Three spices, chili, black pepper, and turmeric, were tested for the effect of their aqueous extracts on the sensitivity of three bacteria, Escherichia coli, Bacillus megaterium, and Bacillus pumilusspores, to gamma-radiation. It was found that the extracts of the three spices offered protection to these organisms against inactivation by gamma-radiation. These spice extracts were also tested for their protection of naked plasmid DNA. Radiation-induced degradation of plasmid pUC18 DNA was reduced in the presence of the spice extracts. The maximum protection was offered by the chili extract followed by that of black pepper and turmeric. The two known antioxidants, curcumin and piperine from turmeric and black pepper, respectively, were shown to protect the plasmid DNA from the degradation by gamma-radiation. Experiments with the plasmid pUC18 DNA indicated that the spice extracts probably protected microorganisms by protecting their DNA. These studies indicated the importance of spices among ingredients in food as dose-modifying factors during radiation processing.  相似文献

Ginger, black pepper, and chili powder were extracted using near-critical carbon dioxide, propane, and dimethyl ether on a laboratory scale to determine the overall yield and extraction efficiency for selected pungent components. The temperature dependency of extraction yield and efficiency was also determined for black pepper and chili using propane and dimethyl ether. The pungency of the extracts was determined by using an NMR technique developed for this work. The volatiles contents of ginger and black pepper extracts were also determined. Extraction of all spice types was carried out with acetone to compare overall yields. Subcritical dimethyl ether was as effective at extracting the pungent principles from the spices as supercritical carbon dioxide, although a substantial amount of water was also extracted. Subcritical propane was the least effective solvent. All solvents quantitatively extracted the gingerols from ginger. The yields of capsaicins obtained by supercritical CO(2) and dimethyl ether were similar and approximately double that extracted by propane. The yield of piperines obtained by propane extraction of black pepper was low at approximately 10% of that achieved with dimethyl ether and CO(2), but improved with increasing extraction temperature.  相似文献

There are increasing concerns on the environmental impacts of intensive chemical agriculture.The effect of high agrochemical inputs used in intensive chemical farming was assessed on soil microbiological,molecular and biochemical properties in tropical Vertisols in India.Farm field sites under normal cultivation of arable crops using high inputs of fertilizers and pesticides in chili(Capsicum annum L.,5.0× dose for fertilizers and 1.5× dose for pesticides over normal inputs) and black gram(Vigna mungo L.Hepper,2.2x dose for fertilizers and 2.3× dose for pesticides over normal inputs) were compared with adjacent sites using normal recommended doses.Organic carbon and basal respiration showed no response to high inputs of fertilizers and pesticides in soils of both crops.Labile carbon decreased by 10% in chili soils and increased by 24% in black gram soils under high input farming system.The proportion of soil labile carbon as a fraction of soil organic carbon was unaffected by high inputs.The labile carbon mineralization coefficient(qM_(LC)) increased by 50.0% in chili soils,indicating that the soil microorganisms were under stress due to high agochemical inputs,whereas qM_(LC) decreased by 36.4% in black gram soils.Copiotrophs increased due to high inputs in soils of both chili(63.1%) and black gram(47.1%).Oligotrophs increased by 10.8% in black gram soils but not in chili soils.The abundance of amoA gene reduced by 39.3% in chili soils due to high inputs and increased significantly by 110.8% in black gram soils.β-Glucosidase also increased by 27.2% and 325.0%,respectively.Acid phosphatase activity reduced by 29.2% due to high inputs in chili soils and increased by 105.0% in black gram soils.The use of high agrochemical inputs thus had adverse consequences on biological health in chili but not in black gram soils.In soils cultivated with black gram,the moderating effect of cultivating legumes and their beneficial effect on soil health were evident from the increase in soil labile carbon,lower qM_(LC),higher amoA gene and enzyme activities.Overall results showed that cultivation of legumes permits intensive chemical farming without deteriorating soil biological health.  相似文献

