The iron status of men, women and children consuming beef extended with soy protein was evaluated by measuring serum ferritin and clinical parameters of iron status during a six-month study. Fifty-two families (245 participants) were randomly assigned to consume, for 180 days, 1 of 7 beef products: all beef, beef extended with either soy isolate, soy concentrate or soy flour (20% reconstituted soy product, 80% beef), or beef extended with each of the three soy products fortified with 60 mg Fe and 25 mg Zn/100 g protein. The beef product was consumed by the subjects as their principal source of protein for 1 meal a day (children 1–18 yr) or 1–2 meals a day (11 per week; adult men and women). A control group consumed their usual self-selected diets. No evidence was found that consumption of beef extended with soy protein deleteriously affected the iron status of men, women or children. Consumption of beef extended with soy protein, at the levels used in this study, by military men and women and by school lunch participants would not appear to impose a risk in these population groups.  相似文献

Forty-nine ostensibly healthy men consumed either patties of all-beef or beef extended with soy-isolate, -concentrate or -flour as the principal protein source in 1 to 2 meals daily for 180 days. Iron status was monitored by absorption of radioiron from a reference dose of ferrous ascorbate and by serum ferritin concentration. In addition, nonheme iron absorption from a test meal of the respective beef pattie consumed for the 180 days was estimated by the extrinsic tag procedure. There was no detrimental effect on iron stores as indexed by reference ferrous ascorbate absorption or serum ferritin concentration. Absorption of nonheme iron from the test meals was low except for individuals having indices of low iron stores. When adjusted for the effect of level of iron stores the relative absorption of nonheme iron from soy-isolate and -flour containing meals was greater than from the all-beef meal, indicating marked differences in the effect on iron absorption by different soy products. Consumption of soy-extended beef should have no detrimental effect on iron status of adult men if consumed in mixed diets at the level used in this study.  相似文献

Values (%) for true digestibility of crude protein and individual amino acids in 20 selected foods were determined by the rat balance (fecal) method. The products were fed as the sole source of protein in diets containing 8% crude protein (N × 6.25). Lowest true protein digestibility values (79–84) were obtained for pinto beans, kidney beans and lentils; intermediate values (89–92) were obtained for chick peas, beef stew, skim milk (over heated), rolled oats, whole wheat cereal, and pea protein concentrate; and highest values (94–100) were obtained for sausage, macaroni-cheese, rice-wheat gluten cereal, skim milk, tuna, soy isolate, peanut butter, chicken frankfurters, beef salami, casein and casein + methionine. In animal foods, peanut butter and soy isolate, the differences between true digestibility of crude protein and most individual amino acids were less than 5%. However, the values for true digestibility of methionine and cystine were up to 44% lower than those of crude protein in pinto beans, kidney beans, lentils, chick peas and pea concentrate. In these legumes, digestibility of crude protein was not a good predictor of digestibility of the limiting amino acids.  相似文献

Protein efficiency ratio (PER), relative PER (RPER), net protein ratio (NPR) and relative NPR (RNPR) values, and amino acid scores were calculated for 20 food products (casein, casein + Met, beef salami, skim milk, tuna, chicken frankfurters, sausage, heated skim milk, peanut butter, rolled oats, soy isolate, chick peas, pea concentrate, kidney beans, wheat cereal, pinto bean, lentils, rice-wheat gluten cereal, macaroni-cheese, and beef stew). In most cases, PER, RPER, NPR or RNPR ranked the products in the same order and positive correlations among the protein quality methods were highly significant (r=0.98–0.99). Amino acid scores (based on the first limiting amino acid, Lys-Met-Cys, Lys-Met-Cys-Trp or lys-Met-Cys-Trp-Thr) were positively correlated to the PER, RPER, NPR or RNPR data (r=0.61–0.75). Inclusion of the correction for true digestibility of protein improved the correlations between amino acid scores and the indices based on rat growth. The correlations were especially high between Lys-Met-Cys scores (corrected for true digestibility of protein) and PER, RPER, NPR or RNPR (r=0.86–0.91). Inclusion of the correction for true digestibility of individual amino acids did not result in further improvements of the correlations in most cases. It is concluded that adjusting amino acid scores for true digestibility of protein would be sufficient and further correction for digestibility of amino acids would be unnecessary in mixed diets.This paper was presented in part at the 71st annual FASAB meeting, Washington, DC, March 29–April 2, 1987.  相似文献

