Abstract

The relationship among seed number, fruit weight, and calcium content in four apple cultivars (Annurca Tradizionale, Annurca Rossa del Sud, Red Delicious, and Golden Delicious) were investigated. In all cultivars, seed number affected the fruit shape. The percentage of misshapen fruits was higher when the seed number was low. A positive relationship was found between seed number and fruit weight (cv. Annurca Tradizionale, Annurca Rossa del Sud, and Golden Delicious), and between seed number and fruit calcium (cv. Golden Delicious and Red Delicious). In cv. Annurca Rossa del Sud, Red Delicious, and Golden Delicious, a significant relationship was noted between seed number and flesh firmness, while a correlation between seed number and pulp acidity was found only for the two Annurca cultivars.  相似文献

Conjugated triene (CT) oxidation products of the acyclic sesquiterpene (E,E)-alpha-farnesene are thought to induce development of the physiological storage disorder superficial scald in apple and pear fruits of susceptible cultivars. CTs that accumulate in peel tissues of Granny Smith and Delicious apples after several weeks of cold storage are known to be conjugated trienols (CTols) rather than the corresponding hydroperoxides produced by in vitro autoxidation of alpha-farnesene. Here, it is shown that CTols are also the predominant in vivo oxidation products of alpha-farnesene in cold-stored pear fruit of the highly scald-susceptible d'Anjou cultivar. Analysis by octadecylsilane reversed phase high-performance liquid chromatography with diode array detection, gas chromatography with flame ionization detection, gas chromatography-mass spectrometry, and proton nuclear magnetic resonance spectroscopy identified 3,7,11-trimethyldodeca-1,3(E),5(E),10-tetraen-7-ol as the major CT in hexane extracts of peel tissue from d'Anjou pears stored for 3-5 months in air at -1 degrees C. The possible origins of CTols in apples and pears and the hypothesized role of these oxidation products of alpha-farnesene in the induction of scald are discussed. .  相似文献

Gas chromatography was used to quantitate free galactose in Braeburn, Fuji, Red Delicious, and Spartan apples during cold storage, after thermal processing of apple slices and in juice produced using clarification and/or liquifaction enzymes. Spartan had significantly higher galactose levels as compared to Red Delicious apples, but changes in galactose in all varieties during 9 months of cold storage were insignificant. Blanching and canning decreased galactose levels, but doubling the thermal processing during canning increased the free galactose concentration detected in plant tissue. An enzymatic liquefaction aid used to prepare apple juice dramatically increased the free galactose content while a clarification aid caused only a slight increase due to its selective action on soluble pectin. These findings provide useful information for dietitians to base diet recommendations for galactosemic patients.  相似文献

Five experimental coatings with different resistance to gas exchange were used with freshly harvested and 20-week commercially stored apples of Delicious, Fuji, Braeburn, and Granny Smith varieties. The coated or noncoated apples were held at 20 degrees C for up to 4 weeks. The gas partial pressures inside the fruits with the various coatings ranged from 1 to 25 kPa CO(2) and from 20 to 1 kPa O(2). Volatile evaporation rates were measured, as also were the volatiles compositions in the fruit. The coatings with intermediate gas resistance (carnauba-shellac mixture and candelilla) gave intermediate values of CO(2) and O(2) in the internal atmosphere in Delicious, Fuji, and Braeburn apples and the highest concentrations of butyl acetate and 2-methylbutyl acetate in the fruits. The coatings with the highest gas resistance (shellac and shellac-protein) caused high internal CO(2) and low O(2), resulting in anaerobic fermentation in Braeburn and Granny Smith apples and relatively high amounts of low-molecular-weight ethyl esters trapped within the fruit. A small portion of the alcohols were evaporated from fruits compared to esters, this attributed to their high Henry's law coefficients.  相似文献

Abstract

In nutrition experiments of fruit‐growing areas of central Washington state, ‘Delicious’ and ‘Golden Delicious’ apple (Malus domestica) orchards and ‘d'Anjou’ pear (Pyrus communis L.) orchards with the lowest soil pH values had a high incidence of fruit disorders and the lowest concentration of leaf calcium (Ca). In contrast, orchards with the highest soil pH values had the highest concentration of soil Ca (meq 100 g‐1) and the lowest incidence offrait disorders (bitter pit for apples and alfalfa greening, black end and cork spot for pears). Apple orchards with the highest soil pH values also had ‘Delicious’ and ‘Golden Delicious’ apples containing the highest concentration of Ca, but Ca concentrations in ‘d'Anjou’ pears were not significantly different among the different soil pH groups.  相似文献

