Early-weaned Angus x Simmental heifers were used to evaluate the effects of postweaning nutritional management on feedlot performance, carcass merit, and the relationship of intramuscular and subcutaneous fat deposition to the feed efficiency among heifers fed for a high-quality market. Sixteen heifers were weaned at 73+/-5.5 d of age and grazed on endophyte-infected tall fescue for 18 mo before entering the feedlot (early-weaned-P). Eighty heifers from the following year's calf crop were weaned at 71+/-5.5 d of age and allowed either ad libitum access to a 25% concentrate diet (early-weaned-25C) or limit-fed a 90% concentrate diet (early-weaned-90C) to achieve a similar ADG. Following a 119-d growing period, 16 early-weaned-90C and 16 early-weaned-25C calves were paired based on BW and growth rate and individually fed during the finishing period along with the early-weaned-P heifers. Ultrasound measurements of s.c. and i.m. fat were recorded at approximately 60-d intervals throughout the finishing period. Feed efficiency was regressed against s.c. and i.m. fat, and i.m. fat was regressed on s.c. fat. Despite a similar ADG, early-weaned-90C calves gained more efficiently (P < or = 0.05) in the feedlot than early-weaned-25C calves. Heifers finished as yearlings tended (P < or = 0.10) to gain faster but gained less efficiently (P < or = 0.01) than early-weaned-90C heifers finished as calves. The rate of s.c. and i.m. fat deposition was similar between early-weaned-90C and early-weaned-25C heifer calves. The calves were grouped together for comparison to yearlings. Feed efficiency decreased quadratically (P < or = 0.01) as s.c. fat cover increased. The rate at which feed efficiency decreased relative to increasing s.c. fat cover was similar regardless of age at feedlot entry. However, heifers finished as calves gained more efficiently (P < or = 0.01) than yearlings at any given fat thickness. Feed efficiency decreased linearly (P < or = 0.01) as i.m. fat increased among heifers finished as calves. Additionally, heifers finished as calves deposited i.m. fat at a faster rate relative to s.c. fat (P < or = 0.01) than yearlings. These data suggest that heifers finished as calves produce high-quality carcasses with less s.c. fat cover while gaining more efficiently than heifers finished as yearlings.  相似文献

Data collected from steer and bull progeny, fed to a constant final feedlot weight over 11 yr, were used to estimate heterosis in post-weaning feedlot growth and carcass traits in two-way and three-way rotational crossing systems and a breed composite from crossing Hereford, Angus and Charolais breeds. Steer and bull progeny from matings of beef x Brown Swiss-cross sires and dams also were compared with the straight beef breeds and beef crosses. Growth traits evaluated were initial weight on test, 112-d weight, total feedlot average daily gain and total days from initial to final weight. Carcass traits included hot carcass weight, dressing percentage, rib eye area, 12th-rib fat thickness, kidney, pelvic and heart fat, yield grade and marbling score. Heterosis estimates for calves of all crossing systems were significant for initial and 112-d weight and for saving of days in the feedlot, but not for average daily feedlot gain. Heterosis estimates were small and nonsignificant for most carcass traits except for fat traits in specific crosses. Males from Hereford and Angus sires mated to Angus x Hereford dams had higher (P less than .10) backfat than did the parental average. Male progeny from Charolais ranked higher (P less than .10 to P less than .01) than calves from Hereford and Angus sires for most growth traits. Progeny from Charolais sires were more desirable (P less than .10 to P less than .01) for traits related to cutability, but they had less (P less than .05 to P less than .01) marbling than calves of Angus sires.(ABSTRACT TRUNCATED AT 250 WORDS)  相似文献

Our objective was to determine if serum concentrations of leptin could be used to predict carcass composition and merit in feedlot finished cattle. Two different groups of crossbred Bos taurus steers and heifers were managed under feedlot conditions near Miles City, MT. The first group consisted of 88 1/2 Red Angus, 1/4 Charolais, and 1/4 Tarentaise composite gene combination steers (CGC) harvested at the ConAgra processing facility in Greeley, CO. The second group (Lean Beef Project; LB) consisted of 91 F2 steers and heifers born to Limousin, Hereford, or Piedmontese by CGC F1 cows crossed to F1 bulls of similar breed composition and harvested at a local processing facility in Miles City, MT. Blood samples were collected approximately 24 h before harvest (CGC) or approximately 3 d before and at harvest (LB). No differences in serum concentrations of leptin were detected (P > 0.10) between Hereford, Limousin, or Piedmontese F2 calves nor between LB steers and heifers. Positive correlations (P < 0.01) existed between serum leptin and marbling score (r = 0.35 and 0.50), fat depth measured between the 12th and 13th rib (r = 0.34 and 0.46), kidney, pelvic, and heart fat (KPH) (r = 0.42 and 0.46), and quality grade (r = 0.36 and 0.49) in CGC and LB cattle, respectively. Serum leptin was also positively correlated with calculated yield grade for CGC steers (r = 0. 19; P = 0. 10) and LB cattle (r = 0.52; P < 0.01). Longissimus area was not correlated with serum leptin in CGC steers (r = 0.12; P > 0.10). However, a negative correlation existed between longissimus area and serum leptin in the LB cattle (r = -0.45; P < 0.01). Serum concentrations of leptin were significantly associated with carcass composition (marbling, back fat depth, and KPH fat) and quality grade in both groups of cattle studied and may provide an additional indicator of fat content in feedlot cattle.  相似文献

