Meat quality characteristics of Bafra ram lambs slaughtered at different weights were investigated. A total of 24 lambs fattened intensively was slaughtered at four slaughter weights of 30, 35, 40, and 45 kg. Water-holding capacity, cooking loss, tenderness, color, as well as protein content did not vary significantly among the slaughter weight groups, although the 30-kg slaughter weight lambs displayed the greatest postmortem pH fall in musculus longissimus dorsi (P?<?0.05). As slaughter weight increased, intramuscular fat of musculus longissimus dorsi showed an increasing nutritive value (P?<?0.05), total unsaturated fatty acids/saturated fatty acids ratio (P?<?0.05), and n6/n3 ratio (P?<?0.05). However, atherogenic index and thrombogenic index values decreased with increasing slaughter weight, although this effect was not significant. The effect of slaughter weight on total cholesterol was not pronounced.

An experiment was conducted to evaluate the effect of a Ca salt supplement on lactating Awassi ewes and their lambs. Ninety Awassi ewes (average BW = 55 kg ± 1.13) were allocated into three treatment groups of 30 each; 0%, 3%, or 5% Ca salt supplemented groups. The experiment started at lambing and lasted for 60 d. During this period, milk production and composition, final body weights, total feed intake, serum cholesterol and triglycerides, weaning weights of lambs, and milk fatty acid profile were tested. Milk production and energy corrected milk increased (P < 0.05) with Ca salt level in the diet. Milk fat content was higher (P < 0.05) at 3% treatment group compared to 0% and 5% treatment groups. However, no differences were detected in content of crude protein and total solids, and milk energy value. Milk fat yield (g/d) increased (P < 0.05) as Ca salt in the diet increased. Final body weight was higher (P < 0.05) for 5% group when compared to the 0% group with no differences between the 3% group when compared to 0% and 5% groups. No differences were observed in feed intake of ewes. Metabolizable energy intake was greater (P < 0.05) for the 3% and the 5% treatment groups when compared to the 0% treatment group. Feed to milk ratio increased (P < 0.05) when increasing the level of Ca salt in the diet. Serum cholesterol was greater (P < 0.05) in the 5% treatment group than the 0% and 3% treatment groups for ewes and lambs. Serum triglyceride was similar among treatment groups in ewes whereas serum triglyceride was greater (P < 0.05) for lambs in 5% treatment group than 0% and 3% treatment groups. However, serum triglyceride was similar in ewes among treatment groups. Weaning weights and average daily gain of male lambs were higher (P < 0.05) in lambs fed Ca salt (3% and 5%) when compared to 0% treatment group. No differences were detected in weaning weights and average daily gain of female lambs among treatment groups. However, milk conversion ratio was better (P < 0.05) for the 5% group lambs than the 0% and 3% treatment groups. Ca salt reduced (P < 0.05) short and medium-chain milk fatty acids and increased (P < 0.05) content of long chain and unsaturated ones. These results of this indicate that Ca salt supplementation can improve milk production of lactating ewes, the growth rate of their lambs, and produce healthy quality value milk.  相似文献

The objectives of this study were to compare the progeny of 1) late-maturing beef with dairy breeds and 2) Charolais (CH), Limousin (LM), Simmental (SM) and Belgian Blue (BB) sires bred to beef suckler dams, for feed intake, blood hormones and metabolites, live animal measurements, carcass traits and carcass value in bull and steer production systems. The bull system included 50 late-maturing beef breeds and 22 Holsteins (HO) slaughtered at approximately 15 months of age, whereas the steer system consisted of 56 late-maturing beef breeds and 23 British Friesians (FR) slaughtered at approximately 24 months of age. Beef breeds were suckled until approximately 8 months of age, while dairy breeds were artificially reared until weaning at approximately 3 months of age. All animals were finished on an ad libitum concentrate diet. Mean live weight, live weight gain, carcass gain and feed efficiency were greater (P < 0.05) in beef than dairy breeds in both systems during the finishing period when offered concentrates. Although there was no difference in feed intake between beef and dairy breeds, intake expressed relative to live weight was lower (P < 0.001) in beef breeds in both systems. At 10 months of age and pre-slaughter, beef breeds had higher (P < 0.001) muscularity scores and greater scanned muscle depth (P < 0.001) than their dairy contemporaries. Carcass weight, kill-out proportion, carcass conformation score, meat proportion and value were greater (P < 0.001) and carcass fat and bone proportions were lower (P < 0.05) in beef than dairy breeds in both systems. Insulin concentrations were lower (P < 0.001) in beef than dairy breeds, whereas there was no difference in blood metabolites or IGF-1 concentrations. Feed intake expressed relative to live weight or feed efficiency did not differ between CH, LM, SM or BB sired progeny. Muscularity scores were greater (P < 0.05) in BB than SM, whereas skeletal scores were lower (P < 0.05) in LM than SM. Limousin had lower (P < 0.05) carcass gain per day of age than CH and SM, whereas SM had a lower (P < 0.05) carcass conformation score than BB and CH and a higher (P < 0.05) carcass fat score than CH. Simmental had a lower (P < 0.05) carcass meat proportion and a higher (P < 0.05) carcass fat proportion than CH, LM and BB, which were similar (P > 0.05). The improvement obtained for beef over dairy breeds in live weight gain was 12%, while the improvements in carcass gain and meat produced was 24% and 33%, respectively. This demonstrates that the importance of carcass data contributing to breed comparison studies cannot be over-emphasised.  相似文献