Organochlorine pesticides were used earlier for agricultureproduction. Their residues may still be present in soil and mayaccumulate in food crops, posing potential health problems to consumers. DDT, HCH, their isomers and metabolites were analyzedin samples of soil and rice plants collected from ten differentvillages of a well-known Basmati rice growing area in Dehradun.Residues of both pesticides were found in all samples ofsoil and different parts of rice plants except for a few grainsamples. Maximum residue was observed in husk and minimum ingrains. The average concentration of DDT in soil ranged from0.013 to 0.238 ppm. p,p′-DDE was the major metabolite (>63%). Theaverage concentration of DDT in rice grain varied from 0.002 to 0.040 ppm. o,p′-DDT was the main isomer (>93%). Theaverage concentration of HCH in soil ranged from 0.122 to 0.638 ppm. β-HCH was the predominant (43%) isomerfollowed by α-HCH (21%). The average HCH concentrationin rice grain ranged between 0.013 and 0.113 ppm. All four isomers were present in grains. The levels of DDT and CHCin grains were similar in magnitude as those from differentIndian states, but well below the maximum residue limit of 0.1 ppm for DDT and 0.05 ppm for HCH prescribed by the Government ofIndia and WHO/FAO. As such, the pesticide residue levels in thisexport commodity are not of hazardous nature.  相似文献

A procedure that combines acetone-hexane extraction and cleanup by treatment with concentrated sulfuric acid is described for determining DDT and 1,2,3,4,5,6-hexachlorocyclohexane (HCH) residues in milk. Recoveries from samples fortified with 0.004-0.008 ppm of different HCH isomers and 0.01-0.02 ppm DDT and its metabolites ranged from 83.4 to 99.8%. The proposed method is simple and rapid, and does not require the use of costly adsorbents.  相似文献

Four common food acidulants--amchur, lime, tamarind, and kokum--and two antioxidant spices--turmeric and onion--were examined for their influence on the bioaccessibility of beta-carotene from two fleshy and two leafy vegetables. Amchur and lime generally enhanced the bioaccessibility of beta-carotene from these test vegetables in many instances. Such an improved bioaccessibility was evident in both raw and heat-processed vegetables. The effect of lime juice was generally more pronounced than that of amchur. Turmeric significantly enhanced the bioaccessibility of beta-carotene from all of the vegetables tested, especially when heat-processed. Onion enhanced the bioaccessibility of beta-carotene from pressure-cooked carrot and amaranth leaf and from open-pan-boiled pumpkin and fenugreek leaf. Lime juice and the antioxidant spices turmeric and onion minimized the loss of beta-carotene during heat processing of the vegetables. In the case of antioxidant spices, improved bioaccessibility of beta-carotene from heat-processed vegetables is attributable to their role in minimizing the loss of this provitamin. Lime juice, which enhanced the bioaccessibility of this provitamin from both raw and heat-processed vegetables, probably exerted this effect by some other mechanism in addition to minimizing the loss of beta-carotene. Thus, the presence of food acidulants (lime juice/amchur) and antioxidant spices (turmeric/onion) proved to be advantageous in the context of deriving maximum beta-carotene from the vegetable sources.  相似文献

Three cereals (wheat, pearl millet, sorghum), three legumes (mung bean, moth bean, clusterbean) and three oil seed crop species (groundnut, sesame, mustard) were grown in solution culture under conditions of P deficiency and with additions of inorganic P or organic P (phytin, lecithin, glycerophosphates). The plants started secreting acid phosphatase as soon as their roots emerged (24-96 h). The activities of the secreted acid phosphatases increased with plant age and were at a maximum under P-deficient conditions. Phytin increased acid phosphatase secretion to a greater extent than lecithin and glycerophosphate. The increased activities of acid phosphatase secreted under P-deficient conditions when compared with those under P-sufficient (inorganic P) conditions ranged from 2.7 times (glycerophosphate) to 5 times (negligible P, phytin) higher. Legumes secreted the maximum amount of acid phosphatase within 2 weeks after germination, then activity decreased gradually. Acid phosphatase secretion by oilseeds started at a low level and increased with the age of the plants. Only a small increase in acid phosphatase secretion by cereals was observed during the first 3 weeks of growth. The amount of acid phosphatase secreted by legumes was 22% higher than by oilseeds and 72% higher than by cereals. The results showed that an organic P concentration of 250 mg L-1 and above, and an inorganic P concentration <50 mg L-1 provide the most suitable conditions for plants to secrete a maximum amount of acid phosphatase.  相似文献

