1. The present study was conducted to develop Citrus junos probiotics (CJP), using by-products of Citrus junos fermented with multispecies probiotic bacteria including Saccharomyces cerevisiae, Enterococcus faecium, Lactobacillus acidophilus and Bacillus subtilis. The effects of dietary CJP on the growth performance, immune status, caecal microbiology and meat oxidative stability of broiler were investigated.

2. A total of 240 one-day-old Ross broiler chicks were used in a 35-d experiment in which the chicks were randomly allotted to one of the 4 dietary treatments (0, 5, 10 and 20 g CJP/kg diet) in a completely randomised design.

3. Dietary supplementation of 5 g/kg CJP significantly increased body weight, average daily gain and average daily feed intake of broiler during the overall experimental period.

4. Serum immunoglobulin (Ig)M concentration was significantly increased by 10 and 20 g/kg CJP, whereas the IgG and IgA concentration remained unaffected. In addition, 20 g/kg CJP significantly inhibited proliferation of Escherichia coli without affecting the concentration of Lactobacillus or Bacillus spp.

5. A significant reduction in the thiobarbituric acid reactive substances values of breast and thigh meat was observed in response to increasing concentration of dietary CJP.

6. Thus, the results suggest that CJP up to a concentration of 20 g/kg can be used in the diet of broilers to improve immunity and to reduce caecal E. coli and TBARS values of breast and thigh meat without any adverse effects on growth performance.  相似文献

1. Two experiments were conducted to investigate the effect of taurine on growth performance, meat quality, oxidative status and muscle taurine content in broilers. In Experiment 1, 50 one-day-old male Cobb chicks were given a diet supplemented with 0, 0.125, 0.50, 2.00 or 8.00 g/kg taurine from 1 to 42 d of age. In Experiment 2, 80 22-d-old male Cobb chicks were given a diet supplemented with 4.00 g/kg taurine for 0, 1, 2 or 3 weeks.

2. Taurine contents of thigh and breast muscle increased linearly with increasing dietary taurine.

3. Taurine supplementation for 1, 2 and 3 weeks significantly increased the taurine content of breast muscle. The taurine contents of liver and thigh meat were significantly increased by taurine supplementation for 3 weeks. The taurine contents of thigh and breast meat from broilers given a diet supplemented with 4 g/kg taurine for 3 weeks increased to 1.89 times the concentrations of the control group.

4. There were no detrimental effects on growth performance, breast or thigh muscle yield, pH value or drip-water loss, and taurine supplementation did not affect the serum carbonyl content.

5. Serum malondialdehyde concentration was significantly decreased by taurine supplementation for 1, 2 or 3 weeks.  相似文献

1. Four experimental diets containing 0, 0.5, 1.0 and 2.0% fermented pomegranate by-products (FPB) were supplied to 320d-old broilers to evaluate the effects of FPB on growth performance, nutritional composition, fatty acid profile and oxidative stability of meat.

2. Dietary supplementation of FPB linearly increased the weight gain and feed intake of broilers with linear reduction in feed conversion ratio.

3. The crude protein, iron, magnesium, and sodium content were linearly higher, whereas cholesterol was linearly lower in the breast meat of FPB-supplemented broilers. In thigh meat, linearly lower ether extract and cholesterol with higher moisture was noted in response to increasing levels of FPB.

4. The proportion of saturated fatty acids was both linearly and quadratically lower in breast and thigh meat, whereas those of monounsaturated fatty acids of breast (linear and quadratic) and n-3 fatty acids of breast and thigh (linear) meat was higher in the FPB-supplemented broilers. The n-6/n-3 ratio of breast meat was linearly lower in response to FPB supplementation. The hypocholesterolaemic to hypercholesterolaemic ratio of thigh meat was higher in the FPB-supplemented groups.

5. The thiobarbituric acid reactive substances and pH value were lower in the breast and thigh meat of FPB-supplemented broilers.

6. Thus, additive supplementation of the diet with up to 2% FPB improved the nutritional quality, fatty acid profile and shelf life of broiler meat.  相似文献

1.?Combinations of chromium and copper were added to the diet to assess their effects on broiler meat characteristics.

