Genetic variation in the physical properties of sweet potato starch.   总被引:10,自引:0,他引:10  
Sweet potato starch, prepared from 44 genotypes adapted to Philippine conditions, showed wide variation and distinctly different pasting profiles in Rapid Visco-Analyzer (RVA) analysis at 11% and 7% starch concentration. At 11% starch concentration, the pasting profiles were type A, characterized by high to moderate peak with a major breakdown and low cold paste viscosity. At 7%, the pasting profile was generally type C, characterized by the absence of a distinct peak with none to very slight breakdown and high cold paste viscosity. However, differentiation among genotypes was better achieved from RVA pasting profiles at 11% starch concentration. Peak viscosity (PV) and hot paste viscosity (HPV) at 11% starch paste concentration had significant negative correlation with amylose content. PV, HPV, and setback ratio were significantly correlated to adhesiveness of the starch gel. Sweet potato starch generally had high swelling volume but low solubilities at 92.5 degrees C.  相似文献

Starch‐lipid composites are a new category of fat replacers. The physicochemical properties of reconstituted corn starch and soybean oil composites (CSSBOC) were evaluated and compared with the properties of reconstituted jet‐cooked corn starch (JCCS). Gel firmness, thermal properties, and hot pasting properties at two pH levels and two oil content levels were studied. Amylose content of CSSBOC was unaffected by processing. Buffer pH significantly affected the firmness of the gels made with JCCS. Gels appeared to have a more ordered structure and were firmer at pH 3.4 than at pH 6.0. The firmness of gels made with CSSBOC was not affected by pH or oil content. Retrogradation enthalpy of the gels made with JCCS was significantly affected by pH. Differences in the thermal characteristics of gels made with CSSBOC were attributed to pH and oil content. Peak viscosity, cold paste viscosity, and breakdown viscosity changed significantly when CSSBOC pastes were reconstituted in different pH buffers. Only hot paste viscosity and cold paste viscosity changed significantly when JCCS pastes were reconstituted in different pH buffers. Results establish critical parameters for processing decisions and for the understanding of the behavior of CSSBOC in food system models in which pH is an important factor.  相似文献

Physical and functional properties of starches isolated from 93 noncultivated genotypes of nine Amaranthus species from a world germ plasm collection and an additional 31 cultivated Amaranthus genotypes obtained from China were tested. A wide variation was found in the properties tested among the Amaranthus species and among genotypes within the same species. When comparing starches from cultivated and noncultivated genotypes, it was generally found that amylose was lower; starch pasting profiles were more consistent with higher peak viscosity, lower breakdown, and lower setback; the gelatinization temperature was lower; and energy of enthalpy was higher. Under cool storage, the hardness of cultivated starch pastes was lower and the adhesiveness was higher. As expected, amylose content was a primary factor affecting the physical and functional properties of Amaranthus starch. Compared with reference maize, rice, and wheat starches, Amaranthus starch tended to have lower hot paste viscosity and lower cool paste viscosity; and higher gelatinization temperatures and higher energy of enthalpy. Furthermore, Amaranthus starch pastes showed less change of gel hardness and adhesiveness after cold storage. The environmental effect on the different properties of starch varied among Amaranthus species. It is suggested that Amaranthus starches can be developed for a wide range of food uses.  相似文献

Pasting profiles of selected starches were compared by using a Micro Visco‐Amylo‐Graph (MVA) and a Rapid Visco Analyser (RVA). Effects of cooking (heating/cooling) rate and stirring speed on starch pasting properties were examined. The pasting viscosity of a starch suspension (8%, w/w, dsb) was measured at a fast (6°C/min) and slow (1.5°C/min) cooking rate while being stirred at either 75 rpm or 160 rpm. The pasting temperatures (PT) of all starches were higher when measured at the fast cooking rate than those at the slow cooking rate, except for wheat measured by using the RVA. PT was also higher when measured at the slow stirring speed (75 rpm) than at the fast stirring speed (160 rpm) in both RVA and MVA. When stirring speed increased from 75 rpm to 160 rpm, peak viscosity of all starch pastes except potato decreased measured by using the RVA, but increased by using the MVA. In general, amylograms of these starches obtained by using the MVA showed less breakdown, but greater setback viscosity than did that obtained by using the RVA. Differences in starch pasting properties between MVA and RVA, measured at the same cooking and stirring rates, were attributed mainly to the difference in spindle structure.  相似文献

