为评价不同品种樱桃番茄的风味及营养价值,比较分析了8个品种樱桃番茄的可溶性固形物含量、总糖含量、有机酸含量、糖酸比、Vc含量、氨基酸含量和氨基酸组成。结果表明,红果樱桃番茄品种的部分风味指标(可溶性固形物、总糖、有机酸、Vc)、氨基酸组成及营养价值(总氨基酸、必需氨基酸含量及氨基酸模式谱)优于黄果品种,尤其是红果品种浙樱粉1号和浙樱红1号,其中,浙樱粉1号樱桃番茄可溶性固形物含量、总糖含量、有机酸含量、Vc含量、呈味类氨基酸(鲜味、甜味、芳香类)含量及氨基酸营养价值均处于较高水平。红果樱桃番茄品种之间的总糖含量、Vc含量,以及黄果樱桃番茄品种之间的有机酸含量、总氨基酸含量、必需氨基酸含量和甜味类氨基酸含量等指标均呈现出较低的变异系数。氨基酸营养价值分析表明,缬氨酸和亮氨酸是樱桃番茄的2个主要限制氨基酸。本研究结果为高品质樱桃番茄的品种选育提供了理论指导。  相似文献

Naturalized cocoa populations originating from the Oyapok and Tanpok basins in French Guiana were studied for their technological characters (bean count, fat content, purine content) and sensory characters (overall aroma intensity, cocoa flavour, acidity, bitterness, astringency, fruity or floral tastes, aftertaste, etc.), along with three controls (Amelonado and Ecuadorian varieties). The bean count in Guianan cocoa was higher than that of the controls, but it generally remained acceptable (below 100). Caffeine content was much higher than that of the Amelonado control. The overall aroma intensity and cocoa flavour of the chocolates made with the dry cocoa beans from Guianan trees were statistically superior to those of the industrial reference, the West African Amelonado. 以金华火腿骨为研究对象,研究不同提取方法对其呈味物质释放的影响。通过感官评价及可溶性糖、有机酸、5′-核苷酸和游离氨基酸的测定分析不同处理组间样品的差异,同时采用偏最小二乘回归法(partial least squares regression,PLSR)对提取物感官和呈味物质间进行相关性分析。感官评价发现,高压蒸煮的样品的鲜味、咸味和可接受度最高,其协同滋味的综合评分最佳;呈味物质分析发现,原液中所有呈味物质含量都最低,高压-复配酶解处理的样品中可溶性糖总量最高,高达132.68 mg/100 g;经过酶解处理样品有机酸含量显著增加(P<0.05),达到3 733.32 mg/100 g;样品经不同处理后,5′-核苷酸含量呈现显著性增加(P<0.05),总含量最高的是经过高压蒸煮处理的样品,质量分数高达1.24 mg/100 g,是原液和其他处理组样品的2.38~12.4倍;与样品原液相比,游离氨基酸总量都显著增加(P<0.05),高压蒸煮处理的样品中含量最高,总质量分数为642.44 mg/100 g。借助偏最小二乘回归方法对样品的感官属性及呈味成分进行相关性分析,发现样品间具有显著性差异(P<0.05),不同的处理方式所释放的呈味物质分布规律显著不同,高压蒸煮的样品与咸味和鲜味具有显著相关性(P<0.05);酶解处理的样品与酸味和甜味有较强相关性,其他组样品与感官与呈味属性相关性不强。结论:不同处理方式的金华火腿骨具有不同的风味,其风味特征与多种物质有关,该研究结果为火腿骨的深度开发提供了理论指导,提高金华火腿骨的附加值。  相似文献

The first comprehensive quantitative determination of 82 putative taste-active metabolites and mineral salts, the ranking of these compounds in their sensory impact based on dose-over-threshold (DoT) factors, followed by the confirmation of their sensory relevance by taste reconstruction and omission experiments enabled the decoding of the nonvolatile sensometabolome of a red wine. For the first time, the bitterness of the red wine could be demonstrated to be induced by subthreshold concentrations of phenolic acid ethyl esters and flavan-3-ols. Whereas the velvety astringent onset was imparted by three flavon-3-ol glucosides and dihydroflavon-3-ol rhamnosides, the puckering astringent offset was caused by a polymeric fraction exhibiting molecular masses above >5 kDa and was found to be amplified by the organic acids. The perceived sourness was imparted by l-tartaric acid, d-galacturonic acid, acetic acid, succinic acid, l-malic acid, and l-lactic acid and was slightly suppressed by the chlorides of potassium, magnesium, and ammonium, respectively. In addition, d-fructose and glycerol as well as subthreshold concentrations of glucose, 1,2-propandiol, and myo-inositol were found to be responsible for the sweetness, whereas the mouthfulness and body of the red wine were induced only by glycerol, 1,2-propandiol, and myo-inositol.  相似文献