The effect of feeding system and sex on intake, growth and carcass and meat characteristics of Assaf fattening lambs was studied. Twenty four weaned Assaf lambs, half males and half females were used. After an adaptation period, lambs were randomly assigned to one of the two feeding systems studied. Control lambs received ad libitum commercial concentrate (70% barley, 22% soybean meal, 4.8% wheat, 0.5% bicarbonate, 2.7% mineral–vitamin premix) and barley straw. Free Choice lambs had ad libitum and separate access to whole barley grain and a protein supplement (73.3% soyabean meal, 16% wheat, 1.7% bicarbonate, 9% mineral–vitamin premix). Lambs were slaughtered at 25 kg LBW. Feed intake was not significantly affected by sex (P > 0.05) but Free Choice lambs showed higher dry mater intake than the Control lambs. Nevertheless, only males from the Free Choice group showed an improvement in feed efficiency rate (P < 0.05) and average daily gain (P < 0.01) relating to the Control lambs. Neither feeding system nor feeding system × sex interaction significantly affected non-carcass weight, fat depots, cold carcass weight, dressing percentage, main proportions of commercial cuts and meat characteristics (P < 0.05). As it was expected, female lambs showed a lower average daily gain and a higher feed conversion efficiency than male lambs (P < 0.001) which was related to a greater fat deposition. Meat characteristics were unaffected by sex, with the exception of longissimus lumborum fat content, which was higher in female lambs.The present results suggest that Free Choice feeding system might be suitable for intensively reared male lambs since improvements in daily weight gain and feed conversion rate were achieved, with no adverse effect on carcass and meat quality. Despite the selected diet of both, males and females, did not differ in the crude protein content, the use of Free Choice feeding system for female lambs did not improve performance compared to the Control group.  相似文献

Fourty-eight Churra Tensina single male lambs were used to evaluate the effect of different feeding systems on carcass composition and predict the carcass tissue composition from joint composition and carcass measurements. Four treatments were studied: GR, unweaned lambs continuously grazing with ewes; GR + S, the same as the previous group, but lambs had free access to concentrate; DRL-GRE, lambs remained indoors with free access to concentrate and ewes grazed for 8 h/day, thereafter remaining with lambs; and DRL, lambs and ewes were kept in confinement, they had free access to concentrate and dry unifeed respectively. In the DRL-GRE and DRL groups lambs were weaned when 45 days old. Lambs were slaughtered at 22–24 kg live weight. Commercial joints from the half left carcass were obtained, recorded and dissected to determine carcass tissue composition.The feeding system had an effect on the proportion of the carcass tissue composition. GR treatment showed higher muscle (M) (p < 0.05) and bone (B) (p < 0.001) percentages, and a lower total fat (F) percentage (p < 0.001) than the rest of treatments. Hence it revealed higher M/F (p < 0.01) and lower M/B (p < 0.05) and subcutaneous fat/intermuscular fat ratios (SF/IF; p < 0.001). Carcass composition predictions were more accurate for grams than for percentages. In predictions from joint composition, pelvic limb was the most accurate joint for grams (R2 = 0.84, R2 = 0.68, and R2 = 0.77 for muscle, bone, and fat, respectively) as well as for percentage (R2 = 0.65, R2 = 0.56, and R2 = 0.73 for muscle, bone, and fat, respectively). Predictions from carcass measurements were greater in muscle and fat grams (R2 = 0.87 and R2 = 0.86 for muscle and fat, respectively) than in percentage (R2 = 0.58 and R2 = 0.73 for muscle and fat, respectively). Equations to predict carcass tissue that include carcass measurements are a simple method to assess accurately saleable muscle yield from different lamb feeding systems without involving carcass damage.  相似文献