2.?For this purpose 175 one-day-old broiler chicks were divided into 7 equal groups and were given treatment feeds containing copper sulphate, chromium chloride and nicotinic acid in different combinations.

3.?The study was carried out for 5 weeks and samples were collected at the end of 15, 29 and 35 d of treatment and at 42 d after a withdrawal period of one week.

4.?Cholesterol content had decreased significantly in breast meat at d 29 in all treatment groups. In thigh meat, it decreased significantly at d 29 in groups receiving two concentrations of chromium + two concentrations of copper. Cholesterol content remained lower even after withholding the treatment for one week.

5.?Crude fat content decreased significantly in breast meat in all treatment groups. In thigh meat, at d 29, a significant reduction in crude fat was observed only in birds receiving low chromium and high copper.

6.?Crude protein at d 29 increased significantly in breast meat of birds receiving low chromium and high copper, and low or high chromium, while it decreased significantly in treatment groups after withholding the treatment. In thigh meat, at d 29, it increased significantly in treatment groups but decreased significantly after withholding the treatment.

7.?It was concluded that chromium and copper, along with nicotinic acid, have modulating effects on broiler meat under tropical conditions.  相似文献

1. The effect of the bacterium, Rhodopseudomonas palustris, on the growth performance and meat quality of broiler chickens was investigated.

2. A total of 900-d-old Arbor Acres broilers were allocated to three experimental treatments for 6 weeks. Chicks were administered with R. palustris in drinking water as follows: (i) control group without R. palustris; (ii) treatment 1 (R1) with R. palustris of 8 × 109 cells per chick per day in drinking water; (iii) treatment 2 (R2) with R. palustris of 1.6 × 1010 cells per chick per day in drinking water.

3. The results showed that, compared with that of control, both groups of R. palustris treatment increased daily weight gain and improved feed conversion ratio of broiler chickens significantly during the whole growing period of 6 weeks.

4. Both total and glutamic acid contents of chicken breast fillet in R. palustris treatment R2 were higher, while the fat content was lower, than those of the control group. Furthermore, R. palustris treatments also improved sensory attributes of chicken breast fillet.

5. As a probiotic providing rich nutrients and biological active substances, R. palustris administration in drinking water displayed a growth promoting effect and improved meat quality of broiler chickens.  相似文献

1. The aim of the present study was to examine the effects of improving vitamin D status in broiler diets by supplementary 25-hydroxycholecalciferol (25OHD3), alone or in combination with calcium (Ca) and available phosphorus (aP), on live performance, sternum mineralisation and breast meat quality in broilers.

2. A total of 936 1-d-old Ross 308 broilers were used in the study. After gender determination at the hatchery, chicks from each sex were randomly distributed into three dietary treatments. The following dietary treatments were used in the experiment from hatch to 38 d: (1) A control diet formulated to meet all of the nutrient requirements of broiler chicks according to the management guide; (2) The control diet supplemented with 18.7–15.0 µg/kg of 25OHD3; and (3) The control diet supplemented with 18.7–15.0 µg/kg of 25OHD3 plus Ca + aP.

3. Improvement in vitamin D status by 25OHD3 supplementation, alone or in combination with Ca and aP, had no effect on body weight and feed conversion ratio of broilers.

4. The serum 25OHD3 concentration significantly increased with 25OHD3 and 25OHD3 plus Ca + aP supplementation (P < 0.05), whereas the ionised Ca and Mg concentrations remained unchanged.

5. Sternum absolute weight, ash content and the concentrations of Ca and P significantly increased (P < 0.01) with supplementation of 25OHD3, alone or in combination with Ca + aP.

6. Supplemental 25OHD3, alone or in combination with Ca + aP, slightly increased pH24 (P = 0.05) and decreased (P < 0.01) squeezable water loss in breast meat, whereas it had no significant effect on lightness, yellowness and sarcoplasmic protein solubility.

7. In conclusion, the results suggested that enhancing vitamin D status by 25OHD3 supplementation alone or in combination with Ca + aP may improve sternum structure and mineral accretion. Furthermore, supplemental 25OHD3, even in a nutritionally complete diet, may offer an effective way to improve protein solubility in female broilers.  相似文献

1. A trial was conducted to study the effect of Melissa officinalis supplementation on organic broiler performance and meat chemical, microbiological, sensory and nutritional quality.

