In the late 1930s and early 1940s, almost the only analyses carried out for chemical contaminants in foods were for lead arsenate and other arsenical pesticides in fruits. Since then, a tremendous expansion has occurred in the types of chemical contaminants found in foods and in the activities of the U.S. Food and Drug Administration and other organizations responsible for monitoring and controlling the presence of these contaminants in the food supply. This paper describes the findings and control of additional chemical contaminants in foods, including synthetic pesticides, PCBs (polychlorinated biphenyls), other industrial chemicals, fungal metabolites such as aflatoxins, toxic metals, and radionuclides. The common characteristics of problems connected with these different types of contaminants include uncontrolled entry into the food supply, incidents causing extreme public worry, and near impossibility in removing these contaminants from the food supply. Problems may also arise from new technologies and environmental developments. New approaches beyond ordinary regulatory activities are being used to meet these problems. Broader analytical methods requiring less time and faster and more sophisticated toxicological methods are needed to assess the hazard of these environmental food contaminants.  相似文献

Throughout history, wheat‐based foods have been considered among the safest of all foods produced for human consumption. In part, this claim reflects both the low risk profile of low‐moisture foods and the thermal processes used to produce the finished product. Nevertheless, raw flour contains a number of potential hazards, which, if not properly managed, may have the potential to result in serious public health consequences. These hazards are mostly microbiological in origin and arise mainly during production and distribution through the wheat supply chain. The physical processes carried out during milling have minimal impact on the level of contamination present on grain; therefore, the initial microbiological quality of wheat grain has a strong influence on the ultimate quality and safety of milling end products. Although most flour‐based foods are processed and consumed in forms that are less likely to be contaminated with pathogens, refrigerated dough products have the potential to be a safety hazard to consumer health because they could be consumed raw or undercooked. The risk for exposure to pathogenic microorganisms present in raw flour by eating uncooked baking mixture has been demonstrated by several outbreaks. Such food safety incidents have led to heightened manufacturer and consumer awareness about safety related to flour‐containing foods.  相似文献

Evidence for substantial environmental influences on health and food safety comes from work with environmental health indicators which show that agroenvironmental practices have direct and indirect effects on human health, concluding that "the quality of the environment influences the quality and safety of foods" [Fennema, O. Environ. Health Perspect. 1990, 86, 229-232). In the field of genetically modified organisms (GMOs), Codex principles have been established for the assessment of GM food safety and the Cartagena Protocol on Biosafety outlines international principles for an environmental assessment of living modified organisms. Both concepts also contain starting points for an assessment of health/food safety effects of GMOs in cases when the environment is involved in the chain of events that could lead to hazards. The environment can act as a route of unintentional entry of GMOs into the food supply, such as in the case of gene flow via pollen or seeds from GM crops, but the environment can also be involved in changes of GMO-induced agricultural practices with relevance for health/food safety. Examples for this include potential regional changes of pesticide uses and reduction in pesticide poisonings resulting from the use of Bt crops or influences on immune responses via cross-reactivity. Clearly, modern methods of biotechnology in breeding are involved in the reasons behind the rapid reduction of local varieties in agrodiversity, which constitute an identified hazard for food safety and food security. The health/food safety assessment of GM foods in cases when the environment is involved needs to be informed by data from environmental assessment. Such data might be especially important for hazard identification and exposure assessment. International organizations working in these areas will very likely be needed to initiate and enable cooperation between those institutions responsible for the different assessments, as well as for exchange and analysis of information. An integrated assessment might help to focus and save capacities in highly technical areas such as molecular characterization or profiling, which are often necessary for both assessments. In the area of establishing international standards for traded foods, such as for the newly created Standards in Trade and Development Facility (STDF), an integrated assessment might help in the consideration of important environmental aspects involved in health and food safety. Furthermore, an established integrated view on GMOs may create greater consumer confidence in the technology.  相似文献