Waxy maize and potato starches were dispersed in pH 6.0 and 8.0 aqueous solutions (1%) of an ionic gum (sodium alginate, sodium carboxymethylcellulose, and xanthan). The mixture was dried at 45°C overnight and then heat‐treated 2 hr at 130°C. Effects on the paste viscosity of the products in a pH 7.0 buffer were examined. Heating with sodium alginate or sodium carboxymethylcellulose (CMC) increased the paste viscosity of waxy maize starch but reduced that of potato starch. In both starches, xanthan effected greater viscogram changes than did sodium alginate or CMC. Use of xanthan in the treatment produced products with restricted granular swelling and increased shear stability of the pastes. The pH of the starch‐gum mixtures affected the thermally induced viscosity changes. Mild acidity (pH 6.0) effected a viscosity decrease for the heat‐treated starch product, whereas alkalinity (pH 8.0) raised the viscosity regardless of the presence of gum. But pH 6 before heat treatment was favored for viscosity increase by sodium alginate, whereas pH 8 gave a greater increase in viscosity when xanthan was used. By using gum mixtures such as xanthan‐alginate and xanthan‐CMC, both viscosity increase and good shear‐stability were achieved.  相似文献

The Rapid Visco‐Analyzer (RVA) was used to characterize the pasting properties of 68 sorghum grains with a standard 23‐min temperature profile. The results showed a strong linear relationship between ethanol yield and final viscosity as well as setback. Ethanol yield increased as final viscosity decreased. A modified RVA procedure (10 min) with an application of α‐amylase was developed to simulate the liquefaction step in dry‐grind ethanol production. There was a remarkable difference in mashing properties among the sorghum samples with the normal dosage of α‐amylase. The sorghum samples which were difficult to liquefy in the mashing step had much higher peak viscosities than the samples that were easily liquefied. The results also showed that the relationship between conversion efficiency and mashing property was significant. Tannins cause high mash viscosities. There was a strong linear relationship between tannin content and final viscosity as well as peak viscosity. The modified RVA procedure is applicable not only for characterization of mashing properties but also for optimization of α‐amylase doses for starch liquefaction.  相似文献

Some mutant wheat lines with low‐amylose content were grown in a field and greenhouse (15 or 20°C) to compare apparent amylose content and starch pasting properties. The apparent amylose content of flour and starch increased and starch pasting parameters as measured by a Rapid Visco Analyser (RVA) changed in the greenhouse (at cool temperatures) during seed maturation. Densitometric analysis of the protein band separated by electrophoresis suggested that the increase in amylose content by cool temperature was related to the amount of Wx‐D1 protein. This data suggests that the Wx‐D1 gene was responsible for these changes. In wheat starch from Tanikei A6099 and Tanikei A6598 at 15°C, the value of final viscosity and total setback was higher than that from the field. In wheat starch from Tanikei A6599‐4 (waxy mutant with stable hot paste viscosity), the peak viscosity temperature was higher and time maintained >80% of the peak was shorter at 15°C than that from the field. Genetic analysis using doubled‐haploid (DH) lines from a combination of Tanikei A6599‐4 and Kanto 118 (low‐amylose line) showed that apparent amylose content increased and the starch pasting curve and properties changed in waxy progenies similar to Tanikei A6599‐4.  相似文献