The effect of consumption of the staple food grown in soil zinc deficient area on zinc nutritional status of human beings was investigated. One village each from an area which has been classified under >75%, 25–50% and 50–75% soil zinc deficiency was selected for the study from Andhra Pradesh. Thirty families from each village were selected and the zinc content of soil, rice (grown in that soil) and serum (of people consuming the same rice) of the selected subjects was estimated. Food and nutrient intake of the respondents were calculated by using diet survey. Heights and weights of children of selected families were taken to assess the relationship between soil zinc levels and growth. Results show that the soil zinc deficiency has an impact on the zinc levels of rice grown in the same soil. However, serum zinc levels of adults and growth of children seem to be influenced by protein content and source of protein in the diet in addition to zinc levels of the diet.  相似文献

Short-term feeding studies have shown that raw soy flour and purified trypsin inhibitors (TI) cause pancreatic hypertrophy and hyperplasia in certain monogastric animals. Prolonged exposure to high levels of TI in raw soy ultimately leads to pancreatic nodular hyperplasia and acinar cell adenoma in rats exposed to low levels of pancreatic carcinogens. Such change has been observed even in the absence of any exposure to known carcinogens. These results emphasized the need for chronic (2 yr) feeding trials which would clearly reveal dose response relationships of alterations in pancreatic pathology to dietary TI and possible interactions with dietary protein and fat.Here we report on the objectives and designs of the first phase of the USDA TI Study, including composition of diets, preparation, and analyses of test substances. To provide the requisite TI and protein levels, raw and heated defatted soy flours, soy protein isolates, and lactic casein were used. The interrelationship of dietary level of TI (93–1270 mg/100 g diet) and that of protein (10%, 20%, and 30%) to pancreatic function and pathology will be reported in the following three papers. Both serial and chronic sacrifice regimes, respectively, were employed with 26 diets and 40 weaning male Wistar rats per dietary group.The mention of firm names or trade products does not imply that they are endorsed or recommended by the U.S. Department of Agriculture over other firms or similar products not mentioned.  相似文献

A commercial starch blocker was used to study the digestin of starch (potato) in mature female rates for four weeks. Two levels of starch blocker were used. The first level was calculated to inhibit starch digestion at 50%, the second was calculated to inhibit starch digestion at 100%. No significant effects on the body weights (271.10±29, 277.7±43, 259.1±25 g) were found among the groups of rats at 0%, 50% and 100% inhibition levels, respectively. Feed intakes were not affected. However, fecal copper and zinc excretions increased significantly (p<0.05) due to the inhibitors. Fecal copper excretions were 0.468±0.14, 0.578±0.09, 0.617±0.07 mg/rat/week, while fecal zinc values were 0.625±0.14, 0.859±0.32 and 0.778±0.26 mg/rat/week when no inhibitor was fed, at 50% inhibition and at 100% inhibition respectively. Thus, while use of starch blockers did not promote weight loss in the mature female rats, utilization of copper and zinc were negatively affected.Published as Nebraska Agricultural Research Division Project Journal Series No. 8791. The nutritional value of three pale seeded and one dark seeded variety ofAmaranthus caudatus was studied by chemical analyses and in balance experiments with growing rats. Effects of processing: popping, toasting and flaking were also examined. The pale seeds contained about 14% protein, 10% fat, 2.5% ash, 64% starch and 8% of dietary fibre. The black seeds had a much higher content of fibre (16%). The concentration of essential amino acids were high. Lysine ranged from 5.2–6.0 g/16 g N in the grains, and the limiting amino acids were leucine followed by valine or threonine. The grains contained small amounts of tannin (0.3%) and heat-labile protease inhibitor activity, at levels typical of common cereal grains. Digestibility of protein in the pale seeds was high (87%) and quite unaffected by processing. Protein digestibility of the black seeds was lower, and the digestibility was further reduced by toasting. The biological value of the protein was similar in all products, and very high. The content of minerals varied among varieties and was also affected by processing. Phytate: zinc molar ratios were high in most products, and rats fed the amaranth samples with the lowest zinc contents were in negative zinc balance. In general, femur zinc concentrations were rather low. However, amaranth is an unconventional crop which deserves further attention.  相似文献