BACKGROUND/OBJECTIVES: With obesity and nutrition-related diseases rising, public health authorities have recently insisted nutritional quality be included when advertising and labelling food. The concept of nutritional quality is, however, difficult to define. In this paper we present an innovative, science-based nutrient profiling system, Nutrimap, which quantifies nutritional assets and weaknesses of foods. METHODS: The position of a food is defined according to its nutritional composition, food category, the consumer's nutritional needs, consumption data and major public health objectives for nutrition. Amounts of each of 15 relevant nutrients (in 100 kcal) are scored according to their ability to 'rebalance' or 'unbalance' the supply in the whole diet, compared with current recommendations and intakes. These scores are weighted differently in different food categories according to the measured relevance of the category to a nutrient's supply. Positive (assets) and negative (weaknesses) scores are totalled separately. RESULTS: Nutrimap provides an overall estimate of the nutritional quality of same-category foods, enabling easy comparisons as exemplified for cereals and fruit/vegetables. Results are consistent with major nutritional recommendations and match classifications provided by other systems. Simulations for breakfasts show that Nutrimap can help design meals of controlled nutritional value. CONCLUSIONS: Combining objective scientific bases with pragmatic concerns, Nutrimap appears to be effective in comparing food items. Decision-makers can set their own limits within the Nutrimap-defined assets and weaknesses of foods and reach categorisations consistent with their objectives--from regulatory purposes to consumer information or support for designing meals (catering) or new products (food industry).  相似文献

The Total Diet Study provides the Food and Drug Administration with baseline information on the levels of pesticide residues, contaminants, and nutrient elements in the food supply and in the diets of specific age-sex groups. The study also identifies trends and changes in the levels of these substances in the food supply and in diets over time and thereby assists in identifying potential public health problems. This paper describes the evolution of the Total Diet Study from 1961 to 1987. Food collections, sites of analysis, diets, food commodity groups, analytes, analytical methodologies, data transfer, publication of results, notable results, resources, and advantages of the study are discussed.  相似文献

In 1990, under regulatory monitoring, a total of 19,962 samples of domestically produced food from all 50 states and Puerto Rico and imported food from 92 countries were analyzed by FDA for pesticide residues. Of these, 19,146 were surveillance samples, which are collected when there is no suspicion of a pesticide problem. No residues were found in 60% of domestic surveillance samples and in 64% of import surveillance samples. Of the 19,146 surveillance samples, 2.8% were violative. Under the incidence/level aspect of monitoring, 172 samples of fish/shell-fish, 330 samples of whole milk, and 3502 samples of processed foods including baby foods were analyzed for pesticide residues. Findings from these projects were consistent with regulatory monitoring data. The findings of the 1990 Total Diet Study are evidence that actual dietary intakes of pesticides are generally well below the standards established by FAO/WHO and by EPA. The 1990 results are similar to those obtained in earlier years and demonstrate the continuing safety of the food supply relative to pesticide residues.  相似文献

A sensitive biological test to detect the presence of certain contaminants, such as highly toxic halogenated dioxins, dibenzofurans, and biphenyls in foods, was applied to extracts of fresh water fish that had been prepared by a food extraction-cleanup procedure developed by the Food and Drug Administration for pesticides and industrial chemicals. Aryl hydrocarbon hydroxylase (AHH) activity in a rat hepatoma cell line was used as the biological detection system for residues that induce enzyme activity. The induction of AHH activity by the extracts was compared with a standard AHH-induction curve for the most active compound known, 2,3,7,8-tetrachlorodibenzo-p-dioxin (TCDD), and results were computed as TCDD equivalents. Several dilutions of fish extracts were used to produce AHH-induction curves from which an optimal dose-response range was determined and used to estimate TCDD equivalents. Cleaned-up extracts of fish obtained from different water bodies in the United States were examined for AHH activity. The samples which had low levels of polyhalogenated contaminants produced low biological activity, while a higher activity was obtained from fish that contained higher levels of polyhalogenated contaminants. The results suggest that the fish extracts can be screened for AHH inducers before chemical analysis.  相似文献

为实现对水产品流通过程的全程追溯,该文以供应链为视角,以罗非鱼为具体研究对象,立足消费者、企业和政府监管部门等三方,本着可跟踪、可追溯、可召回等基本目标,设计并开发了基于射频识别(radio frequency identification,RFID)和产品电子代码(electronic product code,EPC)物联网的,包含养殖管理系统、加工管理系统、配送管理系统、销售管理系统、查询监管系统5个子系统的水产品供应链可追溯平台,并着重对平台的对象名称服务(object name service,ONS)和EPC信息服务(electronic product code information service,EPCIS)进行了详细的设计与实现,利用该平台可以实现水产品从养殖、加工、配送到销售的全程跟踪与追溯。该研究可为水产品供应链可追溯系统模型与软件的开发提供参考。  相似文献

