Feedlot traits, carcass traits and distribution of commercial cuts of crossbred intact male progeny (n = 556) from young and mature Hereford, Red Poll, Hereford X Red Poll, Red Poll X Hereford, Angus X Hereford, Angus X Charolais, Brahman X Hereford and Brahman X Angus dams were evaluated. First-calf heifers were bred to Red Angus bulls; Santa Gertrudis sires were used for each cow's second and third breeding seasons. Calves from these young dams were slaughtered at 13 mo. Calves of mature dams were all sired by Limousin bulls and slaughtered at 12 mo. Dam breed was a major source of variation in most bull traits. Progeny of Brahman-cross dams were inferior (P less than .01) in daily gain, final weight, carcass weight and in edible cuts/day of age compared with progeny from Bos taurus dams. Intact male progeny of Angus X Charolais dams ranked highest in longissimus area, cutability, and edible cuts/day of age. The range of dam breed means in percentage of steak, roast, bone-in cuts (chuck short ribs and back ribs), short plate and thin cuts, and lean trim was just over 1%. Greater variation among dam breeds existed in fat measurements. Analyses in which Hereford-Red Poll diallel data for young dams and mature dams were combined showed positive maternal heterosis for dressing percentage (P less than .05), carcass weight (P less than .05), carcass weight/day of age (P less than .05), estimated carcass fat (P less than .05), fat thickness (P less than .01) and marbling score (P less than .01). Reciprocal effects were inconsequential. Results illustrate the importance of dam breed-type effects in formulating breeding strategies for commercial beef herds.  相似文献

Data collected from steer and bull progeny, fed to a constant final feedlot weight over 11 yr, were used to estimate heterosis in post-weaning feedlot growth and carcass traits in two-way and three-way rotational crossing systems and a breed composite from crossing Hereford, Angus and Charolais breeds. Steer and bull progeny from matings of beef x Brown Swiss-cross sires and dams also were compared with the straight beef breeds and beef crosses. Growth traits evaluated were initial weight on test, 112-d weight, total feedlot average daily gain and total days from initial to final weight. Carcass traits included hot carcass weight, dressing percentage, rib eye area, 12th-rib fat thickness, kidney, pelvic and heart fat, yield grade and marbling score. Heterosis estimates for calves of all crossing systems were significant for initial and 112-d weight and for saving of days in the feedlot, but not for average daily feedlot gain. Heterosis estimates were small and nonsignificant for most carcass traits except for fat traits in specific crosses. Males from Hereford and Angus sires mated to Angus x Hereford dams had higher (P less than .10) backfat than did the parental average. Male progeny from Charolais ranked higher (P less than .10 to P less than .01) than calves from Hereford and Angus sires for most growth traits. Progeny from Charolais sires were more desirable (P less than .10 to P less than .01) for traits related to cutability, but they had less (P less than .05 to P less than .01) marbling than calves of Angus sires.(ABSTRACT TRUNCATED AT 250 WORDS)  相似文献

