Epidemiological studies suggest that a high consumption of fruits can reduce the risk of some cancers and cardiovascular disease, and this may be attributable to the antioxidant activity of vitamins and phenolic compounds. The present study investigated the variations in vitamin C, total phenolic, hesperidin, and naringin contents, and total antioxidant activity of yuzu (Citrus junos Sieb ex Tanaka)-which is a popular citrus fruit in Korea and Japan-between cultivars and during maturity. The amounts of phenolics and vitamin C and the antioxidant activity in all tested yuzu cultivars were higher in peel than in flesh. Ripening increased the total antioxidant activity and vitamin C content in both peel and flesh of yuzu. However, the amounts of all total phenolics, hesperidin, and naringin in peel increased with ripening, whereas they decreased slightly in flesh. There was a highly linear relationship between the vitamin C content and the total antioxidant activity in both peel (r(2) = 1.000) and flesh (r(2) =0.998), suggesting that vitamin C plays a key role in the antioxidant activity of yuzu. In addition, the contribution of each antioxidant to the total antioxidant activity of yuzu was determined using a 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) radical scavenging assay and is expressed here in terms of the vitamin C equivalent antioxidant capacity (VCEAC). The means of vitamin C, naringin, and hesperidin in yuzu were 90.4, 63.8, and 65.7 mg/100 g fresh yuzu, respectively. The relative VCEAC values of these compounds were in the following order: vitamin C (1.00) > naringin (0.195) > hesperidin (0.162). Therefore, the estimated contribution of each antioxidant to the total antioxidant capacity of 100 g of fresh yuzus is as follows (in mg of VCEAC): vitamin C (90.36 mg) > naringin (12.44 mg) > hesperidin (10.64 mg). Our results indicate that mature yuzu contains higher amounts of vitamin C and phenolics than other citrus fruits and could therefore be used as a significant dietary source of antioxidants.  相似文献

The physicochemical characteristics (pH, total and soluble solids, and titratable acidity), sugars, organic acids, carotenoids, anthocyanins, volatile compounds, and cell wall polysaccharides of a new pineapple hybrid (FLHORAN41 cultivar) were measured throughout maturation and compared with the Smooth Cayenne cv. At full maturity, the FLHORAN41 cv. has a higher titratable acidity and soluble solids content than the Smooth Cayenne cv. The golden yellow flesh and red-orange to scarlet shell of ripe FLHORAN41 cv. fruits are due to carotenoid and anthocyanin levels that are, respectively, 2.5 and 1.5 times higher than those of the flesh and shell of the ripe Smooth Cayenne cv., respectively. During maturation of the FLHORAN41 cv., there was an increase in all classes of aroma compounds (mainly terpene hydrocarbons and esters), although their relative proportions were similar in both cultivars at full maturity. The present study investigated the influence of a hot water dip (HWD) for 2 min at 50 degrees C, a standard and effective treatment for postharvest decay control of citrus fruit, on the nutritional and health-related properties of kumquats. The results show that most of the parameters examined, including titratable acidity, soluble solids content, maturity index, glucose, fructose, sucrose, ascorbic acid, dehydroascorbic acid, alpha- and gamma-tocopherols, beta-carotene, zeaxantin, rhoifolin, and antioxidant activity, were not significantly affected by treatment. The levels of beta-cryptoxanthin, narirutin, and total flavonoids increased after HWD, whereas lutein and total phenols decreased. The concentration of the essential oil and the relative percentage of the individual components of the essential oil were not affected by HWD except for the minor compound p-menta-1,5-dien-1-ol, which increased after HWD. After storage, lower levels of glucose, total sugars, beta-carotene, beta-cryptoxanthin and lutein were recorded in HWD fruit. A decrease in antioxidant activity and increases in alpha-tocopherol and total vitamin E were found both in control and HWD fruit. The influence of HWD at 50 degrees C for 2 min on individual nutraceuticals and health-related properties was thus generally low and may depend on storage conditions.  相似文献