2. Male and female day-old Ross 308 chicks were fed on a standard commercial diet containing 0, 2.5, 5 or 10 g/kg feed ground M. officinalis for 84 d before slaughter.

3. Weight gain and feed conversion ratio were significantly improved in the broilers receiving either 5 or 10 mg M. officinalis/kg feed.

4. Inclusion of M. officinalis did not affect muscle chemical and fatty acid composition.

5. On the basis of microbiological and sensory experimental data and subsequent extension of meat shelf life, M. officinalis did not reduce the microbial populations of the meat, but was effective in limiting lipid oxidation.  相似文献

1. Corni fructus is the fruit of Cornus officinalis, a dogwood species. This study was conducted to prepare fermented corni fructus preparation (FCFP) and fermented kelp (FK) from corni fructus and by-products of Laminaria japonica fermented with Bacillus subtilis and Aspergillus oryzae.

2. The effects of dietary FCFP and FK as replacer of oxytetracycline (OTC) on growth performance, meat composition, meat oxidative stability, and emissions of ammonia (NH3) and hydrogen sulphide (H2S) from broiler chicken droppings were investigated.

3. A total of 140 d-old broiler chicks were randomly allotted to 4 dietary treatments including control, OTC (0.05 g/kg), FCFP (5 g/kg), and FK (5 g/kg).

4. Overall, inclusion of FCFP resulted in lower weight gain and feed intake during the overall experimental period. Broilers fed FCFP diets tended to have lower crude fat and higher crude ash content in the carcasses.

5. In the fresh state, the malondialdehyde (MDA) value of broiler meat was lower in the FK supplemented group. At one week, meat from broilers fed antibiotic and FK diets had lower MDA values, whereas at 2 weeks broiler meat from all dietary treatment groups had lower MDA values than the control.

6. Dietary supplementation with FK significantly reduced faecal NH3 emissions throughout the experimental period, whereas dietary OTC and FCFP supplementation increased NH3 emissions at 2 and 4 weeks. There were no significant effects of dietary treatments on H2S emissions throughout the experimental period, except during week one, when FCFP supplementation reduced the emission.

7. In conclusion, dietary supplementation with 5 g/kg FK improved the oxidative stability of broiler meat and reduce faecal NH3 emissions without affecting growth performance.  相似文献

1. An experiment was conducted to determine the individual and combined effects of two essential oils, oregano and garlic, on carcass characteristics, meat composition, colour, pH and sensory quality of broiler meat.

2. The diets were supplemented with no essential oil (control), oregano essential oil or garlic essential oil at 300 mg/kg and oregano essential oil at 150 mg/kg + garlic essential oil at 150 mg/kg.

3. Dietary oregano and garlic oil supplementation did not affect carcass yields, the relative weight of carcass parts, breast and thigh meat composition, pH or b* value of breast meat. Oregano + garlic oil supplementation significantly decreased the L* value. The a* value of breast meat in birds given a diet supplemented with oregano oil was lower than that in birds given a diet supplemented with garlic oil and oregano oil + garlic oil. The essential oil addition had no positive effect on the oxidative stability. There was no difference between the treatments in breast appearance.

4. The juiciness, flavour, oxidised flavour and acceptability of breast meat samples were affected by treatments.  相似文献

1. One hundred and twenty (60 male and 60 female) 21‐d‐old Ross 1 broiler chicks were reared in cages in rooms kept at 21°C or 31°C and were killed at body weights of 1.0, 1.5, 2.0, 2.5 or 3.0 kg.

2. Birds reared at either of the two temperatures ate similar quantities of food to reach their slaughter weight although at 31°C they took longer to reach it.

3. The meat yields of the birds at each slaughter weight were similar at both rearing temperatures, but at body weights greater than 2.0 kg, the broilers reared at 21 °C had more breast meat than those reared at 31°C.

4. Females ate more food than males to reach each of the slaughter weights. The females deposited more fat and had a greater skin weight than the males and, although they had a similar amount of total meat, they had more breast meat.  相似文献

1. The impact of combined lower concentrations of organically-complexed versus inorganic copper, zinc and manganese on meat quality in chickens was investigated.