The objective of this experiment was to evaluate the effects of various Wagyu sires on carcass quality traits and palatability attributes of cooked ribeye steaks. Wagyu sires were used and grouped as Old (n = 6) or New (n = 2) sires, based on the chronological order in which they were imported into the United States. One hundred thirteen F1 heifer and steer calves sired by Wagyu bulls out of three different sources of cows were fed a backgrounding diet for 112 d consisting of an 80:20 ratio of roughage:concentrate then grazed on a mixture of orchardgrass and bluegrass pasture for 84 d and finished on a 10:90 ratio of roughage:concentrate diet for 231 d in a feedlot. Progeny from New sires had larger (P < .05) ribeye areas, higher (P < .05) marbling scores, and lower (P < .05) maturity scores than progeny from Old sires. Marbling was positively correlated (P < .05) to brightness (r = .56), texture (r = .60), and fat luster (r = .38). Progeny of New sires had lower shear force values (P < .05) than progeny of Old sires. These results indicate the superiority of New Wagyu sires to produce progeny with more marbling, lower shear force values, and larger ribeye areas than Old Wagyu sires. Furthermore, there are substantial differences between Wagyu sires for carcass quality traits and palatability attributes.  相似文献

Two experiments were conducted to evaluate feedlot performance of heifers and calves and the lactational characteristics and carcass composition and quality of heifers while in the single-calf heifer (SCH) system. In Exp. 1, 24 lactating Angus × Holstein heifers were slowly adapted to an 85% concentrate diet, and one-half of the heifers were implanted with Finaplix-H®, both at 11 wk postpartum. Heifer-calf pairs were then placed in feedlot pens, equipped with pinpointer feeding devices, and fed an 85% concentrate diet for 102 d. The control (C) and implanted (I) heifers had similar (P=0.27) daily gains and similar (P=0.30) DMI; however, I heifers consumed 8.9% less (P<0.05) DM as a percentage of BW. Pair efficiency of feed conversion tended to be higher (P<0.09) for I heifers than for C heifers. Hot carcass weight tended to be higher (P<0.10) for the I heifers. Ribeye area was 13% greater (P<0.05) and marbling score was 8.7% lower (P<0.01) for the I heifers than for the C heifers. In Exp. 2, 26 lactating Angus × Simmental heifers were used in the SCH system. Heifer adaptation to a high concentrate diet began 3 to 4 wk prepartum. Two to 3 d postpartum, 16 control (C) and 10 prenatally androgenized (PA) heifer-calf pairs were weighed, and eight C and five PA heifers were implanted with Synovex-H®. They were then placed in feedlot pens equipped with pinpointer feeding devices. By 1 wk postpartum, all heifers were adapted to an 85% concentrate diet and fed until they possessed approximately 1.1 cm s.c. fat cover over the 12th and 13th ribs. Heifers were slaughtered 12 h postweaning. The PA heifers tended to consume more (P<0.11) DM than C heifers. Gain:feed (G:F) was similar (P=0.35) for the C and PA heifers; however, the C heifers tended to have an improved (P<0.08) pair G:F. Heifer G:F and pair G:F were both similar (P=0.53) for the I and nonimplanted heifers. Most carcass measurements were unaffected by treatment; however, the I heifers tended to have higher marbling scores (P<0.07).  相似文献