Ten male lambs of each of Rahmani (R) and Ossimi (O) were used to study the growth and carcass characteristics within their first year of age (360 days). After suckling period (4 months), lambs were fed on the regular ration. During the course of the experiment, body weight (BW) was recorded monthly accompanied by blood sampling to determine IGF-I. Four lambs from each breed were slaughtered at 270 and 360 days of age, and Longissimus lumbarum (L. lumbarum) at the 9th, 10th and 11th ribs and Biceps femoris (B. femoris) muscles were separated to be used for chemical analysis and histological study.Breed had no effect on the growth curve of the two studied breeds. Chemical analysis indicated that (O) had higher fat (0.9%, P < 0.0001) and lower (0.3%, P < 0.01) moisture compared to (R), with no difference in protein and ash contents. The concentration of IGF-I was almost similar in both breeds up to day 270 of age, and then it was higher in (R). Number of fibers per bundle was higher (P < 0.05) in (O) than in (R) by 6.1%, while, the other histological traits were similar in the two studied breeds.Chemical analysis indicated that lambs slaughtered at 360 days of age had lower (0.7%, P < 0.0006) moisture and higher fat (17.3%, P < 0.0001) compared to day 270. Up to day 270 of age, IGF-I concentration was < 500 ng/ml before increasing to > 500 ng/ml up to the end of the experiment. No effect of age was observed on the studied histological traits.L. lumbarum muscle contained higher protein (4.2%, P < 0.0001), fat (104%, P < 0.0001) and ash (10%, P < 0.001), while moisture was less (5.6%, P < 0.0001) compared to B. femoris muscle. B. femoris muscle was higher (P < 0.0001) in number and diameter of fibers, bundle and stroma sectional areas relative to L. lumbarum by 38.2, 78.8, 53.2 and 23.8%, respectively.  相似文献

Effects of concentrate supplementation on carcass and meat quality of feedlot finished Small East African (SEA) goats were assessed using 23 animals (14.5 months old and 20.1 kg body weight). Goats were subjected to four levels of concentrate supplementation: ad libitum concentrate allowance (T100), 66% of ad libitum concentrate allowance (T66), 33% of ad libitum allowance (T33) and no concentrate (T0). All goats were slaughtered after 90 days of experimental period. The ad libitum concentrate intake attained by the goats was about 370 g DM/d. All concentrate-supplemented goats had similar (P > 0.05) total dry matter intake. T100 goats had 31 g and 14 g higher (P < 0.05) daily body weight gain than T33 and T66 goats, respectively. T100 and T66 goats were comparable in final live weight and empty body weight but both were heavier (P < 0.05) than that of T33 and T0 goats. Hot and cold carcass weights for both T100 and T66 goats were 3 kg heavier (P < 0.05) than that of T0 goats. Concentrate-supplemented goats had similar (P > 0.05) EUROP scores for carcass fatness. T100 and T66 goats had 6.5 and 3 units higher (P < 0.05) scores for conformation than T0 and T33 goats, respectively. Dressing percentage increased with levels of concentrate supplementation in a curvilinear fashion, with highest values in T66 goats. At 6 h post-mortem, muscle pH for concentrate-supplemented animals was significantly lower compared with T0 goats. Carcass fat content was 9% higher (P < 0.05) in concentrate-supplemented goats than in their contemporaries. No differences in cooking loss or shear force were observed among treatments, while these variables were affected by the type of muscle. It is concluded that feedlot finishing of SEA had limited effects on meat quality. Finishing SEA goats at 66% of their ad libitum concentrate intake, however, significantly improved weight gains and carcass fatness. Cost–benefit analyses are recommended before embarking on a large scale feedlot finishing of SEA goats.  相似文献

This study was carried out to investigate the carcass characteristics of Hanwoo (Korean cattle) from different sex conditions, raising altitudes and slaughter seasons. The total number of cattle used in this study was 3608 heads which comprised of 1336 bulls and 1660 steers. The data was analyzed according to sex condition (bull and steer), raising altitude (low: 0–100 m and high: 700–800 m) and slaughter season (spring, summer, autumn and winter). At 24 h post-slaughter, the carcasses were weighed and evaluated for carcass traits according to the Korean carcass grading standard by an official grader. Carcass weight, ribeye area, yield index and grade, and meat color, firmness and maturity scores of carcass from bulls were significantly higher (P < 0.001) than those from steers. Inversely, the backfat thickness, marbling score and quality grade of carcass from steers were significantly higher (P < 0.001) than those from bulls. The maturity score of carcass from a high area was significantly higher (P < 0.01) than that from a low area. The ribeye area of carcass from summer was significantly smaller (P < 0.05) than that from other seasons. The maturity score of carcass from the summer season was highest among that from other seasons and the lowest was that from the winter season. Marbling score and carcass quality grade from the winter season were highest among those from other seasons and the lowest were those from the autumn season. There were no significant interactions between sex condition and raising altitude on carcass traits except the ribeye area. There were significant interactions between sex condition and slaughter season on marbling score and carcass quality grade. There were no significant interactions between raising altitude and slaughter season on all of the carcass traits. There were significant interactions among sex condition, raising altitude and slaughter season on meat color score. It was concluded that sex condition affected muscle and fat depositions on the carcass, raising altitude affected maturity and slaughter season affected ribeye area, maturity and marbling.  相似文献

