This study determined whether transporting lambs on paved (PR) or unpaved roads (UR) for 3 h had an effect on plasma stress indicators (cortisol, lactate, glucose, creatine kinase [CK], red blood cells, white blood cells, hematocrit, and neutrophil/lymphocyte [N/L] ratio) and instrumental meat quality (pH24, bruising score, water holding capacity [WHC], color, and texture). A total of 48 Rasa Aragonesa male lambs were used that were approximately 100 days old (12.5 kg ± 1.64, carcass weight). The results suggest that transport on unpaved roads had a significant influence on physiological and hematological stress parameters. Road type had a significant effect on all variables, except for white and red blood cells, and hematocrit levels. The UR lambs had significantly higher (at least p ≤ 0.01) cortisol, lactate, glucose, and CK levels and a higher N/L ratio than PR lambs. Meat from UR lambs had some dark-cutting characteristics, with a darker color, higher ultimate pH, and higher tenderness values than PR. In conclusion, lambs transported on unpaved roads had a more intense stress response and poorer meat quality than lambs transported on paved roads. An effort to improve the logistics associated with route planning is necessary to prevent welfare problems during transport to slaughter.  相似文献

Comparisons were made of the behaviour, physiology and meat quality of 24-week-old male veal calves (mean live weight 234 kg) that were slaughtered either at the veal unit (the control group) or following 3 h transportation at space allowances of either 0.7 or 0.95 m2 calf−1 and 1.5 h of lairage. Compared with nontransported calves, transported calves had a greater heart rate during the journey and during lairage; greater plasma cortisol concentration immediately after the journey, but not after 1.5 h of lairage; and greater plasma creatine kinase activity immediately after the journey and after 1.5 h of lairage. The transported calves did not lie down during the journey. There was no effect of space allowance on either the heart rate or frequency of potentially traumatic events during the journey or the plasma cortisol concentration and plasma creatine kinase activity sampled after the journey. There was no effect of transport on either carcase bruising or muscle pH 24 h after slaughter. Although compared with ‘on-farm’ slaughter, the transport and handling associated with the journey to the slaughterhouse were stressful to the calves; there were no adverse effects of transport on either carcase bruising or meat quality.  相似文献

Three groups of farmed red deer were shot in the field, three groups were slaughtered on the farm and three groups were transported to commercial slaughterhouses. The behaviour of the animals was observed and peripheral plasma cortisol concentrations were measured immediately after slaughter and neck muscle pH was measured 24 hours after slaughter. The deer could be handled and herded without agitation when only one unhindered direction was open to them and nothing in the environment caused alarm. Shallow angled loading ramps were preferable. Deer shot in the field and deer penned without handling had low average plasma cortisol concentrations (less than 7 ng/ml) and a muscle pH less than 5.74 whereas deer which had been herded on the farm, or transported to a slaughterhouse, had high cortisol concentrations (greater than 20 ng/ml) and a muscle pH above 5.74. However, only four of 66 male deer transported to a slaughterhouse had a muscle pH above 6.0, the pH associated with dark cutting meat in red deer.  相似文献

Forty-eight slaughter bulls were transported by road in groups of eight for approximately 30 min, 3 h and 6 h in two replicates. Animal welfare during the transport process was assessed. Loadings and unloadings were evaluated with a scoring method. Heart rates were monitored at the farm before loading and during all stages of transport. Blood samples were taken from all animals a week before transport and at sticking and analysed in terms of haematological values: hematocrit, haemoglobin, red and white blood cells (RBC and WBC), differential WBC counts and neutrophil:lymphocyte ratio. Glucose, creatine kinase, lactate and cortisol were also determined. To evaluate differences in meat quality, pH and water-holding capacity (WHC) were measured 24 h after slaughter. The loading and unloading scores were very low (low stress) but were associated with changes in heart rate, especially loading. Animals recovered their resting heart rate during the journey in medium and long transports. On the other hand, animals transported around 30 min maintained an elevated heart rate during the whole journey. All animals showed a stress response with significantly higher (p < 0.05) levels of erythrocyte series, N:L ratio, glucose and lactate. Animals transported for 3 and 6 hours had significantly (P<0.05) higher levels of cortisol than controls or 30 min transports, without differences between control and the shortest journey. Different transport times did not influence meat quality. Under good conditions, the transport had a slight effect on welfare, meat quality or physiological parameters related with stress.  相似文献