The effect of betacyanin pigments from Amaranthus tricolor and Amaranthus cruentus on chromatic and physicochemical properties of three wheat flours was studied. Addition of Amaranthus betacyanins increased the gelatinization temperatures (T(o), T(p), and T(c)) of all wheat flours without altering their transition ranges (T(c)-T(o)). The melting enthalpies (DeltaH) were either increased or decreased depending on the types of flour and pigment. Amaranthus betacyanins decreased the peak viscosity (PV), hot paste viscosity (HPV), cold paste viscosity (CPV), setback (SB), and pasting time (PT) of all flours and increased the breakdown (BD). Texture profile analysis (TPA) showed that Amaranthus betacyanins decreased hardness, and gumminess, and increased cohesiveness of all gels, without altering adhesiveness. Chromatic investigation exhibited that A. tricolor and A. cruentus pigments imparted gels with red and orange-yellow hues with favorable color stability.  相似文献

Starch was extracted from 10 sorghum genotypes and physicochemical properties (amylose content and pasting, textural, and thermal properties) were evaluated. The amylose content was 24–30%. DC‐75 starch had the highest peak viscosity (380 Rapid Visco Analyser units). Gelatinization peak temperature occurred over a narrow range (67–69°C). Genotypes Kasvikisire and SV2 produced white starches. Starches from other genotypes were different shades of pink. The starch noodles prepared were, accordingly, either white or pink. Cooking enhanced the pink coloration of noodles. Cooking loss, noodle rehydration, and elasticity were evaluated. Cooking loss was low (mean 2.4%). Noodle elasticity was highly correlated with starch pasting properties of hot paste viscosity (HPV) (r = 0.81, P < 0.01) and cold paste viscosity (CPV) (r = 0.75, P < 0.01). Noodle rehydration was significantly correlated to the initial swelling temperature of starch (Ti) (r = ‐0.91, P < 0.001) and gelatinization peak temperature (Tp) (r = 0.69, P < 0.05). The findings suggest a potential area of food application for sorghum genotypes of different grain colors. Evaluation of starch properties could be a good starting point for selecting sorghum genotypes with superior noodle‐making properties.  相似文献

The aim of this research was to optimize mixtures of fibers from different sources and degree of processing meeting acceptable dough viscometric standards to design low‐calorie wheat bread formulations. Effects of soluble (inuline [FN]), partially soluble (sugar beet [FX]), pea cell wall (SW), and insoluble (pea hull [EX]) dietary fibers on wheat dough pasting and gelling profiles have been investigated. Impact of fibers added singly and in associated mixtures at different levels on the investigated viscometric parameters retrieved from a Rapid Visco Analyser curve has been assessed by response surface methodology, and the thermal parameters derived from the cooking and cooling functional profile were correlated. Flour replacement up to 34% by fibers significantly provided a deleterious effect on pasting and gelling viscosity profiles of the resulting hydrated high fiber‐flour blends. The magnitude of the reduction in dough viscometric characteristics during gelatinization, pasting, and setback closely depended on the nature of the fibers in the blend and on the extent of the flour substitution. A delayed and restricted swelling of starch granules and amylose leaching process preferentially achieved by the pair FN‐FX resulted in higher pasting temperatures and reduced peak viscosities during cooking and a sharp decrease of the setback on cooling. Single addition of FX, FN, and EX, respectively, provided a significant decrease in both breakdown viscosity and viscosity at the end of 95°C. Simultaneous presence of FN and EX that exhibit medium or low hydration properties allowed a partial restoration of initial breakdown viscosity and a simultaneous decrease in holding strength. Caution should be paid to the pairs FN‐FX and EX‐SW because of the adverse extra decline they induced in the viscosities of both hot paste and cold gel.  相似文献