The objective of the present work is to compare some different crop products such as protein isolates and defatted whole flours from legumes, as chickpea and soy bean, involved in the molded compression processing to obtain plastics. The present work analysed the possibility of forming new plastic materials with products of chickpea, and soy bean seeds typically from the North West of Argentina, conditioned as chickpea isolate (CI), chickpea whole flour (CWF) in relation with soy protein isolate (SI) and soy whole flour (SWF). The blends containing isolates or defatted whole flour of chickpea, with the addition of glucopolysaccharide, glycerol and water as plasticizers were compression molded at 120°C, at 20 MPa, for 7 min. The glucopolysaccharide employed from this vegetals presented a ratio of amylose to amylopectin structure 95/5. The molded specimens were calculated for their tensile strength, percent elongation at break and water absorption. The chickpea isolate would be important in the production of plastic materials because of the best mechanical properties and the smallest water absorption. The chickpea whole flour product gave better material than soy whole flour product, even if the mechanical properties of both are lower than chickpea and soy isolates, respectively. Addition of boric acid in the blend induced a fall in water absorption in the case of soy plastics, but was not important in chickpea plastics. The effect of irradiation was to decrease water absorption in soy plastics and chickpea whole flour, while the effect on mechanical properties was not important.  相似文献

Different spices, dry fruits and plant nuts commonly consumed in Pakistan were assayed for the heavy metals cadmium, lead, copper, zinc, iron and manganese by the potentiometric stripping analysis and AA spectrophotometry. The results revealed wide variation in heavy metal content among different biological materials. Mixed spices generally exhibited higher value for trace metals specially lead (6.6–9.2 µg/g), cadmium (0.65–1.34 µg/g), iron (142.3–285.0 µg/g) and zinc (64.2–65.8 µg/g). Dry fruits contained relatively lesser amounts of heavy metals than plant nuts. Almonds contained higher levels of lead (1.02 µg/g) and cadmium (0.24 µg/g) than other nuts and dry fruits.  相似文献

Eight types of supplementary foods based on popped cereals (wheat, ragi, bajra and sorghum) blended with legumes (soy and bengalgram) and fortified with essential vitamins and minerals were developed on a pilot plant scale. Four of the supplements were prepared with cereals, soy flour (SF) and bengal gram (BG) dhal and the other four were prepared with combinations of cereals and SF. These blends were mixed with jaggery (obtained by boiling juice out of sugarcane) syrup and pressed into compact form. One hundred gram portions of these foods provided 370 ± 20 kilocalories and 11 ± 1 g protein. Moisture, crude protein, total carbohydrates, total lipids, ash, dietary fiber and energy contents, of all the developed supplements were within the ranges prescribed by the Indian Standards Institute for processed weaning foods and could satisfactorily meet one-third of the Recommended Dietary Allowance (RDA) of these nutrients per day for preschool children. Organoleptic evaluation and feeding trials revealed that the foods were well accepted by rural mothers and children.  相似文献

Finger millet and sorghum flours were used as vehicles for double fortification with ferrous fumarate, zinc stearate and EDTA. The iron and zinc salts were added at levels that provided 60 mg iron and 50 mg zinc per kg of flour. EDTA was added at levels equimolar to the added iron. The double-fortified finger millet and sorghum flours contained bioaccessible zinc contents of 0.83 and 1.63 mg/100 g, respectively, while the respective bioaccessible iron contents were 2.39 and 2.63 mg/100 g. The exogenous iron and zinc did not mutually interfere with their bioaccessibility. The shelf-life of the fortified flours was also satisfactory up to a period of 60 days, as indicated by the moisture and free fatty acid contents in the fortified flours. Double fortification of the millet flours did not negatively alter the sensory quality of the products prepared from them. The RDA for iron and zinc of Indian children, women and men can be sufficiently met with approximately 4 dumplings or 9 rotis. The use of such qualitatively and quantitatively rich flours can be promoted through welfare programs to reduce and subsequently eradicate iron and zinc deficiency.  相似文献