2. A total of 200 male broiler chicks (Ross-308), 1-d-old and weighing approximately 40?g, were divided into 4 groups comprising three experimental groups and one control group, with each consisting of 50 chicks. All groups were also divided into 5 subgroups, with each containing 10 broiler chicks.

3. All birds were given a starter diet from d 1 to d 21, and a grower diet from d 22 to d 49. The diets were formulated according to the NRC recommendations.

4. The mineral contents of the control diet were supplied using a standard inorganic mineral premix (containing 8?mg Cu as CuSO4, 40?mg Zn as ZnSO4, and 60?mg Mn as MnO, per kg). For the experimental diets, a mineral premix was prepared using organically complexed forms of those minerals at 1/3 (L1), 2/3 (L2) and 3/3 (L3) proportions.

5. After slaughtering and evisceration, the carcases were stored at 3?±?0·5°C for 10–12?h, and then the breast fillets removed from the carcases, and stored in a deep-freezer (?86°C) until analysis (for 30?d). For analyses, the breast muscles were then thawed at 4–6°C for 24?h.

6. The concentration of organically complexed mineral in the diet had no statistically significant effect on pH values of breast fillets. Treatments significantly affected the Thiobarbituric Acid Reactive Substances (TBARS) values.

7. Lightness (L* value) of the fillet from broilers fed the diet containing inorganic minerals was significantly lower than that for broilers fed on the diets containing organically complexed minerals. The redness (a* value) and Chroma (C* value) significantly decreased while Hues (H* value) were higher in the fillet from broilers fed organically complexed minerals compared with those fed inorganic minerals. The yellowness (b* value) was not changed by dietary treatment.  相似文献

1. This study aimed to investigate the effects of carnosine supplementation on meat quality, antioxidant capacity and lipid peroxidation status in broiler chickens.

2. A total of 256 1-d-old male Arbor Acres broilers were randomly assigned to 4 treatments consisting of 8 replicates of 8 chickens each. The birds were supplied with 4 different diets: a basal diet or a basal diet supplemented with 100, 200 or 400 mg/kg carnosine, respectively. The whole experiment lasted 42 d.

3. The results showed that dietary supplementation with carnosine linearly increased the values of pH45 min and redness and reduced drip loss of breast meat. Dietary carnosine increased the activity of antioxidant enzymes in liver, serum and breast meat and decreased the contents of lipid peroxides at 21 and 42 d of age.

4. These findings indicated that dietary supplementation with carnosine was beneficial to enhance meat quality, antioxidant capacity and decrease lipid peroxidation status of breast meat.  相似文献

1. This study aimed to determine the minimal duration required for feeding male broilers (Cobb 500) with a flaxseed oil diet while still retaining long chain omega-3 polyunsaturated fatty acid (n-3 LCPUFA) accumulation in the meat at a desirable level.

2. Three groups of broilers (60 each) were fed on a 3% flaxseed oil (high α-linolenic acid (ALA)) diet for either 6, 4 or 2 weeks prior to slaughter. During the remaining time they were maintained on a 3% macadamia oil (low ALA) diet. A fourth group (control, n = 60) was fed on a commercial diet for 6 weeks.

3. No significant difference was observed in growth performance of broilers between groups. The amounts of total n-3 and n-3 LCPUFA in breast and thigh meat were not different between broilers fed the flaxseed oil diet for 4 and 6 weeks, but they were lower (P < 0.001) in those fed the flaxseed diet for only 2 weeks.

4. These results suggest comparable levels of n-3 LCPUFA in the meat can be achieved by only feeding the flaxseed oil diet in the last 3–4 weeks of the growth period; this would result in a ≥ 9.4% reduction in the use of flaxseed oil compared to 6 weeks of feeding; thereby reducing the cost of the enrichment process.  相似文献

1. This study evaluated the effects of canola meal in broiler diets on carcass yield, carcass composition, and instrumental and sensory analyses of meat.

2. A total of 320 one-day-old Cobb broilers were used in a 35-d experiment using a completely randomised design with 5 concentrations of canola meal (0, 10, 20, 30 and 40%) as a dietary substitute for soya bean meal.