The objective was to study the influence of jet‐cooked Prowashonupana barley flour on total phenolic contents, antioxidant activities, water‐holding capacities, and viscoelastic properties. Barley flour was jet‐cooked without or with pH adjustment at 7, 9, or 11. Generally, the free phenolic content and antioxidant activity decreased after jet‐cooking, while the bound phenolic content and antioxidant significantly increased regardless of pH. Detectable levels of gallic acid, caffeic acid, ferulic acid, and p‐coumaroyl‐pentose in the jet‐cooked barley flour hydrolysates along with vitexin were found among 21 phenolics by LC‐ESI‐Q‐TOF‐MS analysis. Jet‐cooking at an elevated pH resulted in increased pasting viscosities. The oil content was decreased after jet‐cooking and continued to decrease with increased pH values. Jet cooking dramatically increased water holding capacity from 179% for unprocessed flour to 643% for jet‐cooked flour without pH adjustment, and water‐holding capacity was greatly increased to 914% by jet‐cooking at pH 11. The combination of jet‐cooking and pH adjustment had tremendous influence on water‐holding and pasting properties. This increase in functionality should contribute to food applications such as bakery and frozen products because of the release of the bound phenolic content, antioxidant activities, and improved water‐holding and pasting abilities.  相似文献

Whole sorghum flour was fermented (a five‐day natural lactic acid fermentation) and dried under forced draught at 60°C, and evaluated for its effect on sorghum and wheat composite bread quality. In comparison with unfermented sorghum flour, fermentation decreased the flour pH from 6.2 to 3.4, decreased total starch and water‐soluble proteins, and increased enzyme‐susceptible starch, total protein, and the in vitro protein digestibility (IVPD). Fermentation and drying did not decrease the pasting temperature of sorghum flour, but slightly increased its peak and final viscosity. In comparison with composite bread dough containing unfermented sorghum flour, fermented and dried sorghum flour decreased the pH of the dough from 5.8 to 4.9, increased bread volume by ≈4%, improved crumb structure, and slightly decreased crumb firmness. IVPD of the composite bread was also improved. Mixing wet fermented sorghum flour directly with wheat flour (sourdough‐type process) further increased loaf volume and weight and reduced crumb firmness, and simplified the breadmaking process. It appears that the low pH of fermented sorghum flour inactivated amylases and increased the viscosity of sorghum flour, thus improving the gas‐holding capacity of sorghum and wheat composite dough. Fermentation of sorghum flour, particularly in a sourdough breadmaking process, appears to have considerable potential for increasing sorghum utilization in bread.  相似文献

The starch of wheat (Triticum aestivum L.) flour affects food product quality due to the temperature-dependent interactions of starch with water during gelatinization, pasting, and gelation. The objective of this study was to determine the fundamental basis of variation in gelatinization, pasting, and gelation of prime starch derived from seven different wheat cultivars: Kanto 107, which is a partial waxy mutant line, and six near-isogenic lines (NILs) differing in hardness. Complete pasting curves with extended 16-min hold at 93°C were obtained using the Rapid Visco Analyser (RVA). Apparent amylose content ranged from 17.5 to 23.5%; total amylose content ranged from 22.8 to 28.2%. Starches exhibited significant variation in onset of gelatinization. However, none of the parameters measured consistently correlated with onset or other RVA curve parameters that preceded peak paste viscosity. Peak paste viscosity varied from 190 to 323 RVA units (RVU). Higher peak, greater breakdown, lower final viscosity, negative setback, and less total setback were associated with lower apparent and total amylose contents. Each 1% reduction in apparent or total amylose content corresponded to an increase in peak viscosity of about 22 and 25 RVU, respectively, at 12% starch concentration. Of the seven U.S. cultivars, the lower amylose cultivars Penawawa and Klasic were missing the granule-bound starch synthase (GBSS; ADPglucose starch glycosyl transferase, EC 2.4.4.21) protein associated with the Waxy gene locus on chromosome 4A (Wx-B1 locus). Kanto 107 was confirmed as missing both the 7A and 4A waxy proteins (Wx-A1 and Wx-B1 loci). The hardness NIL also were shown to be null at the 4A locus. Apparent and total amylose contents of prime starch generally corresponded well to the number of GBSS proteins; although the hardness NIL tended to have somewhat higher amylose contents than did the other GBSS 4A nulls. We concluded that reduced quantity of starch amylose due to decreased GBSS profoundly affects starch gelatinization, pasting, and gelation properties.  相似文献

