk had lower (P less than .05) values than lambs consuming hay.(ABSTRACT TRUNCATED AT 250 WORDS)  相似文献

为探究鸡日粮中添加包被肉桂油对肉鸡生长性能、屠宰性能、肌肉品质和肌肉风味的影响,试验选用168只1日龄罗斯308雏鸡,随机分成2个处理组,对照组饲喂基础日粮,试验组在基础日粮中添加300 mg/kg的包被肉桂油。结果显示:与对照组相比,试验组肉鸡活体重没有显著的差异(P>0.05);21日龄胸肌的a^*值和b^*值(P<0.05)和42日龄胸肌和腿肌的24 h pH值(P<0.05)提高,21和42日龄胸肌和腿肌的滴水损失(P<0.05)降低;21日龄胸肌中过氧化氢的含量和42日龄胸肌丙二醛含量(P<0.01)降低;腿肌中的甜味氨基酸(丝氨酸和甘氨酸)(P<0.05)和芳香族氨基酸(酪氨酸和苯丙氨酸)的含量(P<0.01)提高。研究表明:日粮中添加300 mg/kg的包被肉桂油能够改善肉鸡肌肉品质的部分指标,提高胸肌抗氧化力和腿肌风味。  相似文献

1. The influence of dietary conjugated linoleic acid isomer (CLA, 0 and 10 g/kg) on the metabolic and physiological responses to immune stimulation induced by a single injection of Salmonella enteritidis lipopolysaccharide (LPS) or repeated injections of LPS and Sephadex G-50 was determined in male broiler chicks. 2. In experiment 1, 10-d-old chicks were fed on experimental diets for 14 d and half of the birds fed on each diet were injected intraperitoneally with LPS (1.5 mg/kg body weight). In experiment 2,7-d-old chicks were fed on experimental diets for 18 d. Immune stimulation was started at 19 d old and continued for 5 d. Half of the birds fed on each diet were injected intraperitoneally with 0.25 mg/kg body weight of LPS at 19, 21 and 23 d of age, and with 250 mg/kg body weight of Sephadex at 20 and 22 d of age to stimulate the immune system. 3. In experiment 1, giving CLA prevented an increase in blood heterophil to lymphocyte ratio 7 h after a single injection of LPS, and increases in plasma ceruloplasmin and alpha 1 acid glycoprotein (AGP) 24 h after the injection, but not 7 h after the injection. CLA also prevented a decrease in food intake for 24 h after LPS injection. 4. In experiment 2, the CLA diet partially prevented reductions in body weight gain and weight gain to feed intake ratio caused by repeated injections of LPS and Sephadex. Feeding CLA prevented increases in plasma ceruloplasmin and AGP at 24 d of age caused by repeated injections of LPS and Sephadex, but not at 20 d of age. 5. These results suggest that feeding CLA alleviates some undesirable metabolic and physiological changes induced by immunological stimulation in male broiler chicks.  相似文献

本试验旨在探讨日粮添加共轭亚油酸(CLA)对肉仔鸡体组成和肉品品质的影响。240只1日龄肉仔鸡随机分配到4个日粮处理组(0%、0.25%、0.5%和1%CLA),每个处理6个重复,每个重复10只鸡。试验结果表明:42d时,0.5%和1%CLA组肉仔鸡胸肌率显著高于对照组(P<0.05),1%CLA组肉仔鸡42d腿肌率显著高于对照组,肉仔鸡的腹脂率在各处理之间没有显著差异(P>0.05),1%CLA组肉仔鸡胸肌粗蛋白质粗脂肪比显著高于对照组(P<0.05)。0.5%、1%CLA组肉仔鸡胸肌滴水损失和丙二醛(MDA)含量显著降低(P<0.05)。试验结果表明,CLA可改善肉仔鸡屠体性状,增加鸡肉系水力和延长货架存放时间。  相似文献