The effects of transportation and electrical stimulation (90 V) on physiological, histochemical and meat quality characteristics of two breeds of Omani goats were assessed. Twenty 1‐year‐old male goats from each breed (Batina and Dhofari) were divided into two groups: 3 h transported during the hot season (42°C day time temperature) and non‐transported. Animals were blood‐sampled before loading and prior to slaughter. Electrical stimulation was applied 20 min postmortem to 50% randomly selected carcasses of both breeds. Temperature and pH decline of the Longissimus was monitored. Ultimate pH, shear force, sarcomere length, myofibrillar fragmentation index, expressed juice, cooking loss and colour were measured from samples of Longissimus dorsi muscles. Electrical stimulation and transportation had a significant effect on most biochemical and meat quality characteristics of Longissimus dorsi. The transported goats had higher plasma cortisol (P < 0.01), adrenaline, nor‐adrenaline and dopamine concentrations (P < 0.05) than non‐transported goats. Electrical stimulation resulted in a significantly (P < 0.05) more rapid muscle pH fall during the first 12 h after slaughter. Muscles from electrically‐stimulated carcasses had significantly (P < 0.05) longer sarcomeres, lower shear force value, a lighter colour (higher L* value), higher expressed juice and myofibrillar fragmentation index than those from non‐stimulated ones. Meat from transported goats had significantly higher pH, expressed juice and shear force, but contained significantly lower sarcomere length and L* values than non‐transported goats. The proportion of the myosin ATPase staining did not change as a function of stimulation, transportation or breed. These results indicated that subjecting goats to transportation for 3 h under high ambient temperatures can generate major physiological and muscle metabolism responses. Electrical stimulation improved quality characteristics of meat from both groups. This indicates that electrical stimulation may reduce detrimental effects of transportation on meat quality of Omani goats.  相似文献

Differences in muscular activity and rates of decline in the pH of the M. longissimus dorsi of lambs subjected to different methods of stunning and slaughter were observed. Lambs electrically stunned by a head-to-leg method had significantly lower initial pH values as compared to animals stunned by an electrical head-only method, or by captive bolt, or without any form of stunning prior to slaughter. When electrical stunning by a head-to-leg method was combined with low voltage (24 V) electrical stimulation during slaughter and bleeding, mean pH values declined at the highest rate and fell to approximately 6.0 within two hours of slaughter. This last procedure, therefore, has the potential to greatly reduce times between slaughter and freezing without increasing the risk of cold shortening and the associated toughness of meat.  相似文献

The purpose of this study was to determine the effects of short-term, preslaughter stress on physiological responses and meat quality in goats of different age groups. The goats (n = 28) were classified into young (6 to 12 mo of age) and old (24 to 30 mo of age) groups, feed deprived overnight, and slaughtered at three different times (replicates). On each slaughter day, goats were either subjected to a 2-h transportation stressor (TS) or remained unstressed in holding pens (NS) before slaughter. Blood samples were collected via jugular venipuncture from TS and NS goats at 2, 1, and 0 h before slaughter. Muscle glycogen and pH were measured on samples from longissimus muscle (LM) collected at 15 min and 24 h postmortem, and instrumental measures of meat color were obtained on the LM after a 24-h chilling period at 4 degrees C. The TS goats had higher plasma cortisol (P < 0.01) and glucose (P < 0.05) concentrations than NS goats. The rates of increase in plasma cortisol, glucose, and nonesterified fatty acid concentrations were greater in TS than in NS goats (stressor treatment x blood sampling time, P < 0.01). Muscle glycogen concentrations were greater (P < 0.05) in NS than in TS goats and higher (P < 0.01) in old vs. young goats; however, pH measured at 15 min and 24 h postmortem was not (P > 0.05) influenced by stressor treatment. Water-holding capacity of meat was not (P > 0.05) influenced by stressor treatment. Older goats had lower (P < 0.01) L* values and greater (P < 0.01) a* and chroma values than the younger goats. The a* and chroma values of loin cuts from young goat carcasses were lower in the TS than NS treatment groups, but this effect was absent in the old goat carcasses (stressor treatment x age, P < 0.05). Cooking loss percentages and shear force values for loin chops aged for 7 d were not (P < 0.05) affected by stressor treatment; however, old goats produced tougher (P < 0.01) loin chops than young goats. These results indicate that short-term preslaughter transport can cause noticeable changes in stress responses and muscle metabolism in goats.  相似文献