Apple and pear fruits are important sources of secondary plant metabolites and one of the major sources of dietary phenolics consumed all year round. The aim of this work was to identify the main variables influencing phenolic content and antioxidant capacity in apples. Higher phenolic and antioxidant contents were observed in some varieties (such as the Delbar Estival apple and Durondeau pear). Storage conditions were important. Our results also showed that fruits should be consumed rapidly after purchase and with their peel. After one week of domestic storage, the ascorbic acid content was found to decrease by 75%. Peeling led to a more than 25% decrease in total phenolics and ascorbic acid. The harvest time (at normal ripeness) had only a limited impact, but significant year-to-year variations were observed. In conclusion, well-chosen and well-stored apples and pears may contribute to an antioxidant-rich diet if consumed rapidly and with their peel.  相似文献

Polyphenolic compounds of apple may play an important role in physiologic functions related to human health. Different polyphenolics may have varied biological activities including antioxidant activity. The objective of this study was to investigate the profiles of polyphenolic compounds in different apple varieties and different parts of an apple. The total and individual polyphenolics differed significantly among the eight apple cultivars grown in Ontario, and the peels had higher concentrations than the flesh. Among the tested cultivars, Red Delicious and Northern Spy had the highest concentrations and Empire the lowest. Five major polyphenolic groups with a total of 16 identified individual compounds were found, among which the dihydroxycinnamic acid esters, phloretin glycosides, and flavan-3-ols were found in both flesh and peel, whereas quercetin glycosides were almost exclusively found in the peel. Cyanidin 3-galactoside was unique to and found only in red apple peels. In both apple peel and flesh, the predominant group of polyphenolics was the procyanidins, followed by quercetin glycosides in the peel and hydroxycinnamic acid esters in the flesh. 3-Hydroxyphloretin 2'-xyloglucoside was newly identified in apple. The results obtained in this study will further the understanding of the polyphenolic composition of apples and their roles in health-promoting physiological functions.  相似文献

There is considerable evidence to show that a greater intake of apple contributes to improved health by reducing the risk of diseases, such as cardiovascular disease and some forms of cancer. Apple fruit is a major source of phenol compounds, because its consumption is widespread in many countries and it is available on the market for the whole year. The phenolic composition of 67 varieties of apple cultivars (new and old varieties) was examined for the concentration of some important phytochemicals and antioxidant activity. For the first time, we have looked at the correlation and compared polyphenolic coumpounds in Golden Delicious variety and new varieties grown from it. Up to 18 compounds, including catechin, procyanidin, hydroxycinnamates, flavonols, anthocyanins, and dihydrochalcones, were analyzed by high-performance liquid chromatography with diode array detection analysis of crude extracts and after thiolysis and LC-MS. The mean content of total polyphenols lay between 523.02 and 2723.96 mg/100 g dw and depending upon the apples variety. Flavanols (catechin and oligomeric procyanidins) are the major class of apple polyphenols, representing more than 80%, followed by hydroxycinnamic acids (1-31%), flavonols (2-10%), dihydrochalcones (0.5-5%), and in red apples, anthocyanins (1%). In this study, the best correlation was found for the total polyphenols and ABTS method, with a lower correlation for FRAP and DPPH methods ( r = 0.871, 0.839, and 0.804, respectively). The presented data clearly demonstrated that new varieties, i.e., Ozark Gold, Julyred, and Jester, of apple had the same or higher value of bioactive compounds in comparison to the old varieties, i.e., Golden Delicious, Idared, and Jonagold.  相似文献

Fruit from apple (Malus domestica Borkh.) and pear (Pyrus communis L.) trees sprayed with calcium chloride (CaCl2) had higher fruit calcium (Ca) concentrations by 10% or more than the unsprayed control trees. In ‘Delicious’ and ‘Golden Delicious’ apples, the incidences of bitter pit, scald, and internal breakdown were substantially reduced with CaCl2 sprays. In most instances, firmness, total acidity, and juiciness ratings of apples were improved with CaCl2 sprays. In ‘Anjou’ pears, the incidence of cork spot was reduced with CaCl2 sprays. Only sprays of NutriCal and CaCl2 + Regulaid showed substantial increases in fruit firmness of ‘Anjou’ pear. In 1991, yield of ‘Anjou’ pear trees was increased by 36% with CaCl2 sprays compared with the control trees.  相似文献