Seventy Angus x Simmental calves (BW = 166.3 +/- 4.2 kg) were used in a 3 x 2 factorial arrangement to determine the effect of age at feedlot entry and castration on growth, performance, and carcass characteristics. At 82 d of age, steers were castrated. Calves were placed in the feedlot at 111 (early-weaned), 202, or 371 (yearling) d of age. Steers were implanted with Synovex-S followed 93 d later with Revalor-S. Calves were harvested on an individual basis when fat thickness was estimated to be 1.27 cm. During the feedlot phase, yearlings gained faster (P < 0.01) than calves placed in the feedlot at 202 or 111 d of age (1.88, 1.68, and 1.62 kg/d, respectively); however, from 111 d of age until harvest, ADG was greatest for early-weaned calves, intermediate for cattle placed in the feedlot at 202 d of age, and lowest for yearlings (1.62, 1.47, and 1.21 kg/d, respectively; P < 0.01). Early-weaned calves spent the most days in the feedlot, followed by calves placed in the feedlot at 202 d of age; yearlings spent the fewest days in the feedlot (221, 190, and 163 d, respectively; P < 0.01). Total DMI when in the feedlot was similar (P = 0.22) among age groups; however, daily DMI was lowest for early-weaned calves, intermediate for calves placed in the feedlot at 202 d of age, and the highest for yearlings (7.1, 8.1, 10.5 kg/ d, respectively; P < 0.01). Early-weaned calves were the most efficient, followed by calves placed in the feedlot at 202 d of age; yearlings were the least efficient (227, 207, 180 g gain/kg feed, respectively; P < 0.01). Weight at harvest (682, 582, 517 kg, respectively; P < 0.01) and hot carcass weight (413, 358, 314 kg, respectively; P < 0.01) were greatest for yearlings, intermediate for cattle placed in the feedlot at 202 d of age, and lowest for early-weaned calves. Early-weaned calves had the smallest longissimus area, followed by calves placed in the feed-lot at 202 d of age; yearlings had the largest longissimus area (77, 86, 88 cm2, respectively; P < 0.01). Calves placed in the feedlot at 111 and 202 d of age had lower yield grades (3.2, 3.1, 3.5, respectively; P < 0.04), and produced fewer select carcasses than yearlings (25, 13, 48%, respectively; P < 0.01). Bulls and implanted steers both had an ADG of 1.7 kg/d when in the feedlot; however, bulls had a greater (P < 0.09) hot carcass weight (370 vs 354 kg) and a larger (P < 0.01) longissimus area (85.8 vs 81.3 cm2) than steers. Two experiments were conducted to evaluate feedlot performance, lactational characteristics, and carcass composition and quality of heifers and the performance of their calves in a single-calf heifer (SCH) system. In Exp. 1, 13 [10 lactating (L) and 3 nonlactating (NL)] prenatally androgenized (PA) heifers, born to cows implanted with testosterone propionate (TP) and 19 (13 L and 6 NL) control (C) heifers, born to nonimplanted cows, were used. Heifers were calved and the pairs were placed in feedlot pens to evaluate the effects of PA on feedlot performance and lactation. Heifers were fed an 85% concentrate diet and fed to a compositional endpoint of 1.1 cm of subcutaneous fat cover, at which point calves were weaned and heifers slaughtered approximately 12 h later. The NL heifers consumed 17.0% less (P<0.01) dry matter and were 30.8% more (P<0.01) efficient in feed conversion. When calf performance was included, overall feed efficiency of L heifers was 26.9% greater (P<0.05; 0.151 vs 0.119) than that of the NL feedlot heifers. Prenatal androgenization had no effect on heifer performance. Four percent fat-corrected milk yield averaged 7.79 and 5.62 kg/d for PA and C heifers, respectively. The NL heifers had 11.0% greater (P<0.01) marbling score and yield grades were 3.77 and 3.03 (P<0.05) for NL and L heifers, respectively. Livers (P<0.01) and kidneys (P<0.05) as a percentage of shrunk weight were heavier for L heifers than for NL heifers. Two carcasses were classified as hard-boned (C-maturity) and 74% received a USDA Choice grade. The L heifers tended (P<0.10) to have lower taste panel tenderness scores; however, shearforce was similar (P=0.81) for L and NL heifers. In Exp. 2, 24 Angus × Holstein heifers were utilized in the single-calf heifer system, similar to Exp. 1. Calves were weaned from their dam between d 64 and 89 postpartum. Heifers that had their calves early weaned (EW) gained 44.2% faster (P<0.01) and consumed 10.8% less (P<0.05) DM than L heifers. The EW heifers were 60.0% more (P<0.01) efficient than L heifers. However, when calf performance was included with heifer performance, L heifers were 23.7% more (P<0.05) efficient than EW heifers. The EW heifers had 18.9% heavier (P<0.01) hot carcasses than L heifers. Backfat thickness was 1.07 and 0.66 cm (P<0.01) for the EW and L heifers.  相似文献

