青梅果实采后的软化特性与色泽变化   总被引:6,自引:0,他引:6  
以青佳品种为试材研究了青梅在25℃±1℃、相对湿度85%贮藏条件下果实采后软化特性及色泽变化。结果表明:采后6~8d,青梅果实呼吸强度和乙烯释放量均出现高峰,表明果实属于呼吸跃变型;采后6d内,果肉硬度和叶绿素含量迅速下降,膜相对透性迅速增大,果肉色泽急剧转黄,表明6d内青梅果实易快速软化和黄化,在常温下仅能保鲜5d左右。采后2~4d,多聚半乳糖醛酸酶(PG)、果胶甲酯酶(PME)和羧甲基纤维素酶(Cx)活性升高,这可能是果肉急剧软化的主要原因。  相似文献

对鸭梨、酥梨果实的呼吸强度、乙烯生成量、果胶酶活性、果实硬度等进行了测定,结果表明:鸭梨、酥梨果实均可在树上通过呼吸跃变而成熟,分期采收的果与树上留果在盛花后155d 即9月18日通过呼吸高峰,跃变时有超前的果胶酶活性峰、超前或平行的乙烯生成峰,但酥梨没有检测到乙烯。另外,晚采的果实比早采的果实较快地进入呼吸跃变。  相似文献

以湿包类型菠萝蜜‘301’株系为试材,对常温贮藏条件下果实的呼吸速率、乙烯释放速率、淀粉、纤维素、果胶和可溶性总糖含量进行了研究。结果表明:湿包菠萝蜜‘301’属于典型的呼吸跃变型果实,分别于采后2 d和3 d出现乙烯高峰和呼吸高峰。果肉中的淀粉、纤维素和原果胶含量在采后前2 d迅速下降,可溶性果胶和可溶性总糖的含量分别于采后2 d和3 d达到最大值后下降。果腱中淀粉、纤维素、果胶和可溶性总糖含量变化与果肉相同,只是趋势比较平缓。在整个贮藏期间,果肉中的淀粉、可溶性总糖(除采后2 d外)含量极显著或显著高于果腱,而纤维素和可溶性果胶含量则极显著低于果腱,果肉中的原果胶和总果胶含量在采后前2 d极显著高于果腱,随后总果胶极显著低于果腱。  相似文献

测定了青梅采后室温贮藏下生理和品质的变化 ,研究了采后处理对梅果室温和冷藏后转入常温的贮藏效果。结果表明 ,采后果肉急速软化 ,可滴定酸迅速下降。各处理对青梅果实的保鲜效果以乙烯吸收剂处理效果最好 ,其次是GA3处理。CaCl2 处理浓度以 2 %为宜 ,热空气处理的时间不能超过 2d  相似文献

以"嘎啦"苹果(Malus domestica Borkh.cv.Gala)为试材,以清水为空白对照,以乙烯利为阳性对照,研究了采前7d喷施乙烯抑制剂Harvista(有效成分为1-甲基环丙烯,1-MCP)对"嘎啦"苹果在采收和冷藏期间质量,特别是质地变化的影响,以期为调控果实采后品质提供新的技术.结果 表明:Harvista减少了"嘎啦"苹果采前落果,保持了果实可滴定酸和可溶性固形物含量,抑制了果实冷藏期间的呼吸和乙烯释放速率,降低了果实冷藏前60 d的淀粉酶、果胶甲酯酶、β-半乳糖苷酶和前90 d多聚半乳糖醛酸酶、纤维素酶的活性,延缓了果实冷藏期间淀粉、原果胶和纤维素含量的下降,抑制了冷藏前90 d可溶性果胶含量的升高,而乙烯利则表现出与Harvista相反的效果.采前对乙烯的调控有效地改变了"嘎啦"苹果的采收及贮藏品质,采前7d喷施Harvista可以保持果实冷藏期间的质地,延缓果实软化.  相似文献