Heifer and steer progeny of 2-yr-old first-cross (F1) heifers and 3- to 6-yr-old F1 cows, from Hereford dams and five sire breeds, were evaluated for postweaning feedlot growth and carcass composition. Breeds of sire of dam were Angus (A), Red Poll (RP), Tarentaise (T), Simmental (Sm), and Pinzgauer (P). Calves from 2-yr-old heifers were sired by Shorthorn, and calves from 3- to 6-yr-old dams were sired by Charolais. Breed of sire of dam was significant (P less than .05 to P less than .01) for total gain and final weight for female progeny from 2-yr-old dams. At all weights, Sm, P, and T ranked above A and RP. Progeny of A, P, Sm, and T F1 2-yr-old dams were not significantly different but were higher (P less than .05) than RP heifers in total feedlot gain. Breed of sire of dam was significant (P less than .05) for carcass weight and longissimus muscle area; T ranked highest and RP lowest. Breed was not significant for any growth traits of steer progeny of 2-yr-old dams. Breed was significant for marbling score; A ranked highest and exceeded (P less than .01) both RP and Sm steers. Breed was significant (P less than .05) for most growth traits in the heifer progeny of the 3- to 6-yr-old dams bred to Charolais sires. Heifer calves of the Sm group were heavier (P less than .05) than all other groups for most weights and total gain. For total gain, P and T were intermediate and A and RP lowest. For heifer carcass traits from 3- to 6-yr-old dams, breed was significant (P less than .05 to P less than .01) for carcass weight, longissimus muscle area, percentage of cutability, and estimated kidney, heart, and pelvic fat. Heifers from Sm-sired dams were heavier (P less than .05) than those from all other groups but ranked second to heifers from P for percentage of cutability. Marbling scores of RP heifer carcasses ranked highest of all groups. To evaluate effects of previous forage systems on feedlot performance, yearling Hereford steers (average initial weight of 249 kg) were grazed on tall fescue (TF), smooth bromegrass-red clover (BG-RC) or orchardgrass-red clover (OG-RC) pastures before finishing. Serial slaughter was utilized during the first 2 yr of this study to determine changes in carcass characteristics throughout finishing, while steers were slaughtered at approximately 29% body fat during the third year. Steers grazing TF entered the feedlot at lighter weights and maintained lighter weights throughout finishing (P less than .05) even though dry matter intakes and feed conversions were similar (P greater than .05) among treatments. Steers that previously grazed TF had less (P less than .05) body fat, body protein, fat thickness and marbling, smaller (P less than .05) ribeye areas and lower (P less than .05) USDA yield and quality grades than than those that grazed BG-RC and OG-RC. However, linear contrasts indicated that steers grazing TF were compensating in ribeye area, marbling and quality grade as days in feedlot increased. This was confirmed in the third-year study, since carcass characteristics were similar among all steers. During the third year, linear and quadratic contrasts indicated that steers that grazed TF partially compensated in body protein. As days in feedlot increased, live and hot carcass weights, body fat, fat thickness, kidney, pelvic and heart fat, marbling, and USDA yield and quality grades increased (P less than .05), while ribeye area and body protein plateaued. Although carcass characteristics were similar among treatments, steers backgrounded on TF entered the feedlot at lighter weights, and partially compensated in weight after 134 d of finishing.  相似文献

Evaluations of steer and heifer progeny from a diallel mating design of Simmental, Limousin, Polled Hereford and Brahman beef cattle over 5 yr are presented. Traits evaluated included final weight, hot carcass weight, ribeye area, 12th rib fat thickness, marbling score, yield grade, dressing percentage and percentage of kidney, pelvic and heart fat. Progeny of Simmental sires were heavier at slaughter than those with Brahman sires (P less than .05), but no differences were found for carcass weight. Dressing percentage was higher for Limousin crosses compared with progeny of other sire breeds (P less than .05). Similar results were found for dam breeds, except that progeny of Limousin dams had heavier carcasses with a higher dressing percentage (P less than .05) than Brahman crosses. Crosses of Limousin and Simmental had larger ribeye areas (P less than .05) compared with calves of the other breeds. Progeny of Polled Hereford dams had higher marbling scores and were fatter than progeny of dams of other breeds (P less than .05). Heterosis estimates were significant for all Brahman crosses for final weight, carcass weight and ribeye area, but these contrasts were negligible for other traits. Estimates of general combining ability were positive and significant for Simmental for final weight, carcass weight, ribeye area and marbling score and were significant and negative for Limousin for final weight, fat thickness and yield grade. Effects of repetitive use of anabolic implants on beef carcass quality, tenderness, and consumer ratings for palatability were investigated using crossbred steer calves (n = 550). Steers from five ranches were randomly allocated to one of 10 different lifetime implant strategies or to a nonimplanted control group. Cattle were implanted at some or all of five phases of production (branding, weaning, backgrounding, feedlot entry, or reimplant time). Carcasses from the control group had higher (P < 0.05) marbling scores than carcasses from steers in all other treatment groups. Implanting steers at branding, weaning, or backgrounding vs. not implanting steers at these production stages did not affect (P > 0.05) marbling scores. Steers implanted twice during their lifetime produced carcasses with higher (P < 0.05) marbling scores than did steers receiving a total of four or five implants. Steaks obtained from carcasses in the control group had lower (P < 0.05) shear force values and were rated by consumers as more desirable (P < 0.05) for tenderness like/dislike than steaks obtained from carcasses in all other treatment groups. Implanting steers at branding or weaning production stages did not affect (P > 0.05) steak shear force values, consumer ratings for like/dislike of steak tenderness, or percentage of consumers rating overall eating quality of steaks as satisfactory. Implanting steers at backgrounding vs. not implanting steers at this production stage increased (P < 0.05) steak shear force values, but did not influence (P > 0.05) consumer ratings for like/dislike of steak tenderness or percentage of consumers rating overall eating quality of steaks as satisfactory. Steaks from nonimplanted steers were rated as more desirable (P < 0.05) for overall eating quality than steaks from steers implanted two, three, four, or five times. Use of implants increased (P < 0.05) average daily gain by 11.8 to 20.5% from weaning to harvest compared with nonimplanted controls. Implant strategies increased (P < 0.05) hot carcass weight of steers by 8.9 to 13.8% compared with the control group. Use of implants also increased (P < 0.05) longissimus muscle area and decreased (P < 0.05) estimated percentages of kidney/pelvic/heart fat, but did not affect (P > 0.05) dressing percentage or adjusted fat thickness. Our findings suggest that beef quality, palatability, and production characteristics are influenced by lifetime implant protocols.  相似文献