Studies were conducted on the flavonoids (myricetin, quercetin, kaempferol, luteolin, and apigenin) contents of 62 edible tropical plants. The highest total flavonoids content was in onion leaves (1497.5 mg/kg quercetin, 391.0 mg/kg luteolin, and 832.0 mg/kg kaempferol), followed by Semambu leaves (2041.0 mg/kg), bird chili (1663.0 mg/kg), black tea (1491.0 mg/kg), papaya shoots (1264.0 mg/kg), and guava (1128.5 mg/kg). The major flavonoid in these plant extracts is quercetin, followed by myricetin and kaempferol. Luteolin could be detected only in broccoli (74.5 mg/kg dry weight), green chili (33.0 mg/kg), bird chili (1035.0 mg/kg), onion leaves (391.0 mg/kg), belimbi fruit (202.0 mg/kg), belimbi leaves (464.5 mg/kg), French bean (11.0 mg/kg), carrot (37.5 mg/kg), white radish (9.0 mg/kg), local celery (80.5 mg/kg), limau purut leaves (30.5 mg/kg), and dried asam gelugur (107.5 mg/kg). Apigenin was found only in Chinese cabbage (187.0 mg/kg), bell pepper (272.0 mg/kg), garlic (217.0 mg/kg), belimbi fruit (458.0 mg/kg), French peas (176.0 mg/kg), snake gourd (42.4 mg/kg), guava (579.0 mg/kg), wolfberry leaves (547.0 mg/kg), local celery (338.5 mg/kg), daun turi (39.5 mg/kg), and kadok (34.5 mg/kg). In vegetables, quercetin glycosides predominate, but glycosides of kaempferol, luteolin, and apigenin are also present. Fruits contain almost exclusively quercetin glycosides, whereas kaempferol and myricetin glycosides are found only in trace quantities.  相似文献

Carotenoids are found in food plants in free form or as fatty acid esters. Most studies have been carried out after saponification procedures, so the resulting data do not represent the native carotenoid composition of plant tissues. Therefore, nonsaponified extracts of 64 fruits and vegetables have been screened to determine the amount of carotenoid esters in food plants. Because one of the major problems in the quantitation of carotenoids is the availability of pure standard material, the total carotenoid ester content was calculated as lutein dimyristate equivalents. Lutein dimyristate was independently synthesized from lutein and myristoyl chloride. The highest ester concentrations were found in red chili (17.1 mg/100 g) and orange pepper (9.2 mg/100 g); most of the investigated fruits and vegetables showed concentrations up to 1.5 mg/100 g. Special attention was dedicated to beta-cryptoxanthin esters. To enable an accurate detection of the beta-cryptoxanthin ester content, beta-cryptoxanthin was purified from papaya and used for synthesis of beta-cryptoxanthin laurate, myristate, and palmitate, representing the major beta-cryptoxanthin esters in food plants. The study proved tropical and subtropical fruits to be an additional source of beta-cryptoxanthin esters in the human diet. The contents ranged from 8 microg/100 g beta-cryptoxanthin laurate in Tunisian orange to 892 microg/100 g beta-cryptoxanthin laurate in papaya.  相似文献

Regular monitoring of air at three different sites, namely, Netaji Nagar, Moti Nagar and Town Hall in the metropolitan city of Delhi, India from June, 1980 to May, 1982 revealed varying levels of residues of DDT and HCH. The concentration of total DDT residues varied from 4 to 232 ng m?3 with an average of 60 ng m?3. Total HCH ranged from 0 to 21797 ng m?3 with an average of 438 ng m?3. Comparatively higher levels of total DDT (73 ng M?3) were detected at Moti Nagar, the site near a DDT factory. The total HCH was highest at Town Hall (931 ng m?3). Normally, higher quantities of the residues of DDT and HCH were detected during October to December. The insecticide residues consisted mainly of p, p′-DDT, p, p′-DDE, o, p′-DDT and p, p′-DDD, α- and γ-HCH. Only p, p′-DDT and p, p′-DDE were detected in all the samples and accounted for the bulk of total DDT. The HCH residues were mainly due to the α-isomer. Generally the concentration of HCH was higher than DDT in the air samples collected during the survey.  相似文献

