Total arsenic and inorganic arsenic contents were determined in 153 samples of seafood products consumed in the Basque Country (Spain): fish (white fish and blue fish), mollusks, crustaceans, and preserved fish. White fish presented higher levels of total arsenic and lower levels of inorganic arsenic than the blue fish, indicating possible differences in the metabolization of inorganic arsenic. For total arsenic, 66% of the samples exceeded the maximum permitted level by the strictest international legislation in seafood products [1 microg g(-)(1), wet weight (ww)]. The levels of inorganic arsenic were considerably lower than the maximum authorized in New Zealand (2 microg g(-)(1), ww), the only country with legislation for inorganic arsenic in fish and fish products. It is recommended that legislation based on levels of inorganic arsenic should be established.  相似文献

High levels of arsenic are found in the soil and water of the Second Region in Chile as a result of natural causes. Total and inorganic arsenic contents were analyzed in the edible part of 16 agricultural products (roots, stems, leaves, inflorescences, and fruits) grown in this area. The total arsenic contents varied in the range 0.008-0.604 microg g(-1) of wet weight (ww), below the maximum level allowed by Chilean legislation (1 microg(-1) of ww). Inorganic arsenic contents (range = 0.008-0.613 microg(-1) of ww) represented between 28 and 114% of total arsenic. The concentrations of total and inorganic arsenic found in edible roots and leaves were higher than those found in fruit. The highest concentrations were found in a sample of spinach. High quantities of this vegetable would have to be consumed (250 g/day) to reach the Provisional Tolerable Weekly Intake for inorganic arsenic. The vegetable group may make a considerable contribution to the total intake of inorganic arsenic.  相似文献

The arsenic, cadmium, mercury, and lead contents of 95 dietary supplement products were determined using microwave digestion and high-resolution inductively coupled plasma mass spectrometry. Precision and accuracy were demonstrated by element recovery from 17 dietary supplements and replicates of 8 reference materials. The concentration ranges were as follows: arsenic, <5-3770 microg/kg; cadmium, <10-368 microg/kg; mercury, <80-16800 microg/kg; and lead, <20-48600 microg/kg. This study was designed to estimate the dietary intake of arsenic (As), cadmium (Cd), mercury (Hg), and lead (Pb) by the general population of Catalonia, Spain. The concentrations of these elements were determined in food samples randomly acquired in seven cities of Catalonia between June and August 2000. A total of 11 food groups were included in the study. As, Cd, Hg, and Pb levels were measured by ICP-MS and AAS. The dietary intake of these elements was determined by a total diet study. Calculations were carried out on the basis of recent data on the consumption of the selected food items. Trace element intake was estimated for five population groups: children, adolescents, male and female adults, and seniors. The highest dietary intakes of As (223.6 microg/day), Cd (15.7 microg/day), Hg (21.2 microg/day), and Pb (28.4 microg/day) corresponded to male adults. For all analyzed elements, fish and shellfish was the group showing the highest contribution to the respective intakes. In comparison with previous results, a general decrease in As, Cd, Hg, and Pb intake has occurred. The dietary intake of these elements was also compared with the provisional tolerable weekly intake (PTWI). Dietary intakes of As, Cd, Hg, and Pb by the population of Catalonia are currently well below the respective PTWIs.  相似文献

A method has been developed for determination of arsenic in beer. Organic matter is destroyed by the dry-ashing technique, the ash is dissolved in HCl, and hydrides of arsenic are generated by addition of sodium borohydride prior to atomization in a flame-heated quartz cell and atomic absorption spectroscopy measurement. The analytical features of the method are detection limit 0.1 ng/g beer, precision 8%, and recovery 97 +/- 7%. The arsenic contents of different brands from Spain and other European countries were analyzed. In all samples, the arsenic levels found were well below maximum levels allowed in Spanish legislation (100 ng/g). The quantities of arsenic in Spanish beers do not differ from those found in foreign beers. No differences were found between bottled and canned beers, and no correlation exists between metal content and original specific gravity of the beers.  相似文献