In Ireland, the majority of dairy cows calve in spring and the male progeny are reared for beef as steers. Over half of all dairy calves are beef crosses with Aberdeen Angus and Belgian Blue representing two extremes in maturity type. The objective of this study was to compare different finishing systems in the autumn/winter of their second year for spring-born steers of contrasting maturity type. A total of 80 spring-born calves, 40 Aberdeen Angus × Holstein-Friesian (AA) and 40 Belgian Blue × Holstein-Friesian (BB) were reared together to 16 months of age. They were then blocked on live weight within breed type and assigned to a pre-experimental slaughter group and to four finishing groups namely: (i) pasture only for 94 days to slaughter, (ii) concentrates ad libitum indoors for 94 days to slaughter, (iii) pasture only for 94 days followed by concentrates ad libitum indoors for 95 days to slaughter, and (iv) concentrates ad libitum indoors for 189 days to slaughter. After slaughter, the 6–10th ribs joint was separated into its component tissues and a sample of m. longissimus was chemically analysed. Mean slaughter weights and carcass weights per day from arrival were 922 and 957 (s.e. 10.6)g, and 476 and 511 (s.e. 6.1) g for AA and BB, respectively. Corresponding carcass weights, kill out proportions, ribs joint fat and muscle proportions, and m. longissimus lipid concentrations were 300 and 322 (s.e. 3.9) kg, 515 and 534 (s.e. 2.4) g/kg, 181 and 121 (s.e. 4.2) g/kg, 605 and 666 (s.e. 4.5) g/kg, and 42 and 25 (s.e. 2.5) g/kg, respectively. Mean daily live weight gains for the finishing treatments as listed were 714, 1539, 999 and 1186 (s.e. 32.0) g, respectively. Corresponding mean daily carcass gains, carcass weights, ribs joint fat proportions and m. longissimus lipid concentrations were 416, 901, 645 and 774 (s.e. 24.6) g, 252, 296, 336 and 359 (s.e. 5.5) kg, 76, 165, 154 and 210 (s.e. 5.9) g/kg, and 13, 34, 32 and 55 (s.e. 3.5) g/kg. It is concluded that BB had heavier carcasses of better conformation with less ribs joint fat and less intramuscular lipid than AA. Neither breed type had acceptably finished carcasses after 94 days on pasture, but both breed types had acceptably finished carcasses following concentrate feeding for 94 days. The carcasses of the BB animals on pasture for 94 days and then finished on concentrates were not acceptably finished and m. longissimus lipid concentration was < 25 g/kg. In contrast, the carcasses of the AA animals finished on concentrates for 189 days were over fat and m. longissimus lipid concentration was > 65 g/kg.  相似文献

Only limited knowledge exists on how to produce high-quality beef carcasses when the cattle also are grazing semi-natural grasslands for nature conservation purposes. The objectives of the two factorially-designed trials were to determine the effects of indoor feed intensity (low vs. high) and slaughter age (18 vs. 22 months) on performance and carcass quality of beef heifers, raised from weaning until slaughter and grazing semi-natural grasslands during growing seasons. In the first trial, 56 Charolais heifers were used of which 28 were fed only grass-clover silage ad libitum (low; CL), and another 28 heifers were fed 2.0 kg of grain daily in addition to the silage (high; CH). In the second trial, 28 Angus heifers were fed grass-clover silage at 80% ad libitum (low; AL), whereas another 28 heifers were fed silage ad libitum (high; AH). According to a national nature conservation score, the grazing pressure on the semi-natural grassland was classified as having been satisfactory to maintain the floristic diversity as no litter had been accumulated onto the sward. From weaning until slaughter, no difference in average daily gains (ADG) was found between the CH and the CL, whereas the AH had higher ADG than the AL (693 vs. 573 g, P < 0.001). Heifers in both trials had higher carcass weights and more fat, Charolais heifers also had better conformation and Angus heifers had higher dressing percentage at 22 months than at 18 months of slaughter age (P < 0.05). In conclusion, carcass traits in both trials were more affected by slaughter age than by feed intensity and desirable grazing effects were achieved on the pasture.  相似文献