1. The influence of dietary conjugated linoleic acid (CLA) on the antioxidant status in the absence or presence of endotoxin exposure was studied with male broiler chicks. 2. In experiment 1, a total of 240 1-d-old broilers were allotted into 4 dietary groups (0, 2.5, 5.0 or 10.0 g pure CLA/kg) to study the influence of CLA on growth performance and antioxidant defence systems. The results showed that growth performance was not altered by 42 d of CLA consumption. Increased total superoxide dismutase (TSOD) activities in liver, serum and muscle were observed in chicks given 10.0 g CLA/kg diet. Dietary CLA at 10.0 g/kg also markedly elevated liver catalase (CAT) activity. Malondialdehyde (MDA), a marker of lipid peroxidation, decreased in liver, serum and muscle in chicks given 5.0 and 10.0 g CLA/kg diet. 3. In experiment 2, a total of 120 1-d-old broilers were fed on a control diet (without CLA) or 10.0 g CLA/kg diet. Half of the birds fed on each diet were injected intraperitoneally with 0.25 mg/kg body weight of Salmonella enteritidis lipopolysaccharide (LPS) at 16, 18 and 20 d of age. Decreased glutathione peroxidase (GSH-Px), TSOD activity and increased ceruloplasmin and MDA concentrations were seen in the challenged chicks. Dietary CLA prevented the loss of body weight gain and feed conversion ratio of chicks followed repeated endotoxin exposure. CLA partially inhibited the increase of serum ceruloplasmin and MDA at 17 and 21 d of age and notably suppressed the decrease of serum TSOD activity at 21 d of age. 4. These results suggested that dietary CLA enhances the activity of antioxidant enzymes including TSOD and CAT. Supplementation of CLA has been shown to ameliorate the antioxidant balance and performance of chicks during oxidative stress.  相似文献

1. An experiment was conducted with 98 male and 98 female broiler chickens (Ross 308) to study the effect of growth rate, induced by different dietary means, sex and live weight (1500?g and 2000?g) at slaughter on production parameters, bone strength and sensorial characteristics of the breast meat.

2. The birds were divided into four groups and individually fed a standard commercial diet, a high energy diet or low energy diet from d?11 to slaughter at between d 28 and 39. Three groups were fed ad libitum and a further group was fed a restricted amount of the high energy feed. Half of the birds in each group were slaughtered at approximately 1500?g and the other half at 2000?g live weight.

3. The diets resulted in different growth rates. The chickens fed the high energy and the commercial diet had the highest growth rate at both live weights at slaughter. The restricted fed chickens had lower bone strength than the chickens fed the low energy diet.

4. Breast meat from male broilers was juicer, more tender and less hard than breast meat from females. Chickens slaughtered at 2000?g live weight were juicer than those slaughtered at 1500?g. Chickens given the high energy feed ad libitum and restricted had different growth rates, but the sensory parameter related to texture showed no difference.

5. It was concluded that an increased slaughter weight might improve meat quality due to improved juiciness.  相似文献

Crossbred "heavy" pigs (average weight 120 kg, slaughter weight above 160 kg) were supplemented with all-rac-alpha-tocopheryl acetate during the last 60 d of late finishing at doses of 25 (control), 50, 100, 200, or 300 mg/kg of diet. At the end of this period, the pigs were slaughtered. Carcass characteristics and the meat quality of pork chops from longissimus muscle (LM) at the last lumbar vertebra were evaluated on eight barrows from each dosage group. Alpha-tocopherol levels were determined in plasma during supplementation and in LM muscle after slaughter. Thiobarbituric acid reactive substances (TBARS) and drip loss were also evaluated in meat. Plasma alpha-tocopherol levels increased (P < .005) during supplementation in treated animals compared to controls, with a peak at 40 d. Alpha-tocopherol levels were higher (P < .05) in LM from pigs treated with 300 mg/kg than in controls (8.4 vs 5.6 microg/g). Dressing percentages correlated (P < .05) with the ratio of plasma alpha-tocopherol levels to the sum of cholesterol and triglycerides. Inhibition of TBARS during storage was related (P < .005) to vitamin E supplementation level, but drip losses in chops were not related to supplementation levels. We concluded that dietary vitamin E supplementation to heavy pigs during the last 60 d of finishing improves dressing percentage, reduces lipid oxidation, and increases the alpha-tocopherol concentration of tissues.  相似文献

1. The effects of dried distillers grains with solubles (DDGS) dietary inclusion concentration, and sex, on body weight, slaughter efficiency and meat characteristics of Pekin ducks (Anas platyrhynchos f. domestica, strain P55) were studied.

