Flour and dough quality are very important breeding traits for wheat (Triticum aestivum L.) the selection of which would benefit from linked molecular markers. Association analysis allows the identification of genes or quantitative trait loci (QTL) related to target traits. The effectiveness of this approach depends on the availability of a densely genotyped population with large genetic variability for the traits of interest. Our objective was to identify chromosomal regions associated with flour and dough quality traits using a core collection built by maximizing the genetic diversity and phenotypic variability. We investigated the association of DArT, SSR and SNP markers with grain protein content, grain hardness, water-extractable arabinoxylan (WEAX) viscosity, wholemeal flour color and dough rheology.Out of 803 markers tested, 130 markers spread over the genome were associated with at least one trait, varying from 20 associated with WEAX viscosity to 60 associated with dough quality. Most chromosome regions known to determine wheat quality from the study of several bi-parental recombinant inbred lines were confirmed here and some new regions were identified. Associations were found for each trait studied, demonstrating that the core collection is a useful tool for QTL association mapping of these and other traits of interest.  相似文献

The effects of a crude pentosanase-containing enzyme preparation were studied on 12 samples of flour varying in quality for French bread making. At the optimal level of addition, the enzyme improved the dough properties, leading to a greater uniformity in quality characteristics and a higher level of quality for all samples. When an excessive amount of enzyme was added, the dough characteristics deteriorated. Changes in the properties of the flour pentosans were studied in the break-making process (kneading, shaping, end of fermentation, baking) using one of the flours, in the absence and presence of pentosanase-containing enzyme preparation at an optimal and excessive levels of addition. Part of the water-unextractable arabinoxylan became extractable during processing of the control sample, but solubilisation occurred to a greater degree with added enzyme. The specific viscosities of water extracts of doughs increased because of the arabinoxylan released from the WUP. Although more arabinoxylan was solubilised at the excessive level of addition, the apparent intrinsic viscosity of dough water-extractable arabinoxylan was greater at the optimum level of addition. These results were essentially confirmed with all the flour samples tested. The effectiveness of the enzyme preparation therefore appeared to be related to the amount and size of the extractable arabinoxylans.  相似文献

To devise strategies for meeting Health Canada's target for reduced-sodium bread production, relationships between dough formula (i.e., red spring wheat flour, salt (NaCl) and water content) and dough mechanical properties were examined. Mixograph energy to peak (ETP), peak height (PKH), and peak bandwidth (PBW) were used to define changes in the properties of doughs induced by sodium reduction. ETP measurements indicated that dough strength characteristics were less responsive to sodium reduction as water content was increased. ETP was a good indicator of the cultivar-dependent response of doughs to sodium reduction, with doughs made from stronger flours being more sensitive to sodium reduction. According to ETP results, sodium reduction led to a decrease in flour strength discrimination. Sodium reduction at NaCl contents below ~1.5% led to more obvious changes in dough mixing characteristics (indicated by the ratio of PBW to PKH). Mixograph analyses of dough tolerance to sodium reduction will guide wheat breeding programs to select cultivars suitable for reduced sodium breadmaking.  相似文献

Arabinoxylans (AXs) are the major dietary fiber (DF) component in wheat and their consumption has been associated with several health benefits. Genetic improvement of the AX in refined wheat flour could be a good solution to improve the DF daily consumption while maintaining the flour desirable quality. In this study, 193 common wheat lines were analyzed for their AX content in refined flour and end-use quality. Wide variation in both the total arabinoxylan (TOT-AX) (10.8–16.5 mg/g) and water-extractable arabinoxylan (WE-AX) (3.2–7.6 mg/g) was identified and, in both cases, the genotype had the greatest impact on the observed phenotypes. Variation in the endogenous AX fractions appeared to have a moderate effect on wheat quality. The WE-AX, specifically, were positively correlated with gluten strength (r = 0.11 to 0.32) and bread loaf volume (r = 0.16), whereas the TOT-AX were negatively correlated with dough extensibility (r = −0.11) and bread making quality (r = −0.11). Overall, results of this study show that the genetic improvement of grain AX is feasible and that the AXs present in refined flour do not dramatically alter wheat quality indicating that it is possible to select varieties with high AX endosperm content end desired end-use quality.  相似文献