Calcium (Ca) requirement increase rapidly by pregnant ewes at late gestation as a result of high fetal growth. Furthermore, Ca deficiency results in poor growth and bone development in growing newborn lambs. The aim of this study was to evaluate the effect of calcium supplementation (Calcium carbonate–CC) and vitamin AD3E injection (75,000 IU/shot) to pregnant Awassi ewes at late gestation (− 45 days prepartum) on their mineral levels and performance of their newborn lambs. Forty pregnant Awassi ewes at late gestation (65 ± 6.1 kg) were selected before parturition (− 45 days; using hormonal sponges for estrus synchronization) and randomly divided to 4 dietary treatments. The treatments were: group 1 Control (1.4% CC); group 2 (2.4% CC); group 3 (1.4% CC + 2 shots vitamin AD3E at − 45 and − 21 days prepartum); group 4 (2.4% CC + 2 shots vitamin AD3E at − 45 and − 21 days prepartum). Blood samples were collected from ewes (− 45, 0 days prepartum: 30 and 60 days postpartum) and lambs (0, 30 and 60 days old). Average milk yield and samples were collected. Body weights of lambs were taken at birth, 30 and 60 days old. Blood serum and milk samples were prepared and analyzed by AAS for Ca, Mg, Co, Mn and Cu concentrations.Calcium concentrations in bloods serum of ewes, 0 and 60 days postpartum, and lambs at weaning (60 days old) from group 4 were significantly (P < 0.05) higher compared to other groups. No significant effect (P > 0.05) of treatment on Co, Mg and Cu in blood serum of ewes and lambs except for Cu concentration in ewes. Moreover, a significant increase (P < 0.01) in milk inorganic% (30 and 60 days samples) in ewes from group 2 when compared with other groups. The average milk yield (AMY) of ewes from group 2 and 4 at late stage of lactation (45–60 days) were significantly higher (P < 0.05) compared to groups 1 and 3. In addition, Ca% in colostrums samples from ewes in groups 2 and 4 were significantly higher (P < 0.01). The average daily gain (ADG) and total body gain for lambs up to weaning (60 days old) were significantly higher (P < 0.05) in groups 1 and 2 compared with the other groups.In conclusion, increasing level of Ca intake in feed of Awassi ewes at late gestation, with or without vitamin AD3E injections, improve the calcium concentration in colostrums and blood serum of ewes and their lambs without negative effect in their health and performance.  相似文献

The ARR allele of the prion protein gene is associated with resistance to classical scrapie, while the ARQ allele is associated with susceptibility. The objective of this study was to estimate the effect, on lamb growth and carcass traits, of replacing an ARQ allele with an ARR allele. Pedigree rams (22 Suffolks, 18 Texels and 18 Charollais) were sourced in pairs, from the same flock (by the same sire where possible), with one member being ARR/ARR and the other being ARQ/ARQ and these rams were progeny tested through single-sire mating in six flocks. Effects of ram genotype on reproductive performance of ewes and on growth and carcass traits of progeny were estimated using mixed model procedures with sire as a random effect. Ram genotype had no effect on litter size at birth or on lamb survival as measured by the number of lambs reared. The differences between the performance of progeny by ARR/ARR and ARQ/ARQ sires provided an estimate of the effect of substituting an ARR allele for an ARQ allele. This allele substitution had no effect on birth weight, growth rate, weight at 5 or 14 weeks, weight or ultrasonic fat depth at 120 days of age or on carcass classification traits (conformation, fatness) for the Suffolk, Texel or Charollais breeds. Substituting an ARR allele for an ARQ allele had a negative effect on ultrasonic muscle depth at 120 days for the progeny of Suffolk rams (P = 0.01) but had a positive effect on ultrasonic muscle depth at 120 days for the progeny of Charollais rams (P = 0.02). The ARR substitution effect was negative for slaughter age in the Suffolk (P < 0.05) and positive for carcass weight in Texel progeny (P < 0.05). The magnitude of these effects was quite small, however, and the overall results support the hypothesis that substituting an ARR allele for an ARQ allele has no important negative effect on lamb growth or carcass traits in any of the breeds examined.  相似文献

