运用因子分析法对不同生境下62个水稻品种中13个稻米品质性状研究结果表明,以前5个主因子对变异的累计贡献率>89%统计,垩白(垩白粒率和垩白度)、加工品质(糙米率、精米率、整精米率和碎米率)、粒形(糙米宽厚比、糙米长宽比)是影响早季稻米品质主要因素;糙米宽、整精米率、精米率、糙米长和直链淀粉含量是影响晚季稻米品质的主要因素。主因子之间早季垩白与碎米率、糙米宽厚比和糙米长宽比、碎米率与糙米宽厚比表现正向相关,晚季糙米宽与精米率和直链淀粉含量、精米率与糙米长和直链淀粉含量、糙米长与直链淀粉含量表现正向相关。主因子之间早季垩白与糙米率、精米率和整精米率,糙米率、精米率、整精米率与碎米率、糙米宽厚比和糙米长宽比,碎米率与糙米长宽比,糙米宽厚比与糙米长宽比表现负相关,晚季糙米宽与整精米率、精米率、糙米长和直链淀粉含量,整精米率与糙米长,精米率与直链淀粉含量表现负相关。  相似文献

不同生态条件下氮肥优化管理对杂交中稻稻米品质的影响   总被引:2,自引:0,他引:2  
在四川省温江和射洪试验点,采用单因素随机区组试验设计,以‘F优498’水稻品种为试验材料,研究了不同氮肥处理[普通尿素优化施肥、减氮15%优化施肥、增氮15%优化施肥,PASP(聚天门冬氨酸)尿素1次施肥、2次施和优化施肥]对稻米品质的影响。结果显示,温江的碾米品质、外观品质和籽粒粗蛋白含量较优;射洪的峰值黏度和崩解值较高,消减值较低,蒸煮食味品质较好,同时直链淀粉含量较高。随着氮肥的施用,稻米碾米品质、直链淀粉含量和籽粒粗蛋白含量显著提高,崩解值显著降低;同时导致射洪生态点的峰值黏度增加,消减值减少;温江生态点的稻米外观品质变优,峰值黏度减小,消减值增加。较农民经验性施肥处理,普通尿素优化处理和PASP尿素处理提高了直链淀粉含量和籽粒粗蛋白含量,降低了温江垩白粒率和垩白度,改善了外观品质;氮肥优化处理降低了峰值黏度和崩解值,提高了消减值,使稻米蒸煮食味品质变差,同时提高了射洪精米率和温江整精米率。较优化施肥处理,PASP尿素处理降低了两试验点的精米率、整精米率和温江垩白粒率,增加了射洪的垩白粒率和垩白度,使外观品质变差;同时PASP尿素1次施肥和2次施肥处理降低了直链淀粉含量和籽粒粗蛋白含量;PASP尿素优化施肥处理降低了两试验点的峰值黏度、崩解值和温江直链淀粉含量,提高了两试验点的籽粒粗蛋白含量和射洪直链淀粉含量。较优化施肥处理,减氮15%和增氮15%优化施肥处理降低了两试验点的直链淀粉含量、整精米率及温江垩白粒率,增加了射洪垩白粒率和垩白度。与PASP尿素1次和2次施肥相比,PASP尿素优化施肥显著降低了垩白度、峰值黏度和崩解值,增加了消减值和籽粒粗蛋白含量;同时导致射洪生态点的整精米率降低,垩白粒率和直链淀粉含量增加;温江生态点的垩白粒率降低,整精米率增加。综合稻米碾米品质、外观品质、淀粉RVA、直链淀粉含量和籽粒粗蛋白含量的关系,射洪PASP尿素2次施肥处理稻米综合品质较好,温江优化施肥处理稻米综合品质较好。  相似文献

长沙生态条件下籼爪交杂交稻在整精米率、精米长宽比、垩白粒率、垩白面积率、碱消值和直链淀粉含量方面表现为正向超亲优势;在精米长宽比、碱消值和直链淀粉含量方面表现为正向对照优势。三亚生态条件下籼爪交杂交稻在糙米率、总精米率、情米长宽比和胶稠度方面表现出正向对照优势,三亚籼爪交杂交稻的糙米率、总精米率、整精米率、精米长宽比和胶稠度对照优势极显著高于长沙相应性状的对照优势;三亚的垩白粒率对照优势显著高于长沙的垩白粒率对照优势;三亚的碱消值和直链淀粉含量对照优势显著低于长沙相应性状的对照优势。  相似文献