比较分析不同品种蓝莓果实品质特性,确定代表性品质指标,建立蓝莓品质综合评价体系,为蓝莓品质合理评价和优良蓝莓品种筛选提供理论参考。以26个高丛蓝莓品种果实为材料,测定其11项品质指标(单果质量、果实横径、果实纵径、果形指数、果实硬度、可溶性固形物质量分数可溶性糖质量分数、可滴定酸质量分数、糖酸比、维生素C质量分数、花色苷质量分数),并采用主成分分析方法进行果实品质综合评价。结果表明:26个蓝莓品种的11项果实品质性状中糖酸比、可滴定酸质量分数、单果质量和花色苷质量分数的变异系数较大,其变异系数分别为33.67%、32.25%、30.84%和28.48%。通过主成分分析确定单果质量、果形指数、可溶性糖质量分数、可滴定酸质量分数、花色苷质量分数和果实硬度可作为评价蓝莓果实品质的代表性指标;建立综合品质评价模型,并依据各品种的综合品质得分进行优良度排序,得分排名前10位的蓝莓品种依次为‘大果蓝金’‘莱格西’‘公爵’‘日出’‘维口’‘蓝片‘早蓝’‘蓝丰’‘爱国者’‘红利’,研究结果为大连地区蓝莓品种合理开发和应用提供了依据。  相似文献

Orange fruits of two blood varieties (Tarocco and Moro) were stored at 8 degrees C and 22 degrees C for 85 and 106 days, respectively, and analyzed periodically for standard quality parameters (total soluble solids, total acidity, ascorbic acid, juice yield, and rind color) and sensory influencing parameters (anthocyanins, and total and free hydroxycinnamic acids). A decrease in total acidity (TA) and juice yield during storage was observed for both cultivars; total soluble solids (TSS) increased only in the Tarocco oranges stored at 8 degrees C. The increase in TSS observed for Tarocco and the simultaneous decrease in TA in both varieties resulted in a higher maturity index (TSS/TA) for the two cultivars. No loss of vitamin C was noted in Tarocco orange at either temperature, whereas a sharp reduction in vitamin C occurred in the first 50 days of storage for Moro. A significant increase in anthocyanin content was observed in Tarocco and Moro stored at 8 degrees C. Overlong storage induces extensive hydrolysis of hydroxycinnamic derivatives to free acids in Moro orange and these, in turn, could develop the malodorous vinylphenols.  相似文献

Antioxidant activity, total phenolic content, anthocyanin content, and six other fruit characters including titratable acid concentration, soluble solids, firmness, and percentage of bruised berries were determined for nine blueberry (Vaccinium L. sp.) cultivars at harvest and at various postharvest intervals after storage at 5 degrees C. Berries from MSU-58, Brigitta, and Legacy stored successfully for 7 weeks, Bluegold stored for 3-5 weeks, Bluecrop, Elliott, and Nelson stored for 3 weeks, and Jersey and Little Giant stored for fewer than 3 weeks. During the time they retained marketable quality, one cultivar (MSU-58) demonstrated a 29% increase in antioxidant activity. None of the cultivars showed a significant decrease from the harvest antioxidant activity value during storage. Antioxidant activity, total phenolic content, and anthocyanin content were strongly correlated with each other (r = 0.87-0.99, P < 0.01). All three parameters were moderately correlated with soluble solids (r = 0.47, P < or =0.05; r = 0.44, P < or = 0.05; and r = 0.64, P < or = 0.01, respectively), and antioxidant activity and total phenolic content were both moderately correlated with pH (r = 0.53 and 0.49, respectively; P < or = 0.05). However, antioxidant activity, total phenolic content, and anthocyanin content showed no correlation with firmness, percent severely bruised berries, or weight loss. Antioxidant activity and total phenolic content at harvest both correlated with titratable acidity at harvest (r = 0.68, P < or = 0.05 and r = 0.70, P < or = 0.05, respectively) on a cultivar mean basis. Berries from Elliott were also harvested from plants at two levels of bush ripeness (30-50% and 60-80% ripe berries on plants) and separated into three fruit maturity classes on the basis of percent blue color. The level of bush ripeness had no significant effect on antioxidant activity, total phenolic content, or anthocyanin content; however, fruit maturity had a significant effect on antioxidant activity, total phenolic content, and anthocyanin content, and bush ripeness x fruit maturity interactions were significant for these three traits. Berries with 50-75% blue coloration harvested from bushes with 60-80% mature fruit showed a significant increase in antioxidant activity, total phenolic content, and anthocyanin content during the first 3 weeks in storage. Our results demonstrate that increases in antioxidant activity, total phenolic content, and anthocyanin content may occur in the blueberry during cold storage and are cultivar-dependent. The increases that occur in immature fruit, such as in Elliott, may be advantageous for producers who wish to delay marketing of the fruit.  相似文献