2. Sexed ducklings (n?=?160) were divided randomly into 4 groups (each with 4 replicates). From d 1 to d 21, all the birds received the same commercial feed, then from 22 to 49 d of age the ducks were fed in the following groups: control (commercial feed) and three experimental groups (15%, 25% and 30% inclusion of DDGS). All ducks were weighed individually at d 1, 21 and 49. On the day of slaughter, 5 males and 5 females, of body weight close to the average weight for group and sex, were selected from each group, slaughtered and the following parameters were evaluated: slaughter yield, weight, and percentage of particular elements of carcase, physical and chemical characteristics of meat.

3. The results obtained showed that DDGS included from 22 to 49 d of rearing, at concentrations up to 30%, in a commercial Pekin duck diet did not affect the live body weight, slaughter yield, weight, and percentage of breast and leg muscle, skin with subcutaneous fat, and abdominal fat. There were no differences in physical characteristics (pH15, pH24, meat colour values L*, a*and b*, and hygroscopicity) of breast muscle, as well as in cholesterol content. DDGS addition at 30% significantly increased fat content in male, and crude protein in female, breast meat. Sex effect was observed only in a few traits and was diet dependent. Final body weight of females fed 30% DDGS was significantly lower than males; in the control and 15% DDGS group females had higher percentage of skin with subcutaneous fat.

4. The results obtained, and relative costs of feeds produced, allows the recommendation of DDGS addition at up to 30% to commercial Pekin duck diets from 22 d of age.  相似文献

Seasonal availability of lamb in the Western United States contributes to a large fluctuation in lamb supply and value. However, alternatives to fall marketing may not be practical unless palatability traits are acceptable. A 3-yr study was conducted to investigate 1) the effects of slaughter age (7 to 8; 10 to 11; or 14 to 15 mo) on carcass and palatability characteristics of wethers fed an 80% barley diet (Exp. 1); and 2) the effects of finishing on range or on an 80% barley diet on carcass and palatability traits of 14- to 15-mo-old wethers (Exp. 2). In Exp. 1, no differences (P = .27) were detected in flavor intensity or longissimus muscle area among slaughter age groups, but fat depth was greater (P < .05) for 7- to 8-mo-old wethers than for 10- to 11- or 14- to 15-mo-old wethers. Year x slaughter age interactions were detected (P < .10) for hot carcass weight, Warner-Bratzler shear value, body wall thickness, and percentage kidney fat. Hot carcass weight was greater (P < .05) for 14- to 15-mo-old wethers than for both groups of younger wethers in yr 1, did not differ (P = .53) among slaughter ages in yr 2, and was greater (P < .05) for 10- to 11- than for 14- to 15-mo-old wethers in yr 3. Warner-Bratzler shear values did not differ (P > .10) among slaughter ages in yr 1 and 3, but shear values for 14- to 15-mo-old wethers were greater (P < .05) than for both younger slaughter age groups in yr 2. Percentage kidney fat was lower (P < .05) for 14- to 15- than for 7- to 8-mo-old wethers in all years. In Exp. 2, flavor intensity of the meat did not differ (P = .35) between finishing systems, but longissimus muscle area was greater (P = .02) for range-finished wethers than for wethers fed an 80% barley diet. Year x finishing treatment interactions were detected (P < .10) for shear values, body wall thickness, percentage kidney fat, and fat depth. Shear values were greater (P = .10) for range-finished wethers than for wethers fed an 80% barley diet in yr 1, but did not differ (P > .55) in yr 2 and 3. Body wall and fat measurements were greater (P < .10) for wethers fed an 80% barley diet than for range-finished wethers in all years except yr 3, when fat depth did not differ (P = .47). Overall, slaughtering wethers fed an 80% barley diet or range-finished wethers at older ages produced acceptable carcasses with desirable meat palatability traits.  相似文献