Livestock transport exposes animals to a range of potential stressors that may compromise their welfare and final product quality, and those effects typically increase with the distance travelled. In North America, producers often use pot-belly vehicles for long hauls but little is known about their suitability for transporting lambs. We followed two long-distance trips using pot-belly trailers carrying 500 lambs (each) from Northern to Central Mexico in winter, to measure possible effects on animal welfare and meat quality. Sixty lambs per trip were placed at different locations within the pot-belly trailer. Animals were equipped with iButton Thermochron® temperature devices, which registered body temperature throughout pre- and post-slaughter stages. Despite the rather cool winter conditions, lambs placed in the “belly” and “nose” compartments had higher body temperatures at loading, during transport and lairage and after slaughter (carcass temperature). Those lambs also had higher levels of plasma cortisol, glucose and creatine kinase (CK), and a higher neutrophil/lymphocyte ratio. Regarding meat quality, ultimate pH (24 h) was higher in all locations, especially in LT4 location. Overall, the results suggest a link between thermal stress during transport, elevated physiological indicators of stress and poorer meat quality.  相似文献

Information on the effect of road transportation conditions and lairage times on the meat quality of pork under South African conditions is very sparse. In this investigation, the effects of 2 road conditions (rough road with frequent stops - A; smooth road, few stops - B) and 2 lairage holding periods (2 h and 24 h) on the physical meat quality attributes of commercially produced pigs during summer (ambient temperatures > 30 degrees C) in the Western Cape (South Africa) were investigated. Pig meat from pigs transported on a road that caused more stress (A), had lower pH 45 (measured 45 min post mortem) values after 2 h lairage than pigs transported over a smoother road. Pigs B had a lower muscle pH 24 (measured 24 h post mortem) than group A, indicating that they had more glycogen reserves available for post mortem glycolysis. Road conditions A were more stressful resulting in a higher incidence of PSE pork, as shown by the percentage drip loss and the L* values. When the lairage period was increased to 24 h prior to slaughter, pigs transported under road conditions A had time to replenish their energy reserves and the pH 45, drip loss and L* values were within an acceptable range. However, pigs transported under road conditions B had lower pH 45 and higher pH 24 values, indicating that the lairage period was too long and that energy reserves were depleted in order to adapt to the stressful conditions. Results from this investigation indicate that improvement of the transport/road conditions will result in better pork quality.  相似文献

试验旨在研究商品猪血液中皮质醇含量与宰后的胴体性状和肉质表观指标之间的相关性并探讨其内在联系。在具有秋季典型气温时间(2012年8月20日),选取120头商品猪,猪只运输时间约为2h,运输到屠宰场后休息1.5h后屠宰,取血液样品测定皮质醇含量,取背最长肌测定肉质指标,并测定猪只的胴体重和背膘厚。根据测定得到的皮质醇浓度,将猪只分成三个组,低皮质醇组(〈120ng/mL)、中皮质醇组(120~130ng/mL)和高皮质醇组(〉130ng/mL),比较三组之间肉质和胴体指标之间的差异。结果表明,在肉质指标方面,除中皮质醇组猪只的24h的电导率有升高的趋势(P=0.08)外,其余均无显著差异;在胴体性状方面,高皮质醇组胴体重极显著高于(P〈0.01)低皮质醇组,高皮质醇组背膘厚显著高于(P〈0.05)低皮质醇组,与中浓度皮质醇组差异均不显著。猪只血液中皮质醇含量与胴体重和背膘厚度都存在着极显著的正相关,相关系数分别为0.349和0.274。各肉质指标之间也存在相关性,其中PH与电导率为极显著的负相关,pH与肉色的L值呈极显著的负相关,45min时测定的肉色L值与滴水损失相关系数为0.234,猪只胴体重和背膘厚度呈极显著的正相关关系,相关系数为0.596。结果提示,无法通过猪只血浆皮质醇浓度的高低来评估宰后猪肉品质,但一定程度内较高的皮质醇浓度会有利于个体增重和背部脂肪的沉积。  相似文献