为科学评价青辣椒品种的鲜切加工适宜性,收集中国主栽青辣椒品种20个,统一种植,在同一成熟度下采收,并对其感官理化指标(L*、a*、b*值、感官评价得分、出品率、果皮硬度、果肉厚度、含水率、糖酸比、可溶性固形物含量、可滴定酸),功能性指标(维生素C含量、总酚含量、DPPH自由基清除能力(DPPH free radical scavenging activity)、铁离子还原能力(Ferric iron reducing antioxidant power)、ABTS自由基清除能力(ABTS radical scavenging activity)、β-胡萝卜素含量进行测定。应用SAS9.2软件对基础数据进行显著性分析;应用相关性、主成分、Varclus变量聚类及因子评价分析对17项指标进行降维处理,筛选核心评价指标;运用层次分析法确定主评价指标权重;运用灰色关联度分析法对20个青辣椒品种的鲜切加工适宜性进行评价。结果表明:显著性分析发现除含水率外,青辣椒的其他指标品种间差异极显著(P0.001),其中b*值、β-胡萝卜素含量及FRAP值的变异系数较大;在所有品种中陇椒5号的维生素C含量在α=0.05水平上显著高于其他品种,京辣2号的β-胡萝卜素含量在α=0.05水平上显著高于其他品种,京研皱皮辣、陇椒5号的抗氧化能力在α=0.05水平上显著高于其他品种。相关性分析发现果皮硬度与感官评价得分呈极显著负相关,相关系数为-0.68,与可溶性固形物含量呈极显著正相关,相关系数为0.72;糖酸比与可滴定酸含量呈极显著负相关,相关系数为-0.81;维生素C含量与FRAP值、ABTS值及总酚含量呈极显著正相关,相关系数分别为0.69、0.73、0.58;果肉厚度与维生素C含量呈显著负相关、与总酚含量呈极显著负相关,相关系数分别为-0.5、-0.6;β-胡萝卜素含量与L*、b*值呈极显著负相关,相关系数分别为-0.63、-0.66。主成分、聚类、因子评价及层次分析确定感官评价得分、维生素C含量、出品率、糖酸比、β-胡萝卜素含量及总酚含量为主要评价因子,权重分别为38.15%、26.55%、18.37%、9.00%、5.00%、2.94%。灰色关联度分析表明针对鲜切加工,微辣的青椒品种中"国福311"和"中椒106"的加工品质较好,中辣青椒品种中"陇椒6号"的加工品质较好,强辣青椒品种中"兴蔬皱皮辣"的加工品质较好。以上研究结果可以为鲜切青辣椒生产加工过程中原料的选择提供科学的数据和方法,同时也可为青辣椒育种如富集功能性成分品种的选育提供指导。  相似文献

The passion fruit hybrid cultivar 'Passion Dream' (PD) produces two cycles of fruiting per year, in the summer and winter. Self-hybridization of PD created various lines, including 'Ripens during Summer' (RS), which lacks the ability to abscise during winter, suggesting a seasonal nonclimacteric behavior. The two lines were characterized by several quality traits: PD produced high ethylene levels in both seasons; RS produced significantly less ethylene during summer and almost none during winter. The ratio of total soluble solids to titratable acidity (TSS/TA), and aroma volatiles production, as determined by solid-phase microextraction/gas chromatograph-mass spectrometer (SPME/GC-MS) techniques, and taste indices were highest in PD summer fruits and lowest in RS winter fruits. Peel color in PD was affected by environmental and storage temperatures, whereas RS fruits always showed a strong purple color. The present findings suggest that ethylene production levels in passion fruit greatly influence various ripening processes, including acid degradation, increased TSS/TA ratio, accumulation of aroma volatiles, and tastiness.  相似文献

Greenhouse-grown tree ripe (TR) and mature green (MG) mangoes (cv. Irwin) were exposed to high electric field treatment before 20 and 30 days of storage at 5 degrees C. MG fruits were allowed to ripen at room temperature after low-temperature storage. Fruit physical quality attributes, ascorbic acid, carotene, quercetin, total phenols, and antioxidant capacity were estimated before and after the storage period. Antioxidant capacity of fruit juice was estimated using the ferric reducing antioxidant power (FRAP) assay. Fruit firmness decreased significantly during storage. Titratable acidity decreased 20 days after storage. Total soluble solids did not change during storage. Antioxidant capacity of fruits remained unchanged up to 20 days of storage period and decreased thereafter. Total phenol and carotenes increased during storage. Antioxidant capacity of fruits was significantly correlated only to ascorbic acids. Peel color and carotenes were higher in TR fruits, whereas titratable acidity and firmness were higher in MG fruits. There was no significant difference in other parameters between the stages of picking. Electric field pretreatment affected the respiration and antioxidant capacity of TR fruits and did not have any significant affect on other parameters. TR mangoes of cv. Irwin are more suitable for low-temperature storage and can be successfully stored for up to 20 days at 5 degrees C without any significant losses in functional properties and quality attributes.  相似文献

