Staple meat and milk provide excellent nutrition, but when traditional foods and ingredients are tailored to meet the particular nutritional or lifestyle demands of a population they become even more attractive and valuable. These foods can be considered as delivery systems for health-promoting nutrients. Nutritional improvement of meat and milk can be achieved several ways, preferably by making desirable changes on-farm to directly improve the food without subsequent manipulations. Scope for these changes is limited by animal homeostasis, but alternatives may be less desirable. Methods in vivo that suit typical pastoral farming practice and can complement the solving of animal health and production problems include: selection of traits or phenotypes; specialty diets; long-acting parenteral supplements; and modification of ruminal microflora. Successful techniques to increase the concentration of calcium, selenium, iodine and iron in milk or meat are described. Manipulations to change composition are only one part of bringing tailored foods to market. Commercial realisation of these new products needs the initiative and collaboration of scientists, veterinarians, growers and producers responding to market pull. The uptake of future biotechnologies to capture more value inside the farm gate will also be required if the pastoral industry in New Zealand is to sustain a global competitive advantage.  相似文献

Increasing population, urbanisation and disposable incomes in developing countries are fuelling a strong growth in demand for animal food products, which in turn will have a strong impact on the location and organisation of global livestock production. Changes in the latter will in turn strongly impinge on animal and human health, the livelihoods of the poor and the environment. The consequences of these trends, termed the 'livestock revolution', are expected to dramatically change the face of animal agriculture in coming decades, including a major increase in the developing countries' share in world livestock production and consumption; a gradual substitution of cereals and other basic foods with meat and milk in the developing countries' diets; a change from multiple production objectives to more specialised intensive meat, milk and egg production within an integrated global food and feed market; a shift to more industrial production and processing; rising use of cereal-based animal feeds; and greater stress on fragile extensive pastoral areas and more pressure on land in areas with very high population densities and close to urban centres. Henning Steinfeld, an agricultural economist from the Food and Agriculture Organization of the United Nations, reviews here trends associated with the 'Livestock Revolution' and predicted implications for animal health. The presentation was given in a plenary session at the 19th International Conference of the World Association for the Advancement of Veterinary Parasitology (WAAVP) held in New Orleans, Louisiana, USA during 10-14 August 2003.  相似文献

The intensification of pastoral animal production results from several major developments including increased forage production and utilisation, diet supplementation, breeding animals to increase milk, meat or wool production, and changes in management. The impact of increased intensification on welfare will differ across species and systems. More intensive-grazing systems and the feeding of novel forages will underpin all moves to intensification. More intensive grazing generally reduces opportunities for shade and shelter. Improved nutrition will generally benefit welfare but competition for available feed may cause increased social pressure. Increased flock and herd size will be associated with a reduction in the human:animal ratio and less time to observe individual animals. Remote monitoring of activity and health might counter this impact.

Intensification of dairy production will result in larger herds, more year-round milking, robotic milking, use of housing and yards year round, and total mixed-ration feeding. Larger herds mean longer distances to walk to and from the dairy shed, and more lameness and less time to spend on self-maintenance activities such as grooming. Holding and feeding dairy cows on yards will cause an increase in lameness and mastitis and perhaps an increase in agonistic behaviour but will reduce time spent walking. Intensification of sheep production will involve increased flock size, increased fecundity, breeding from hoggets, and breeding ewes all year round. Housing during lambing might be considered appropriate, as would feeding to lift milk yields. Increased fecundity with an increase in triplets will increase lamb mortality rates, but housing ewes, when managed well, will result in reduced lamb mortality. Intensification of lamb finishing will be by improved nutrition. Intensification of beef production will include more breeding of heifers at 15 months, and more problems with dystocia.

Intensification of pastoral production will have positive and negative effects on animal welfare. The balance will be determined by the quality of management and stockmanship, and the pressure on businesses to be profitable.  相似文献

Functional foods are foods enriched with single ingredients, which influence 1 or more functions of the consumer in a favorable way, exceeding the effects of normal adequate nutrition. Consumers can expect health benefits from these products. The production of functional poultry meat is a promising future perspective, although the market share of such products will be small. The objective of the present paper was to summarize some examples of functional poultry meat. Substances of interest for this purpose are fatty acids and antioxidants. Enrichment of poultry meat with these health-promoting substances is not really a new approach, but there exists a potential for meeting the recommended daily intake for humans despite a probable negative effect on product quality. In the past, many papers were published showing that poultry meat can be enriched with conjugated linoleic acid, omega-3 fatty acids, and Se in such a way that 100 g of enriched tissue meets 3 to 11, 70 to 130, and 60% of the recommended daily intake for humans, respectively. However, the occurrence of tough meat (conjugated linoleic acid) and an increased liability to oxidation (omega-3 fatty acids) may impair the use of functional poultry meat. More research is needed, both on these negative effects on human requirements for these substances and possible interactions between enriched components.  相似文献