In this study the effects of barren vs enriched housing conditions of pigs on their behavior during the lairage period (2-h holding period before slaughter), carcass characteristics, postmortem muscle metabolism, and meat quality were studied. The barren housing system was defined by common intensive housing conditions (i.e., with slatted floors and recommended space allowances), whereas the enriched environment incorporated extra space and straw for manipulation. Salivary cortisol concentrations were measured before transport and at the end of the lairage period. During the lairage period the percentage of time spent walking and fighting by the pigs was registered. Carcass characteristics such as weight, meat percentage, and backfat thickness were determined. At 5 min, 45 min, 4 h, and 24 h postmortem, pH, temperature, and lactate concentrations were determined in the longissimus lumborum (LL) and biceps femoris (BF) muscles. Capillarization of the muscle, mean muscle fiber area, and color and drip loss after 2 and 5 d of storage were determined for both muscle types. Pigs from the barren environment had a significantly higher increase in cortisol from farm to slaughter, but no differences in behavior were observed during the lairage period. Carcass characteristics did not differ between pigs from barren and those from enriched housing conditions. Postmortem lactate formation was significantly lower in LL muscles of enriched pigs at 4 and 24 h postmortem. Capillary density and mean muscle fiber area did not differ between the groups of pigs. The percentage of drip loss at 2 and 5 d after storage of LL muscle samples from enriched-housed pigs was significantly lower than that of the barren-housed pigs. Similar tendencies were found for the BF muscle from pigs kept in an enriched environment, but these were not statistically significant. The housing system did not affect meat color. It is concluded that on-farm improvement of animal welfare by environmental enrichment can also lead to beneficial economic effects after slaughter by improving the water-holding capacity of pork.  相似文献

A total of 120 crossbred [synthetic line x (Large White x Landrace)] pigs (castrated males and females) were used to evaluate the influence of rearing conditions for growing-finishing pigs on growth performance, carcass, stress reactions at slaughter, and meat eating quality. At approximately 35 kg of live weight (LW), littermates were allocated to either a conventional (fully slatted floor, 0.65 m2/pig, considered as control, CON) or an alternative (sawdust bedding with free access to an outdoor area, 2.4 m2/pig, OUT) system, until slaughter at approximately 110 kg of LW. Pigs had free access to standard growing and finishing diets. The trials were conducted in spring, summer, and winter, with each season involving 2 pens of 10 pigs in each system. Compared with the CON, the OUT pigs exhibited a greater growth rate (+10%, P < 0.001) due to their greater feed intake (+0.23 kg/d, P < 0.01), resulting in a greater body weight at slaughter (+7 kg, P < 0.001). The OUT pigs had thicker backfat (+2.4 mm, P < 0.01) and lower lean meat content (- 2.0% points, P < 0.001) than the CON pigs. The OUT system did not (P > 0.10) influence the behavioral activities of pigs during lairage at the slaughterhouse, or the urinary levels of catecholamines and cortisol, and plasma levels of ACTH, cortisol, lactate, creatine kinase, and FFA immediately after slaughter. The OUT pigs had similar (P > 0.10) pH values 30 min postmortem (pH1) in the LM, biceps femoris (BF), and semimembranosus (SM) muscles, similar ultimate pH (pHu) in LM, but lower pHu in SM (- 0.07 unit, P < 0.001) and in BF (- 0.03 unit, P = 0.029). Despite nonsignificant effects of production system on stress reactions at slaughter, assessed by urine and plasma indicators and muscle metabolism at 30 min postmortem, meat from OUT pigs had more LM drip loss after 2 (+1.0%, P = 0.003) and 4 (+1.1%, P = 0.010) d than did meat from the CON pigs. The OUT system slightly increased meat yellowness (b* value) in the LM (+0.7 unit, P = 0.001), BF (+0.5 unit, P = 0.014), and SM (+0.5, unit P = 0.041), whereas redness (a*) and lightness (L*) of the 3 muscles were unaffected (P > 0.07). Intramuscular fat content was greater in the LM (+17%, P = 0.001), BF (+14%, P = 0.004), and SM (+17%, P = 0.003) of the OUT pigs. Outdoor rearing during summer and winter improved meat juiciness, whereas odor, flavor, and tenderness were unaffected (P > 0.10). Influence of rearing conditions on all the other traits studied did not depend on the season.  相似文献