以软枣猕猴桃为试材,研究了果实采后不同浓度1-甲基环丙烯(1-MCP)处理对软枣猕猴桃果实软化中果实品质、乙烯释放量和呼吸强度、细胞壁成分含量和果胶分解酶活性的影响。结果表明:1-MCP处理明显延缓了软枣猕猴桃果实可溶性固形物含量的上升、可滴定酸含量的下降和果实硬度下降速度;1-MCP处理抑制了软枣猕猴桃果实的呼吸峰值,推迟了软枣猕猴桃果实乙烯发生高峰出现的时间;抑制了软枣猕猴桃果实中果胶、纤维素和半纤维素的降解;降低了软枣猕猴桃果实多聚半乳糖醛酸酶活性峰值,而且推迟了软枣猕猴桃果实β?半乳糖醛酸酶活性峰值的出现。可见,1-MCP处理显著延缓了软枣猕猴桃果实的软化。  相似文献

研究在25℃下,气调包装和乙烯吸收剂处理对青梅果实采后叶绿素含量、叶绿素酶活性和乙烯释放量的影响及它们之间的关系。结果表明:2个处理均能抑制果实乙烯释放和叶绿素酶活性上升,延缓果实叶绿素含量降低,以气调包装效果更佳。对乙烯吸收剂处理的果实进行相关性分析,其内源乙烯含量与叶绿素酶活性呈显著正相关(R=0.8204),而叶绿素酶活性与叶绿素含量呈显著负相关(R=-0.8990)。  相似文献

以台农1号杧果为试材,研究荜茇酰胺处理对其采后病害和生理指标的影响。结果表明,与对照(清水)相比,荜茇酰胺处理能延缓果实硬度下降,抑制果皮可溶性果胶和果实可溶性固形物含量增加,果实呼吸高峰和乙烯释放高峰均推迟,抑制了果实转色,延缓了台农1号杧果果实后熟,对炭疽病和蒂腐病2种主要采后病害均具有一定的防治效果。  相似文献

以‘岳华’‘富士’‘寒富’苹果为试材,采用果实打蜡方式,以不涂果蜡作为对照,通过观察果实外观变化、测定果实乙烯生成量、硬度、可溶性固形物含量、抗坏血酸含量、可滴定酸含量以及失重率,研究果蜡对苹果果实品质的影响,以期为打蜡技术在采后苹果贮藏的理论研究和实践技术方面提供参考依据。结果表明:果蜡处理果实后,果实表皮更加光泽鲜亮,显著延后了果实转色期,延缓了果实抗坏血酸和可滴定酸含量以及硬度的下降,降低了果实乙烯生成量和失重率,对果实可溶性固形物含量影响不显著。综上所述,采后果蜡处理改善了苹果果实的外观品质和内在品质。  相似文献

The aim of this investigation was to assess the influence of ethylene treatment on ethylene biosynthesis and on antioxidant activity in kiwifruits during ripening. Kiwifruits were treated with ethylene of 100 μg ml−1 at 20 °C for 24 h and then the ripening process at the same temperature was observed for 10 additional days. It was found that in treated fruits: (a) the flesh firmness in the early stage of ripening was significantly decreased in treated samples, (b) the contents of free sugars, soluble solids, ethylene, respiration and sensory value were increased and were significantly higher than in untreated fruits, (c) the ethylene biosynthesis was increased simultaneously with increase in 1-aminocyclopropane-1-carboxylic acid (ACC) content, ACC synthase (ACS) and ACC oxidase (ACO) activities, (d) the polyphenols content and the related antioxidant activity were increased significantly higher than in the untreated fruits and (e) the acidity and pH were not influenced by ethylene treatment.  相似文献

 研究了自发气调(MA) 贮藏条件下油桃果实的采后生理及相关酶活性变化。结果表明: MA贮藏可明显抑制PG (多聚半乳糖醛酸酶) 、CX (纤维素酶) 的活性, 抑制油桃果实的呼吸强度和乙烯释放, 延缓二者跃变高峰的出现, 延缓果实硬度下降和膜相对透性升高, 但MA贮藏对油桃果实可溶性固形物含量无显著影响。  相似文献