The free and bound phenols have been measured in 20 fruits commonly consumed in the American diet. Phenols were measured colorimetrically using the Folin-Ciocalteu reagent with catechin as the standard after correction for ascorbic acid contribution. On a fresh weight basis, cranberry had the highest total phenols, and was distantly followed by red grape. Free and total phenol quality in the fruits was analyzed by using the inhibition of lower density lipoprotein oxidation promoted by cupric ion. Ascorbate had only a minor contribution to the antioxidants in fruits with the exception of melon, nectarine, orange, white grape, and strawberry. The fruit extracts' antioxidant quality was better than the vitamin antioxidants and most pure phenols, suggesting synergism among the antioxidants in the mixture. Using our assay, fruits had significantly better quantity and quality of phenol antioxidants than vegetables. Fruits, specifically apples and cranberries, have phenol antioxidants that can enrich lower density lipoproteins and protect them from oxidation. The average per capita consumption of fruit phenols in the U.S. is estimated to be 255 mg/day of catechin equivalents.  相似文献

Phloridzin is a phenolic compound unique to apple (Malus domestica (Suckow) Borkh.) and its wild relatives. Since its discovery, phloridzin has been researched for its nutraceutical properties, including anti-diabetic, anti-cancer, and antioxidant activities, making phloridzin a potential target for nutritional improvement in new apple cultivars. However, phloridzin accumulates at significantly lower concentrations in fruit than in vegetative tissues and seeds. In ‘Golden Delicious’ and its sports, we observed higher phloridzin content in peels of sports with a cuticle disorder termed russet. In russeted apples, the smooth, waxy fruit cuticle is partially or entirely replaced by a corky layer, induced through environmental and genetic effects. To understand the variation of phloridzin content and fruit russet in apple fruit, we surveyed 108 accessions with variation in russeting from the USDA-ARS Malus germplasm collection in Geneva, NY. Russeting in apple fruit ranged from 0 to 100%, and phloridzin content ranged from 24.3 to 825.0 μg/g in peels. Mean phloridzin content varied significantly between russeting groups; in groups with light (0–5%), medium–high (70–80%), and high (90–100%) russeting mean phloridzin content was 115.2, 591.2, and 378.8 μg/g, respectively. We observed that genetic factors and russeting are strong predictors of phloridzin content in peels, but not fruit flesh or leaves. Conversely, other peel phenolics are negatively associated with russeting. We observed variable phloridzin content related to russet incidence during fruit development in ‘Golden Delicious’ (low to medium russet) and its sports, ‘Empress Spur’ (low russet), ‘Razor’ (complete russet), and ‘Sergeant Russet’ (medium to high russet).  相似文献

Consumption of fruits and vegetables has been shown to be effective in the prevention of chronic diseases. These benefits are often attributed to the high antioxidant content of some plant foods. Apples are commonly eaten and are large contributors of phenolic compounds in European and North American diets. The peels of apples, in particular, are high in phenolics. During applesauce and canned apple manufacture, the antioxidant-rich peels of apples are discarded. To determine if a useful source of antioxidants is being wasted, the phytochemical content, antioxidant activity, and antiproliferative activity of the peels of four varieties of apples (Rome Beauty, Idared, Cortland, and Golden Delicious) commonly used in applesauce production in New York state were investigated. The values of the peels were compared to those of the flesh and flesh + peel components of the apples. Within each variety, the total phenolic and flavonoid contents were highest in the peels, followed by the flesh + peel and the flesh. Idared and Rome Beauty apple peels had the highest total phenolic contents (588.9 +/- 83.2 and 500.2 +/- 13.7 mg of gallic acid equivalents/100 g of peels, respectively). Rome Beauty and Idared peels were also highest in flavonoids (306.1 +/- 6.7 and 303.2 +/- 41.5 mg of catechin equivalents/100 g of peels, respectively). Of the four varieties, Idared apple peels had the most anthocyanins, with 26.8 +/- 6.5 mg of cyanidin 3-glucoside equivalents/100 g of peels. The peels all had significantly higher total antioxidant activities than the flesh + peel and flesh of the apple varieties examined. Idared peels had the greatest antioxidant activity (312.2 +/- 9.8 micromol of vitamin C equivalents/g of peels). Apple peels were also shown to more effectively inhibit the growth of HepG(2) human liver cancer cells than the other apple components. Rome Beauty apple peels showed the most bioactivity, inhibiting cell proliferation by 50% at the low concentration of 12.4 +/- 0.4 mg of peels/mL. The high content of phenolic compounds, antioxidant activity, and antiproliferative activity of apple peels indicate that they may impart health benefits when consumed and should be regarded as a valuable source of antioxidants.  相似文献