This study was carried out to evaluate the effect of feeding a dry fat source to seasonal ewes and does on their postpartum reproductive performance. Forty five multiparous Awassi ewes (LW = 60.1 ± 3.2 kg) and 45 Shami does (LW = 49.6 ± 2.4 kg) were randomly assigned into 3 dietary treatments (n = 15/spp) for 60 days postpartum in a completely randomized design (CRD) set. Females were housed with their offsprings and fed one of three isonitrogenous total mixed rations (TMR) containing 0, 3, or 5% of dry fat. Blood samples were taken individually every 3 days to determine serum progesterone concentration levels starting one week postparturition via radioimmunoassay kits. Progesterone concentrations increased (P < 0.05) in ewes fed 3% fat addition but not for 5% level. Meanwhile, those of doe were not affected by adding supplemental fat. No differences were observed in days to 1st or 2nd postpartum ovulation in both species. Milk production was higher (P < 0.05) for fat treated ewes with no differences between the 2 fat levels, while it was not different among does groups. Final live weight of females in both species was also not affected by fat supplementation. However, live weight changes were higher (P < 0.05) for ewes with no differences between 3% fat level and control groups, and lower in does with increased fat level and with no differences between the 2 treatment groups. Weaning weight and average daily gain of the newborn in both species were not affected by fat supplementation. Litter weight was not different for ewes, but it was higher (P < 0.05) for treated does with no differences between 3% and 5% supplemented fat groups. Therefore, one can conclude that supplemental fat to ewes at 3% during their postpartum period might recover their cyclicity late in the breeding season, but not at high levels (5%), and can improve their milk production and affect live weight change during that period with no effect on weaning weight or litter weight of lambs. Sixty crossbred (Iberian dam × Duroc sire) females, 80 days of age (17.6 ± 0.13 kg body weight, BW), was used to investigate the effect of castration on productive performance, carcass and meat quality and fatty acid profile of backfat (BF). There were 2 treatments (intact females, IF; castrated females, CF) and 5 replicates of 6 pigs per treatment. Pigs were reared indoor under an intensive production system, ovariectomized at 92 days of age (26.1 ± 0.19 kg BW) and slaughtered at 267 days of age (143.6 ± 6.49 kg BW). Meat samples were taken at longissimus dorsi muscle at the level of the last rib and BF samples were taken at the tail insertion. For the entire experiment (18 to 144 kg BW), IF ate less feed and were more efficient than CF (P < 0.05). Also, IF had less carcass yield (P < 0.01) and fat thickness at the gluteus medius muscle (P < 0.05) and tended to have lower backfat depth (P < 0.10) than CF. However, IF had higher shoulder yield at 2 and at 24 h post mortem (P < 0.05) and after trimmed (P < 0.10) than CF. The pH24 of the semimembranosus muscle tended to be lower for IF than for CF. Also, IF had more moisture (710 vs. 691 g/kg) and less fat (66.4 vs. 91.2 g/kg) in the longissimus dorsi muscle than CF (P < 0.05). Meat from IF was more lightness (higher L value; P < 0.01), redder (higher a value; P < 0.001) and had more intensive color (higher c value; P < 0.001) than meat from CF. Backfat was more saturated in CF than in IF (P < 0.05), mostly because of the higher palmitic acid (P < 0.05) and the lower linolenic acid (P < 0.05) content. We conclude that intact females have better productive performance and shoulder yield but less carcass yield than castrated females and that castration does not improve meat quality. Therefore, when animal welfare, cost of castration, productive performance and carcass and meat quality traits are considered, the use of intact females rather than castrated females is recommended for the production of Iberian pigs reared under intensive management systems.  相似文献

Targhee x Hampshire lambs (average BW 24 +/- 1 kg) were used to determine the effect of finishing on concentrate or by grazing ryegrass forage on slaughter weights of 52 kg (N) or 77 kg (H) on tissue accretion and lamb wholesale cutout. When fed to similar slaughter weights, the wholesale cuts of concentrate-fed lambs were heavier (P < 0.05) than the same cuts from forage-fed lambs; however, when expressed as a percentage of side weight, carcasses of forage-fed lambs had a higher (P < 0.001) percentage of leg than concentrate-fed lambs. Increasing slaughter weight from 52 to 77 kg resulted in a 1-kg increase in loin weight for lambs finished on concentrate and a 0.60-kg increase for lambs finished on forage (diet x slaughter weight, P < 0.03); however, the increased loin weight for lambs finished on concentrate was due largely to increased fat deposition. For lambs slaughtered at 77 kg, those finished on forage had more lean mass in the leg, loin, rack, and shoulder than those finished on concentrate, but lean mass in these cuts did not differ between diets for lambs slaughtered at 52 kg (diet x slaughter weight, P < 0.01). At the normal slaughter weight (52 kg), concentrate-fed lambs had 50% more dissectible fat than forage-fed lambs, whereas at the heavy slaughter weight, a 79% greater amount of dissectible fat was observed for concentrate- vs. forage-fed lambs (diet x slaughter weight, P < 0.001). Lean and fat accretion rates were higher (P < 0.001) for concentrate-fed lambs than for forage-fed lambs. The lean-to-fat ratio of forage-fed lambs was higher (P < 0.001) than that of concentrate-fed lambs; however, forage finishing decreased accretion rates of all tissues compared with concentrate feeding, and these differences between forage and concentrate feeding were magnified at heavier slaughter weights.  相似文献