Summary

The effect of ethrel in aqueous solution and ethylene released from ethrel was evaluated on fruit ripening of ‘Kitchner’, ‘Dr Knight’ and ‘Abu-Samaka’ mango. Ripening was enhanced in all treated fruits of the three cultivars at all concentrations used. The ripening rate progressively increased with increase in concentration. Ethylene released from ethrel was more effective in triggering fruit ripening than dipping fruits in aqueous solution of ethrel. Depending on concentration and cultivar, ripening was 1–3.d faster in fruits dipped in 500 and 1000 ppm ethrel and 1–5.d earlier in fruits treated with 250, 500 and 1000 ppm ethylene released from ethrel, compared with untreated fruits. The effect on fruit ripening was indicated by enhanced climacteric peak, increased skin colour, increased total soluble solids and decreased flesh firmness.  相似文献

 研究了乙烯受体抑制剂1 - 甲基环丙烯(1-MCP) 处理对火柿果实成熟的影响。结果表明: 1-MCP 处理能显著抑制果实乙烯释放, 延缓其跃变出现时间, 推迟ACO (ACC 氧化酶) 活性峰及呼吸跃变,抑制采后初期ACO 的活性及呼吸速率的上升, 并能阻止硬度的下降, 推迟其成熟软化, 延长贮藏期。  相似文献

 研究了正常成熟、成熟抑制和促进成熟处理的香蕉果实蔗糖磷酸合成酶( SPS) 与呼吸速率、硬度及蔗糖形成的关系。结果表明: (1) 使用乙烯吸收剂不仅极显著抑制了呼吸速率、果实软化和蔗糖的积累(P < 0.01) , 同时抑制了SPS的活性, 与正常成熟果实相比, 其SPS活性高峰延迟3 d出现, 酶活性明显降低。(2) 丙烯处理不仅使SPS活性高峰比对照提前9 d出现, 而且促进了呼吸速率的提高, 加速了硬度的下降和蔗糖的积累。表明SPS与香蕉果实的成熟、衰老和糖的积累及果实软化等有密切的关系。  相似文献

‘d'Anjou’ pear fruit, harvested at optimum maturity with flesh firmness of 6.8 kg, were stored at ?1.1°C. Fruit were ripened at 20°C for 15 days following storage for 1–8 months. Dessert qualities were evaluated organoleptically on Day 10 of each ripening period. Changes in fruit firmness, extractable juice, titratable acids, solubl solids, respiration, ethylene production and internal ethylene were determined daily during each ripening period. Fruit firmness declined continually from 6.8 kg at harvest to 4.5 kg after 8 months of storage. Fruit stored for 2–8 months softened with a similar pattern during a 15-day ripening period at 20°C, while fruit stored for 1 month softened at a slower rate during ripening to 3.2 kg, with a coarse and dry texture after 15 days at 20°C. Fruit stored for 2–4 months ripened with the desirable buttery and juicy texture, while those stored for more than 5 months ripened with a coarse or mealy and dry texture. The buttery and juicy texture was highly correlated with a lower extractable juice, which could be used for quantitative determination of storage life based on ripened fruit quality. Changes in titratable acids and soluble solids during each ripening period were not associated with changes in dessert qualities of the ripened pears. Rates of respiration, ethylene production and internal ethylene during ripening at 20°C varied with duration of storage, but were not associated with changes in dessert qualities of the ripened fruit.  相似文献

以粉红女士苹果为试材,研究了1-MCP对不同成熟度果实贮藏生理的影响。结果表明,用0.5μL/L的1-MCP在20℃下处理粉红女士苹果24h,显著降低果实在0℃贮藏期间呼吸速率、乙烯释放速率和ACC氧化酶活性,延缓果实硬度和可滴定酸含量下降。虽然不同成熟度的果实呼吸高峰和乙烯释放速率到达平台期的时间不同,但1-MCP处理对不同成熟度果实品质的影响无明显差异。SDS-PAGE分析表明粉红女士苹果在贮藏过程中出现了分子质量分别为37.1、18.0、16.6ku的3条特异性蛋白条带,1-MCP处理显著抑制特异蛋白表达,延缓特异蛋白出现的时间。  相似文献