以龙粳20为供试材料,经2009年与2010年2年试验,研究了氮镁耦合对寒地早粳稻品质的影响.结果表明,氮或镁肥单独施用时,籽粒直链淀粉含量随氮肥增加而降低,增施氮肥使垩白率、粗蛋白含量提高,施氮量与整精米率呈二次曲线,镁肥单独施用能够提高籽粒粗蛋白含量,施镁量与垩白率及整精米率呈二次曲线;氮镁耦合后,镁处理对籽粒垩白率、整精米率的影响均达到极显著水平;籽粒粗蛋白含量与垩白率呈正相关、与整精米率呈负相关;直链淀粉含量与粗蛋白含量呈负相关.2年试验表明,在不同氮水平处理下,以施镁225.0~337.5kg·hm-2范围内籽粒的垩白率、整精米率及粗蛋白含量较理想.  相似文献

以粳稻品种空育131为试材,研究不同钾肥用量对其产量构成和品质性状的影响,为寒地水稻生产的合理施肥提供依据。结果表明,施用钾肥显著提高了有效穗数、穗粒数、稻谷产量和整精米率,降低了垩白粒率和胚乳直链淀粉含量,而对结实率、千粒重、糙米率、垩白面积和垩白度的影响较小;施钾使胚乳中总氮和蛋白氮含量增加,并提高蛋白氮比例,改善营养品质;施钾降低了糊化开始温度、冷胶黏度、回复值和消减值,提高了最高黏度、热浆黏度和崩解值,各特征值以回复值受影响最大。钾肥对水稻产量构成、品质指标及淀粉黏滞性谱特性的影响,在一定的范围内随施用量增加变化较明显,达到一定用量后继续增施钾肥效应减弱;试验条件下,以90.0kghm-2K2O的施用量较佳。  相似文献

在成都平原稻麦两熟区,用超级稻德香4103、Q优8号、II优602进行机插秧,总氮为195 kg·hm-2,以不施肥为对照,研究机插秧传统型、改进型、优化型肥料配置对稻米主要品质的影响,为制定优质栽培技术提供依据。稻米主要品质在品种和肥料配置间的差异极显著,并存在极显著的互作效应;肥料配置能够有效改善米质;不同品种对肥料配置响应存在差异。德香4103采用改进型肥料配置,延长胶稠度7 mm,降低直链淀粉含量5.5个百分点,垩白度、垩白粒率提高;Q优8号采用传统型肥料配置,分别降低垩白度、垩白粒率及直链淀粉含量4.3、15及0.4个百分点,延长胶稠度11mm;II优602采用优化型肥料配置,提高蛋白质0.5个百分点,分别降低垩白度、垩白粒率1.9、5个百分点,胶稠度、直链淀粉含量降低,米质得到改善。  相似文献

为了探明种植利用紫云英在稻田系统的化学氮肥替代潜力,通过4年田间定位试验,设置冬闲+不施氮(-N)、冬闲+100% N(100% N)、紫云英+不施氮(GM)、紫云英+40%氮肥(GM+40% N)、紫云英+60%氮肥(GM+60% N)和紫云英+80%氮肥(GM+80% N)共6个处理,研究不同处理对水稻产量、氮素吸收、氮肥利用率和品质的影响。结果表明,GM+80% N处理水稻产量、氮素积累量、糙米率、整精米率、垩白粒率、蛋白质和锌含量与100% N处理差异不显著,氮肥利用率、精米率、钙、镁和铁含量显著高于100% N处理(P<0.05),垩白度和直链淀粉含量显著低于100% N处理(P<0.05);GM+60% N处理水稻产量、糙米率、整精米率、垩白粒率、垩白度和锌含量与100% N处理差异不显著,氮肥利用率、精米率、钙、镁和铁含量显著高于100% N处理(P<0.05),氮素积累量、直链淀粉和蛋白质含量显著低于100% N处理(P<0.05)。GM+60% N处理水稻产量、氮素积累量、糙米率、精米率、整精米率、垩白粒率、直链淀粉、蛋白质、钙、镁、铁和锌含量与GM+80% N处理差异不显著,但氮肥利用率低于GM+80% N处理。综上所述,在紫云英翻压还田的基础上,水稻季氮肥减施40%比较适宜,且有利于水稻节肥增效并获得优质稻米。  相似文献