The effect of breed and diet on insulin response to glucose challenge and its relation to intramuscular fat deposition was determined in 36 steers with 12 each of greater than 87% Wagyu (referred to as Wagyu), Wagyu x Limousin, and Limousin breeds. Weaned steers were blocked by weight into heavy, medium, and light calves and placed in six pens with two pens per weight type and with two steers of each breed per pen. Three pens with steers from each weightclass were fed backgrounding and finishing diets for 259 d, while the other three pens were fed the same diets where 6% of the barley grain was replaced with sunflower oil. Prior to initiation of the finishing phase of the study the intravenous glucose tolerance test (VGTIT) was conducted in all steers. Once steers were judged as carrying adequate 12th-rib fat, based on weight and days on feed, they were harvested and graded and samples of the longissimus muscle were procured for determination of fat content and fatty acid composition. Dietary oil improved (P = 0.011; 0.06) ADG and feed conversion efficiency of steers during the latter part of backgrounding and only ADG during early part ofthe finishing period. Generally percent kidney, pelvic, and heart fat was the only adiposity assessment increased (P = 0.003) by dietary oil. The IVGTT results indicated that insulin response to intravenous glucose was lower in Limousin steers than in Wagyu steers. Dietary oil decreased (P = 0.052) fasting plasma insulin concentration in Wagyu steers compared with Limousin steers. The correlation coefficients among the IVGTT measures and intramuscular fat content or marbling score were less than 0.4, and only a negative trend existed between fasting insulin and USDA marbling scores. However, the carcasses of the Wagyu steers graded US Choice, and 66% of the Wagyu carcasses graded US Prime, which were substantially better than the quality grades obtained for the carcasses from the other breed types. Dietary oil did not affect muscle fat content but increased (P = 0.01) conjugated linoleic acid (CLA) concentrations by 339%. Results indicated that IVGTT measures were not appropriate indices of marbling potential in cattle and that dietary oil can enhance CLA content of beef.  相似文献

Angus × Gelbvieh cows with 2 to 3 previous pregnancies were used to evaluate effects of maternal nutrient restriction on offspring adipose tissue morphology at standard production endpoints. At 45 d after AI to a single sire, pregnancy was confirmed and cows randomly allotted into groups and fed a control (Con, 100% of NRC recommendations), nutrient-restricted (NR, 70% of Con diet), or nutrient-restricted + protein-supplemented (NRP, 70% of Con + essential AA supply to the small intestine equal to Con) diet. At d 185 of gestation, cows were commingled and received the Con diet thereafter. Bull calves were castrated at 2 mo of age. Calves were weaned at 210 d, backgrounded for 28 d, and then placed in the feedlot for 195 d. Steers and heifers were slaughtered at an average 12th-rib fat thickness of 7.6 mm. Adipose tissue from selected depots was collected for adipocyte size analysis. There was no significant difference in BW or BCS between Con, NRP, and NR cows at d 45 of gestation, which averaged 489.7 ± 17.7 kg and 5.35 ± 0.13, respectively. At d 185 of gestation, Con and NRP groups had similar BW (566.1 ± 14.8 and 550.2 ± 14.8 kg) and BCS (6.34 ± 0.27 and 5.59 ± 0.27), but NR cows exhibited reduced (P < 0.05) BW (517.9 ± 14.8 kg) and BCS (4.81 ± 0.27). Among offspring (steers and heifers) at slaughter, there were no significant differences in BW or organ weights among treatment groups. Yield grade was reduced (P < 0.05) and semitendinosus weight/HCW tended (P = 0.09) to be reduced in NR offspring compared with Con and NRP offspring. Average adipocyte diameter was increased (P < 0.05) in subcutaneous, mesenteric, and omental adipose tissue and tended (P = 0.09) to increase in perirenal adipose tissue in NR compared with Con offspring with NRP offspring adipocyte diameter being either intermediate or similar to Con calves. The adipocyte size alterations observed in NR offspring were confirmed by DNA concentration of the adipose tissue depots. There also was an increased mRNA expression (P < 0.05) of fatty acid transporter 1 in subcutaneous adipose tissue from NR offspring compared with Con and NRP offspring. Nutritional restriction during early and mid gestation increased or tended to increase (P < 0.09) adipocyte diameter in all adipose tissue depots in finished steer and heifer calves.  相似文献