The present study was undertaken to investigate the effect of soil contamination with heavy metals on physico-biochemical properties of tomato fruit. The deleterious effect of soil contamination on the quality and quantity of tomato plant yield was determined. Harvested tomato fruit characteristics including fruit length, diameter, volume and fresh and dry weights, total soluble solids, titratable acidity, lycopene and carbohydrates contents were measured in tomato fruits cultivated in soil contaminated with industrial effluents. In addition, some secondary metabolites (total phenols and flavonoids), micro- and macronutrients were also detected. Residual heavy metals (Cd, Co, Ni and Pb) were examined in the harvested fruits. The obtained results were compared with those of tomato fruits cultivated in non-contaminated soil. Results demonstrate that soil contamination with heavy metals have a negative effect on tomato fruits characteristics, titratable acidity, total soluble solids, lycopene, ascorbic acid, micro-elements and carbohydrates content. Moreover, fruits originated from plants grown in contaminated soil possess high phenols and flavonoids contents and higher heavy metals content compared to control fruits. It is recommended that fruits cultivated in that area not to be eaten by large quantities, to avoid excessive accumulation of heavy metals in the human body.

To specify the genotypic variation of Mediterranean Citrus juices, the contents of carotenoids, flavonoids, and vitamin C were determined by high-performance liquid chromatography. A selection of orange varieties and Mandarin species from the Mediterranean area (Citrus sinensis, Citrus deliciosa Ten, and Citrus clementina Hort. ex Tan) was evaluated using carotenoid profiles and flavanones contents. Among the eight varieties of orange (Salustiana, Hamlin, Shamouti, Pera, Valencia, Maltaise, Sanguinelli, and Cara-cara) and two Mandarin species, only three cultivars (Pera, Sanguinelli, and Shamouti) and the two Mandarin species displayed a high content of vitamin A (374, 381, and 272 ER L(-1) for the three orange cultivars and 1156 and 960 retinol equivalent (RE) L(-1) for the Mandarins) due to a high content of beta-cryptoxanthin. These same Citrus were also rich in hesperidin (502, 537, 552, 767, and 754 mg L(-1), respectively). Principal component analysis allowed the Mediterranean orange varieties and Mandarin species to be differentiated on the basis of nutritional criteria. Strong correlations were observed between beta-cryptoxanthin and hesperidin (r = 0.92) and between beta-cryptoxanthin and beta-carotene (r = 0.98). In contrast, vitamin C content was not correlated with carotenoids and flavanone glycosides. The Mandarin and orange group was quite distinct. The orange varieties could be divided in two groups. In addition, a diversity tree allowed a genetic approach to differentiating Citrus cultivars on the basis of Euclidian distances. This representation showed that the hybrid Clementine was nearer to its parent Mandarin than to its parent orange, suggesting that beta-cryptoxanthin was a dominant genetic factor. With regard to vitamin A, Mandarin and its hybrid Clementine appeared to be the best Citrus species.  相似文献

Twenty-seven cultivars of mulberry fruits ( Morus atropurpurea Roxb) were analyzed for their total phenolic content, total anthocyanin content, and peroxyl radical scavenging capacities. The proanthocyanidin contents of the fruit were also quantified using 4-dimethylamino-cinnamaldehyde assay, and characterization was attempted using electrospray ionization mass spectra. The phenolic compounds of mulberry fruits were characterized using HPLC with ESI-MS and diode array detection. Results showed that the content of mulberry fruits varied with different cultivars with total phenolic content, total anthocyanin content, total proanthocyanidin content, and peroxyl radical scavenging capacities ranging from 0.060-0.244, 0.001-0.056, 0.001-0.015, and 0.301-1.728, respectively. Good correlations were observed among the phenolic, anthocyanin, and proanthocyanidin contents and the radical scavenging capacities of mulberry fruits. Mulberry fruits were found to contain low amount of proanthocyanidins. The high total phenolic content of mulberry fruits were mainly contributed by anthocyanins, rutin, and chlorogenic acids. The lipid soluble antioxidants are profiled by an HPLC method developed in-house, and the results of selected mulberry fruits revealed significant amounts of lutein and delta- and gamma-tocopherols but low alpha-tocopherol. Our results provide useful antioxidant nutritional information of a mulberry cultivar that has potential for large scale plantations.  相似文献