Yield, butterfat, protein, lactose and solids-not-fat of milk from mature dams (n = 128) representing eight Bos taurus and Bos indicus X Bos taurus breed types were evaluated approximately 60, 105 and 150 d postpartum. Breed type was a significant source of variation in milk yield at each stage of lactation. Average 24-h milk yields (kg) were: Hereford, 7.3; Red Poll, 9.1; Hereford X Red Poll, 9.1; Red Poll X Hereford, 9.1; Angus X Hereford, 8.6; Angus X Charolais, 9.3; Brahman X Hereford, 7.3 and Brahman X Angus, 8.3. Daily yields of Brahman X Angus dams increased as lactation progressed, while production levels of other breed types remained approximately the same or declined. Hereford-Red Poll crosses showed significant heterosis in 24-h milk production and component yields at 150 d. Breed type effects also were significant for lactose yield throughout lactation. Sex of calf influenced (P less than .05) milk yield at 60 and 105 d postpartum and yield of protein and solids-not-fat at 105 d. Mastitis caused a reduction (P less than .01) in percentage of lactose but had no effect on milk yield. Residual correlations between yield traits and preweaning average daily gain were all positive and significant, with values ranging from .22 to .45. Breed type was a major source of variation in milk traits of beef-type Bos taurus and Bos indicus X Bos taurus dams.  相似文献

A 2(3) factorial arrangement of treatments was utilized to determine effects of postweaning zeranol implantation, breed (Angus vs Limousin) and castration (bull vs steer) on growth, behavior and carcass traits. An initial slaughter group was used to account for breed differences in composition and to determine fat and lean growth in the 9-10-11th rib section (NTE). The remaining cattle were fed a finishing diet to a fat end point of .76 cm, as determined by a backfat probe. Control bulls outgained (P less than .01) control steers both to the first kill date and over the entire test and did not require significantly more time to reach the fat end point. The implant did not influence gain in bulls but did increase gain in steers. Angus and Limousins were similar in growth rate for the first 126 d before the first slaughter date. Limousins required more (P less than .01) time to reach the fat end point. Bulls and Limousins produced heavier (P less than .01) carcasses and larger rib eyes (P less than .05; bulls; P less than .01; Limousins). Steers and Angus had higher (P less than .01) marbling scores and lower bone maturity. Implanting decreased (P less than .05) marbling and increased carcass maturity. Small but significant shifts in carcass wholesale cut weight distribution were found between breed and sex condition groups. Bulls and Limousins had greater lean growth in the NTE. Bulls and steers were similar in fat growth, but Angus exceeded Limousin in this trait. Two hundred crossbred cattle (Bos indicus x Bos taurus) were supplemented with 2% Tasco (Ascophyllum nodosum) in a commercial finishing facility to evaluate marbling score, USDA quality grade, sensory traits, and retail display shelf life. Treatment animals (n = 100) received a steam-rolled corn (Zea mays)-based diet containing 2% Tasco meal (DM basis), for 14 d beginning at d 45 of the finishing period and again 14 d before slaughter. Control animals (n = 100) received a steam-rolled corn (Zea mays)-based diet without Tasco at identical feeding periods. Carcasses from Tasco-fed cattle exhibited greater marbling scores (P = 0.003) than controls. There were no treatment effects (P > 0.05) on sensory, shear, or purge attributes of striploin or inside round steaks with the exception of inside round steaks from Tasco animals having a greater initial tenderness (P = 0.03) and lower off-flavor score (P = 0.002) than control steaks. The LM samples from Tasco-fed cattle had a greater percentage of ether extractable fat (P = 0.001) and lower percentage of protein (P = 0.001) than controls. Inside round samples from treated animals exhibited a greater percentage of moisture (P = 0.03) than control steaks. Visual lean color of striploin steaks was not affected by Tasco supplementation (P = 0.26); however, steaks from Tasco-treated animals were more uniform and had less discoloration and browning than those from controls (P = 0.005, 0.04, and 0.05, respectively). Inside round visual scores and instrument values reflected similar treatment responses (P < 0.05), with a majority of the effects on muscle redness (CIE a*, hue angle) and measures of discoloration. Tasco steaks were generally more red and less discolored during extended postmortem aging and retail exposure (P < 0.05). The results from this study indicate that short-term supplementation of 2% Tasco meal in feedlot cattle increases carcass quality and prolonged retail shelf life.  相似文献