The preservation of the biodiversity of animal breeds is an important condition to maintain the ability of animal production to adapt to the changing conditions of breeding and production systems in the future. The decrease of the number of animal breeds has been observed both for sheep, cattle and goats in relation with the standardisation and intensification of animal production systems.Goats are mainly concerned by the situation as they have the biggest increase in livestock numbers in 20 years. A global overlook of goats worldwide is showing a contradictory situation: On one hand, small but well organised sectors have developed in a few countries for milk and cheese, meat and fibre production. On the other hand, most of the goats are mostly still used for auto consumption of milk meat and skin or fibres in village herds. The present goat genetic situation is the direct consequence of this evolution with the high specialisation of a small number of selected and well characterised breeds for milk, meat and fibres and a majority of not well defined populations and local breeds, generally without selection schemes and organisation.A global panorama of the main families and breeds is presented. A special consideration is then pointed on the necessary financial and logistic conditions to achieve successively these selection objectives. After having observed that in many cases these conditions are not present, this report concludes by some proposals to control better the possibilities of success and express with more efficiency the genetic potentiality of this interesting species.  相似文献

Low‐ and middle‐income countries are experiencing rapid urban population growth, particularly in peri‐urban informal settlements. In these urban areas, animal husbandry remains a valuable source of income and protein‐rich foods but may also present a risk of zoonotic disease threat. To date, there have been studies that have assessed the prevalence and nature of animal ownership in these communities. This cross‐sectional survey assessed the geographical, sociocultural and economic factors behind the presence, ownership and purpose of domestic animals in three informal peri‐urban communities of Kisumu, Kenya. A majority (n = 587) of the study households exhibited domestic animal presence in the living space yet only 32% of households reported animal ownership (n = 252). The purposes of ownership included: for meat/eggs (55%); for income, sale or trade (43%); for milk production (31%); and as companions/pets (31%). Among households that owned animals, 76% reported that at least one animal slept in the house at night. In multivariate logistic regression, the following factors were significantly associated with household animal ownership: ownership of agricultural land (OR = 1.94, 95% CI = 1.12, 3.35), perceiving a strong community bond (OR = 2.28, 95% CI = 1.25, 4.16), and household membership in a community group (OR = 1.64, 95% CI = 1.04, 2.60). This research demonstrates the high prevalence of animal ownership in a low‐income and high‐density peri‐urban neighbourhood of an African city, which may facilitate zoonotic disease transmission. Further research should assess if and to what extent animal ownership in such communities is associated with disease risk.  相似文献

Conjugated linoleic acids (CLA) are implicated as anti-carcinogenic, anti-atherosclerosis, and anti-inflammatory agents in a variety of experimental model systems. However, evidence of dietary CLA protection against human mammary cancer risk is mixed and comes from European countries where the death rate from mammary cancer is relatively scarce. Unfortunately, epidemiological data are inconclusive, especially from retrospective studies. Prospective human study evidence will take more time. European values as great as 1.9% CLA in the fat of milk products from grass-fed ruminants has been reported; ordinary monogastric meat and egg products contain substantially less CLA in fat (0.3%). It is now recognized that the principle CLA in ruminant meat and milk is the natural diene, cis (c)-9, trans (t)-11 isomer (rumenic acid) of C18:2 (octadecadienoic acid). Another isomer, C18:2 t-10, c-12, also contributes to the unique biological activity of CLA, but does not readily accumulate in ruminant lipids and is found only in commercial preparations of mixed CLA isomers. Evidence in humans suggested that the role of the dietary mixed isomer CLA in the loss of body fat mass (BFM) was only modest compared with the results from animal model studies, and urine metabolites of prostaglandin F (PGF), indicative of lipid oxidation stress, have been elevated during supplementation. In addition, the fatty acid C18:1 t-11 (vaccenic) is now believed to be the principle precursor of endogenous c-9, t-11 CLA in both ruminants and monogastrics. This finding helps explain the discrepancy between measured c-9, t-11 CLA originating from the rumen and that secreted in cow’s milk. Manipulation of ruminant meat and milk by feeding marine or vegetable oils is clearly associated with increases in vaccenic acid as well. This relationship requires a re-examination of human foods for vaccenic acid content and quantitative measures of CLA endogenous synthesis in humans as well to formulate dietary strategies to capture CLA’s potential protective health benefits.  相似文献