Raw beef burgers containing graded levels (0.25, 0.5, 0.75, and 1.0%) of polysaccharide gums extracted from Detarium microcarpum (DM) and Mucuna flagellipes (MF) were produced. Unstabilized beef burgers and beef burgers containing gum tragacanth (TR) were also produced simultaneously to serve as control. The raw beef burgers were evaluated for selected physicochemical and sensory properties so as to assess the stabilization potentials of DM and MF polysaccharide gums relative to the conventional TR. Beef burgers containing the polysaccharide gums had significantly (P<0.05) lower shrinkage, higher water holding capacity (WHC), and better stability under ambient conditions (27±1°C and RH 90.6%) then the unstabilized burgers. Among the stabilized burgers, DM gum burgers had lower (P0.05) shrinkage and higher WHC than MF and TR gums burgers. All the gum-stabilized beef burgers required 9–26% higher compression force indicating a less friable product than the unstabilized burgers. At 0.25 and 0.5% levels of gum incorporation DM gum burgers had comparable compression force with TR gum burgers and this was lower (P0.05) than the compression force of MF gum burgers. Sensory panel results indicated a lower score for finger feel in gum-stablized burgers than the unstabilized burgers. DM and TR gum burgers had comparable scores with TR gum burgers in all the sensory attributes tested. Overall acceptability score showed that all the gum-stabilized beef burgers were acceptable. It was evident from the study that polysaccharide gums from DM and MF seeds can serve as effective stabilizers in beef burgers without adverse effect on the quality of the product.  相似文献

This study investigated the effect of a new microbial inoculant product on the composition and nutritive value of corn silage in big silo over one year that used beef cattle. Six Holstein beef steer (BW = 225 +/- 17) were allotted to 2 x 2 repeated Latin square design at two 21 days periods (adaptation, 14 days and sample collection, 7 days) for evaluation the effect of microbial inoculation on the composition and nutritive value of corn silage for beef cattle. Two treatments, forages were untreated or treated at ensiling with Lactobacillus plantarum and Propionibacterium acidipropionici silage inoculants. After 45 days from ensiling, the ration that contained 94.5 and 5, 0.2, 0.2, 0.1% of DM silage and ground barely, mineral-vitamin, dicalcium phosphate, salt, respectively, were offered for free choice consumption. Treatment with Lactobacillus plantarum and Propionibacterium acidipropionici inoculant increased daily dry matter intake and subsequently NDF, ether extract, crude protein and ash. Apparent digestibility of DM and nutrients were significantly increased by microbial inoculation. Microbial inoculation can improve the nutritive value of corn silage for beef cattle.  相似文献

Salinity, waterlogging and a combination of both stresses are severe threats to plant growth, development and yield of field-grown cotton (Gossypium hirsutum L.), but their individual or combined effects on insecticidal efficacy of Bacillus thuringiensis (Bt) transgenic cotton and the underlying mechanisms are not well understood. In the present study, two cotton cultivars (33B and SCRC17) containing the Cry1Ac insecticidal protein gene were planted in 10 L pots filled with soil and allowed to grow in a greenhouse. The potted plants were either treated with NaCl (5 mg/g, w/w), waterlogging, or a combination of both stresses at the three true-leaf stage, and levels of total soluble protein, Bt insecticidal protein, gossypol and the control efficacy as indicated by mortality of bollworm larvae were examined at 7-day intervals after stress. Waterlogging and a combination of salinity and waterlogging reduced total protein content by 40–46% and 45–65% and Bt protein content by 38–50% and 45–72% from 7 to 21 days after stress, relative to the non-stressed control, respectively. The control efficacy was significantly reduced by either waterlogging or the combined stress. Regression analysis indicated that Bt protein content was correlated to total soluble protein content (R2 = 0.7677*), while Bt cotton efficacy was correlated to Bt protein level (R2 = 0.7917**). Salinity reduced Bt protein by 11–22% and total soluble protein by 5.7–7.2% from 7 to 21 days after NaCl stress, but did not result in reduction in control efficacy. It is concluded that reduced bollworm control efficacy under waterlogging or the combined stress could be mainly attributed to the declined levels of Bt protein, which is closely associated with the inhibited nitrogen metabolism by stresses. As one of the secondary compounds that are toxic to pests, increases in gossypol may be involved in maintaining the efficacy when Bt protein level was reduced under salinity.  相似文献