The influence of added phytate on dough properties and bread baking quality was studied to determine the role of phytate in the impaired functional properties of whole grain wheat flour for baking bread. Phytate addition to refined flour at a 1% level substantially increased mixograph mixing time, generally increased mixograph water absorption, and reduced the SDS-unextractable protein content of dough before and after fermentation as well as the loaf volume of bread. The added phytate also shifted unextractable glutenins toward a lower molecular weight form and increased the iron-chelating activity of dough. It appears that phytate negatively affects gluten development and loaf volume by chelating iron and/or binding glutenins, and consequently interfering with the oxidative cross-linking of glutenin molecules during dough mixing. Phytate could be at least partially responsible for the weak gluten network and decreased loaf volume of whole wheat flour bread as compared to refined flour bread.  相似文献

Quality effects of rye (Secale cerealeL.) chromosome arm 1RL transferred to wheat (Triticum aestivumL.) were characterised by comparison of a group 1R(1B) substitution lines and 1BL.1RS translocation lines. The experimental materials were sister lines derived from the mating Mironovskaya10/NE7060//NE80413. 1R(1B) substitution lines were identified by the presence of ryeomega- andgamma-secalins among 70% ethanol soluble proteins, combined with the presence of high molecular weight (HMW) secalin proteins in total grain protein extracts. Genes on 1RL reduced grain weight, grain hardness, Mixograph time, Mixograph tolerance and SDS sedimentation volumes. 1RL had no effect on flour yield or grain and flour protein concentrations. The HMW secalin proteins encoded by genes on 1RL most probably caused the decline in dough strength seen in 1R(1B) lines relative to that of 1BL.1RS sister lines. Reduced grain hardness might also be related to the presence of HMW secalins, although a role for additional, unidentified genes on 1RL could not be discounted.  相似文献

为明确安徽大田生产环境下软质小麦籽粒和终端产品品质表现,评价优质软麦品种的加工适用性,本研究选取该区当前推广种植的24个软质小麦品种,对其籽粒和面粉的主要品质性状及其制品南方馒头和曲奇饼干的品质进行差异性、相关性分析,并以美国软白麦近五年的主要品质性状平均值为理想指标进行灰色关联度比较。结果表明,供试材料的硬度、面粉色泽b*、湿面筋含量、面团形成时间、稳定时间等籽粒品质性状变异系数较大,而容重、面粉L*值和吸水率变异系数较小。南方馒头品质性状中,白度差异最小,比容差异最大;曲奇饼干品质性状中,感官评分变异系数较大,饼干直径均值和变异系数都较小。蛋白质含量、湿面筋含量、稳定时间均符合弱筋标准(GB/T 17320-2013)的样品数为0。相关分析表明,容重、降落值、面粉L*、b*、白度与大部分性状间相关性不显著;籽粒硬度与水SRC和乳酸SRC均呈显著正相关,与湿面筋含量和面粉a*值均呈显著负相关。蛋白质含量与面粉a*值等7个指标均呈显著正相关,与面粉b  相似文献

面粉高白度小麦种质资源筛选及其品质分析   总被引:2,自引:0,他引:2  
为了挖掘面粉白度高、品质优的小麦种质,对1 248份小麦种质资源进行了面粉白度测定,并对面粉白度值超过80的小麦种质的籽粒硬度、淀粉RVA糊化特性以及面团揉混特性等有关品质性状进行了分析。筛选出面粉白度值≥80的小麦种质195个,其籽粒硬度指数分布范围为15~77;淀粉RVA糊化特性参数峰值黏度范围为1 030~3 407cP,稀懈值范围为629~1 522cP,回生值范围为5~1 546cP,糊化温度范围为65.3~88.2℃,最终黏度范围为755~3 870cP;面团形成时间范围为1.3~4.2min,衰落角范围为3~35度,沉降值范围为21~58.7mL。研究结果还表明,面粉中类胡萝卜素含量低,则面粉白度就高,仅靠延长面粉储存时间不会大幅度提高面粉白度。筛选出的14个高白度优异小麦种质可用于培育中强筋面粉高白度小麦新品种。  相似文献

Extruded wheat flours, due to their increased water absorption capacity, constitute an opportunity to increase bread output in bakery production. However extrusion may modify dough and bread characteristics. The aim of this study was to investigate the effect of the substitution of 5% of the wheat flour by extruded wheat flour (produced with different time-temperature extrusion treatments) on dough mixing, handling and fermentation behaviour and bread volume, shape, texture and colour. The RVA curves indicate that extrusion intensity increases with increasing temperature or water content. Water absorption capacity rises with increasing treatment intensity, but dough stability tends to decrease. Adding extruded flours decreases dough extensibility but increases tenacity and gas production. Differences in dough structure were observed on photomicrography, though there were no clear differences in bread quality. These results indicate that it is possible to obtain adequate dough and bread characteristics using dough with 5% extruded wheat flour.  相似文献