The objective of this study was to evaluate the effect of growth implants on the carcass characteristics and tenderness of steers and heifers with different genetic potentials for growth, lean meat yield production, and marbling. Two experiments were conducted. Experiment 1 evaluated Angus steers sired by bulls with high EPD for retail product yield or marbling. Implant treatment was imposed randomly within sire groups. Loins (Institutional Meat Purchasing Specifications 180) were collected from each carcass and cut into three 2.54-cm steaks aged for 7, 14 and 21 d to evaluate tenderness. The second experiment evaluated steers and heifers of British and Continental breed descent. Steers and heifers were slaughtered after 120 d on feed. Loin sections were collected, and one 2.54-cm steak aged 7 d was used for tenderness analysis. When implants were used in Angus steers, HCW and LM area increased, whereas internal fat and marbling decreased (P < 0.01). In Angus steers, sire type did not affect shear force values of steaks; however, implant use significantly increased shear force values (P < 0.01). Carcasses from cattle of Continental breed descent were significantly heavier than carcasses of British breed descent with larger LM area, slightly less fat, and a reduced yield grade (P < 0.01). Also, steer carcasses were heavier than heifer carcasses with larger LM (P < 0.05), but no effect of sex on fat depth, internal fat, yield grade or marbling was observed. No significant interactions were seen between growth implant and breed or between growth implant and sex for shear force values. Shear force values were significantly less for steaks from steers and heifers of British decent compared with steers and heifers of Continental descent (P < 0.01). Steaks from implanted steers and heifers had significantly (P < 0.01) greater shear force values than steaks from steers and heifers not implanted. Use of growth implants in growing cattle resulted in significantly heavier carcass weights, larger LM area, and reduced internal fat. However, implant use also reduced the amount of marbling along with contributing to reduced tenderness. Complicating the tenderness issue is the increased shear force values reported for heifers as well as steers of Continental breed descent. Use of implants may contribute to tenderness variability because of different animal responses to implants.  相似文献

Data from 403 Polled Hereford-sired calves from Angus, Brahman, and reciprocal-cross cows were used to evaluate the effects of preweaning forage environment on postweaning performance. Calves were spring-born in 1991 to 1994 and managed on either endophyte-infected tall fescue (E+) or common bermudagrass (BG) during the preweaning phase. After weaning, calves were shipped to the Grazinglands Research Laboratory, El Reno, OK and stratified to one of two winter stocker treatments by breed and preweaning forage; stocker treatments were winter wheat pasture (WW) or native range plus supplemental CP (NR). Each stocker treatment was terminated in March, calves grazed cool-season grasses, and calves were then moved to a feedlot phase in June. In the feedlot phase, calves were fed to approximately 10 mm fat over the 12th rib and averaged approximately 115 d on feed. When finished, calves were weighed and shipped to Amarillo, TX for slaughter. Averaged over calf breed group, calves from E+ gained faster during the stocker phase (P<.10), had lighter starting and finished weights on feed (P< .01), lighter carcass weights (P<.01), and smaller longissimus muscle areas (P<.05) than calves from BG. Calves from E+ were similar to calves from BG in feedlot ADG, percentage kidney, heart, and pelvic fat, fat thickness over 12th rib, yield grade, marbling score, and dressing percentage. Maternal heterosis was larger in calves from E+ for starting weight on feed (P<.01), finished weight (P<.10), and carcass weight (P<.16). These data suggest that few carryover effects from tall fescue preweaning environments exist, other than lighter, but acceptable, weights through slaughter. These data further suggest that the tolerance to E+ in calves from reciprocal-cross cows, expressed in weaning weights, moderated postweaning weight differences between E+ and BG compared to similar comparisons in calves from purebred cows.  相似文献

Two experiments were conducted to determine the effects of sex on carcass traits and cooked beef steak palatability. In Exp. 1, steers (n = 99), heifers (n = 51), and intravaginally spayed heifers (n = 46) were fed a high-energy diet for 161 d. No implants were administered, and heifers were not fed melengestrol acetate to suppress estrus. In Exp. 2, 60 steers and 60 intact heifers from the same ranch source used in Exp. 1 were fed in 2 locations (sites 1 and 2). All management factors were equal across experiments except that intact heifers were fed melengestrol acetate to suppress estrus in Exp. 2. Steers in Exp. 1 were 25 kg heavier (P < 0.01) in HCW than heifers at comparable (P = 0.39) carcass fat thickness. Spayed heifers (Exp. 1) had a 5.7% smaller (P < 0.05) LM area compared with steers and intact heifers, which were similar. In Exp. 2, there was no difference (P = 0.2) in carcass weight, and heifers had greater (P < 0.01) 12th rib fat thickness compared with steers. Calculated yield grades were similar (P = 0.21) among treatments in Exp. 1 and tended (P = 0.08) to be greater for heifers compared with steers in Exp. 2. In Exp. 1, USDA quality grades and marbling scores were lower (P < 0.01) for steers compared with intact and spayed heifers, which were similar. The effects of sex on tenderness were examined at a common level of fat-thickness and marbling by covariate analysis. Steaks from steers, compared with those from nonimplanted, intact heifers, in the 2 experiments combined were: (a) superior (P < 0.05) in 2 of 9 palatability assessments when subcutaneous fat thickness (at the 12th rib) was adjusted to a common level, and (b) superior (P < 0.05) in 6 of 9 palatability assessments when marbling score was adjusted to a common level. In Exp. 1, steaks from nonimplanted steers compared with those from nonimplanted spayed heifers were: (a) superior (P < 0.05) in 0 of 8 palatability assessments when subcutaneous fat thickness (at the 12th rib) was adjusted to a common level, and (b) superior (P < 0.05) in 3 of 8 palatability assessments when marbling score was adjusted to a common level. These findings suggest that sex should be added to the list of antemortem factors contributing to variation in cooked beef steak tenderness. However, more research is needed to precisely identify those factors contributing to the lower tenderness observed for steaks from heifer carcasses.  相似文献