The distribution and potential bioaccumulation of dietary arsenic, cadmium, lead, mercury, and selenium in organs and tissues of rainbow trout (Oncorhyncus mykiss Walbaum, 1792), a major aquaculture species, was studied in relation to fish growth over a period of >3 years. Fish were reared under normal farming conditions, that is, fed a standard fish food and exposed to negligible levels of waterborne trace elements. The age-related variations in the content of each trace element in gills, kidney, liver, muscle, and skin were studied through nonparametric regression analysis. A buildup of all elements in all tissues and organs was observed, but due to dilution with growth, the concentrations did not increase, except in a few cases such as cadmium and mercury in liver and kidney. In muscle tissue, the concentrations of mercury, lead, and selenium did not alter significantly with growth, whereas cadmium increased but remained at exceedingly low levels. The concentration of arsenic in muscle tissue peaked at 14 months and then decreased in adult specimens. Arsenic speciation by high-performance liquid chromatography--inductively coupled plasma mass spectrometry revealed that arsenic in muscle was almost exclusively present in the form of nontoxic arsenobetaine. Application of a mercury mass balance model gave predicted concentrations in agreement with measured ones and showed that in farmed rainbow trout the ratio of mercury concentrations in feed and in fish is about 1:1. Therefore, rainbow trout does not approach the limits established for human consumption even when reared with feed at the maximum permitted levels. These findings highlight the low bioaccumulation potential of toxic trace elements such as cadmium, lead, and mercury in rainbow trout following dietary exposure. On the other hand, selenium concentrations in muscle (about 0.2 microg g (-1) of fresh weight) show that rainbow trout may be a good source of this essential element.  相似文献

Inorganic arsenic (iAs) is considered to be a human carcinogen. In this paper, total (As) and iAs contents of 215 food products and drinks (i.e., seafood, fruits and vegetables, meat products, oils and fats, rice and rice products, seasonings, and alcoholic drinks) marketed in Catalonia (Spain) were quantified by inductively coupled plasma-mass spectrometry. The analytical method described was used for different food products, obtaining feasible results without the need to couple LC-ICP-MS for iAs. Daily As and iAs intakes for the average adult Catalan consumer were estimated at 354 and 6.1 μg/day/person, respectively, using consumption data from the Catalan Nutrition Survey (ENCAT). The highest As content was found in seafood, contributing 96% of dietary As intake, whereas rice presented the highest iAs values, corresponding to 67% of dietary iAs intake. As cooking process may affect iAs content, boiled rice was evaluated, showing an iAs reduction (up to 86%) when using higher water volumes (30:1 water/rice ratio) than those used in previous studies. This iAs exposure was slightly below the exposure risk range stated by the European Food Safety Authority (0.3-8 μg/kg of body weight/day), although the possibility of a risk to the population with high rice consumption cannot be excluded.  相似文献

Total and inorganic arsenic contents were analyzed in cooked seafood products consumed in Spain during the period July 1997-June 1998: hake, meagrim, small hake, anchovy, Atlantic horse mackerel, sardine, bivalves, crustaceans, squid, and salted cod. Various cooking treatments were used (grilling, roasting, baking, stewing, boiling, steaming, and microwaving). The results obtained were compared statistically with those found previously in the same products raw, and they showed that after cooking there was a significant increase in the concentration of total arsenic for salted cod and bivalves, and in the concentration of inorganic arsenic for bivalves and squid. The mean content of inorganic arsenic was significantly higher in bivalves than in any other type of seafood. For the Spanish population, the mean intake of total arsenic estimated on the basis of the results obtained in this study is 245 microg/day. The intake of inorganic arsenic (2.3 microg/day) represents 1.7% of the World Health Organization provisional tolerable weekly intake (PTWI), leaving an ample safety margin for this population, which has a very high consumption of seafood.  相似文献