Isogenic lines carrying the du or su(2) genes in five different maize inbred lines were developed, and the effect of the starch-modifying genes on general, thermal, pasting, and gel textural properties of starch was studied. Swelling power of du and su(2) starches was significantly lower than that of normal starch. The peak viscosity of du starches was reduced, peaks were sharper, and the setback was lower than in normal starches. The hardness of du starch gels increased and the adhesiveness decreased severalfold during 7 days of storage, indicating unstable gel texture. The su(2)/su(2) starches had flatter viscosity peaks than normal starches, with extremely low viscosity and almost zero breakdown and setback. In the su(2) starch gels hardness and adhesiveness did not change significantly during 7 days of storage. For most measured properties, there was considerable variation among different inbred backgrounds carrying the same mutant genotypes. Genetic background and starch-modifying genes can both be manipulated to select specific desired starch properties.  相似文献

The aim of the present study was to investigate effects of debranching, autoclaving‐storing cycles, and drying processes (oven‐drying or freeze‐drying) on RS contents, thermal, pasting, and functional properties of high‐amylose maize starches (Hylon V and Hylon VII). The resistant starch (RS) contents increased (≤57.8%) with increasing autoclaving‐storing cycles. RS contents of oven‐dried samples were higher than those of freeze‐dried samples due to ongoing retrogradation of starch during oven drying at 50°C. Debranching caused a significant decrease in peak transition temperature and enthalpy values as compared with native starches. Solubility and water binding values of RS preparations were higher than those of native starches. Addition of native and autoclaved samples had improving effect on emulsion properties of albumin. Cold viscosity values of oven‐dried samples were lower as compared with freeze‐dried samples; this might be due to higher number of H‐bonds in the oven‐dried samples expected to be formed during drying. Debranching and autoclaving‐storing cycles caused decreases in peak, breakdown, and final viscosity values. The results of present study showed that debranching and heat treatments increased the RS contents and improved the functional properties of high‐amylose maize starches.  相似文献

To release bound phenolic acids, a microwave-assisted extraction procedure was applied to bran and flour fractions obtained from eight sorghum and eight maize cultivars varying in hardness. The procedure was followed by HPLC analysis, and the identities of phenolic acids were confirmed by MS/MS spectra. The extraction of sorghum and maize bound phenolic acids was done for 90 s in 2 M NaOH to release ferulic acid and p-coumaric acid from bran and flour. Two diferulic acids, 8-O-4'- and 8-5'-benzofuran form, were identified and quantitated in sorghum bran, and only the former was found in maize bran. The contents of ferulic acid and diferulic acids in sorghum bran were 416-827 and 25-179 μg/g, respectively, compared to 2193-4779 and 271-819 μg/g in maize. Phenolic acid levels of sorghum were similar between hard and soft cultivars, whereas those of maize differed significantly (p < 0.05) except for ferulic acid in flour. Sorghum phenolic acids were not correlated with grain hardness as measured using a tangential abrasive decortication device. Maize ferulic acid (r = -0.601, p < 0.01), p-coumaric acid (r = -0.668, p < 0.01), and 8-O-4'-diferulic acid (r = -0.629, p < 0.01) were significantly correlated with hardness.  相似文献

Tef, Eragrostis tef (Zucc.) Trotter, is a cereal crop originated and diversified in Ethiopia, where it is used to produce a range of food products. This study aimed to profile and quantify the phenolic composition and antioxidant potential of seven tef grain varieties. Soluble and bound phenolics ranged from 37 to 71 and from 226 to 376 mg of gallic acid equivalent/100 g dry basis (db), and soluble and bound flavonoid contents varied between 36 and 64 and between 113 and 258 mg of catechin equivalent/100 g db, respectively. Protocatechuic, vanillic, syringic, p‐coumaric, sinapic, ferulic, and rosmarinic acids, catechin, and naringenin were detected at least in three of the varieties studied. The dominant phenolic compounds were catechin, rosmarinic acid, and ferulic acid in the soluble extracts, whereas ferulic, rosmarinic, and p‐coumaric acids were the dominant ones in the bound extract. Gallic, caffeic, and salicylic acids were not detected in any of the varieties studied. The majority (>84%) of tef grain phenolics were found in bound form, contributing >84% of total 2,2‐diphenyl‐1‐picrylhydrazyl antioxidative capacity and >80% of total ferric reducing antioxidant power. These results clearly demonstrated the differences in phenolic profile among tef grain varieties. These results are relevant for developing healthy and nutritious tef‐based food products.  相似文献