为了给优质面包、馒头、面条专用品种选育提供品质辅助选择指标,以30份新疆冬小麦品种(包括自育品种和引进品种)为材料,分析了新疆冬小麦品种品质性状与面包、馒头、面条加工品质的关系.回归分析结果表明,小麦籽粒性状、面粉品质、面团特性、淀粉糊化特性以及面粉色泽对新疆冬小麦品种面包、馒头和面条加工品质均有显著影响;面粉灰分、湿面筋、稀懈值、亮度和红度是影响面包、馒头和面条加工品质的共同品质性状;形成时间、稳定时间、延展度是影响面包和面条加工品质的共同品质性状;而籽粒性状仅对新疆冬小麦品种馒头加工品质有显著影响.相关分析结果表明,千粒重、形成时间、稳定时间、拉伸面积、最大拉伸阻力、红度和黄度与面包总分呈显著相关关系,相关系数分别为0.460、0.516、0.537、0.719、0.707、0.534和-0.403;籽粒蛋白质含量、面粉蛋白含量和湿面筋含量与馒头总分呈显著相关关系,相关系数分别为-0.397、-0.458和-0.552,面团延展度、稀懈值与面条总分呈显著相关关系,相关系数分别为0.438和0.432.从以上结果可以看出,面包与面团流变学特性,馒头与蛋白质和面筋数量,面条与面团流变学特性及淀粉糊化特性的关系更为密切,这些品质性状可以作为新疆冬小麦品种面包、馒头、面条加工品质改良时的辅助选择指标.  相似文献

为了解河北省主推强筋小麦品种的籽粒品质和面包加工品质,评选优质面包小麦品种,对河北省9个强筋小麦品种的31个籽粒品质和8个面包加工品质指标进行了测定。结果表明,除千粒重、容重、籽粒硬度、出粉率、面粉色泽L*值、面粉色泽b*值、面粉白度、籽粒蛋白质含量、湿面筋含量、糊化温度、吸水率外,其余被测指标的变异系数均大于10%,说明河北省强筋小麦品种多数品质性状的遗传多样性比较丰富。藁优9415、冀师02-1、藁优2018和金麦1号4个小麦品种制作的面包达到国家优质面包标准。面包评分与面团拉伸曲线面积和最大拉伸阻力极显著正相关,与形成时间、稳定时间、粉质质量指数、延伸度和拉伸阻力显著正相关,与面包质构的粘聚性极显著正相关,与面包质构的硬度、胶着性、咀嚼度、坚实度均极显著负相关。  相似文献

为明确不同类型小麦的面粉改良方案,为我国优质面包专用粉的生产提供理论与技术支持,以三个筋力不同的小麦品种宁麦13、扬麦16和郑麦9023为材料,通过洗面筋法提取各供试材料的湿面筋,将其冷冻干燥后按照7%、8%、9%、10%、11%的添加比例与各自面粉进行配比,对配粉的面包烘焙品质、面粉理化性质和面团流变学特性进行了测定分析。结果发现,随着面筋蛋白添加量的提高,配粉的蛋白质、湿面筋、谷蛋白大聚体(GMP)含量和沉降值逐步上升;粘度参数和面团弱化度有所下降;糊化温度和糊化时间呈上升趋势。在同一添加量下,强筋小麦的烘焙品质和面粉理化性质始终优于中筋小麦和弱筋小麦。随着面筋蛋白添加量的提高,面包体积、弹性、回复性、内聚力增大,而硬度、咀嚼性减小,感官品质得到改善。面筋蛋白添加量超过一定范围(宁麦13、扬麦16添加9%,郑麦9023添加8%),面包品质改良效果变缓,且色泽不断加深。综上所述,适量添加面筋蛋白可改变面粉的理化性质,提高其面包烘焙品质;配粉的蛋白质含量为18%左右是最经济的面包烘焙品质改良方案。  相似文献