Feedlot steers (n = 36) from three biological types (Bos indicus, Bos taurus-Continental, and Bos taurus-English) were used to determine the Ca, P, and vitamin D3 status of feedlot cattle. The USDA yield and quality grade traits were measured at slaughter, and the concentrations of vitamin D3 (VITD) and the metabolites 25-hydroxyvitamin D3 (25-OH D) and 1,25-dihydroxyvitamin D3 (1,25-(OH)2 D) were determined in LM, liver, kidney, and plasma. Plasma and muscle Ca and P concentrations also were determined. Biological type of cattle affected a number of carcass traits. Carcasses from Bos taurus-English cattle had more marbling, resulting in higher quality grades (P < 0.05). Carcasses from Bos taurus-Continental cattle had lower calculated yield grades (P < 0.05) than did carcasses from cattle in the other biological types. In general, differences in carcass traits resulting from biological type were consistent with other reports. Plasma and LM Ca and P concentrations were not affected (P = 0.06) by biological type of cattle, indicating that Ca and P homeostasis is a conserved trait across the different types of cattle. Plasma VITD and 25-OH D concentrations were not affected (P = 0.41) by biological type, whereas plasma 1,25-(OH)2 D concentration was lower (P < 0.05) in Bos taurus-English cattle than in Bos taurus-Continental and Bos indicus cattle. Liver VITD and 25-OH D were not affected by biological type (P = 0.76), but liver 1,25-(OH)2 D concentration was greater (P < 0.05) in Bos indicus cattle than in Bos taurus-Continental cattle. Kidney vitamin D metabolite concentrations were not affected by biological type of cattle (P = 0.21). Muscle VITD concentration was greater (P < 0.05) in Bos taurus-English cattle than in the other two biological types, and muscle 25-OH D concentrations were greater (P < 0.05) in Bos taurus-English cattle than in Bos indicus cattle. Muscle 1,25-(OH)2 D concentration was less (P < 0.05) in the Bos taurus-Continental cattle than in the other two biological types. Cooking eliminated vitamin D metabolite differences among the biological types. Our results suggest that Bos indicus cattle had greater 1,25-(OH)2 D (the biologically active form) in tissues, and greater 1,25-(OH)2 D plasma concentrations than Bos taurus cattle. Thus, the need for VITD supplementation and optimal levels of Ca and P in feedlot diets might differ between Bos indicus and Bos taurus cattle.  相似文献