The present study reports the findings of unusual high levels of inorganic arsenic in samples of blue mussels (Mytilus edulis L.). A total of 175 pooled samples of blue mussels from various locations along the Norwegian coastline were analyzed for their content of total arsenic and inorganic arsenic. Total arsenic was determined using inductively coupled plasma mass spectrometry (ICPMS) following microwave-assisted acidic digestion of the samples. Inorganic arsenic was determined using an anion-exchange HPLC-ICPMS method following microwave-assisted alkaline solubilization of the samples. For the majority of the samples (78%) the concentration of total arsenic was below 3 mg kg(-1) wet weight (ww) and inorganic arsenic constituted <9% of the total arsenic (i.e., <0.25 mg kg(-1) ww). However, in some samples higher concentrations of total arsenic were found (up to 13.8 mg kg(-1) ww) and the inorganic arsenic content constituted up to 42% of the total arsenic (up to 5.8 mg kg(-1) ww). These are among the highest inorganic arsenic concentrations reported so far for marine animals. The findings of samples with concentrations of inorganic arsenic above 0.53 mg kg(-1) ww were restricted to sampling sites from two counties, Sogn and Fjordane and Hordaland, whereas samples from the rest of the country showed lower inorganic arsenic concentrations. Consumption of a meal containing 200 g of the blue mussels with the highest content of inorganic arsenic would for a 70 kg person lead to a 10% excess of the provisional tolerable weekly intake (PTWI) value for inorganic arsenic of 15 microg kg(-1) of body weight week(-1).  相似文献

Arsenic is present in rice grain mainly as inorganic arsenic. Little is known about the effect of cooking on inorganic arsenic content in rice and its bioavailability. This study evaluated total arsenic and inorganic arsenic in rice cooked with arsenic-contaminated water, the bioaccessibility of As(III) and As(V) after simulated gastrointestinal digestion, and the extent of arsenic retention and transport by Caco-2 cells used as a model of intestinal epithelia. After cooking, inorganic arsenic contents increase significantly. After simulated gastrointestinal digestion, the bioaccessibility of inorganic arsenic reached 63-99%; As(V) was the main species found. In Caco-2 cells, arsenic retention, transport, and total uptake (retention + transport) varied between 0.6 and 6.4, 3.3 and 11.4, and 3.9 and 17.8%, respectively. These results show that in arsenic endemic areas with subsistence rice diets, the contribution of inorganic arsenic from cooked rice should be considered in assessments of arsenic health risk.  相似文献

The daily intake of arsenic (As), cadmium (Cd), mercury (Hg), and lead (Pb) through the consumption of 14 edible marine species by the general population of Catalonia, Spain, was estimated. Health risks derived from this intake were also assessed. In March-April 2005, samples of sardine, tuna, anchovy, mackerel, swordfish, salmon, hake, red mullet, sole, cuttlefish, squid, clam, mussel, and shrimp were randomly acquired in six cities of Catalonia. Concentrations of As, Cd, Hg, and Pb were determined by ICP-MS. On the basis of recent fish and seafood consumption data, the daily intake of these elements was calculated for eight age/sex groups of the population. The highest As concentrations were found in red mullet, 16.6 microg/g of fresh weight, whereas clam and mussel (0.14 and 0.13 microg/g of fresh weight, respectively) were the species with the highest Cd levels. In turn, swordfish (1.93 microg/g of fresh weight) and mussel and salmon (0.15 and 0.10 microg/g of fresh weight) showed the highest concentrations of Hg and Pb, respectively. The highest metal intake through fish and seafood consumption corresponded to As (217.7 microg/day), Cd (1.34 microg/day), and Pb (2.48 microg/day) for male seniors, whereas that of Hg was observed in male adults (9.89 microg/day). The daily intake through fish and seafood consumption of these elements was compared with the provisional tolerable weekly intakes (PTWI). The intakes of As, Cd, Pb, and total Hg by the population of Catalonia were below the respective PTWI values. However, the estimated intake of methylmercury for boys, 1.96 microg/kg/week, was over the PTWI.  相似文献