The extracellular matrix, composed mainly of collagen, is considered responsible for the residual toughness of meat. Matrix metalloproteinases (MMP) responsible for the degradation of connective tissue are found in most tissues, but their participation in meat aging has not been tested. We recently showed that skeletal muscle has multiple MMP activities, as well as regulators and tissue inhibitors of metalloproteinases. Here we present the first observations of physiologic and postmortem variation of MMP activities in muscle. Growing lambs were offered two levels of intake: hay + concentrate for lambs with high growth rate (average daily gain > 250 g) and hay only for those with low growth rate (average daily gain < 25 g). At slaughter and at 21 d of postmortem aging of longissimus and semimembranosus muscles, we studied collagen content, collagen solubility, free hydroxyproline (OH-pro), and levels of latent and active forms of a matrix metalloproteinase (MMP-2) by gelatin zymography. Our results demonstrate the presence of an active isoform of MMP-2 in lamb muscle. Its level was higher (+90%, P < 0.01) in lambs that expressed a high growth rate. Activity of MMP-2 was also present at 21 d postmortem, at levels similar to those detected at slaughter. At slaughter and at 21 d, all muscles contained latent MMP-2 and the quantity of proenzyme was greater than that present in the activated form. The levels of free OH-pro in muscles of lambs with high growth rate increased significantly (P < 0.001) over 21 d from 3.75 to 5.08% of total collagen, and this was significantly related to the level of active MMP-2 at slaughter. By contrast, the amount of free OH-pro in muscles of lambs with low growth rate was not different at 21 d (1.63% of total OH-pro) than it had been at slaughter (1.84% of total OH-pro). These results suggest that collagen degradation all the way to free amino acids occurs postmortem in muscle and that there are active MMP simultaneously present that may account for this catabolism. The growth rate of animals at slaughter influences collagen turnover in vivo, as well as postmortem collagen degradation.  相似文献

A study was made of differences in the quality of meat from Lacha (L) and Rasa Aragonesa (RA) lambs slaughtered at 12, 24, or 36 kg live weight. Lambs from both breeds were weaned at 25 to 57 d, approximately 11.5 to 18.5 kg live weight, and fed concentrate and barley straw until slaughter at 24 and 36 kg live weight. Hot carcass weight, cold carcass weight, conformation, color, firmness, and thickness of backfat and color of rectus abdominis muscle were recorded on the carcass. Final pH (pHu), instrumental color (L*, a*, b*), myoglobin concentration, chemical composition, and water-holding capacity (WHC) of the longissimus muscle, shear force of the biceps femoris muscle, and iodine values and fatty acid composition of the i.m. and s.c. fat depots were determined. The percentage of fat in the longissimus muscle increased with live weight, and values for RA lambs were higher than those for L lambs. The WHC of meat from RA lambs was lower at 24 kg than at 12 or 36 kg slaughter weight. Live weight and breed had no effect on the shear force of the biceps femoris muscle. There was an increase in myoglobin concentration in the longissimus muscle with increased live weight in both breeds. The fatty acid content of s.c. and i.m. fat, which was not affected by breed, declined with the increase in slaughter weight. The polyunsaturated fatty acid content of the s.c. fat depot increased, whereas that of the i.m. fat depot decreased, with the increase in slaughter weight in both breeds. Subcutaneous fat had a higher content of heptadecanoic acid (17:0) than i.m. fat, and this increased with the increase in slaughter weight. In both depots, there was an increase in oleic acid (18:1) at 12 kg in RA lambs and at 24 kg in L lambs. In the s.c. fat depot, there was a progressive increase in linoleic acid (18:2) content with the increase in live weight in both breeds. There was a higher degree of unsaturation in the s.c. fat of RA lambs than in that of L lambs, which was reflected in the iodine value.  相似文献

The relationships between farmers' behavior toward veal calves, calves' responses to handling and transport, and veal meat quality were assessed. Two groups of 10 veal units were selected based on previous observed farmers' behavior toward the calves: one group consisted of farmers who had shown predominantly "positive" behavior toward the calves, and the other group of farmers had shown predominantly "negative" behavior. Calves were observed for their reactions to people at the unit, and 20 calves per veal unit were transported either directly to the slaughterhouse or subjected to additional transport consisting of a supplementary 20-min transport with additional unloading and loading. The effort needed to load the calves onto the truck and their behavior during loading was observed. During loading and unloading, and during lairage at the slaughterhouse, potentially traumatic incidents (falling down, hits against structures, slips) were recorded, and heart rate and cortisol measurements were taken. Carcasses were evaluated on their weight, color, conformation, pH, and bruise level. A meat sample was taken from the longissimus thoracis muscle for physical, chemical, and sensory analysis. Calves originating from "positive behavior" units showed fewer fear responses to people at the veal unit, needed less effort to be loaded to the truck, had lower heart rates during loading and unloading, and had fewer incidents at the slaughterhouse than calves from "negative behavior" units (P < 0.05). Carcasses from calves from "positive behavior" units were paler, and analyses of the meat sample revealed lower pH, moisture level, and redness compared to carcasses from calves from "negative behavior" units (P < 0.05). Additional transport led to a lower cortisol level after transport and to higher carcass pH values at slaughter compared to direct transport (P < 0.05) but did not affect meat quality. We concluded that farmers' positive behavior toward veal calves during rearing is likely to reduce the emotional responses of calves to handling and transport and to lead to fewer incidents, compared to negative behavior. This reduction of calves' emotional responses seems to be the reason for improved veal meat color.  相似文献