Campylobacter fetus is an opportunistic pathogen which causes bacteremia and other invasive infections in immunocompromised patients who have been exposed to livestock or ingested animal products (uncooked meat or unpasteurized milk). The present report describes a C. fetus infection in a healthy adult (immunocompetent) who returned from a visit to the Ecuadorian Amazonia and who did not report exposure to the typical sources of infection.  相似文献

保护动物品种的多样性,不仅对维护家畜的环境适应能力来说是非常关键的,还关系到未来动物生产模式的建立和完善。调查结果表明,现在世界山羊育种形势呈现一个矛盾的现象:一方面,发达国家通过完善的选育组织对山羊的乳用、肉用及毛用性能进行改进;另一方面,在一些落后的地方,山羊的产品还都用于农牧民的自身消耗。当前山羊育种情况如下,少数山羊经过了充分的选育过程并具有某些特点和特性;而大多数山羊尚未经过系统、完善的选育。通过分析山羊选育的现状,作者提出了一些建议,可以更有效的开发这一物种的遗传潜质。  相似文献

Among a vast number of forage trees, Vachellia karroo (Acacia karroo) remains one of the most widely distributed indigenous plant legumes in Southern Africa. The plant possesses some striking attributes, such as rapid growth rate, drought tolerance, adaptation to alkaline and acidic sterile soils, and resistance to a variety of edaphic and temperature changes. In past years V. karroo was recognised to be a major threat to rangeland productivity owing to its invasive nature. Research interest has shifted from its eradication as an unwanted plant to its utilisation as a feed resource for livestock. Extensive utilisation of V. karroo is mainly hindered by the presence of tannins and spines. Prospects to lessen the adverse effects of the anti-nutritional influences are now recognised. Vachellia karroo possesses desirable fatty acid profiles, and high protein and mineral contents that can improve animal performance. Presently, the use of V. karroo for goat production in communal areas is restricted owing to limited evidence for its nutritional value as animal feed. The present review, therefore, seeks to demonstrate the utility potential of V. karroo to improve growth performance, carcass characteristics, chevon quality, meat fatty acid profiles and as a natural anti-helminth for goats raised under an extensive system of production.  相似文献

Camels have the potential for milk, meat and draught power and can contribute a handsome share of the production of these commodities. The potential of this wonderful animal has never been realized and it could be harnessed as a prospective milk producing animal. The future of animals that can thrive under harsh environmental conditions, the camel being at the top of the list, is bright. The camel is still a neglected species in Pakistan and has not received the proper attention of researchers and scientists. The population explosion, urbanization and industrialization have expanded agricultural activities to produce more food for the rapid growing human population of the country. Cultivated areas are shrinking, thus reducing the fodder production area for buffalo and cattle. Under these circumstances we have to search for other available sources to enhance milk production. The environmental changes occurring on the earth and the water shortage in the region have also adversely affected the production potential of buffalo, cattle, goats and sheep. Under these changing ecological circumstances, rearing camel is the best option for more milk production and the proper utilization of the vast unused lands of this country. Most studies also have named the camel as an animal of great socioeconomic importance in large tracts of the industrializing world. The camel serves as a cheaper source of power for drawing water from wells, plowing and leveling land, working mini extraction mills (extracting from oil seeds), grinding wheat, corn and other grains and crushing sugarcane and pulling carts for the transportation of goods as well as people.  相似文献

New technological developments make it possible to improve the quality of animal disease therapy, prophylaxis and diagnosis, and to improve animals' growth and fertility. The term 'quality' includes not only objective measurements, such as the fatness or leanness of meat, but also organoleptic factors such as flavour and others which are of increasing importance to consumers, such as animal welfare. Is new technology consistent with the improvement of quality? For example, beta-agonists and porcine somatotrophin reduce the fatness and increase the protein content of carcases, but there are also subtle positive relationships between fatness and eating quality. In contrast, bovine somatotrophin appears to have no effect on milk composition but there are indications that it may affect the perception of milk quality by some consumers. Improved vaccines can increase food quality by improving animal health and welfare and increasing the uniformity of the product; immunological techniques may also be used to improve meat quality. A gulf has developed between the benefits from new technology and consumer perceptions; indeed there is evidence of political resistance to some technological advances. Despite the stringent regulation of veterinary medicinal products in the United Kingdom and other countries, there is continued pressure for greater political control over their approval. The exchange of information between scientists, industry, the legal regulators and consumers must be improved so that advances in technology are acceptable to the majority and used to the advantage of all.  相似文献