3. Polynomial regression at 5% significance was used to evaluate the effects of canola meal content. The following variables were measured: carcass yield, chemical composition of meat, and instrumental and sensorial analyses.

4. The results showed that carcass yield exhibited a quadratic effect that was crescent to the level of 18% of canola meal based on the weight of the leg and a quadratic increase at concentrations up to 8.4% of canola meal based on the weight of the chest. The yield of the chest exhibited a linear behaviour.

5. The chemical composition of leg meat, instrumental analysis of breast meat and sensory characteristics of the breast meat was not significantly affected by the inclusion of canola meal. The chemical composition of the breast meat exhibited an increased linear effect in terms of dry matter and ether extract and a decreased linear behaviour in terms of the ash content.

6. In conclusion, soya bean meal can be substituted with canola meal at concentrations up to 20% of the total diet without affecting carcass yield, composition of meat or the instrumental or sensory characteristics of the meat of broilers.  相似文献

Overcrowding stress is common in the poultry industry. Chickens exposed to long-term stressful situations are characterised by welfare impairment and immunosuppression.

1. The present study evaluated the effects of a blend of essential oils (EOB; cinnamaldehyde and thymol) and stocking density on the performance, gut microflora, meat quality and physiological stress markers of broilers.

2. One-day-old Ross 308 male broiler chickens (n = 360) were allocated to 4 experimental groups from d 22 to 42. Each treatment had 6 replicates of 15 chicks. Two groups were subjected to a high stocking density (HSD) of 20 birds/m2 and the other two groups were kept at a low stocking density (LSD) of 10 birds/m2.

3. The results of this study indicate that overcrowding stress decreased growth performance parameters, blood immunoglobulin (Ig)G and heterophil:lymphocyte (H:L) ratio but increased IgA and IgM levels. HSD reduced water-loss rate and pH decline at 45 min post mortem in the breast muscle.

4. Essential oils supplementation elevated H:L ratio but decreased breast meat redness and pH24.

5. Significant interactions between EOB and stocking density were observed for corticosterone (CS) level and mRNA levels of heat shock protein 70 (HSP70) in brain and heart. Although HSD increased CS and HSP70 when compared to LSD, the effects of the former were inconsistent with EOB supplemented diets.

6. In conclusion, dietary EOB supplementation could improve some of the biomarkers associated with overcrowding stress in broiler chickens.  相似文献

1. The aim of this work was to compare conjugated linoleic acid (CLA) concentrations in chickens supplemented with 4 American Tissue Culture Collection (ATCC) bacterial strains, Lactobacillus plantarum, Lactobacillus lactis, Lactobacillus casei and Lactobacillus fermentum, and 4 isolates of Lactobacillus reuteri from camel, cattle, sheep and goat rumen extracts.

2. Micro-organisms were grown anaerobically in MRS broth, and 106 CFU/ml of bacteria were administered orally to mixed-sex, 1-d-old broiler chickens weekly for 4 weeks and to 23-week-old layer hens weekly for 6 weeks.

3. The 4 strains were evaluated for their effects on synthesis of CLA in hen eggs and broiler meat cuts.

4. Administration of pure Lactobacillus and isolated L. reuteri strains from camel, cattle, goat and sheep led to significantly increased CLA concentrations of 0.2–1.2 mg/g of fat in eggs and 0.3–1.88 mg/g of fat in broiler chicken flesh homogenates of leg, thigh and breast.

5. These data demonstrate that lactic acid bacteria of animal origin (L. reuteri) significantly enhanced CLA synthesis in both eggs and broiler meat cuts.  相似文献

1. This study investigated the potential of a commercially available acidified water treatment (PWT) for reducing the number of Campylobacter in vitro and other bacteria in the gut of live broilers.

2. In vitro tests indicated that PWT was highly effective for reducing Campylobacter jejuni and Campylobacter coli at the recommended concentration in water, reducing populations by greater than 7 log10 CFU/ml after 24 h exposure. The decrease in the number of Salmonella serovar Enteritidis and Escherichia coli was not significant.