The protein, trypsin inhibitor (TI), tannin, phytate, phytic acid phosphorus and in vitro protein digestibility (IVPD) of cultivars of the African yambean (Sphenostylis stenocarpa) — AYB, pigeon pea (Cajanus cajan) — PP and cowpea (Vigna unguiculata) — CP were determined. The protein content of CP (24–28.0%) was higher than those of PP (21–22.5%) and AYB (21–22.5%). The cream and speckled AYB contained more TI (30.9 and 25.3 mg/g) than PP (7.5–14.1 mg/g) and CP (9.8–20.5 mg/g). Apart from the white CP cultivar, they contained more tannin (1.24–1.42 mg/g) than PP (0.14–0.97 mg/g) and AYB (0.71–1.17 mg/g). Phytate was lowest in the AYB (6.30–7.49 mg/g) than PP (8.31–11.31 mg/g) and CP (8.40–9.92 mg/g). Phytic acid contributed 67–74% of the phosphorous in the AYB, 66–75% in PP and 54–59% in CP. The IVPD of the AYB (73.3±0.7%) was significantly lower (p<0.05) than those of PP (76.34±0.2%) and CP (77.8±0.4%). There was a significant negative correlation between TI and IVPD (r=–0.63,p<0.05). There was no significant correlation between IVPD and phytate and tannin contents. There was a positive correlation between protein content and IVPD (r=0.69**) for the legumes under study. These legumes may pose no serious problems to populations consuming them especially when heat treatment is applied before consumption.  相似文献

The essential elements copper (Cu), iron (Fe), zinc (Zn) and manganese (Mn) were analyzed in fresh asparagus to determine the effects of the vegetative cycle of the plant on the micronutrient content. Asparagus samples were classified in two groups by diameter (<11 mm and >14 mm). Asparagus from a sample group with the same diameter were divided into two portions (apical and basal) according to distance from the tip. The concentrations of copper, iron, zinc and maganese increased during the vegetative cycle of the asparagus, mainly in the apical portion which showed significantly greater concentrations with respect to the basal portion. The >14 mm diameter asparagus presented higher levels of copper, zinc and manganese, whereas the concentration of iron was greater in the <11 mm diameter asparagus. The mean element levels were (mg/kg dry weight): Cu, 18.9±3.9; Fe, 91.7±33.7; Zn, 69.5±24.6 and Mn, 20.9±5.0).  相似文献

The okra seeds of variety Pusa sawani were analysed for protein, non-protein nitrogen, total free amino acids, lysine, and tryptophan from the 7th day to the 42nd day after flowering. Starch, total sugars and oil percent were also estimated in these seeds. During the early stages of maturation, the soluble components (non-protein nitrogen, free amino acids and total sugars) were found in higher quantities than in the later stages. Protein, oil and starch contents increased gradually from day 7 to day 42. The rate of accumulation of oil was found to be at the highest level between 21–28 days after flowering, while the rate of protein deposition was greatest between days 35–42. Inditiation of seed maturation seems to start 21 days after flowering in okra seeds.  相似文献

The storage stability of melon milk at room (30 ± 2 °C)and refrigeration (10 ± 2 °C) temperatures was determined by analyzing changes in the chemical, microbial andsensory properties of the milk stored for 7 days. Theresults showed that at both storage temperatures, solublesolids and pH of the milk decreased while titratableacidity increased with storage. The standard plate countsincreased appreciably while coliforms were absent in themilk with storage at both storage temperatures. The overallacceptability score of the melon milk dropped duringstorage, the drop being faster at 30 ± 2 °C than at 10 ± 2 °C. The milk samples stored at 30 ± 2 °C and 10 ± 2 °C were acceptable only within one and three days, respectively; thereafter, theywere unacceptable.  相似文献