The effects of cooking processes commonly used by the population of Catalonia (Spain) on total arsenic (As), cadmium (Cd), mercury (Hg), and lead (Pb) concentrations in various foodstuffs were investigated. All food samples were randomly acquired in local markets, big supermarkets, and grocery stores of Reus (Catalonia). Foods included fish (sardine, hake, and tuna), meat (veal steak, loin of pork, breast and thigh of chicken, and steak and rib of lamb), string bean, potato, rice, and olive oil. For each food item, two composite samples were prepared for metal analyses, whose levels in raw and cooked (fried, grilled, roasted, and boiled) samples were determined by inductively coupled plasma-mass spectrometry (ICP-MS). The highest concentrations of As, Hg, and Pb (raw and cooked samples) were mainly found in fish, with a clear tendency, in general, to increase metal concentrations after cooking. However, in these samples, Cd levels were very close to their detection limit. In turn, the concentrations of metals in raw and cooked meat samples were detected in all samples (As) or only in a very few samples (Cd, Hg, and Pb). A similar finding corresponded to string beans, rice, and olive oil, while in potatoes, Hg could not be detected and Pb only was detected in the raw samples. In summary, the results of the present study show that, in general terms, the cooking process is only of a very limited value as a means of reducing metal concentrations. This hypothetical reduction depends upon cooking conditions (time, temperature, and medium of cooking).  相似文献

The Spaniard legislation sets up maximum levels for total arsenic (As) and copper (Cu) in confectionery products at 0.1 and 5.0 microg g(-)(1), respectively. Concentrations of these two trace elements were determined in four confectionery products: chewing gum, two licorice items, and soft candy. The effects of raw materials quality and production lines were studied. Arsenic and copper were quantified by atomic absorption spectrometry with hydride generation and slotted-tube atom trap tubes, respectively. Their levels were, in general, below the maximum limits establish by the Spaniard legislation; however, the As concentration in the licorice sticks was above this maximum limit (0.11 +/- 0.01 microg g(-)(1)). Statistics proved that quality of raw materials and the production lines both significantly affected As and Cu concentrations in the final products. The licorice extract and molasses were found as the common source for As and Cu pollution. The As concentration in the licorice extract was 0.503 +/- 0.01 microg g(-)(1), and could represent a serious hazard to human health if it is used in high proportions.  相似文献

A total of 162 fish and shellfish samples representing important species have been collected from different coastal areas of Bahrain in the Arabian Gulf, and analyzed for lead, cadmium, mercury, and arsenic using electrothermal atomic absorption spectrophotometric method. The dverall mean levels for Pb, Cd, Hg and As in fish samples were 0.132, 0.032, 0.084 and 1.7 µg g?1 wet weight, respectively, whereas for shellfish they were 0.149, 0.045, 0.042 and 3.61 µg g?1 wet weight. These values indicate higher levels of metals in shellfish when compared with fish, except for mercury, and reveal that generally the levels of metals in these organisms are lower than existing guidelines, except for arsenic. The provisional tolerable weekly intake of Pb, Cd, Hg and As through fish was estimated to be 0.7, 0.17, 0.45 and 9 µg kg?1 bodyweight per week, respectively. Our results did not reveal a clear pattern regarding variations of metals concentration between areas and species.  相似文献

Spanish legislation sets a maximum level for total arsenic (As) in confectionery products at 0.1 microg g(-)(1). The U.S. Food and Drug Administration limitations for glycyrrhizic acid in hard and soft candies are 160 and 31 mg g(-)(1), respectively. Arsenic and glycyrrhizic acid were determined in 22 different confectionery products: 9 throat pearls, 4 hard candies, and 9 soft candies. Arsenic and glycyrrhizic acid were quantified by atomic absorption spectrometry with hydride generation and high-performance liquid chromatography, respectively. Levels of glycyrrhizic acid were always below the maximum limits established by the U.S. FDA; however, the As concentration in seven of nine throat pearls (0.55 +/- 0.15 microg g(-)(1)) were above the Spanish maximum limit. A clear empirical relationship between the arsenic and glycyrrhizic acid concentrations was observed (R (2) = 0.9357), implying that to avoid high levels of potentially toxic arsenic in licorice confections high-quality licorice extract should be used.  相似文献