3. Addition of PWT to the broiler drinking water for the first 7 d, 2 d before and 2 d after each feed change and at feed withdrawal prior to slaughter or only after feed withdrawal had no effect on the number of Campylobacter in caecal samples on farm before thinning and depopulation compared to untreated controls.

4. Although PWT was effective for reducing Campylobacter in water, the results suggest that it does not reduce the number of Campylobacter in the caeca of broilers prior to slaughter under the conditions used in the study.  相似文献

1. The influence of gender on chemical composition, physicochemical parameters, fatty acid profile, amino acid and mineral composition of turkey breast and thigh meat was studied in order to assess nutrient requirements.

2. Chemical composition showed that only intramuscular fat in breast meat was significantly affected by gender (p < 0.05). The results showed a higher percentage of intramuscular fat in male samples, almost double the amount found in females (0.73% vs. 0.38%).

3.For meat colour parameters, only a* showed different results between sexes, with male samples (breast: < 0.01; thigh: < 0.001) having the highest values.

4. Fatty acid profiles showed that medium chain unsaturated fatty acids were the most abundant. The significant differences (< 0.05) found in both breast and thigh muscle could be linked to a difference in metabolism between males and females.

5.There were higher levels of C16:1n-7 in females (breast: < 0.001; thigh: < 0.01) compared with male muscle sample (5.05 vs. 2.67 g/100 g in breast and 4.95 vs. 3.27 g/100 g in thigh). Nutritional indices (n-6/n-3 and thrombogenic index) were more favourable in female samples demonstrating that female turkeys had better fatty acid profile than the others.

6. Turkey meat is an important source of dietary amino acids, and female samples had the highest contents both of essential and non-essential amino acids. Furthermore, gender had a numeric effect (> 0.05) on amino acid composition.

7. Mineral composition showed that Na, Zn and Fe were the minerals most affected by turkey gender.  相似文献

1. α‐Tocopheryl acetate (ATA) and ethoxyquin (EQ) markedly improved the stability of fat and meat of broilers fed on diets not supplemented with fat, while butylated hydroxytoluene (BHT) improved fat stability only.

2. The stability of carcass fat of broilers fed on diets supplemented with acidulated soyabean‐oil soapstock was improved by all three anti‐oxidants, but BHT and EQ were more effective than ATA. Meat stability was improved only by EQ.

3. The relationship between dietary EQ concentrations and the stability of carcass fat was logarithmic, whereas with that of thigh meat it was linear, irrespective of the degree of saturation of the carcass fat.  相似文献

1. Two experiments were conducted to determine the effect of slaughter weight on the incidence and intensity of deep pectoral myopathy (DPM) of M. pectoralis minor (p. minor muscle) in commercial conditions in Turkey and to evaluate the impact of DPM on meat quality traits of pectoralis major (p. major) muscle in broilers.

2. In Experiment 1, a total of 116 250 carcasses from 59 Ross-308 broiler flocks, classified according to slaughter weight as 2.0–2.2, 2.2–2.4, 2.4–2.6 and >2.6 kg, were evaluated for occurrence of DPM. In Experiment 2, p. major samples from unaffected broilers and each DPM stage were evaluated for meat quality, oxidant and antioxidant properties, nutritional value and fatty acid profile. DPM was characterised as 1: muscles with coagulative necrosis, 2: muscles with fibrous tissue texture and pink to plumb and 3: muscles with green necrotic area.

3. The average incidence of DPM was found to be 0.73% in Experiment 1 and independent of slaughter weight.

4. In Experiment 2, p. major muscle of broilers with DPM 1 and 2 had higher pH values with higher redness and drip loss. All DPM stages resulted in an increase in lipid content and malondialdehyde activity and lowered ash content of p. major muscle compared with unaffected birds. DPM 2 increased superoxide dismutase and glutathione peroxidase activities in M. p. major. The p. major of broilers with DPM had lower content of C18:2 conjugated linoleic and C20:3n-6 fatty acids than those of unaffected broilers. Lower Δ6 desaturase and thiosterase activities and 18:2n-6 to 18:3n-3 ratio were observed for all DPM stages compared to unaffected.

5. It was concluded that these changes obtained in p. major muscle of broilers with DPM might indicate biochemical characteristics of muscle degenerations.  相似文献