以同源四倍体双胚苗水稻品系(D07-04-01)及其衍生后代(01-04-01,D07-02-01,DP07-04-01)为研究材料,利用扫描电镜技术和X射线衍射技术对稻米的垩白性状、淀粉粒的形态特征和淀粉的晶体特性进行了初步研究。研究结果表明,与其他材料相比,双胚苗二倍体品系D07-02-01的垩白粒率、垩白度和垩白大小均最小,稻米的自然横断面中部无明显辐射状,裂痕少且浅,"粗短形"的不规则多边形胚乳细胞与淀粉粒分布均匀,多面体状淀粉粒呈现典型的晶体结构,数目多且排列致密,球形单粒淀粉粒和块状不规则的复粒淀粉体数目比较少,相对结晶度高,直链淀粉含量低,即外观品质和食味品质均比其他四倍体品系好。  相似文献

利用稻米品质特性不同的 7个粳稻品种 ,研究了氮肥对稻米垩白率、理化特性及淀粉谱特性的影响。结果表明 ,随着氮肥施用量的增加 ,稻米垩白率和直链淀粉含量逐渐降低 ,胶稠度变短 ,蛋白质含量提高 ,而在稻米淀粉谱特性中除糊化开始温度略提高外 ,其余特性均降低或变小 ;在水稻全生育期施同等量的氮肥时 ,与生育前期追施氮肥相比 ,抽穗期追施氮肥 ,其稻米的垩白率和直链淀粉含量降低 ,胶稠度变短 ,蛋白质含量提高 ,但对稻米淀粉谱特性的影响很小。品质特性对氮肥的反应敏感程度品种间有差异。  相似文献

试验结果表明:氮肥用量0~128 9kg/hm2条件下,随着氮肥用量的提高直链淀粉含量随之增高,否则反之;氮肥用量在0~112 8kg/hm2条件下,氮肥用量愈高蛋白质含量逐渐增高;氮肥用量高于112 8kg/hm2蛋白质含量下降。氮肥用量与垩白米率和垩白度分别呈显著和极显著正相关。水稻产量与品质表现明显的矛盾。在产量因素中穗数越多精米率和整精米率越低,垩白米率和垩白度也越大;千粒重、成熟度愈高精米率和整精米率亦高,而垩白米率、垩白度则下降。  相似文献

用 3 50Gy6 0 Coγ射线辐照高表观直链淀粉含量 (apparentamylosecontent,AAC)早籼稻新品种金早 97 47,筛选鉴定出 4个暗胚乳突变体和 2个云雾状胚乳突变体。AAC测定表明 ,暗胚乳和云雾状胚乳突变的AAC明显比原亲本低。以Wxup2 485为引物 ,发现两类胚乳突变的Wx基因微卫星分子标记相同 ,与原亲本显著不同 ,前者为 (CT) 1 8 (CT) 1 8,后者为 (CT) 1 1 (CT) 1 1。  相似文献

Using rice samples derived from normal rice cultivars and endosperm starch mutant, we investigated key factors contributing to the enzyme digestibility of steamed rice grains. The chemical composition of polished rice grains, structural features of endosperm starch, and enzyme digestibility of steamed rice grains were examined. The protein content of polished rice grains was 4.6–9.1%, amylose content was 4–27%, the DPn of purified amylose was 900–1,600, the amylopectin short/long chain ratio was 1.2–5.9, and the enzyme digestibilities of steamed polished rice grains were 0.9–12.6 °Brix. Amylose content and RVA parameters (viscosity, breakdown, and setback) correlated significantly with enzyme digestibility of steamed rice grains. Multiple regression formulas were constructed to predict digestibility of steamed rice grain as a function of the molecular characteristics of the starch. When both amylose content and the short/long chain amylopectin ratio were used as predictor variables, they accounted for >80% of the observed variance in digestibility of steamed rice grains. Multiple regression revealed that the more digestible rice samples had starch with a lower amylose content and more short‐chain amylopectin. Reassociation of amylose‐lipid complex and recrystallization of amylopectin in the stored steamed rice grains was monitored by differential scanning calorimetry (DSC), and the observed retrogradation properties were related to the structural characteristics of starch and to the enzyme digestibility of steamed rice grains.  相似文献