在大田条件下,选用3个不同类型优质小麦品种: 豫麦47(强筋品种)、山农8355(中筋品种)和豫麦50(弱筋品种),设置3个氮肥水平: 施N 0、15和30 g/m2,研究了小麦子粒淀粉的粒度分布、直支链淀粉组成、糊化特性及其对氮素水平的响应。结果表明,优质小麦子粒中淀粉粒的粒径分布范围为1~45 μm,其数目分布呈单峰或双峰曲线变化,体积和表面积分布均呈双峰曲线变化,峰谷位于10 μm处; 据此可将淀粉粒分为两种类型: A型大淀粉粒(10~45 μm)和B型小淀粉粒(1~10 μm)。优质小麦子粒淀粉粒组成存在显著的基因型差异。强筋品种豫麦47子粒中B型淀粉粒的比例较高,弱筋品种豫麦50子粒中A型淀粉粒的比例较高,中筋品种山农8355居中。施氮水平对优质小麦子粒中淀粉的粒度分布存在显著影响。在本试验条件下,随氮素水平的提高,强筋品种豫麦47子粒中A型淀粉粒的比例提高,而B型淀粉粒的比例下降; 增施氮肥后弱筋品种豫麦50和中筋品种山农8355子粒中B型淀粉粒的比例增大,而A型淀粉粒的比例降低,且前者变化的幅度较大。适量增施氮肥提高优质小麦子粒中的淀粉含量,氮肥用量进一步增大后,淀粉含量降低; 增施氮肥后优质小麦子粒中直链淀粉含量降低。增施氮肥对优质小麦子粒淀粉的糊化特性存在较大影响,且此影响的趋势因基因型和施氮量而异。其中强筋品种豫麦47表现为低谷粘度、最终粘度、反弹值、糊化温度和峰值时间提高,而高峰粘度和稀懈值降低; 当氮肥用量增大至30 g/m2时,糊化温度和峰值时间降低,而以粘度为单位的参数均提高。弱筋品种豫麦50表现为增施氮肥后,RVA参数呈下降趋势,与之相对应中筋品种山农8355的呈上升趋势。相关性分析表明,B型淀粉粒的数目、体积和表面积比例与高峰粘度和稀懈值存在显著正相关; 与低谷粘度、最终粘度和反弹值存在显著负相关。子粒中直链淀粉含量、支链淀粉含量和总淀粉含量与高峰粘度和稀懈值呈显著负相关,与低谷粘度、最终粘度、反弹值和峰值时间呈一定程度正相关; 直链淀粉相对含量与RVA特征参数之间的相关趋势与子粒中直链淀粉含量的趋势一致,但均未达显著水平。由此可以认为,氮肥通过调控小麦子粒中淀粉的直、支链组成和粒度分布而影响其糊化特性。  相似文献

Barley β‐glucan has cholesterol‐lowering properties and can be positively affected by heat treatments. The aim of this study was to examine the effects of heat treatments of whole‐grain barley on starch pasting, particle size, and color. Three heat treatments (micronization, roasting, and conditioning) were performed on three cultivars of barley (CDC Rattan, CDC McGwire, and CDC Fibar). All three heat treatments increased peak, breakdown, setback, and final viscosity of CDC Rattan and CDC Fibar. However, they had little effect on the starch‐pasting profile of CDC McGwire. Roasting and conditioning reduced the mean particle size compared with untreated particles, whereas micronization had minimal effect. Heat treatments reduced L* and increased a* and b* compared with no treatment. Overall, this research shows that heat treatments can change other properties of barley that may affect its function in food applications.  相似文献