为探讨苹果果实中毒死蜱残留的品种间差异及套袋对其残留的影响作用,采用气相色谱法(GC-FPD),研究了不同品种苹果果实中毒死蜱的残留动态以及套袋对苹果果实不同部位中毒死蜱残留的影响。结果表明,毒死蜱在苹果果实中的残留量存在着明显的品种差异,其中红富士属于高农药残留的品种,而嘎拉、红将军和83-1-70-3则属于低农药残留的品种。毒死蜱在苹果果实不同部位中的残留量表现出明显差异,果皮是毒死蜱残留的主要部位,其次是全果,果肉中的残留最少。套袋明显减少了毒死蜱在苹果果实中的残留量,不论处理浓度和取样时间如何,套袋苹果果实中毒死蜱的残留量比不套袋至少减少1/3。  相似文献

The contents of soluble and total phenolic acids were analyzed in samples of 29 berries and berry products, 24 fruits and fruit peels, and 12 beverages. Variation of phenolic acids in berries was also studied. Soluble phenolic acids were extracted with methanolic acetic acid, and a tentative quantification was performed by high-performance liquid chromatography (HPLC). The total phenolic acid content was determined by HPLC after alkaline and acid hydrolyses. The content of total phenolic acids as aglycones in the above samples varied from 0 (pear cider) to 103 mg/100 g fresh weight (rowanberry). Besides rowanberry, the best phenolic acid sources among berries were chokeberry (96 mg/100 g), blueberry (85 mg/100 g), sweet rowanberry (75 mg/100 g), and saskatoon berry (59 mg/100 g). Among fruits, the highest contents (28 mg/100 g) were determined in dark plum, cherry, and one apple variety (Valkea Kuulas). Coffee (97 mg/100 g) as well as green and black teas (30-36 mg/100 g) were the best sources among beverages. Caffeic acid dominated in all of these samples except in tea brews. Variation in the phenolic acid contents of the berries was either small or moderate.  相似文献

Penicillium expansum 1071, 1172, NRLL 973, and Penicillium patulum ATCC 24550 were inoculated into Red Delicious, Golden Delicious, and McIntosh apples. The decayed tissue was trimmed from the sound tissue, each fraction was weighed, and the patulin concentration in the juice was assayed by thin layer chromatography. The quantity of patulin in the whole apples and in decayed tissues was calculated and these values were used to determine the percentage of total patulin removed by trimming. The patulin content ranged from 140 to 4880 mug/apple. Trimming removed 93-99% of the total patulin, regardless of incubation temperature, fungus strain, or apple variety. Trimming of defective tissue from fungus-rotted apples could substantially reduce the patulin concentration.  相似文献

Heritage apple (Malus domestica Borkh. hybrids) and pear (Pyrus communis L. hybrid) trees grow in villages throughout Terceira Island, Azores, Portugal. Some of these pears have different names but similar morphology. The objective of this study was to determine synonymy, homology, and phylogeny of apples and pears from Terceira and to examine potential relationships of the island pears with standard apples and pears of Portuguese or American descent. Nine apple microsatellite markers were used to determine genetic relationships. Distance- and parsimony-based cluster analysis grouped these genotypes into separate apple and pear clades. The Terceira apples were divided into two clades: the maçā and the reineta-reinette. Among the 17 heritage apple genotypes, seven unique accessions were identified and four groups of synonyms, or possibly clones, were detected including: ‘Reineta Agosto’ and ‘Reineta Verde’ from Altares; ‘Reineta Castanha’ and ‘Reineta Verde Miuda’; ‘Maçā Pêra,’ ‘Maçā Calhau’, ‘Pêro Branco’ from Salga and from Terra-Chā and ‘Maçā Marmelo’; and the five genotypes ‘Maçā Sao Joao’, ‘Malápio Rosa’, ‘Maçā Gaspar’, ‘Maçā Branca’ and ‘Maçā Pato’. In addition, two homonyms were detected. ‘Pêro Vermelho’ from Terra Chā was a separate genotype from a tree from Doze Ribeiras of the same name, but Pêro Branco from Terra Chā appears to be a clone that can be distinguished by an additional allele at CH1F07a from a tree with that name from Salga. One pair of apple clones, ‘Reineta Agosto’ and ‘Reineta Verde’ from Altares appear to be derived from an unreduced gamete of ‘Golden Delicious.’ Another apple genotype ‘Maçā Acida’ could be a sibling of the ‘Maçā Pêra’ clonal group. Other tested standard apples from the US genebank were unrelated to Terceira genotypes. Of the seven heritage pears, five unique genotypes and one pair of synonyms were detected. ‘Pêra Papo Pintassilgo’ from Raminho and ‘Pêra Vermelha’ from the nursery of Serviço de Desenvolvimento Agario da Terceira (SDAT) were synonyms. ‘Passans du Portugal’ was related to ‘Pêra Cabaca’ but other standard pears from the US genebank were unrelated to Terceira genotypes. Future studies will include additional apple and pear cultivars from other Islands of the Azores and continental Portugal, and wild Asian species to further explore genetic relationships.  相似文献