Heifer and steer progeny of 2-yr-old first-cross (F1) heifers and 3- to 6-yr-old F1 cows, from Hereford dams and five sire breeds, were evaluated for postweaning feedlot growth and carcass composition. Breeds of sire of dam were Angus (A), Red Poll (RP), Tarentaise (T), Simmental (Sm), and Pinzgauer (P). Calves from 2-yr-old heifers were sired by Shorthorn, and calves from 3- to 6-yr-old dams were sired by Charolais. Breed of sire of dam was significant (P less than .05 to P less than .01) for total gain and final weight for female progeny from 2-yr-old dams. At all weights, Sm, P, and T ranked above A and RP. Progeny of A, P, Sm, and T F1 2-yr-old dams were not significantly different but were higher (P less than .05) than RP heifers in total feedlot gain. Breed of sire of dam was significant (P less than .05) for carcass weight and longissimus muscle area; T ranked highest and RP lowest. Breed was not significant for any growth traits of steer progeny of 2-yr-old dams. Breed was significant for marbling score; A ranked highest and exceeded (P less than .01) both RP and Sm steers. Breed was significant (P less than .05) for most growth traits in the heifer progeny of the 3- to 6-yr-old dams bred to Charolais sires. Heifer calves of the Sm group were heavier (P less than .05) than all other groups for most weights and total gain. For total gain, P and T were intermediate and A and RP lowest. For heifer carcass traits from 3- to 6-yr-old dams, breed was significant (P less than .05 to P less than .01) for carcass weight, longissimus muscle area, percentage of cutability, and estimated kidney, heart, and pelvic fat. Heifers from Sm-sired dams were heavier (P less than .05) than those from all other groups but ranked second to heifers from P for percentage of cutability. Marbling scores of RP heifer carcasses ranked highest of all groups. Ursodeoxycholic acid (UDCA), which is used as a hepatic and digestive medicine in humans and domestic animals, was added to the diet of Wagyu beef cattle to investigate its effects on growth, carcass characteristics, and meat quality. The study involved 20 Japanese Black heifers. Animals were divided into the following 2 groups, a control group and a UDCA group (diet supplemented with UDCA), with each group containing 10 animals. The UDCA was administrated at a dose of 2.5 g/(animal/d) to each heifer 24 times over a period of 7 mo in the finishing period. The heifers were slaughtered at 29 mo of age, and carcass characteristics and meat quality were determined. Both the UDCA group and the control group showed similar (P > 0.1) final BW, fattening periods, and daily BW gain. Supplementation of UDCA significantly increased meat quality grade (P < 0.05) and marbling (P < 0.01) and but did not show a significant (P > 0.1) effect on dressing percentage, fat thickness, rib thickness, or ribeye area. The percentage of ether extract in the LM was significantly greater (P < 0.05) in the UDCA group (43.2%) than in the control group (37.8%), whereas the percentage of moisture was significantly less in the former than the latter (P < 0.05).The L* (lightness) values of the muscles were greater (P < 0.05) in the UDCA group than in the control group. No significant differences (P > 0.1) were observed between groups in water-holding capacity, fatty acid composition, and vitamin E content of the LM or in intermuscular fat characteristics. Supplementation of the diet with UDCA can increase marbling without causing growth defects and can improve carcass characteristics in Wagyu cattle.  相似文献