One hundred forty-four Angus male calves were assigned to one of five slaughter-age groups: 9, 12, 15, 18 and 24 mo of age. After weaning, one-half of the calves within slaughter age were castrated. One-half of the 12-, 15-, 18- and 24-mo age groups of each sex were further randomly allotted to a high-energy (HE) or low-energy (LE) finishing diet. Eight bulls and eight steers assigned to the 9-mo slaughter group were fed the HE diet only. Samples from the longissimus muscle (LM) were taken at the 12th rib for histological evaluations of fat deposits. Thin sections from the LM at the 11th rib were stained for lipid, collagen and elastin. Steaks from the LM were cooked and evaluated by a sensory panel and sheared by a Warner-Bratzler shear (WBS) device. The 9-10-11th rib sections were separated into muscle, fat and bone. Collagen, elastin and collagen solubility were determined chemically. Bulls had heavier carcasses, less fat and lower sensory scores for tenderness and juiciness than steers. Steers fed the HE diet had lower WBS values than bulls on either diet. Cooking losses were higher for bulls at 12, 18 and 24 mo than for steers. Histological evaluation showed that collagen content was higher for bulls than for steers and higher for cattle fed the LE diet than those fed the HE diet. Among cattle on the HE diet, the 9-mo cattle had more collagen than all older groups. Neither sex nor diet had an effect on elastin content shown by histological evaluation, but 12-mo cattle had the most elastin and the 15- and 18-mo cattle had the least elastin. Collagen content determined by chemical analysis was not affected by sex, diet or slaughter age. Correlation coefficients among histologically and chemically evaluated collagen and elastin and meat traits were too low to be of practical importance. The time-intensive histological techniques used in our study provided little additional information over that obtained from visually evaluated or chemically measured meat traits.  相似文献

Ten crossbred (Suffolk X Rambouillet) whether lambs were randomly assigned to receive 0 or 10 ppm cimaterol (CIM) in a completely mixed high-concentrate diet for 8 wk. Total weight gain and feed efficiency were improved 29% (P less than .05) and 14%, respectively, in the CIM-fed group. CIM also improved (P less than .01) dressing percent by 4.9 percentage points and improved yield grade by one grade. CIM increased longissimus muscle (LD) area 38% (P less than .01) and the yield of four lean cuts 28% (P less than .01). No difference was found in the proportion of type I (slow-contracting, oxidative) and type II (fast-contracting, mixed glycolytic/oxidative) fibers in LD and semitendinosus (ST) muscles between control and CIM groups, indicating no change in fiber type. The cross-sectional area of type II fibers in LD and ST muscles of the CIM group was 2,081 and 1,951 micron 2 as compared with 1,391 and 1,296 micron2 of the control group, respectively. The increase was approximately 50% (P less than .01). No difference was found in cross-sectional area of type I fibers, indicating that the increase of muscle mass was due to hypertrophy of type II fibers only. DNA concentration (micrograms/g wet muscle or microgram/g protein) of CIM muscle was much lower (P less than .01) than that of control muscle, suggesting that the protein accretion in muscle was accomplished without additional incorporation of nuclei from satellite cells.  相似文献

Previous studies have shown that supplementation of vitamin D3 to cow diets for 4 to 10 d before slaughter lowers Warner-Bratzler shear force (WBSF) values and increases sensory tenderness scores in beef cuts. The present study was conducted to evaluate the effects of vitamin D3 supplementation on muscle calcium concentration, WBSF values, and sensory tenderness ratings of LM and semitendinosus (ST) muscles from cull, predominately Angus, cows (eight cows per treatment). Treatments included 0 (control), 5 million IU, or 7.5 million IU of vitamin D3 supplemented daily for 7 d preslaughter. Twenty-four hours after slaughter, 2.54-cm-thick LM and ST muscle steaks were cut; aged for either 0, 7, 14, or 21 d (ST steaks aged for 7 d only); and frozen at -20 degrees C for WBFS and sensory analysis. Mean values for LM calcium concentration tended to increase (P = 0.14) with vitamin D3 supplementation (154, 176, and 183 microig/g, fresh basis, for 0, 5, and 7.5 million IU/d, respectively). After 7 d of aging, LM steaks from cows fed 7.5 million IU had lower (P < 0.05) WBSF values than 7-d steaks from controls and cows fed 5.0 million IU/d aged 7 d; however, vitamin D3 supplementation had no (P > 0.05) effect on WBSF values of ST steaks aged 7 d. Vitamin D3 supplementation did not (P > 0.05) affect sensory tenderness ratings for either LM or ST steaks at any aging period. Aging, however, had a linear (P < 0.001) effect on tenderness, with an increase in tenderness as aging time increased from 0 to 21 d. Thus, results from the present study indicate that vitamin D3 supplementation, at these levels and duration before slaughter, provided little benefit to muscle tenderness of beef from cull cows.  相似文献