The aim of the present study was to investigate whether muscle glycogen stores in slaughter pigs could be decreased through strategic finishing feeding before slaughter. Moreover, preliminary meat quality traits were measured to see whether such a regulation of muscle glycogen stores affected ultimate pH, color, and tenderness in the meat. The strategic finishing feeding was carried out the last 3 wk prior to slaughter. Seven experimental groups with eight animals per group were fed diets low in digestible carbohydrates. A control group with four animals was fed a traditional grower-finishing diet. The muscle glycogen stores were reduced in longissimus muscle (LM) 11 to 26% at the time of slaughter in pigs that were fed the experimental diets compared with the control group. Meat quality measured as ultimate pH and color on LM muscle in half the pigs 24 h postmortem showed that ultimate pH in LM was not affected by the reduction in glycogen stores in the muscles from pigs fed any of the experimental diets. However, the meat from pigs fed the experimental diets was darker than the meat from pigs that were fed the control diet with two of the experimental diets, resulting in significantly lower L* values. Activities of key enzymes in the glycolytic pathway, glycogen phoshorylase a and b, phosphofructokinase, and the fatty acid oxidative pathway, beta-hydrozyacyl-CoA-dehydrogenase, were not affected by the strategic feeding. In contrast, the activity of the proteolytic enzyme calpain as well as its inhibitor calpastatin was influenced by the strategic feeding. Lower activity of mu-calpain and greater activity of calpastatin in the muscle samples from the strategically fed pigs indicate a lesser muscle protein degradation in the muscles compared with muscles of control animals. The present study showed that the muscle glycogen stores in slaughter pigs can be reduced at the time of slaughter through strategic finishing feeding with diets low in digestible carbohydrate without compromising growth rate.  相似文献

The objectives of the current experiment were to determine whether boars heterozygous for the mutation in skeletal ryanodine receptors (sRyR), known to cause porcine stress syndrome, differed from wild-type boars in hypothalamic-pituitary-adrenal axis (HPA) function. We have examined basal plasma ACTH, cortisol, and corticosteroid-binding globulin (CBG) concentrations; plasma ACTH and cortisol responses to a nose-snare stressor and at slaughter; dexamethasone suppression of plasma ACTH and cortisol concentrations; and glucocorticoid receptor (GR) density in the pituitary gland, hippocampus, hypothalamus, and frontal cortex. We have also examined carcass yields, composition, and meat quality to determine whether differences in HPA activity were accompanied by an increased incidence of meat quality characteristics associated with pale, soft, exudative (PSE) meat. Thirty boars either heterozygous or wild-type (n = 15 per genotype) for mutated sRyR were tested for HPA function at 7 mo of age. Heterozygous boars had lower basal plasma ACTH (P < .05) and cortisol (P < .04) concentrations. Integrated basal plasma ACTH and cortisol levels were also lower (P < .05 and P < .005, respectively). Genotype had no significant effect on basal CBG, stressor-induced (nose snare or slaughter) or dexamethasone suppression of plasma ACTH or cortisol concentrations. No differences in immunoreactive GR levels were found in the pituitary gland or any brain region examined. We did find a significant, negative correlation (r = -.62, P < .02) between peak (0800) basal plasma ACTH concentrations and hippocampal GR levels. The alterations in basal HPA function in heterozygous boars were accompanied by lighter body weights (P < .03), decreased carcass fat depth (P < .04), and increased carcass lean yields (P < .02). There was a higher incidence of meat quality characteristics associated with PSE meat in heterozygous boars indicated by higher carcass temperatures (P < .04) and meat brightness (P < .0001) with lower carcass pH at slaughter (P < .03) and after chilling (P < .003). In conclusion, we have found differences in basal and not stressor-induced HPA function between boars heterozygous and wild-type for mutated sRyR. This altered basal HPA activity was accompanied by an increased incidence of meat quality aspects associated with PSE meat in heterozygous boars.  相似文献