Angus, Boran and Red Poll sires were mated to Ankole, Boran and small East African Zebu (Zebu) females to produce the cows characterized in this study, which produced calves by Friesian, Brown Swiss, Simmental, Boran and Red Poll sires. Individual traits included cow parturition weight, cow weight at weaning, cow mean weight and cow weight change from parturition to weaning; maternal traits included calf crop born percentage, preweaning viability percentage, overall viability percentage, birth weight, weaning weight, weight at 12, 18 and 24 mo and calf weight weaned per cow exposed to breeding (productivity index). Cows by Angus and Red Poll sires significantly exceeded cows by Boran sires (all cows in this comparison had Ankole and Zebu dams) in weaning weight of progeny and in cow weight at parturition and at weaning. Cows by Red Poll sires significantly exceeded cows by Boran sires in birth weight of progeny. Progeny of cows by Boran sires significantly exceeded progeny of cows by Angus and Red Poll sires in 24-mo weight. Cows by Angus and Red Poll sires did not differ (P greater than .05) in any of the traits analyzed. Cows with Ankole and Boran dams significantly exceeded cows with Zebu dams (all cows in this comparison had Angus and Red Poll sires) in progeny weight at birth, 18 mo and 24 mo and in cow weight at parturition and at weaning. Cows with Boran dams significantly exceeded cows with Zebu dams in weaning and 12-mo weight of progeny and significantly exceeded cows with Ankole dams in weaning weight of progeny. The significantly heavier weaning weight and significantly lighter 24-mo weight of the 3/4 Bos taurus progeny of cows with Angus and Red Poll sires relative to the 1/2 Bos taurus progeny of cows with Boran sires suggest that cattle that are 1/2 Bos taurus breed composition have greater general adaptation than cattle with 3/4 Bos taurus breed composition in the postweaning nutritive and climatic environment under which this experiment was conducted. Significantly heavier weights of Angus and Red Poll crossbred cows relative to Boran crossbred cows (all breeds crossed on Ankole and Zebu cows) indicate that the two Bos taurus breeds exceed the Boran (Bos indicus) breed in additive direct genetic effects for size when they have general adaptation to the environment.  相似文献

Data from 403 Polled Hereford-sired calves from Angus, Brahman, and reciprocal-cross cows were used to evaluate the effects of preweaning forage environment on postweaning performance. Calves were spring-born in 1991 to 1994 and managed on either endophyte-infected tall fescue (E+) or common bermudagrass (BG) during the preweaning phase. After weaning, calves were shipped to the Grazinglands Research Laboratory, El Reno, OK and stratified to one of two winter stocker treatments by breed and preweaning forage; stocker treatments were winter wheat pasture (WW) or native range plus supplemental CP (NR). Each stocker treatment was terminated in March, calves grazed cool-season grasses, and calves were then moved to a feedlot phase in June. In the feedlot phase, calves were fed to approximately 10 mm fat over the 12th rib and averaged approximately 115 d on feed. When finished, calves were weighed and shipped to Amarillo, TX for slaughter. Averaged over calf breed group, calves from E+ gained faster during the stocker phase (P<.10), had lighter starting and finished weights on feed (P< .01), lighter carcass weights (P<.01), and smaller longissimus muscle areas (P<.05) than calves from BG. Calves from E+ were similar to calves from BG in feedlot ADG, percentage kidney, heart, and pelvic fat, fat thickness over 12th rib, yield grade, marbling score, and dressing percentage. Maternal heterosis was larger in calves from E+ for starting weight on feed (P<.01), finished weight (P<.10), and carcass weight (P<.16). These data suggest that few carryover effects from tall fescue preweaning environments exist, other than lighter, but acceptable, weights through slaughter. These data further suggest that the tolerance to E+ in calves from reciprocal-cross cows, expressed in weaning weights, moderated postweaning weight differences between E+ and BG compared to similar comparisons in calves from purebred cows.  相似文献