One hundred fifty crossbred pigs (55 kg) were allotted by weight, sex and litter to a randomized complete-block design with five dietary treatments, six blocks per treatment and five pigs per pen with sex equalized across treatments. Corn-soybean meal-based diets (.65% lysine) with 0, .25 and .5 mg/kg cimaterol were fed, on an ad libitum basis, to pigs slaughtered at an average pen weight of 104 kg/pig. Drug withdrawal prior to slaughter was 1, 3 and 5 d for pigs fed cimaterol at .25 mg/kg and 1 d for those fed cimaterol at .5 mg/kg of diet. Dietary cimaterol level influenced (quadratic, P less than .01) average daily gain during the first 42 d on test; however, daily feed intake and feed conversion ratio were not affected (P greater than .1). Pigs fed .25 mg/kg cimaterol with a 1-d drug withdrawal had 6.8, 7.7 and 13.5% less 10th rib fat depth and 11.1, 6.1 and 13.3% less P2 fat depth than those subjected to either a 3- or 5-d drug withdrawal or those fed the 0 mg/kg cimaterol diet (control), respectively. Overall, pigs fed cimaterol had 7.9% larger longissimus muscle area and 2.6% more kilograms of muscle than pigs fed the control diet. Cimaterol fed at .5 mg/kg resulted in higher (P less than .05) Warner-Bratzler shear force values and altered the proportion of saturation in some long-chain fatty acids, although the total saturated:unsaturated fat ratio was not affected. 1. Sexed broiler-type chicks were raised either under a continuous (CON) 23 h Light (L) and 1 h Dark (D) schedule or an increasing photoperiod (INC) consisting of an initial 6 h L and 18 h D which increased by 4 h L per week from 14 to 35 d of age after which a 23 L:1D was maintained to 49 d of age. 2. From 5 to 11 d of age birds were fed either: ad libitum (AL), energy intake (kJ ME) restricted to 9.414 x gBW0.67 (R1) or energy intake (kJ ME) restricted to 6.276 x gBW0.67 (R2). Food intake was ad libitum at all other times. 3. Food restriction reduced growth to 49 d of age although some compensatory growth did occur. Food efficiency was not significantly affected by restriction. 4. Although abdominal fat pad weight was significantly reduced for R2 compared to AL, this was not significant on a percentage body weight basis. 5. Adipocyte number in the abdominal fat pad was similar for AL, R1 and R2, but concomitant with a smaller fat pad weight, R2 showed reduced adipocyte volume compared to AL. 6. INC birds were lighter at 21 d of age, but body weights were equivalent to CON by 42 d of age. 7. Abdominal fat pad weight was some 10% larger at 49 d of age for INC birds. Adipocyte volume was unaffected, the increase in adipocyte being entirely caused by an increase in adipocyte number in INC birds.  相似文献

1. A total of 336 Hubbard Hi-Y broiler hybrids were fed from d 1-41 on diets based on maize or wheat and barley which were supplemented (or not) with 100 mg/kg plant extract consisting of capsaicin, cinnamaldehyde and carvacrol. 2. Body weight was not enhanced, but feed conversion improved by 4.2% on the maize diet and 2.0% on the wheat and barley diet. 3. Plant extract addition enhanced the breast muscle proportion of empty body weight by 1.2% in comparison to control birds. 4. The apparent ileal digestibility of nutrients (crude protein, fibre and amino acids) was not significantly better in birds fed on supplemented diets than in the control group. 5. Reduction of E. coli, Clostridium perfringens and fungi and increase of Lactobacillus spp. were observed in the 41-d-old chickens from the supplemented groups. 6. An increase in the lipase activity in pancreas and intestine wall was found in older birds fed on the plant extract supplemented diets.  相似文献