本试验旨在研究磷酸脲添加量对羔羊生长性能、屠宰性能和肉品质的影响,并对磷酸脲在肉羊生产中的安全使用剂量进行评价。试验选用80只杜寒杂交F1代平均体重(25.86±1.06)kg的公羔羊,随机分为5组,每组8个重复,每个重复2只,在精粗比为1∶1的饲粮中分别以0(对照)、0.5%、1%、2%、4%的磷酸脲替代部分豆粕类饲料。预试期为12 d,正试期为60 d。结果表明:1%组的羔羊在各时期平均日增重、宰前活重、胴体重、屠宰率均达到最高值;4%组的羔羊在各时期平均日增重、宰前活重、胴体重均极显著低于其他各组(P0.01);与对照组相比,磷酸脲添加量对肉色红度值、p H、滴水损失无显著影响(P0.05);2%组的黄度值显著高于其他各组(P0.05);在剪切力方面,1%组(5.16 kg/cm2)显著高于0.5%组(4.47 kg/cm2)、4%组(3.69 kg/cm2)和对照组(4.21 kg/cm2)(P0.05)。结果提示:磷酸脲可以作为氮磷添加剂用于肉羊饲粮中。羔羊饲粮中的磷酸脲添加量为1%时,羔羊达到最佳生长性能和屠宰性能;当磷酸脲替代比例达到4%时,极显著降低羔羊的平均日增重、胴体重,增加肌肉的亮度值;当磷酸脲替代比例为2%时,为有效安全水平,对羔羊生长性能、屠宰性能和肉品质除肌肉黄度值外无显著影响。因此,饲粮中磷酸脲适宜添加量为1%。  相似文献

The current study was conducted to determine the interactive effects of a glycogen-reducing diet fed to finishing pigs and length of preslaughter transportion on muscle metabolic traits, proteolysis of intermediate filament and costameric proteins, and meat quality traits. Large White gilts and barrows (n = 48) were selected at 88 kg of BW and individually fed for 21 d a diet (2.6 kg/d) either high (HC) or low (LC) in available carbohydrates. Six gilts and 6 barrows fed the HC and LC diets were subjected to 0 or 3 h of transportation on the day of slaughter. Muscle temperature and pH were measured at 0.5, 1.5, 2.5, 3.5, 4.5, 5.5, and 24 h postmortem in the LM and 24 h postmortem in the dark (STD) and light (STL) portion of the semitendinosus. At 24 h postmortem, glycolytic potential (GP) was determined in the LM, STD, and STL, as well as proteolysis of titin, nebulin, desmin, vinculin, and talin in the LM and STD. The GP was lower (P < 0.05) in muscles from LC-pigs than in muscles from HC-pigs. The LC diet also resulted in lower (P < 0.05) pH, and a darker (P = 0.03), less (P < 0.01) yellow color in the STL. The LC diet decreased (P = 0.04) cooking losses in the STL and STD. The 3-h journey further decreased (P = 0.05) the GP in the STD, regardless of the diet, but transport had no effect (P > or = 0.67) on the GP of the LM and STL. Ultimate pH of the LM was lower (P = 0.02), and both portions of the semitendinosus were darker (P = 0.01) and less yellow (P < 0.01), in pigs transported 3 vs. 0 h. In pigs transported for 3 h, intact vinculin tended to be more (P = 0.08) degraded in the LM, which coincided with lower (P = 0.04) drip losses in the LM of pigs transported for 3 compared with 0 h. Increased (P < 0.01) proteolysis of titin paralleled lower (P = 0.02) shear force values in the STD of pigs transported 3 vs. 0 h. Although the present results demonstrated the potential of a glycogen-reducing diet to alter the GP of different porcine muscles, the effect of these changes on meat quality traits was limited to higher ultimate pH and darker color in the STL. The positive effects of length of transportation on water-holding capacity (LM and STD) and meat color (STD and STL) were only partially related to the resting muscle glycogen concentration because the 3-h transport lowered the GP only in the muscle with the lowest basal glycogen concentration.  相似文献