The effects of incorporation of an i-type low-molecular-weight glutenin subunit (LMW-i) and of a modified γ-gliadin showing an additional cysteine residue, on 2 g Mixograph parameters of durum (biotypes 42 and 45 of the Italian cv. Lira) and bread wheat (Australian cv. Kukri) doughs were studied. In bread wheat flour incorporation of the modified γ-gliadin resulted in a significant decrease in dough strength (decreased mixing time and peak resistance), but at the same time it produced a slight increase in dough stability (decreased resistance to breakdown). The incorporation of the LMW-i type into bread wheat dough had minimal effects on dough mixing requirements. The incorporation of both LMW-i type and modified γ-gliadin in durum wheat doughs produced a significant decrease in the overall dough strength, especially in Lira 45 biotype doughs. Reversed phase high-performance liquid chromatography (RP-HPLC), size exclusion high-performance liquid chromatography (SE-HPLC) and two-dimensional gels analyses of control and reconstituted semolina doughs showed that the two polypeptides were in the polymeric fraction. The effect of the incorporation of the two polypeptides in durum and bread wheat doughs showed remarkable differences and the reasons for this is discussed in terms of both intrinsic differences between wheat flour and durum semolina and in methodological approaches.  相似文献

In this study, sixteen wheat varieties for cultivation in China were examined for the flour characteristics using the farinograph, extensograph and rheofermentometer, uniaxial extensional rheology employing the extensograph and the Kieffer extensibility rig and biaxial extension by uniaxial compression of mixed dough with and without yeast, rested and fermented dough, and steamed bread quality including specific volume and texture properties. Three statistical analysis methods including Pearson correlation, principle component and stepwise multiple regression analysis were carried out to correlate dough properties with steamed bread quality. Biaxial extension viscosity was positively correlated with texture properties (hardness and chewiness) of steamed bread (r = 0.521–0.685, p < 0.05). Based on the correlation coefficients and the model (r2 = 0.852, p = 0.003) obtained using stepwise multiple regression analysis, the best predictors for specific volume of steamed bread were the maximum resistance to extension of rested dough (r = 0.664, p < 0.01) and total work for breakage of fermented dough (r = 0.662, p < 0.01). Principal component analysis of rheological properties of fermented dough and flour characteristics provided more useful information for discriminating wheat flour quality and help breeders to select most convenient wheat flour for the steamed bread making.  相似文献

为了解河北省中低筋小麦品种的籽粒品质和馒头加工品质、评选优质馒头小麦品种,对河北省19个主推中低筋小麦品种的籽粒品质和馒头加工品质进行了测定。结果表明,除容重、出粉率、面粉色泽L*值、面粉白度、籽粒蛋白质含量、糊化温度、吸水率外,河北省主栽中低筋小麦品种品质性状的遗传变异范围较大,19个参试小麦品种馒头综合评分平均为78.4分,变化范围67.8~85.7分;达到良好馒头标准(80~90分)的共有9个品种,分别为良星66、石优17、石新828、良星99、科麦1号、永麦1号、邢麦4号、济麦22、和冀丰703。馒头高度与拉伸曲线面积、拉伸阻力、P值和W值极显著正相关,与稳定时间显著正相关;馒头评分与P值和W值极显著正相关;馒头比容与稳定时间、粉质质量指数、拉伸曲线面积、延伸度、拉伸阻力、P值、G值和W值负相关。馒头评分与馒头坚实度极显著负相关,与馒头硬度显著负相关,说明馒头坚实度对馒头感官品质影响较大。  相似文献

The effect on the viscosity of wheat flour batter following treatments with a crude pentosanase-containing enzyme preparation and an endo-xylanase purified from the same preparation, was studied in relation to changes to the chemical features of the water- and Ba(OH)2-extractable arabinoxylan fractions. Addition to batter of the crude enzyme or the pure xylanase caused a consistent and identical decrease in batter viscosity, demonstrating that the viscosity change was caused by the selective action of the xylanase in the crude enzyme preparation. The lowering of batter viscosity upon addition of enzyme was attributed to partial hydrolysis of the arabinoxylans in the water-extractable fraction which lead to an increase in the proportion of lower molecular weight water-extractable arabinoxylans possessing an increased xylose/arabinose ratio. There was no detectable change in the monosaccharide composition of either the water- or Ba(OH)2-extractable arabinoxylan fraction after enzyme treatment and no indication of any increase in the amount of the water-extractable arabinoxylan fraction at the expense of the Ba(OH)2-extractable fraction. It is concluded that the xylanase can extensively degrade arabinoxylan to small oligosaccharides in vitro. However, such degradation does not take place in situ, in the enzyme treated batters, where only a very small shift in the molecular weight profile of the water-extractable arabinoxylans was necessary to effect major changes to batter viscosity.  相似文献