Crop breeding research by international agricultural research centers usually serves public sector crop breeding, but does it still have a role when research and development have shifted to the private sector? This paper explores this question for vegetables in India using data from 27 private companies and 9 public organizations. We focus on tomato (Solanum lycopersicum L.) and chili pepper (Capsicum annuum L.)—two of India’s most important vegetables, and the role of international germplasm received from the World Vegetable Center. Results show that as the role of the private sector in vegetable breeding increased, and with it the share of hybrids in the market, the role of international agricultural research shifted from the provision of ready-made varieties to the provision of specific resistance traits. Still, international germplasm continued to be used in varietal development with 11.6 t (14 % of the total market) of hybrid tomato seed and 15.0 t (13 %) of hybrid chili pepper seed sold in 2014 containing international germplasm in its pedigree. We estimate that over half a million farmers use such seed. We conclude that for tomato and chili pepper, international breeding needs to focus on pre-breeding research, capacity strengthening of smaller seed companies, and the delivery of open-pollinated varieties for marginal environments.  相似文献

辣椒干储藏是干辣椒生产、贸易、消费中的一个重要环节,为给辣椒干的经营者和消费者提供参考依据和科学指导,本研究以线辣椒品种(系)“L14”和“陕椒2006”为试材,在冷藏、常温遮光,常温不遮光条件下储藏8个月,定期观测其主要品质性状的变化。结果表明:“L14”和“陕椒2006”果实中的辣椒素、辣椒红色素、维生素C和可溶性蛋白质的含量均随着储藏时间的延长而下降,其中前3种物质的保存率均为冷藏> 常温遮光> 常温不遮光,可溶性蛋白质的保存率为常温遮光>常温不遮光>冷藏;可溶性糖的含量则随着储藏时间的延长而缓慢上升,其增加率两品种(系)均为常温不遮光>常温遮光>冷藏。对试验数据两两进行配对T检验,发现温度对储藏期间辣椒素、维生素C含量的影响达到显著水平,对其他指标的影响不显著;光对辣椒红色素、维生素C含量的影响达到显著水平,对其他指标的影响不显著。综合各品质指标考虑,低温、遮光是辣椒干储藏的理想方式。  相似文献

  【目的】   比较不同辣椒品种植株Cd的吸收和积累动态差异,明确Cd积累关键期,为生产上规避辣椒Cd积累提供技术支持。   【方法】   以8个辣椒品种为材料进行了田间小区试验,供试土壤全镉含量为0.194 mg/kg。在辣椒苗期 (移栽当天)、壮苗期 (移栽后32 天)、结果期 (移栽后65 天)、成熟期 (移栽后111天) 采样,分析辣椒植株根、茎、叶及果实生物量、Cd含量,计算不同组织间的Cd运转系数。   【结果】   供试8个品种分为菜椒和朝天椒两类。4次采集的样品,叶部Cd含量均为菜椒 > 朝天椒,果实Cd含量在结果期菜椒高于朝天椒,成熟期朝天椒显著高于菜椒。朝天椒果实以品种艳椒425的Cd含量最低,菜椒以品种苏椒5号Cd含量最低。壮苗期为辣椒植株Cd的快速积累期,朝天椒根、茎和叶Cd含量移栽后0到32天分别增加了14.9、51.2和51.9倍,菜椒分别增加了8.9、25.6和39.9倍。结果期Cd积累变缓,移栽后65天朝天椒根、茎和叶Cd含量比移栽后32 天分别增加了0.35、0.55和–0.13倍,菜椒分别增加了0.20、0.01和–0.29倍;成熟期 (移栽后111 天) 朝天椒根、茎和叶Cd含量比结果初期 (移栽后65天) 分别增加了–0.29、0.44和–0.40倍,菜椒分别增加了–0.34、–0.14和–0.32倍。不同辣椒品种Cd在植株内的转运能力有差异,4次采样根–茎Cd转运效率菜椒 > 朝天椒,而茎–叶、叶–果和茎–果Cd转运效率则是朝天椒 > 菜椒。辣椒果实Cd积累量与壮苗期茎的Cd含量呈极显著正相关 (P < 0.01),与茎–果、叶–果Cd转运效率显著相关 (P < 0.05)。   【结论】   壮苗期前 (移栽后0~32天) 为辣椒植株Cd的快速积累期,该时期辣椒根茎叶中的Cd含量可以增加数十倍,进入结果期Cd含量的增加速率大大降低。壮苗期辣椒茎的Cd含量与果实Cd积累量呈极显著相关。菜椒根中的Cd向茎的转运能力较强,而朝天椒茎叶中的Cd向果实中转运能力较强,因而,朝天椒果实Cd积累能力高于菜椒。  相似文献