The influence of type and concentration of carboxymethyl cellulose (CMC) on flavor and textural properties of custard desserts was examined. A synthetic strawberry flavor mixture was used to flavor the custards; it comprised 15 volatile flavor compounds. The viscosity of the custards was determined using rheometric measurements. Static headspace gas chromatography and in-nose proton transfer reaction-mass spectrometry analyses were conducted to determine the custards' volatile flavor properties. Perceived odor, flavor, and textural properties were assessed in sensory analysis experiments using magnitude estimation against a fixed modulus. Both type and concentration of CMC altered the viscosity of the custards. Softer custards had higher static headspace flavor concentrations. On the contrary, firmer custards demonstrated higher in-nose flavor concentrations. In sensory analysis, firmer custards showed higher thickness and lower sweetness intensities than their low-viscosity counterparts. The thickness perception corresponded to the viscosity of the custards. Removal of sucrose from the custards affected sweetness intensity only and not the intensity of other attributes. Therefore, the influence of the viscosity of the custards on the release of sweet-tasting components is held responsible for the effect on perceived sweetness intensity. Odor intensities were generally higher for the low-viscosity custard, whereas fruity flavor intensities were higher for the firmer custards. Odor intensities correlated with static headspace concentrations and flavor intensities related reasonably well with in-nose concentrations. Opening and closing of the nasal cavity is regarded as an important factor determining the discrepancy between static and in-nose measurements.  相似文献

Green leaf volatile (GLV) mixtures, commercial orange flavors, and commercial strawberry flavors were applied to beverage bases in which concentrations of citric acid as well as a sweetener (sucrose or aspartame/acesulfame-K) were varied. Sensory profiling showed that flavor-specific fruity character increased as perceptible sweetness increased, independent of whether the sweetness resulted from sucrose (a change from 9 to 12 Brix) or aspartame/acesulfame-K (a change from 0.2 to 0.4 Brix). Sweetness was affected only by the tastants in the base and not by the flavors, although flavor-specific interactions between sweetener type and sweetener level occurred. Flavor release from the sucrose bases was compared to flavor release from bases containing aspartame/acesulfame-K by static headspace measurements and by MS-Nose measurements using an artificial throat. These measurements showed greater flavor volatility from bases having low Brix (fewer soluble solids). This negative Brix effect was also evident in the sensory data for perception of some GLV green notes. The headspace data could not support a positive Brix effect, the typical salting out, which would correspond to the observed perceptual enhancement of fruity notes.  相似文献

The contribution of the chemical composition to the flavor of cocoa liquor from an Ecuadorian selfed population of clone EET 95 was investigated. Polyphenols, purine alkaloids, organic acids, and sugars were quantified, and the key sensory characteristics of cocoa were scored by a trained panel. Despite the short bean fermentation (2 days) commonly used for Arriba cocoa, acetic acid content was closely correlated to liquor pH, demonstrating its essential role in cocoa liquor acidification. Polyphenols were positively correlated to astringency, bitterness, and the green note and negatively correlated to the fruity character. Alkaloid and polyphenol levels fluctuated significantly within the selfed progeny and tended to be lower than those of the heterozygous clone EET 95 (inbreeding effect). These results support the idea that polyphenols might be essential to the overall perception of cocoa liquor characteristics and indicate that the composition and the sensory quality of cocoa liquor are the result of both a genotypic contribution and the conditions of fermentation and roasting.  相似文献

为了提高传统玫瑰醋的生产效率,以装料量为500 kg的陶缸作发酵容器,在自然发酵条件下,分别在1.5、2.5、3.5 g/100 mL的初始酸度进行补料,补料体积比(原醋液:黄酒醪)设置为2:1和1:1两种情况,完成玫瑰醋补料发酵工艺的研究。结果表明:在初始酸度2.5 g/100 mL时补加等体积酒醪,发酵过程酸度最高上升到(5.59±0.27)g/100 mL(对照组为(5.19±0.23)g/100 mL),醋酸发酵周期从90 d缩短至78 d;非挥发性有机酸积累量达(27.15±1.11)mg/mL(对照组为(24.57±0.69)mg/mL),样品酸甜适口,酸味柔和;补料成品色率达到1.8×105(对照组色率为1.9×105),色泽接近传统玫瑰醋。该工艺的完成对玫瑰醋生产企业扩大产量、提高效率有积极意义。  相似文献

The aromas of three espresso coffee (EC) samples from different botanical varieties and types of roast (Arabica coffee, Robusta natural blend, and Robusta Torrefacto blend (special roast by adding sugar)) were studied by static headspace GC-MS and sensory flavor profile analysis. Seventy-seven compounds were identified in all of the EC samples. Among them, 13 key odorants have been quantified and correlated with their flavor notes by applying multivariate statistical methods. Some correlations have been found in the EC samples: some aldehydes with fruity flavors, diones with buttery flavors, and pyrazines with earthy/musty, roasty/burnt, and woody/papery flavors. By applying principal component analysis (PCA), Arabica and Robusta samples were separated successfully by principal component 1 (60.7% of variance), and Torrefacto and Natural Robusta EC samples were separated by principal component 2 (28.1% of total variance). With PCA, the aroma characterization of each EC sample could be observed. A very simple discriminant function using some key odorants was obtained by discriminant analysis, allowing the classification of each EC sample into its respective group with a success rate of 100%.  相似文献