A pot experiment was conducted to determine the effects of N application on volatile compounds, taste compounds, and firmness of fresh tomato fruits. Each pot was filled with 8 kg of clean sand. The experiment consisted of six nitrogen (N)‐application rates with 0, 2.25, 4.50, 9.00, 18.00, and 36.00 mmol N L–1 in the nutrient solution. Volatile compounds, soluble sugars, soluble solids, titratable acidity, and firmness of fresh tomato fruits were measured. The results show that increasing N application increased the concentrations of 1‐penten‐3‐one, hexanal, cis‐3‐hexenal, 2‐methyl‐4‐pentenal, trans‐2‐hexenal, 6‐methyl‐5‐hepten‐2‐one, titratable acidity, soluble sugars, and soluble solids. By contrast, increasing N supply decreased the concentration of phenylacetaldehyde and first increased and then decreased the concentrations of 2E–4E‐hexadienal and the firmness of fresh tomato fruits. Close relationships between the concentration of various volatile compounds, titratable acidity, soluble sugars, and soluble solids were found. However, concentrations of these flavor compounds were very poorly correlated with fruit firmness. Based on contributions of these compounds to tomato flavor, we assume that moderate high N supply improves tomato flavor, whereas excessive N supply can deteriorate it.  相似文献

A pot experiment was conducted to determine the effects of potassium (K) application on volatile compounds, taste compounds, and firmness of fresh tomato fruits. Each pot was filled with 8 kg of clean sand. The experiment consisted of six K application rates with 0, 1.25, 2.5, 5.0, 10.0, and 20.0 mmol K L?1 in the nutrient solution. Volatile compounds, soluble sugars, soluble solids, titratable acidity, and firmness of fresh tomato fruits were measured. The results show that the concentrations of 3-methylbutanal, 1-penten-3-one, hexanal, cis-3-hexenal, 2-methyl-4-pentenal, trans-2-hexenal, 2E-4E-hexadienal, 6-methyl-5-hepten-2-one, phenylacetaldehyde, phenylethanol, soluble sugars, and soluble solids tended to increase at first and then decrease between 0 to 10.0 mmol K L?1. K application rate obtaining the highest values of the concentrations ranged from 1.4 to 3.0 mmol K L?1, with the exception of cis-3-hexenal (1.1 mmol K L?1), phenylacetaldehyde (4.5 mmol K L?1), and phenylethanol (4.8 mmol K L?1). By contrast, increasing K supply increased the concentration of titratable acidity, decreased the ratios of soluble sugars to titratable acidity and soluble solids to titratable acidity. Close correlations were observed between the concentrations of various volatile compounds, soluble sugars, and soluble solids. Based on contributions of these compounds to tomato flavor, we assume that moderate K supply (1.4–3.0 mmol K L?1) improves tomato flavor, whereas tomato fruits with either no K or high K fertilization have poor flavor due to having undesirable levels of flavor compounds.  相似文献

The aim of this study was to investigate the effect of cationic proportions (K/Ca/Mg) in the nutrient solution on fruit quality (quality attributes and antioxidant content) using a high-pigment, 'Lunarossa', tomato cultivar and a standard tomato cultivar ('Corfù') grown in soilless culture. Treatments were defined by a factorial combination of three nutrient solutions having different cationic proportions and two indeterminately growing round tomato cultivars. A high proportion of K in the nutrient solution increased the quality attributes (fruit dry matter, total soluble solids content) and the lycopene content of tomato fruit, whereas a high proportion of Ca improved tomato fruit yield and reduced the incidence of blossom-end rot (BER). The highest total antioxidant activity was observed in the treatment with a high proportion of Mg in the Lunarossa cultivar. The high-pigment hybrid has provided a higher antioxidant content (lycopene and alpha-tocopherol content) than the commercial hybrid, but it was more susceptible to BER and consequently less productive.  相似文献