The influence of amylose content, cooking, and storage on starch structure, thermal behaviors, pasting properties, and rapidly digestible starch (RDS), slowly digestible starch (SDS), and resistant starch (RS) in different commercial rice cultivars was investigated. Long grain rice with high‐amylose content had a higher gelatinization temperature and a lower gelatinization enthalpy than the other rice cultivars with intermediate amylose content (Arborio and Calrose) and waxy type (glutinous). The intensity ratio of 1047/1022 cm–1 determined by Fourier Transform Infrared (FT‐IR), which indicated the ordered structure in starch granules, was the highest in glutinous and the lowest in long grain. Results from Rapid ViscoAnalyser (RVA) showed that the rice cultivar with higher amylose content had lower peak viscosity and breakdown, but higher pasting temperature, setback, and final viscosity. The RDS content was 28.1, 38.6, 41.5, and 57.5% in long grain, Arborio, Calrose, and glutinous rice, respectively, which was inversely related to amylose content. However, the SDS and RS contents were positively correlated with amylose content. During storage of cooked rice, long grain showed a continuous increase in pasting viscosity, while glutinous exhibited the sharp cold‐water swelling peak. The retrogradation rate was greater in rice cultivars with high amylose content. The ratio of 1047/1022 cm–1 was substantially decreased by cooking and then increased during storage of cooked rice due to the crystalline structure, newly formed by retrogradation. Storage of cooked rice decreased RDS content and increased SDS content in all rice cultivars. However, no increase in RS content during storage was observed. The enthalpy for retrogradation and the intensity ratio 1047/1022 cm–1 during storage were correlated negatively with RDS and positively with SDS (P ≤ 0.01).  相似文献

为了明确不同直播方式对早晚兼用双季籼稻产量和稻米品质的影响,该研究以常规早籼稻湘早籼45号和杂交晚籼稻泰优398为材料,进行早晚双季直播种植,比较人工撒直播(AS)和同步开沟起垄精量穴直播(PHDD)对早晚兼用双季直播稻出苗、产量和稻米品质的影响。结果表明,与AS相比,PHDD显著提高供试品种的出苗率,早晚季增幅分别为7.4%~14.2%和6.9%~8.0%;PHDD有利于提高供试品种周年产量,2个品种的增产幅度为3.23%~21.66%,其中湘早籼45号早晚2季增产均显著,泰优398为晚季增产显著;从产量构成因素来看,PHDD下供试品种的产量提高主要与有效穗数、每穗粒数有关;PHDD显著提高湘早籼45号早季的精米率、整精米率和垩白度以及泰优398晚季的垩白粒率,显著降低泰优398早季的整精米率及湘早籼45号晚季的垩白粒率、垩白度和蛋白质含量,直链淀粉含量无显著差异;PHDD显著提高泰优398晚季米粉的峰值黏度、热浆黏度、崩解值和最终黏度,显著降低糊化温度。总体来说,PHDD有利于提高优质水稻品种周年产量,主要与穗粒数协调有关,增产途径因品种和季节而异,同时显著改善湘早籼45号早季加工品质及晚季外观品质,降低泰优398的早季加工品质及晚季外观品质,但改善其晚季蒸煮食味品质,PHDD下晚季直播稻稻米品质改善明显。研究结果可为南方双季直播籼稻优质丰产栽培提供理论依据。  相似文献

Presently, rice cultivars are categorized according to grain dimensions, amylose content, and alkali spreading value (gelatinization temperature type). Categorization of rice cultivars based on total sensory impact is needed. This work endeavors to divide world rices into groups based on amylose, protein, flavor, and texture properties. Ninety‐one rice samples representing 79 different cultivars and seven growing locations were separated into seven groups with Ward's Cluster Analysis. Cluster 1 included a third of the rice samples and had cultivars with a large diversity of grain shapes and amylose contents. Mean attribute scores for this cluster were near the grand mean for the collective rice samples for nearly every sensory attribute. Cluster 2 included conventional U.S. short‐ and medium‐grain cultivars. Cluster 3 included conventional U.S. medium cultivars that were produced in Louisiana. Mean sensory scores for this cluster characterized these cultivars as having relatively undesirable flavor and texture attributes. Cluster 4 included Japanese premium quality cultivars and U.S. medium‐grain cultivars developed for the Japanese market. Cluster 5 included high‐amylose, indica types that had relatively firm textural properties. Cluster 6 included relatively soft cooking, aromatic cultivars. Cluster 7 included waxy cultivars and other soft cooking grains. In several cases, the production environment (location, weather effects, etc.) influenced flavor and texture characteristics and resulted in the cultivar falling into an unexpected cluster. This categorization serves as a catalyst for indexing rice cultivars for cooking and processing qualities.  相似文献