Steers (n = 165) of known percentage Brahman (B) and Angus (A) breeding were used to study effects of breed group (A, 3/4A:1/4B, 1/2A:1/2B, 1/4A:3/4B), age-season of feeding (calves fed during the cool season vs yearlings fed during the warm season) and slaughter end point (less than .90, 1.0 to 1.15, 1.27 to 1.40, greater than or equal to 1.5 cm of adjusted fat over the ribeye) on feedlot performance and carcass characteristics. The 1/2B and 3/4B steers had heavier (P less than .05) initial and final feedlot weights than the A and 1/4B steers and higher (P less than .05) unshrunk ADG than the A steers did. Breed types did not differ for feed efficiency. Yearling steers fed in the warm season had higher (P less than .05) unshrunk ADG than calves fed in the cool season, but ADG calculated on an empty-rumen basis did not differ between the two age-seasons of feeding. Calves fed in the cool season were more efficient (P less than .05) than yearlings fed in the warm season when efficiency was expressed on an empty-rumen basis; however, on a live weight basis there was no difference in feed efficiency. No breed group by age-season of feeding interactions on performance were detected. Slaughter end point did not significantly affect feed efficiency on an empty-rumen basis. The 1/2B and 3/4B steers had smaller ribeye areas (REA) per 100 kg hot carcass and lower marbling scores than the 1/4B and A steers. Yearlings fed in the warm season produced heavier carcasses (P less than .05) than calves fed in the cool season. As s.c. fat thickness at slaughter increased, hot carcass weight and numerical yield grade increased, whereas REA per 100 kg of hot carcass decreased. Leptin as a predictor of carcass composition in beef cattle   总被引:8,自引:0,他引:8  
Our objective was to determine if serum concentrations of leptin could be used to predict carcass composition and merit in feedlot finished cattle. Two different groups of crossbred Bos taurus steers and heifers were managed under feedlot conditions near Miles City, MT. The first group consisted of 88 1/2 Red Angus, 1/4 Charolais, and 1/4 Tarentaise composite gene combination steers (CGC) harvested at the ConAgra processing facility in Greeley, CO. The second group (Lean Beef Project; LB) consisted of 91 F2 steers and heifers born to Limousin, Hereford, or Piedmontese by CGC F1 cows crossed to F1 bulls of similar breed composition and harvested at a local processing facility in Miles City, MT. Blood samples were collected approximately 24 h before harvest (CGC) or approximately 3 d before and at harvest (LB). No differences in serum concentrations of leptin were detected (P > 0.10) between Hereford, Limousin, or Piedmontese F2 calves nor between LB steers and heifers. Positive correlations (P < 0.01) existed between serum leptin and marbling score (r = 0.35 and 0.50), fat depth measured between the 12th and 13th rib (r = 0.34 and 0.46), kidney, pelvic, and heart fat (KPH) (r = 0.42 and 0.46), and quality grade (r = 0.36 and 0.49) in CGC and LB cattle, respectively. Serum leptin was also positively correlated with calculated yield grade for CGC steers (r = 0. 19; P = 0. 10) and LB cattle (r = 0.52; P < 0.01). Longissimus area was not correlated with serum leptin in CGC steers (r = 0.12; P > 0.10). However, a negative correlation existed between longissimus area and serum leptin in the LB cattle (r = -0.45; P < 0.01). Serum concentrations of leptin were significantly associated with carcass composition (marbling, back fat depth, and KPH fat) and quality grade in both groups of cattle studied and may provide an additional indicator of fat content in feedlot cattle.  相似文献

Nonpregnant F1 crossbred cows, progeny of either Hereford (H) or Angus (A) dams and sired by Brahman (Bm), Sahiwal (Sw), Pinzgauer (Pz), H, or A sires, were fed to maintain initial weight while rearing Charolais (C)-sired progeny for a period of 126 d in drylot commencing at about 48 d postpartum. Cow-calf pairs were assigned to equalize cow age, calf sex, and breed of cow's dam among three replicate pens of approximately 12 pairs each. Cows and calves were weighed every 2 wk and feed intake was adjusted to minimize change in cow weight. Metabolizable energy (ME) consumption for zero cow weight change was estimated by regression. Milk production was estimated by weight-suckle-weigh at 58, 85, 125, and 170 d of lactation. Calf gain (GAIN, kg) relative to cow weight (CWT1, kg) was higher (P less than .01) for calves from Bm-X (139.5/585) and Sw-X (132.2/534) than for calves from Pz-X (127.2/552) and HA-X (116.9/547) cows. Estimated mean daily production of milk was 7.40, 7.15, 7.28, and 6.37 kg for the Bm-X, Sw-X, Pz-X, and HA-X, respectively. Total cow ME intake (TMEcow) for breed groups ranked (P less than .05) with cow size and milk production, and calf creep-feed intake (FMEcalf) was inversely related to estimated milk intake. Proportion of total feed ME (TMEcow+calf) consumed by calves was higher (P less than .05) for HA-X cows (18%) than for the others (14%). Total efficiency of calf gain in weight (GAIN/TMEcow+calf) was 11% greater (P less than .05) for crossbred cows of Bos indicus X Bos taurus (Bm-X, Sw-X) than for Bos taurus X Bos taurus (Pz-X, HA-X) cows (35 vs 32 g/Mcal) in the 126-d lactation period.  相似文献