The objective of this study was to determine the effects of initial live weight, level of grain feeding, and length of finishing period on weight gain and carcass traits of dairy steers that had grazed semi-natural grasslands. Steers were subdivided by initial live weight (low vs. high) and were fed two levels of grain (0.5% vs. 1.0% of live weight day− 1) during three different lengths of finishing period (3, 5 vs. 8 months). In total, 192 steers, initially 18 to 21 months of age, were fed grass–clover silage ad libitum. Steers fed high levels of grain had a higher dietary feed intake than steers fed low levels of grain (10.5 vs. 9.7 kg DM day− 1; P < 0.001). Carcass weight gain (630 g) was highest and feed conversion (169 MJ metabolizable energy per kg carcass gain) was best in steers with 5 months of finishing. Steers with low initial weights had a higher daily carcass weight gain than initially heavy steers (614 vs. 571 g, P = 0.013). A high initial weight and a long finishing period resulted in heavier and fatter carcasses with a higher conformation score and lower proportions of valuable retail cuts and bone. In conclusion, high-quality carcasses can be produced when finishing dairy steers that previously have grazed semi-natural grasslands. Performance and carcass traits were more effected by initial weight and length of finishing period than by level of grain feeding.  相似文献

The effect of feed withdrawal for 48 h, prior to initiation of the finishing (fattening) period (75 d) on carcass marbling fat was studied in 120 European × British cross-bred heifers with an average weight of 585 ± 39 kg. Heifers were randomized in a 2 × 2 factorial design experiment with two dietary management treatments, where half the heifers were provided the feed components of steam rolled barley and barley silage either free choice or as a total mixed ration (TMR) containing 87% steam rolled barley and 13% barley silage with ad libitum vitamins and minerals via salt blocks for all animals. Within each dietary management treatment, 30 heifers were denied feed (water was available) for 48 h prior to the two week adaptation to the high grain diet preceding the 75 d finishing period. At the end of the 48 h feed denial blood samples were collected from the jugular vein prior to feeding for determination of glucose and insulin concentrations, which indicated that 48 h feed withdrawal consistently decreased (P = 0.0001) plasma concentrations of both glucose and insulin but the ratios of the concentrations of glucose to insulin were not affected. At slaughter samples of subcutaneous fat from the brisket (BF) and skirt muscle (pars costalis diaphragmatis; PCD) were procured for determination of chemical fat content, fat dissected from the muscle and for enumeration of adipocytes, less than 35 μm in diameter and to determine the average cell size in the dissected fat and from the BF by flow-cytometry of adipocytes fixed in osmium tetroxide. The carcass characteristics were also obtained. Although no differences due feed withdrawal for 48 h were evident for carcass weight, percent lean (saleable) meat yield, rib eye area, average fat cover, fat content of PCD or BF, the US marbling score was increased (P = 0.048) and the amount of dissected fat from the muscle tended to be higher (P = 0.107), thus 81% of the carcasses graded “US Choice” or “Canada AAA,” or displayed at least a “small” amount of intramuscular fat as compared (P = 0.0807) to 68% of the heifers not denied feed. Based on more than three years of weekly prices of carcasses that graded “Canada AAA” and “Canada AA,” these experimental results suggested that the expected price of a finished heifer could increase by $4.61 Canadian if a 48 h feed withdrawal was imposed prior to initiation of the finishing phase. Although significant differences in adipocyte numbers due to a single time 48 h feed withdrawal prior to initiation of the finishing phase were not detected, the carcass quality factors were affected leading to an odds ratio of 1.84 times in favour of cattle carcasses to grade “Canada AAA” than if fed continuously.  相似文献