Lupine flour, protein, and fiber have become common ingredients in food products. The association of lupine-related allergic incidents with peanut allergy is a cause for concern as the latter may bring about severe reactions. In this study, a hybridization probe-based real-time PCR assay for the detection of lupine DNA in foods was developed. Particular attention was paid to the specificity of the method, which was verified by analysis of DNA extracts from more than 50 potential food ingredients such as legumes, cereals, seeds, nuts, spices, fruits, and meat. The limit of detection of the method was determined as 0.1 mg/kg. The successful detection of the presence/absence of lupine DNA in 20 samples proved the suitability of the assay for the analysis of frequently encountered food matrices.  相似文献

OBJECTIVE: To describe geographical differences and time trends in the supply of the most important food components of the traditional Mediterranean diet. DESIGN: Food supply data collected from national food balance sheets for the period 1961-2001. SETTING: Selected Mediterranean countries: Spain, Italy, France, Greece, Algeria, Morocco, Tunisia and Turkey. RESULTS: Differences of almost 30-fold and five-fold were found in the supply of olive oil and fruits and vegetables, respectively, among the Mediterranean countries studied during the 1960s. A favourable increasing trend for the supply of fruit and vegetables was observed in most Mediterranean countries. However, an increase in the supply of meats and dairy products and a decrease in the supply of cereals and wine were observed in European Mediterranean countries from 1961 until 2001. Only in African and Asiatic Mediterranean countries were cereals the base of food supply. During the 1990s, Greece's food supply pattern was closest to the traditional Mediterranean diet, while Italy and Spain maintained a high availability of fruits, vegetables and olive oil, but were losing the other typical components. Among African and Asiatic Mediterranean countries, only Turkey presented a traditional Mediterranean dietary pattern except with respect to olive oil, the supply of which was very low. France showed a Western dietary pattern, with a high supply of animal products and a low supply of olive oil. CONCLUSIONS: Dietary supplies in the Mediterranean area were quite heterogeneous in the 1960s and have experienced a process of Westernization, especially in European Mediterranean countries.  相似文献

Maintaining soil organic carbon (SOC) in arid ecosystem is important for soil productivity and restoration of deserted sandy soil in western plain of India. There is a need to understand how the cropping systems changes may alter SOC pools including total organic carbon (TOC), particulate organic C (POC), water soluble carbon (WSC), very labile C (VLC), labile C (LC), less labile C (LLC) and non-labile C (NLC) in arid climate. We selected seven major agricultural systems for this study viz., barren, fallow, barley–fallow, mustard–moth bean, chickpea–groundnut, wheat–green gram and wheat–pearl millet. Result revealed that conversion of sandy barren lands to agricultural systems significantly increased available nutrients and SOC pools. Among all studied cropping systems, the highest values of TOC (6.12 g kg?1), POC (1.53 g kg?1) and WSC (0.19 g kg?1) were maintained in pearl millet–wheat system, while the lowest values of carbon pools observed in fallow and barren land. Strong relationships (P < 0.05) were exhibited between VLC and LC with available nutrients. The highest carbon management index (299) indicates that wheat–pearl millet system has greater soil quality for enhancing crop productivity, nutrient availability and carbon sequestration of arid soil.  相似文献