Sixty-three Angus x Simmental calves were allotted to a bull or a steer group based on sire, birth date, and birth weight to determine effects of castration status on performance, carcass characteristics, and circulating insulin-like growth factor I (IGF-I) concentrations in early-weaned cattle. At 75 d of age, calves in the steer group were castrated. Calves were not creep-fed prior to weaning. All calves were weaned and weighed at an average age of 115 d and transported by truck to the OARDC feedlot in Wooster, OH. Performance and carcass characteristics were measured in three phases. Phase 1 was from 115 to 200 d of age, phase 2 was from 201 to 277 d of age, and phase 3 was from 278 d of age to slaughter. Before implantation, four bulls and four steers were selected for serial slaughter and carcass evaluation. Steers were implanted with Synovex-C at 130 d of age and with Revalor-S at 200 and 277 d of age. Serum samples were collected from all calves on the day of implantation, 28 and 42 d after implantation, and at slaughter and analyzed for circulating IGF-I concentration. Bulls gained 9.7% faster (1.75 vs 1.60 kg/d; P < 0.01), consumed 25 kg more DM (521 vs 496 kg; P = 0.11), and were 3.3% more efficient (282 vs 273 g/kg, P < 0.10) than steers in phase 1. However, steers gained 10.5% faster (1.62 vs 1.46 kg/d; P < 0.02), consumed similar amounts of DM, and were 6.5% more efficient than bulls (214 vs 201 g/kg; P < 0.06) in phase 2. Overall gains and efficiency were similar between bulls and steers; however, bulls consumed 140 kg more DM (P < 0.05), were 27 kg heavier (P < 0.05), and had to stay in the feedlot 18 more days (P < 0.05) than steers to achieve a similar amount of fat thickness. Implanted steers had greater concentrations of circulating IGF-I than bulls (P < 0.01), and the pattern of IGF-I concentration over time was affected by castration status (castration status x time interaction; P < 0.01). Synovex-C had a lower impact on circulating IGF-I concentration (implant effect, P < 0.01) than either Revalor-S implant. Eighty-five percent of both bulls and steers had marbling scores sufficient to grade low Choice or better. Bulls achieved their target fat thickness later, increased muscle growth, and deposited fat more favorably than steers, possibly due to a gradual increase in IGF-I concentration as the testicles grew rather than the large fluctuations in IGF-I concentration observed in steers following implantation.  相似文献

Feedlot and carcass traits of nulliparous and primiparous females representing eight breed types, including Bos taurus and Bos indicus x Bos taurus crosses, were evaluated. Nulliparous females (heifers) were in the feedlot for 4 mo; primiparous females (heiferettes) were fed for 2 1/3 mo after their calves were weaned at 6 mo of age. Heifers averaged higher (P less than .01) in dressing percentage, percentage of kidney fat, carcass grade (P less than .10), and color of lean (P less than .05) compared with heiferettes. Heiferettes exceeded the nulliparous group in feedlot ADG (P less than .01), fat thickness (P less than .05), and percentage of steak, roast, and bone (P less than .01). Parity effects on carcass weight, longissimus area, marbling, pH, and shear force value were not statistically significant. Dam breed types differed in several traits, including marbling (P less than .05) and percentage of steak (P less than .10), roast (P less than .01), and bone (P less than .01). Dam breed x parity interactions were nonsignificant. Results show that beef derived from heiferettes is competitive with heifer beef.  相似文献

Commercial slaughter steers (n = 329) and heifers (n = 335) were selected to vary in slaughter frame size and muscle thickness score, as well as carcass adjusted 12th-rib fat thickness. After collection of USDA carcass grade data, one side of each carcass was fabricated into boneless primals, subprimals, and minor tissue components. Cuts were trimmed to 2.54, 1.27, and .64 cm of external fat, except for the knuckle, tri-tip, and tenderloin, which were trimmed of all fat. Forced four-variable regression equations were used to predict the percentage (chilled carcass weight basis) yield of boneless subprimals at the three fat trim levels as influenced by sex class, frame size, muscle score, and adjusted 12th-rib fat thickness. Independent variables that had the most influence on percentage yield of primals and boneless subprimals were adjusted 12th-rib fat thickness and sex class. Within the same phenotypic group, percentage of trimmable fat increased by 2.32% as 12th-rib fat thickness increased by .75 cm. Estimated percentage yield of the major subprimals from the loin and round tended to be higher or relatively equal for heifer carcasses at all trim levels compared with those subprimals from steer carcasses. Holding frame size, sex class, and fat thickness constant, there was a higher percentage yield of chuck roll, rib eye roll, and strip loin for carcasses from thick-muscled cattle than for those from average- and thin-muscled cattle. Frame size had little effect on percentage yield of boneless subprimals.  相似文献