Intrauterine growth restriction (IUGR) is often observed in one of the fetuses carried by well-fed prolific ewes. This condition is the result of an insufficient placental size to cover the nutritional needs of the fetus during the near exponential growth phase of the last trimester. After birth, these IUGR offspring have an elevated appetite and lower maintenance energy requirements, suggesting dysregulation of homeostatic systems governing energy metabolism. It is also unknown whether the consequent increase in fatness occurs similarly in both visceral and carcass fractions. To address these questions, lambs differing in birth size (BS, IUGR vs. Normal, 2.6 ± 0.05 vs. 4.2 ± 0.07 kg, P < 0.001) were offered unlimited amounts of a low fat [LF; 22% of dry matter (DM)] or a high fat (HF; 38% of DM) milk replacer and slaughtered on day 14 of postnatal age (n = 7 to 8 for each BS × Diet); a second group of IUGR lambs (n = 3 for each diet) was slaughtered when they reached 8.5 kg, corresponding to the weight of Normal lambs on day 14. When normalized to body weight (BW), the DM and energy intake of IUGR lambs were higher than those of Normal lambs over the first 14 d of life (BS, P < 0.01), but contrary to expectations, the HF diet did not exacerbate these effects of the IUGR condition. Intrauterine growth restricted lambs had increased viscera fat with both diets (BS and Diet, P < 0.05) but increased carcass fat only with the LF diet (BS × Diet, P = 0.08); the fatness promoting effect of the IUGR condition was increased in both body fractions when lamb groups were compared at the fixed BW of 8.5 kg. A subset of metabolic hormones was analyzed, including the metabolic rate-setting hormone thyroxine (T4) and its possible positive regulator leptin. Plasma T4 was lower in IUGR than in Normal lambs at birth (P < 0.05) but then disappeared by day 7 of postnatal life (BS × Day, P < 0.01). On the other hand, the HF diet had no effect on plasma T4 over the first 3 d but caused an increase, irrespective of BS by day 11 (Diet × Day, P < 0.001). Plasma leptin increased with dietary fat and time (P < 0.06) but bore no relation to the effects of BS or Diet on plasma T4. These data show that IUGR and Normal lambs are similarly unable to adjust caloric intake in early life and that the fatness promoting effects of the IUGR condition are more pronounced in the viscera than in the carcass. These data also reveal dynamic regulation of plasma T4 by BS and Diet in neonatal lambs.  相似文献

The objective of this study was to evaluate the influence of different feed withdrawal and lairage times prior to slaughter on the gastrointestinal tract (GIT) weight and on the fermentation pattern and numbers of Enterobacteriaceae in the cecum of pigs. A total of 72 finishing pigs (6 pens, 12 animals each) were included in the study and were sent to the slaughterhouse on three consecutive days. On each day pigs from two pens were deprived of feed for either 2 or 12 h before leaving the farm. Pigs from each of the two pens were divided in sub-groups (4 pigs each) on the moment of loading onto the truck and followed the same distribution at the slaughterhouse. Once there, each sub-group corresponding to the same feed withdrawal time was held in different holding pens for 0, 5 or 10 h before slaughter. The weight of the gastro-intestinal tract (GIT) was determined and cecal content was collected to evaluate pH, short chain fatty acids (SCFA) and ammonia (NH3) concentrations as well as lactobacilli and Enterobacteriaceae numbers. Total GIT weight decreased as feed withdrawal (P < 0.0001) and lairage time (P < 0.001) increased within a range between 6.69 and 4.59 kg. Cecal pH increased with feed withdrawal (P < 0.0001) and lairage time (P = 0.0001) (ranging from 5.79 to 6.79) in parallel to a decrease in the total SCFA concentration (P < 0.005) (from 211 to 100 mM). The percentages of acetic and propionic acid were not modified by the experimental treatments but significant decreases were registered in the percentage of butyric acid with the increased times of both withdrawal (P < 0.0001) and lairage (P < 0.005). The percentage of valeric and branched SCFA and also NH3 concentration showed an increase with withdrawal (P < 0.005, P < 0.0001 and P < 0.005 respectively) and lairage (P < 0.005, P < 0.0001 and P < 0.001 respectively). Lactobacilli numbers decreased as lairage time increased (from 9.97 to 8.63 log 16S rRNA gene copies/g FM; P < 0.05) and Enterobacteriaceae numbers increased with both, feed withdrawal (P < 0.05) and lairage (P < 0.05) (ranging from 8.53 to 9.95 log 16S rRNA gene copies/g FM).The previous to slaughter increase in feed withdrawal and lairage times decreased the GIT weight but involved changes in the gut microbial ecosystem caused through changes in the fermentation pattern that lead to the increase of Enterobacteriaceae numbers. This increase could represent a higher risk of carcass contamination by the enteropathogens of this group such as Salmonella. However this potential risk should be further investigated.  相似文献