Alternative aeration and gas stabilization strategies are required for the production of starch-based cellular food systems, such as gluten-free bread. In the present study, density and temperature were monitored in mixing experiments without yeast, aiming at maximum mechanical aeration. Additionally, the same trials were performed with subsequent biological aeration, including yeast fermentation and baking. As a result, the gas volume fraction was elevated to 21%, instead of 6% with conventional kneading. Reducing the water content from 120% to 90% (flour/starch weight base) raised dough viscosity and temperature without affecting the state of aeration. The bread volume was strongly influenced by the dough temperature after mixing (R2 = 0.98), since it depended on yeast activity. The implemented process is suitable to aerate starch-based dough systems mechanically and enables the production of gluten-free bread with high volume and fine pores.  相似文献

Baking performance of hearth bread and pan bread were investigated using 10 wheat varieties with variable protein quality. For most varieties, samples were selected at two protein levels, approximately 11 and 13% (d.m.). The effects of flour quality on loaf characteristics were different for hearth bread compared to pan bread, where both protein quality and protein content affect loaf volume positively in an optimised baking test. Hearth bread is more complex as both the form ratio and loaf volume are critical external characteristics. When using fixed proving time, the form ratio was positively affected by dough resistance and mixing peak time at high speed mixing, and negatively affected by dough extensibility. Dough resistance and mixing peak time correlated strongly to the HMW glutenin composition, whereas dough extensibility was related to protein content. In contrast to the form ratio, loaf volume was positively affected by dough extensibility, whereas protein quality had no significant effect. This was seen both for doughs produced at optimal mixing time at high speed mixing (126 rev/min) and for doughs produced at fixed mixing times at low speed mixing (63 rev/min). When proving time was optimised to achieve a defined form ratio, flours of strong protein quality should be proved longer than flours of week protein quality, resulting in higher loaf volume for flours of the strongest protein quality. With respect to protein content, the positive effect of protein content on loaf volume was counteracted due to reduced proving time when aiming for a defined form ratio.  相似文献

为明确郑麦1860的品质及加工适用性,对2020-2021年河南省29个地点收获的郑麦1860的籽粒性状、磨粉品质、面团流变学特性、淀粉糊化特性和面条加工品质指标进行了测定与分析。结果表明,郑麦1860为优质中强筋面条小麦品种,特点是籽粒大、容重高、出粉率高,面条弹性好、色泽白亮、褐变较轻。在不同地点间郑麦1860的多数品质性状变异程度小,品质表现较稳定;相比较而言,其粉质参数、拉伸参数变异程度较大,淀粉糊化特性和面筋特性变异程度次之,籽粒品质性状、磨粉品质和面条加工参数变异程度较小。籽粒硬度、粒径、容重与出粉率呈显著正相关;容重、籽粒蛋白质含量、面粉灰分含量与面条总评分呈显著负相关;面粉色泽L*值、吸水率、峰值黏度、低谷黏度、终值黏度、回生值与面条总评分呈显著正相关。综上所述,籽粒蛋白质含量、面粉色泽和淀粉糊化特性是影响郑麦1860面条品质的主要因素。郑麦1860制作的面条感官评分高、品质稳定,在豫北、豫东和豫南等区域种植均适合制作优质面条。  相似文献

Glycemic responses to most of the conventional breads are high, including breads made of wholemeal flour. Baking technology is known to affect these responses. The aim of the present study was to investigate effects of xylanase enzyme treatment and sourdough fermentation in wholemeal wheat bread baking on postprandial glucose and insulin responses and on in vitro protein digestibility. The wheat breads were made of 100% flour from peeled kernels by a straight dough or sourdough fermentation method, and with or without using xylanase during mixing of dough. Standard white wheat bread was used as a reference. All test bread portions contained 50 g available carbohydrate and were served in random order to eleven insulin resistant subjects. Blood samples for measuring glucose and insulin concentrations were drawn over 4 h. The sourdough wholemeal wheat bread resulted in the lowest postprandial glucose and insulin responses among the four tested breads (treatment × time; p = 0.000 and p = 0.022, respectively). There were differences in solubility and depolymerisation of protein and arabinoxylan among the breads but these did not fully explain the in vivo findings. In conclusion, the health effects of wholemeal wheat bread can be further improved by using sourdough process in breadmaking.  相似文献