采用葡萄酒多酚系列指标,构建味感质量预测模型,实现干红葡萄酒涩感和余味的客观量化。试验以宁夏和新疆的50款赤霞珠干红葡萄酒为原料,利用常规方法检测样品总酸、挥发酸和pH值,采用自由基清除法测定抗氧化活性,通过紫外-可见分光光度计法分析总酚、花色苷、黄烷醇、黄酮醇、酒石酸酯含量,并以感官品评法量化干红葡萄酒的涩感和余味。相关性分析结果显示,总酚、花色苷、黄烷醇、黄酮醇等对涩感和余味的影响有显著差异(P<0.05),酒石酸酯对余味的影响较小,而总酸和pH值对供试干红葡萄酒的涩感没有显著影响(P>0.05)。感官品评量化结果显示,宁夏和新疆产区酒样的涩感得分为6.18和5.70,余味得分为5.37和4.85,供试酒样的涩感与余味质量良好,且存在相似的变化趋势。以多酚系列指标表征的涩感质量偏最小二乘回归(partial least squares regression,PLSR)模型的决定系数(r-square,R2)为0.83,余味模型的R2为0.78,结果表明,总酚、黄烷醇、挥发酸、DPPH等指标对葡萄酒的涩感和余味贡献较大,黄酮醇和酒石酸酯主要影响葡萄酒的涩感,而花色苷、总酸和pH值则主要影响葡萄酒余味。研究得出,基于紫外-可见分光光度计法设计的多酚系列指标可以较好地解析干红葡萄酒的味感质量,降低检测成本,具备表征和预测干红葡萄酒味感质量的能力。  相似文献

The aroma and texture of three different apple cultivars, harvested at three maturity stages, were analyzed by sensory and instrumental analysis. The emphasis was on the identification of the most potent odorant volatiles, and the challenge was to separate the few most important flavor compounds, which may be trace chemicals, from the vast number of nonodorant compounds present in apple aroma extracts. Thirty-six odorant compounds were detected, 24 of which were common to all extracts. A significant correlation coefficient was found between the aroma intensity scores and overall quantity of the odorant volatiles, which shows that the development of sensory aroma is similar to that of odorant volatiles. This study also showed that the parameters measured by penetrometry and compression were highly correlated with sensory textural attributes. The determination of the optimal maturity stage for different apple cultivars by the usual parameters, such as color, diameter, total soluble solids, and titrable acidity, may not be sufficient to determine the optimal sensory quality for consumers. Moreover, the sensory quality of fruits changes during maturation in a different way from one cultivar to another, and this should be taken into account.  相似文献

对茶叶感官审评分属性与其化学组分的相关性进行探讨,该文以不同等级、产地红茶和绿茶为代表,利用传统感官审评方法鉴定茶叶品质(外形、香气、汤色、滋味和叶底),并对各品质指标进行相关性分析,筛选出对茶叶品质影响最重要的品质指标,即滋味。在利用尺度评价法对茶叶滋味品质的10个分属性(浓度、厚度、甘度、鲜度、醇度、涩度、嫩度、陈味、纯正度、火工度)进行更为细致的评定和对茶叶中主要呈味物质—茶多酚、咖啡碱、茶氨酸进行定量分析的基础上,对不同等级、不同产地茶叶的滋味分属性进行差异分析,并对化学组分与滋味分属性进行相关性分析,结果表明,各种茶样之间的产地和等级间差异主要是鲜度和涩度,而与之相关的组分主要是茶氨酸和咖啡碱,茶多酚的影响还有待进一步考察。该研究实现了茶叶感官品质的定量分析,提高了感官审评结果的客观性和确定性,为茶叶原产地保护和分等分级提供核心技术和标准支撑。  相似文献

The influence of flavor solvent [triacetin (TA), propylene glycol (PG), medium chained triglycerides (MCT), or no flavor solvent (NFS)] on the flavor release profile, the textural properties, and the sensory perception of a sugar-free chewing gum was investigated. Time course analysis of the exhaled breath and saliva during chewing gum mastication indicated that flavor solvent addition or type did not influence the aroma release profile; however, the sorbitol release rate was statistically lower for the TA formulated sample in comparison to those with PG, MCT, or NFS. Sensory time-intensity analysis also indicated that the TA formulated sample was statistically lower in perceived sweetness intensity, in comparison with the other chewing gum samples, and also had lower cinnamon-like aroma intensity, presumably due to an interaction between sweetness intensity on aroma perception. Measurement of the chewing gum macroscopic texture by compression analysis during consumption was not correlated to the unique flavor release properties of the TA-chewing gum. However, a relationship between gum base plasticity and retention of sugar alcohol during mastication was proposed to explain the different flavor properties of the TA sample.  相似文献