Catalase (CAT, EC 1.11.1.6) activity was measured in flesh tissue of six apple cultivars (Malus domestica Borkh. cvs. Braeburn, Gala, Jonagold, McIntosh, Red Delicious, and Spartan). Activity of CAT was determined for fresh and frozen tissue of the same fruit. Freezing resulted in reductions of 50 to 90% in CAT activity compared with the activity measured in crude extracts from fresh tissues. The rate of freezing had an impact on the level of reduction of CAT activity, with slower freezing procedures leading to greater losses in activity. Six additives to the extraction buffer were tested to evaluate their potential to reduce the inactivation of CAT from frozen tissue, but only EDTA and Tween 20 showed any benefit. However, EDTA and Tween 20 provided only partial recovery in CAT activity. In contrast, crude extracts prepared from fresh tissue showed no appreciable loss in CAT activity after frozen storage for two weeks at -80 degrees C. Gel electrophoresis and immunological analysis indicated that the loss in CAT activity from tissue freezing could be attributed to loss of both the tetrameric CAT enzyme structure and total CAT protein. The implications of using freezing to preserve apple tissue samples prior to catalase activity analysis is discussed.  相似文献

This paper presents apple grading into four classes according to European standards. Two varieties were tested: Golden Delicious and Jonagold. The image database included more than a 1000 images of fruits (528 Golden Delicious, 642 Jonagold) belonging to the three acceptable categories—Extra, I and II—and the reject (each class represents, respectively, about 60, 10 and 20% of the sample size).The image grading was achieved in six steps: image acquisition; ground colour classification; defect segmentation; calyx and stem recognition; defects characterisation and finally the fruit classification into quality classes.The proposed method for apple external quality grading showed correct classification rates of 78 and 72%, for Golden Delicious and Jonagold apples, respectively. Taking into account that the healthy fruit were far better graded and considering that this class was under represented in the sample compared with the fruit population, the results of the proposed method (an error rate which drops to 5 and 10%, respectively) are compatible with the requirements of European standards.  相似文献

为精准确定红富士、花牛和黄元帅苹果的接触参数,该研究基于离散元法对3种苹果颗粒的仿真模型进行接触参数标定试验。首先,创建3种苹果的离散元填充模型,并通过电子秤、万能试验机等试验设备,确定其本征参数。其次,通过碰撞弹跳试验、斜面滑移试验和斜面滚动试验,得到红富士、花牛和黄元帅苹果与亚克力板的碰撞恢复系数分别为0.473、0.432和0.466;与亚克力板的静摩擦系数分别为0.435、0.536和0.519;与亚克力板的滚动摩擦系数分别为0.0077、0.0138和0.0088。最后,通过堆积角试验、最陡爬坡试验确定二次回归正交旋转组合试验,得到红富士、花牛和黄元帅同种苹果间的碰撞恢复系数分别为0.487、0.3348和0.469;静摩擦系数分别为0.584、0.869和0.644;滚动摩擦系数分别为0.084、0.096和0.093。试验结果表明,红富士、花牛和黄元帅苹果仿真试验与物理试验的休止角相对误差分别为5.95%、6.55%、8.67%。研究结果可为苹果物理特性和低损采收技术研究提供理论依据和模型支撑。  相似文献

Calcium (Ca) spray materials improved fruit quality as measured by control of bitter pit, fruit finish (appearance), increased red skin color, reduced incidence of scald, increased juiciness, texture, and fruit firmness of ‘Red’ and ‘Golden Delicious’ apples (Malus domestica, Borkh.). Concentrations of Ca in leaf and fruit tissues were increased by Ca sprays, especially calcium chloride (CaCl2)‐containing spray materials. Improved fruit firmness and control of bitter pit occurred for either standard recommended or high rates of Ca spray materials. At high rates of application, the only significant difference that occurred between early and late applications of Ca spray materials was that less leaf injury occurred with the early applications. Unsprayed ‘Red Delicious’ fruit from M.7 rootstocks had greater fruit peel Ca concentrations and a lower incidence of bitter pit but smaller fruit than fruit from trees on M.26 rootstocks. The above information is strong evidence that Ca sprays are important for the improvement of apple quality.  相似文献