Aflatoxins are a group of very carcinogenic mycotoxins that can be found on a wide range of food commodities including nuts, cereals, and spices. In this study, the first LC-MS/MS stable isotope dilution assay (SIDA) for the determination of aflatoxins in foods was developed. The development of this method was enabled by easily accessible isotope-labeled (deuterated) aflatoxins B2 and G2, which were synthesized by catalytic deuteration of aflatoxin B1 and G1, purified, and well-characterized by NMR and MS. All four aflatoxins of interest (B1, B2, G1, and G2) were quantified in food samples by using these two labeled internal standards. The response factors (RF) of the linear calibrations were revealed to be matrix independent for labeled aflatoxin B2/aflatoxin B2 and labeled aflatoxin G2/aflatoxin G2. For labeled aflatoxin B 2/aflatoxin B 1 and labeled aflatoxin B2/aflatoxin G1 matrix-matched calibration was performed for the model matrices almonds and wheat flour, showing significant differences of the RFs. Limits of detection (LOD) were determined by applying a statistical approach in the presence of the two model matrices, yielding 0.31 microg/kg (aflatoxin B1), 0.09 microg/kg (aflatoxin B2), 0.38 microg/kg (aflatoxin G1), and 0.32 microg/kg (aflatoxin G2) for almonds (similar LODs were obtained for wheat flour). Recovery rates were between 90 and 105% for all analytes. Coefficients of variation (CV) of 12% (aflatoxin B1), 3.6% (aflatoxin B2), 14% (aflatoxin G1), and 4.8% (aflatoxin G2) were obtained from interassay studies. For further validation, a NIST standard reference food sample was analyzed for aflatoxins B1 and B2. The method was successfully applied to determine trace levels of aflatoxins in diverse food matrices such as peanuts, nuts, grains, and spices. Vitamin E was determined by the high-performance liquid chromatography (HPLC) method. All the plants tested showed differences in their alpha-tocopherol content and the differences were significant (p < 0.05). The highest alpha-tocopherol content was in Sauropus androgynus leaves (426.8 mg/kg edible portion), followed by Citrus hystrix leaves (398.3 mg/kg), Calamus scipronum (193.8 mg/kg), starfruit leaves Averrhoa belimbi (168.3 mg/kg), red pepper Capsicum annum (155.4 mg/kg), local celery Apium graveolens (136.4 mg/kg), sweet potato shoots Ipomoea batatas (130.1 mg/kg), Pandanus odorus (131.5 mg/kg), Oenanthe javanica (146.8 mg/kg), black tea Camelia chinensis (183.3 mg/kg),papaya Carica papaya shoots (111.3 mg/kg), wolfberry leaves Lycium chinense (94.4 mg/kg), bird chili Capsicum frutescens leaves (95.4 mg/kg), drumstick Moringa oleifera leaves (90.0 mg/kg), green chili Capsicum annum (87 mg/kg), Allium fistulosum leaves (74.6 mg/kg), and bell pepper Capsicum annum (71.0 mg/kg). alpha-Tocopherol was not detected in Brassica oleracea, Phaeomeria speciosa, Pachyrrhizus speciosa, Pleurotus sajor-caju, and Solanum melongena.  相似文献

The qualitative and quantitative composition of the essential oil from black, green, and white pepper was determined by using a simultaneous distillation and extraction micromethod for oil isolation and gas chromatography (GC)/flame ionization detection (FID) and GC/mass spectrometry (MS) analysis techniques. The most abundant compounds in pepper oils were (E)-beta-caryophyllene (1.4-70.4%), limonene (2.9-38.4%), beta-pinene (0.7-25.6%), Delta-3-carene (1.7-19.0%), sabinene (0-12.2%), alpha-pinene (0.3-10.4%), eugenol (0.1-41.0%), terpinen-4-ol (0-13.2%), hedycaryol (0-9.1%), beta-eudesmol (0-9.7%), and caryophyllene oxide (0.1-7.2%). Green pepper corn obtained by a sublimation drying method gave more oil (12.1 mg/g) and a much higher content of monoterpenes (84.2%) in the oil than air-dried green pepper corn (0.8 mg/g and 26.8%, respectively). The oil from ground black pepper contained more monoterpenes and less sesquiterprnes and oxygenated terpenoids as compared to green and white pepper oils. After 1 year of storage of pepper samples in a glass vessel at room temperature, the amount of the oils isolated decreased, the content of terpenes decreased, and the amount of oxygenated terpenoids increased.