Concentrations of PCBs, PCDDs, and PCDFs, heavy metals (Cu, Cd, Zn, Pb, and Hg), and arsenic have been determined in a great variety of food samples purchased in different markets across the city of Huelva, located in southwestern Spain and under strong industrial activity. All samples analyzed presented concentrations below the maximum allowed by the European Community regarding PCDD/Fs, with the exception of samples within the meat group. An estimation of the daily intake resulted in 1.15 pg of WHO(PCDD/Fs)-TEQ/kg of body weight/day for a 70 kg person and 2.63 pg of WHO-TEQ/kg of body weight/day when PCBs were included, therefore accounting for a similar or even higher percentage than PCDD/Fs and showing the importance of their inclusion in monitoring studies. Meat and meat products, together with vegetable oils and dairy products, were the major food groups contributing to the estimated daily intake. For heavy metals and arsenic, the concentrations found were under the value proposed by European regulations, and estimated daily intakes were well below those proposed by the WHO for all metals investigated. PAHs have been analyzed in food samples from marine origin, values ranging from 8.22 to 71.4 ng/g of fresh weight. Pyrene was the most abundant compound, accounting for >80% in the samples investigated. The most carcinogenic PAHs, such as benzo[a]pyrene and dibenz[a,h]anthracene, were in all cases below the limits of detection. Therefore, the samples analyzed in this survey can be considered as safe with regard to the levels obtained and the in-force legislation.  相似文献

为明确我国湖北、广东、河南和黑龙江四省市售淡水鱼肌肉中重金属含量现状,本研究于2021年9月至10月在四省11个市县(区)采集11种淡水鱼,共计133份样本,采用微波消解-电感耦合等离子体质谱(ICP-MS)法检测淡水鱼肌肉中铬(Cr)、铜(Cu)、砷(As)、镉(Cd)、汞(Hg)和铅(Pb)6种元素含量,依据《GB 2762-2017食品安全国家标准食品中污染物限量》对重金属污染状况进行评价。结果表明,所测样品中Cr、Cu、Cd、Hg和Pb 5种重金属元素均未超标;淡水鲈鱼和乌鳢中As含量均大于0.1 mg·kg-1,其含量分别为0.182~0.738 mg·kg-1和0.180~0.628 mg·kg-1,且较其他淡水鱼类具有蓄积显著性差异(P<0.05)。对总砷含量高于0.1 mg·kg-1的样品,进一步采用液相色谱-原子荧光光谱(LC-AFS)法对其无机砷含量进行检测,结果均为未检出,表明其无机砷含量在总砷含量中占比非常低。采用单因子污染指数法和内梅罗综合污染指数法评价所检淡水鱼中6...  相似文献

Arsenic levels were determined in seventy three samples of well water, and in fifty samples of soil, forage and cow's milk collected at the most important dairy farms of the Comarca Lagunera located in Coahuila and Durango, Mexico, region naturally rich in As. The total inorganic arsenic concentration in well water ranged from 7 to 740 μg L-1 and about ninety percent of the total arsenic was found as As(V). The agricultural soil texture of the sampled area was sandy clay loam type with total arsenic levels up to 30 μg g-1, however, the extractable arsenic was not higher than 12% of the total and it was higher in the 0–30 cm depth horizon. In alfalfa, the most important crop, the total aresenic ranged from 0.24 to 3.16 μg g-1, with 40% of it accumulated at the root level. Significant correlations (p=0.05) were obtained between arsenic (III), (V) and total inorganic arsenic in groundwater with arsenic in soil (0–30 cm depth), and with arsenic in alfalfa (leaves and roots). It was also found a good correlation between extractable arsenic in soil with As concentrations in alfalfa (roots). Arsenic concentrations found in milk ranged from <0.9 to 27.4 ng g-1. The cow's milk biotransfer factor for arsenic was up to 6 × 10-4, applying a pharmacokinetic approach. It was associated with the exposure not only to food but also to water arsenic.  相似文献

Total and inorganic As contents of cooked vegetables obtained from an arsenic endemic area of Chile were analyzed. Inorganic As intake from those foods, bread, and water was estimated. The study was performed in two different periods, in which the water used by the population for drinking and cooking purposes contained 0.572 (first period) or 0.041 microg mL(-)(1) (second period). In the first period, the FAO/WHO reference intake was exceeded by all of the persons interviewed. In the second period, the reference intake was exceeded by all of the persons interviewed ages 13-15. The foods studied contributed 4% (first period) or 25% (second period) of the inorganic As intake. The results show the contribution of food to inorganic As intake and the risk to which those ages 15 or younger are exposed.  相似文献