The objectives of this work were to estimate heterosis and breed genetic effects for carcass quantity, quality, and palatability traits of steers (Bos spp.) produced from matings of Romosinuano, Brahman, and Angus cattle. Steers (n = 464) were weaned at 7 mo of age and transported to the Southern Great Plains where they grazed winter wheat for 6 mo and were then fed a finishing diet until serial slaughter after different days on feed (average 130 d). Carcass quality and quantity traits were measured; steaks (aged 7 d) were obtained for palatability evaluation. Heterosis was detected for BW, HCW, dressing percentage, LM area, and yield grade for all pairs of breeds. Generally, Romosinuano-Angus heterosis estimates were smallest, Romosinuano-Brahman estimates were intermediate, and Brahman-Angus heterosis estimates were largest. The direct Romosinuano effect was to decrease (P < 0.05) BW (-67 ± 16 kg), HCW (-48 ± 10 kg), dressing percentage (-1.4 ± 0.5 units), 12th rib fat thickness (-5.2 ± 0.8 mm), and yield grade (-0.9 ± 0.1), and to increase LM area per 100 kg HCW (3.6 ± 0.3 cm(2)/100 kg). Significant Brahman direct effects were detected for BW (34 ± 17 kg), HCW (29 ± 10 kg), dressing percentage (1.6 ± 0.6 %), LM area per 100 kg HCW (-3.3 ± 0.4 cm(2)/100 kg), and yield grade (0.6 ± 0.1). Significant Angus direct effects were to increase 12th rib fat thickness (3.8 ± 1 mm). Among sire breed means, Romosinuano had reduced (P = 0.002) marbling score (393 ± 9) than Angus, but greater mean sensory tenderness scores (5.8 ± 0.1), and reduced percentage Standard carcasses (10 ± 2%) than Brahman (P < 0.002). Angus sire breed means for marbling score (475 ± 10), overall tenderness (5.8 ± 0.1), and percentage Choice carcasses (75 ± 5%) were greater (P < 0.05) than Brahman sire breed means (360 ± 11, 5.4 ± 0.1, 31 ± 5%). From consideration only of characteristics of the end product of beef production, Romosinuano did not provide a clearly superior alternative to Brahman for U.S. producers, as they had some quality and palatability advantages relative to Brahman, but at lighter HCW.  相似文献

The effects on anabolic steroid implantation on feedlot performance and carcass composition and quality were examined in control (CNTRL), ovariectomized (OVX) or melengestrol acetate-fed (MGA) beef heifers or heifers actively immunized against GnRH (Anti-GnRH). Heifers (n = 112) were assigned randomly to a 2 x 4 factorial experiment. The two classes were made up of heifers not implanted and those implanted with Synovex-H. The four treatments were 1) CNTRL, 2) MGA, 3) OVX and 4) Anti-GnRH. Heifers were housed in individual pens and fed a high-energy diet for the 4-mo study. Synovex-H increased final live weight (P less than .005), carcass weight (P less than .005), ADG (P less than .0001) and feed efficiency (P less than .005) but did not alter carcass quality and yield grade (P greater than .05). Synovex-H increased deposition of protein (P less than .0001) and reduced deposition of fat (P less than .0001). Oral administration of MGA had no significant effect on feedlot performance or carcass quality. For heifers not implanted, active immunization against GnRH, but not ovariectomy, depressed ADG (P less than .05) and increased fat deposition (P less than .05) while reducing protein deposition (P less than .05). These effects of active immunization were reversed by concurrent administration of Synovex-H. Feedlot performance and carcass composition of heifers were improved by administration of anabolic steroids. When heifers were housed singly, neither ovariectomy, active immunization against GnRH nor oral administration of MGA improved feedlot performance of heifers implanted with Synovex-H.  相似文献