Changes in the volatile composition of strawberries (cv. Cigaline) at six stages of maturity, from 28 to 44 days after anthesis, were investigated over two harvesting seasons. Volatiles were isolated by direct solvent extraction and analyzed by means of GC-FID and GC-MS, with special attention to the quantification of furanones. Firmness, skin color, soluble solids (SS), titratable acidity (TA), SS/TA ratio, organic acids, and sugars were also determined. With increasing maturity, soluble solids, SS/TA ratio, Minolta a value, and levels of sucrose, glucose, fructose, and malic acid increased, whereas Minolta L value, hue angle (), titratable acidity, and levels of citric acid decreased. Furanones and esters were generally not detected before half-red fruits, whereas C(6) compounds were the main compounds in immature fruits. During maturation, levels of these so-called green components decreased drastically, whereas levels of key flavor compounds increased significantly and were closely correlated with skin color development. Maximum volatile production was observed in fully red fruits.  相似文献

The polyphenol contents and antioxidant activities were assessed for 17 Saskatoon berry cultivars grown in Canada in fresh and stored fruits at -20 degrees C for 9 months. The Nelson cultivar was the richest in total polyphenol, anthocyanin, and procyanidin contents (801, 382, and 278 mg/100 g fresh weight, respectively). This cultivar was characterized also by the highest antioxidant potential measured with DPPH and ABTS radicals (2.8 and 5.0 mM/100 g FW, respectively). Cultivar-dependent changes in polyphenol content after freezer storage were observed. In the Lee 2 cultivar, significant increases in anthocyanin and flavonol contents occurred, while in the Lee 3 and Martin cultivars considerable decreases were observed. During the freezer storage, the antioxidant activity remained unchanged except for the Smokey which showed to be the most sensitive cultivar during storage. The Nelson and Lee 2 were the most stable cultivars during storage. The high polyphenol content and antioxidant activity of the Nelson cultivar and its good storage stability would make this cultivar the optimal material for fruit growers and food producers.  相似文献

This study was conducted to investigate the physico-chemical properties and antioxidant activity of five pomegranate fruit (Punica granatum L.) cultivars grown in Iran. Significant differences were found among the pomegranate cultivars for many of the properties studied. Results showed that, in particular, fruit diameter ranged from 63.63 mm (Syah) to 79.29 mm (Rabab), fruit volume from 153.3 cm3 (Syah) to 293.3 cm3 (Rabab), and fruit density from 0.93 g cm?3 (Rabab) to 1.13 g cm?3 (TorshSefeed). Although Syah showed the lowest fruit weight (144.8 g), fruit yield (8.28 ton ha?1), and fruit skin thickness (1.55 mm), Rabab had the highest fruit yield (27.1 ton ha?1) and fruit skin thickness (2.32 mm). Juice volume was found to vary between 61.1 and 67.0 cm3. Percent of aril ranged from 59.64% (Rabab) to 75.3% (Syah) and weight of aril between 108.9 and 199.8 g. Also, results indicated that titratable acidity content varied from 0.39% (Syah) to 1.13% (TorshSefeed). The total soluble solids content varied from 12.67 ?Brix (TorshSefeed) to 15.67 ?Brix (ZardehAnar), pH values from 3.05 to 3.77, Electrical conductivity values from 2.8 to 3.14 dS m?1, and vitamin C content from 59.25 to 69.52 mg 100 g?1. The anthocyanin content was observed to vary between 80.36 (Syah) and 216.97 (ZardehAnar). The antioxidant activity of pomegranate cultivars ranged from 27.24% (Syah) to 84.04% (TorshSefeed). These results demonstrated that the cultivar was the major factor which influences the morpho-pomological and chemical (especially, antioxidant activity) properties of pomegranates.  相似文献

Several experiments of maceration of a sherry wine vinegar with different fruits (orange, lemon, strawberry, grapefruit, and lime) have been carried out. After optimization (only peel, no heating and seven days as maximum time of maceration), parameters such as polyphenolic content, superoxide anion scavenging ability (related to antioxidant activity) and ascorbic acid content were determined in sherry wine vinegars macerated with two amounts of peel and for two maceration times (3 and 7 days). The analysis of variance pointed to a clear relationship (p<0.01) between type of fruit and amount of peel and polyphenolic content. The factor "time" was practically not significant for any polyphenol. Sherry wine vinegars macerated with different fruits exhibited higher superoxide anion scavenger ability, with the maximum values found for the vinegar macerated with lemon peel. The correlation analysis showed that the superoxide anion scavenger ability of the vinegars macerated, and thus their antioxidant activity, was highly correlated (p<0.01) with several polyphenols, especially with naringin, hesperidin, neohesperidin and gentisic acid and not with the ascorbic acid content.  相似文献