The objective of this study was to investigate the effectiveness of early weaning fall-born calves on heifer and calf performance in Florida. Over two consecutive years, 3-yr-old Braford and Brahman x Angus first-calf heifers were assigned randomly to one of two treatments; early-weaned (EW, n = 20 and 30 for yr 1 and 2, respectively) and normal-weaned (NW, n = 20 and 38 for yr 1 and 2, respectively). Calves were EW on January 23 and 3 for yr 1 and 2, respectively. Following EW, all first-calf heifers were returned to bahiagrass (Paspalum notatum) pastures with the mature cowherd. Early-weaned calves were maintained on annual ryegrass (Lolium multiflorum) pastures at 8.2 and 10.7 calves/ha for yr 1 and 2, respectively, and were provided supplemental grain mixture (14% CP) at 1.0% of BW daily. Normal-weaned calves remained with their dams in the mature cowherd on bahiagrass. Final calf BW was collected on April 17 (d 84) and April 24 (d 111) for yr 1 and 2, respectively. Early-weaned calves had a greater (P < 0.001) ADG (0.17 kg/d) in yr 1, but a lower (P < 0.001) ADG (-0.24 kg/d) in yr 2 compared with NW calves. Early weaning resulted in heavier first-calf heifers with greater BCS at the time of normal weaning (August 1; 491 vs. 452 kg, with BCS = 6.34 vs. 4.75 for EW and NW heifers, respectively; SEM = 5.0 and 0.07). Heifers with EW calves had a higher (P < 0.07) pregnancy rate during both years than normal-weaned heifers (89.5 vs. 50.0 and 96.7 vs. 80.0% pregnant during yr 1 and 2, respectively). Early-weaned, first-calf heifers also had a lower (P < 0.05) calving interval in yr 2 (384 vs. 404 d; SEM = 6.0). These data suggest that EW will improve body condition of first-calf heifers resulting in an increased pregnancy rate. Early-weaned calves maintained on winter ryegrass provide producers with the ability to optimize early-weaned calf performance, while capitalizing on low cost of gain and favorable spring markets.  相似文献

Cattle (n = 995 steers and 757 heifers) were randomly selected from a commercial abattoir (Emporia, KS) to determine the relationships between USDA quality and yield grade characteristics and serum concentrations of leptin, IGF-I, and GH. Animals were randomly selected postexsanguination on the slaughter line on 4 occasions (March, May, August, and January). Blood was collected at exsanguination and transported to the University of Missouri for analysis. Sex and hide color were recorded. Carcass data included HCW, 12th-rib fat thickness, KPH, LM area, and marbling score, which were collected from each carcass approximately 24 h postmortem. Average serum leptin concentrations were greater (P = 0.008) for heifers (11.9 ng/mL) than steers (10.9 ng/mL). Heifers had lighter carcasses (331.9 vs. 352.2 kg, P < 0.001), greater 12th-rib fat measurements (1.3 vs. 1.1 cm, P < 0.001), greater KPH (2.5 vs. 2.4%, P < 0.001), and more marbling (Small(40) vs. Small(10), P < 0.001) than steers. Positive correlations (P < 0.01) existed between leptin concentration and marbling score (r = 0.28), 12th-rib fat depth (r = 0.37), KPH (r = 0.23), and USDA yield grade (r = 0.32). Negative correlations were found between leptin and IGF-I (r = -0.11; P < 0.001) and leptin and GH (r = -0.32; P < 0.001). Negative correlations (P < 0.01) were observed for IGF-I and KPH (r = -0.23) and marbling score (r = -0.20), whereas GH was most highly negatively correlated with KPH (r = -0.23; P < 0.001). Leptin concentration accounted for variation (P < 0.001) in a model separating least squares means across USDA quality grade, separating USDA standard (8.5 ng/mL), select (10.3 ng/mL), low choice (12.2 ng/mL), and upper 2/3 choice/prime (>12.9 ng/mL) carcasses. There was no difference (P = 0.31) observed in leptin concentrations between the upper 2/3 choice and prime carcasses (12.9 and 14.2 ng/mL, respectively). Relationships within endocrine profiles and between endocrine concentrations and carcass quality characteristics may prove to be a useful tool for the prediction of beef carcass composition.  相似文献

Ninety-three crossbred steer calves (BW+/-SD=385+/-50 kg) were used (n=48 steers in yr 1, n=45 steers in yr 2) to examine the relationship among carcass traits, lean, bone, and fat proportions, visceral tissue weights, and pancreatic digestive enzyme activity with DMI, ADG, G:F, and residual feed intake. Calves were progeny from crossbred dams predominantly of Angus and Simmental breeding and were sired by Angus, Simmental, crossbred (predominantly of Angus and Simmental breeding), Charolais, or Piedmontese bulls. Steers were fed a high-moisture corn-based diet for an average of 112 d. Partial correlation analysis accounting for year, pen within year, week of slaughter within year, and sire breed was conducted. Gain:feed was negatively correlated (P 0.10) between performance measures and the pancreatic proportional content of alpha-amylase and trypsin activity (units/kg of BW). These data indicate that carcass fatness traits and changes in the proportional weight of total viscera may be negatively associated with G:F and that visceral fat weight proportion and trim and kidney fat weight proportion may be important factors influencing this relationship.  相似文献