One hundred thirty-one pigs representing seven different breed groups (Minnesota No. 1 [M], Pietrain [P], Yorkshire [Y], and crosses PY, P[PY], P[NP], and P[YP]P) and three halothane gene genotypes (NN, Nn, and nn) were tested for breed, sex, and halothane gene (HAL) effects on growth and carcass performance. Breed effects were significant for all traits measured. Sex effect was significant for most traits except for meat scores. The HAL-locus linkage group explained 20 to 30% of the total variation for meat quality scores and 1 to 10% for meat quantity and growth traits. Pietrain x Yorkshire was the fastest growing breed group and had relatively good carcass quality. Pietrain and its related crosses had the most lean muscle but the lowest meat quality. The HN (HAL negative, genotype Nn) individuals within the PPY and PNP groups grew more quickly and had higher meat quality scores and less muscling than HP (HAL positive, genotype nn) individuals. A second experiment with 40 pigs showed significant differences in fat concentration in the loin muscle between breeds (M, Y, and P) and between genotypes within the NP population (NP[HP] and NP[HN]). The phenotypic correlation between fat percentage and marbling was .59 (P less than .01). The NP(HP) had higher water percentage in lean than the NP(HN). The water percentage was negatively correlated with meat quality scores of color, firmness, and marbling with phenotypic correlations of -.10, -.23, and -.57 (P less than .01), respectively.(ABSTRACT TRUNCATED AT 250 WORDS)  相似文献

Objective of this study was to assess the association of SNP in the diacylglycerol O-acyltransferase 1 (DGAT1), thyroglobulin (TG), and micromolar calcium-activated neutral protease (CAPN1) genes with carcass composition and meat quality traits in Bos indicus cattle. A population of Brahman calves (n = 479) was developed in central Florida from 1996 to 2000. Traits analyzed were ADG, hip height, slaughter weight, fat thickness, HCW, marbling score, LM area, estimated KPH fat, yield grade, retail yield, sensory panel tenderness score, carcass hump height, and cooked meat tenderness measured as Warner-Bratzler shear force at 7, 14, and 21 d postmortem. Single nucleotide polymorphisms previously reported in the TG and DGAT1 genes were used as markers on chromosome 14. Two previously reported and two new SNP in the CAPN1 gene were used as markers on chromosome 29. One SNP in CAPN1 was uninformative, and another one was associated with tenderness score (P < 0.05), suggesting the presence of variation affecting meat tenderness. All three informative SNP at the CAPN1 gene were associated with hump height (P < 0.02). The TG marker was associated with fat thickness and LMA (P < 0.05), but not with marbling score. No significant associations of the SNP in the DGAT1 gene were observed for any trait. Allele frequencies of the SNP in TG and CAPN1 were different in this Brahman population than in reported allele frequencies in Bos taurus populations. The results suggest that the use of molecular marker information developed in Bos taurus populations to Bos indicus populations may require development of appropriate additional markers.  相似文献

The effects of an implant of 140 mg of trenbolone acetate and 28 mg of estradiol (TBA + E2) on performance and carcass composition were evaluated with 72 individually fed steers. Holstein (n = 24), Angus (n = 24), and Angus x Simmental (n = 24) steer calves were allocated by breed and implant treatment to either an individual feeding pen (n = 36) or an electronic feeding door in a group pen (three pens with 12 animals per pen). Intake and refusal of the 85% concentrate diet were recorded daily. Animals were slaughtered when ultrasonic attenuation values of the longissimus muscle at the 12th rib reached .55, which is correlated with low Choice marbling. At slaughter, complete carcass measurements were taken and the right side of each carcass was separated into boneless wholesale cuts. Implanting with TBA + E2 improved (P less than .01) daily gain and feed efficiency. Daily gain was increased 17, 26, and 21% in Holstein, Angus, and crossbred steers, respectively. The implant increased overall daily protein and fat accretion 23%. Carcass conformation and dressing percentage were not affected (P greater than .05) by TBA + E2 treatment. Implantation with TBA + E2 had little effect on yield of wholesale boneless cuts when expressed as a percentage of carcass weight but increased absolute weight as a small degree of marbling by 6 to 40 kg.  相似文献