以武育粳3号为材料,设置低、中、高3个氮素穗肥处理,开放环境下使用加热器进行日间增温处理,研究灌浆结实期不同施氮水平下稻米品质对日间增温响应的差异。结果表明: 1)灌浆结实期日间增温使各氮肥处理精米率和整精米率下降,垩白粒率和垩白度增加,糙米率和子粒长宽比各氮肥处理变化不一,低氮和中氮处理糙米率和子粒长宽比减小,高氮处理则变大;加工品质和外观品质各指标变化幅度均以中氮处理最大,减少或增加氮肥施用量均可以有效地缓解高温对稻米加工品质和外观品质的负面效应,尤以增施氮肥效果较佳。2)增温条件下,减少和增加氮肥施用量均能降低稻米直链淀粉含量,其中增施氮肥降低幅度较大;增温后各氮肥处理蛋白含量均增加,增加幅度与施氮量呈负相关关系,高温高氮处理直链淀粉含量最低,蛋白含量最高。3)增温后各穗肥处理结实率和千粒重均下降,以中氮处理下降最显著;减少和增加穗氮施用量均能有效地缓解高温对水稻产量的影响,其中也以增施氮肥相对较好。综上所述,适当地增加氮肥施用量能较有效地缓解高温对稻米品质和产量的负面影响。  相似文献

【目的】目前我国选育和认定的超级稻品种很多,但如何发挥其高产潜力至关重要。氮素是影响水稻生长发育、 产量和品质形成的最活跃因素之一,因此,深入分析籼、 粳超级稻氮素吸收、 利用与转运特征及其与产量形成的关系,从氮素营养层面上阐明超级粳稻高产形成机理,以期为超级稻品种的合理利用以及增产潜力的挖掘提供参考。【方法】2011~2012年在江苏苏中地区,以主体且具有代表性的5个超级杂交籼稻组合和5个常规粳型超级稻品种为试验材料,对稻-麦两熟制条件下籼、 粳超级稻主要生育期植株含氮率和氮素积累量、 氮素阶段吸收速率和阶段吸收量、 氮素利用效率,以及抽穗至成熟期叶、 茎、 鞘氮素转运量、 表观转运率和转运贡献率等进行了系统的比较研究。【结果】1)粳稻平均实收产量、 氮素吸收总量和百公斤籽粒吸氮量分别达10.89 t/hm2、 224.50 kg/hm2和2.79 kg,分别较籼稻高13.21%、 32.74%和17.45%,差异极显著。2)移栽有效分蘖临界叶龄期、 拔节抽穗期和抽穗成熟期, 粳稻氮素积累量显著或极显著高于籼稻,而有效分蘖临界叶龄期拔节期粳稻极显著低于籼稻。氮素阶段吸收速率表现的趋势与氮素阶段吸收量一致。3)抽穗期和成熟期粳稻植株各器官以及整个生育期整株的含氮率均显著或极显著高于籼稻。4)粳稻氮素吸收利用率和农学利用率略高于籼稻,但氮素生理利用率、 籽粒生产效率、 干物质生产效率和氮肥偏生产力,除氮素生理利用率外,均显著或极显著低于籼稻。5)成熟期,粳稻叶、 茎、 鞘含氮量所占比例均极显著地高于籼稻,但穗中含氮量所占比例极显著低于籼稻,因此,籼稻氮素收获指数极显著高于粳稻。6)抽穗成熟期,粳稻叶、 茎、 鞘氮素转运量、 表观转运率和转运贡献率均小于籼稻,除鞘的氮素转运贡献率外其他指标均达显著或极显著水平。7)籼稻籽粒氮主要依靠抽穗前源器官中贮积的氮素的输出与转运,粳稻主要依靠生育中后期(拔节成熟期)氮素的高速吸收。【结论】在稳定生育前期(移栽拔节期)氮素吸收的基础上,大幅提高生育中期和后期(拔节成熟期)氮素吸收速率和氮素积累量,是稳定形成较高的氮素吸收总量及粳稻高产形成的关键。  相似文献