For a number of years now, New Zealand has staggered from one crisis to another in respect of her overseas balance of payments, and one has only to examine the make-up of exports to appreciate her vital dependence upon the sale of animal produce for the overseas exchanges she needs to support the economy. Last year, for instance, well over 90% of New Zealand's exports were derived from sales of meat, wool, dairy products, and hides and skins; and this is no new situation. It has been so for more than fortyyears, and, what is more important, it is likely to continue to be true for at least the foreseeable future. Of exports of other than pastoral origin ( such as frozen fish and crayfish tails, forest, products, fresh apples, canned and frozen vegetables, peas, grass and clover seed), the only ones that can confidently be expected to become much more important in the future than at present as a source of overseas funds are forest products. From time to time, there is a great deal of publicity concerning opportunities that exist for developing markets for the products of local manufacturing industries. Undoubtedly, limited opportunities do exist, but these can only amount to “peanuts” in relation to New Zealand's major export earnings problem.  相似文献

As in recent years laboratory diagnostics of listeria has become part of food microbiology, the frequency of occurrence of the bacteria Listeria monocytogenes has been followed in various kinds of foods for a year. A total of 51 strains of L. monocytogenes (7.2%) was isolated from 700 kinds of samples (raw milk, pasteurized milk, meat surface, poultry, cheeses, thermally not treated meat products, food--industry machinery). As can be seen in Tab. I, the highest number of strains was isolated from meat surfaces (13.5%), followed by meat--industry machinery (12.72%), poultry (10%) and cheeses (5%). The lower numbers of strains were found out in thermally not treated meat products (3.8%) and in raw milk (3.3%). Pasteurized milk did not contain any strains. Our findings in raw milk (3.3%) and in pasteurized milk (0) are in agreement with the data cited e. g. by authors from the USA (Lovett et al., 1987), who mention the value of 4.2% in raw milk and the zero value in pasteurized milk. The percentage of strains monitored in cheeses (5%) can be evaluated as low as the assortment of investigated cheeses was small (all strains were isolated from soft ripening cheeses). German authors (Tham et al., 1988) speak about the 2.5% percentage of L. monocytogenes strains; this is in keeping with our findings. The findings in thermally not treated meat products (3.8%) can be evaluated as low although the number of strains found in raw meat was high.(ABSTRACT TRUNCATED AT 250 WORDS)  相似文献

Quantification of acute phase proteins (APPs) in blood can be used for monitoring animal health and welfare on farms, and could be also of interest for the detection of diseased animals during the meat inspection process. However serum or plasma is not always available for end-point analysis at slaughter. Meat juice might provide an adequate, alternative matrix that can be easily obtained for post-mortem analysis at abattoirs. The concentrations of pig Major Acute phase Protein (pig-MAP) and haptoglobin, two of the main APPs in pigs, were determined in approximately 300 paired samples of plasma and meat juice from the diaphragm (pars costalis), obtained after freezing and thawing the muscle. APPs concentrations in meat juice were closely correlated to those in plasma (r = 0.695 for haptoglobin, r = 0.858 for pig-MAP, p < 0.001). These results open new possibilities for the assessment of animal health in pig production, with implications for food safety and meat quality.  相似文献

真菌毒素是真菌在食品或饲料中生长所产生的代谢产物,这些低分子质量化合物既是天然存在的,同时也是无法避免的。真菌通过两种途径进入食物链,一方面可以直接从受真菌毒素污染的植物性食品成分进入食物链;另一方面也可以通过食物中产毒真菌生长的间接污染进入食物链。真菌毒素广泛存在于成熟的玉米、谷物、大豆、高粱、花生和饲料作物中。食用受真菌毒素污染的食物或饲料会对人和动物造成急性或慢性毒性。真菌毒素除了有直接食用受霉菌毒素污染的食物和饲料造成的不良影响外,还有因为摄入动物源性食品,如肉类、牛奶或鸡蛋,含有真菌毒素的残留物或代谢物而引起的公众健康问题。目前虽然已经鉴定出超过400种真菌毒素,但食物中广泛存在的6种毒素:黄曲霉毒素、赭曲霉毒素、玉米赤霉烯酮、伏马菌素、呕吐毒素及T-2毒素,已在世界范围内引发了持续的食品安全问题。该论文总结了6种真菌毒素的毒性,重点分析了近年来电化学生物传感器在这几种真菌毒素检测中的研究进展,旨在通过一系列的总结分析去展望其在真菌毒素检测方面的发展前景。  相似文献