More than one-third of the calories consumed by U.S. and European populations contain acrylamide, a substance classified as a "probable human carcinogen" based on laboratory data. Thus, it is a public health concern to evaluate whether intake of acrylamide at levels found in the food supply is an important cancer risk factor. Mean dietary intake of acrylamide in adults averages 0.5 microg/kg of body weight per day, whereas intake is higher among children. Several epidemiological studies examining the relationship between dietary intake of acrylamide and cancers of the colon, rectum, kidney, bladder, and breast have been undertaken. These studies found no association between intake of specific foods containing acrylamide and risk of these cancers. Moreover, there was no relationship between estimated acrylamide intake in the diet and cancer risk. Results of this research are compared with other epidemiological studies, and the findings are examined in the context of data from animal models. The importance of epidemiological studies to establish the public health risk associated with acrylamide in food is discussed, as are the limitations and future directions of such studies.  相似文献

Dairying into the 21st century will largely continue with the trends seen in the past few decades, although there is always the possibility of an unlikely but disruptive event. The politics of globalization will potentially be important in freeing up global trade in dairy products. Production on the farm will become increasingly efficient, resulting in continuing price benefits to the consumer. At the same time, increasing attention will be paid by the consumer, producer, and manufacturer to safety and quality issues. Environmental concerns will increase in importance, and the issue of methane production may be important for the industry over the next two decades. It is unlikely that genetically modified milk will be introduced soon, even if public acceptance ceases to be an issue; however, the use of genetic markers for accelerated genetic improvement of cows will have rapidly increasing importance. Despite increasing pressure from nonmilk alternatives, milk and dairy will still be the best sources of nutrition for the young and for traditional dairy products. Consumer concerns will be of overriding importance for the industry, and the safety of dairy foods must become absolute. Recent advances in the chemical, physical, and information sciences and technologies will be utilized to gain greater understanding of the increasingly complex food systems and to support the consumer objectives.  相似文献

针对杂粮产品供应链链条长、主体多、区块链追溯过程数据无法差异化共享、链上数据难以实时监管等难题,通过分析杂粮供应链环节业务流程与监管特性,提出了基于区块链多链架构的杂粮追溯模型,并在此基础上建立多链数据存储架构,设计了基于监管授权组网建链的网络准入机制,并通过智能合约实现数据的链前监管与追溯节点的链上管控。为验证模型有效性,基于Hyperledger Fabric设计并实现区块链追溯系统,对山西忻州杂粮应用案例进行分析。在安全方面,企业组网授权扩散性测试密文平均改变率为82.53%,相关性测试密文平均改变率为82.39%,具备较高的安全性与混淆性。在效率方面,消费者查询公开追溯数据平均时间为0.415 s,监管部门调用跨链接口查询企业敏感追溯数据平均时间为0.871 s。结果表明,该研究设计并实现的面向监管的杂粮多链追溯系统在满足消费者追溯需求的基础上,能够实现追溯数据账本与链间交易记录的实时管控,为农产品区块链追溯监管系统研究提供借鉴与参考。  相似文献

In recent months, the FDA has begun a crackdown on misleading nutrition and health claims on the front of food packages by issuing warning letters to manufacturers and promising to develop stricter regulatory standards. Leading nutrition policy experts Marion Nestle and David Ludwig have called for an even tougher approach: a ban on all nutrition and health claims on the front of food packages. Nestle and Ludwig argue that most of these claims are scientifically unsound and misleading to consumers and that eliminating them would 'aid educational efforts to encourage the public to eat whole or minimally processed foods and to read the ingredients list on processed foods'. Nestle and Ludwig are right to raise concerns about consumer protection and public health when it comes to front-of-package food labels, but an outright ban on front-of-package nutrition and health claims would violate the First Amendment. As nutrition policy experts develop efforts to regulate front-of-package nutrition and health claims, they should be mindful of First Amendment constraints on government regulation of commercial speech.  相似文献

FOOD REFORMULATION: Reformulation of foods is considered one of the key options to achieve population nutrient goals. The compositions of many foods are modified to assist the consumer bring his or her daily diet more in line with dietary recommendations. INITIATIVES ON FOOD REFORMULATION: Over the past few years the number of reformulated foods introduced on the European market has increased enormously and it is expected that this trend will continue for the coming years. LIMITS TO FOOD REFORMULATION: Limitations to food reformulation in terms of choice of foods appropriate for reformulation and level of feasible reformulation relate mainly to consumer acceptance, safety aspects, technological challenges and food legislation. IMPACT ON KEY NUTRIENT INTAKE AND HEALTH: The potential impact of reformulated foods on key nutrient intake and health is obvious. Evaluation of the actual impact requires not only regular food consumption surveys, but also regular updates of the food composition table including the compositions of newly launched reformulated foods.  相似文献

OBJECTIVE: To examine the role of foreign direct investment (FDI) in the nutrition transition, focusing on highly processed foods. DESIGN: Data on FDI were identified from reports/databases and then compiled and analysed. A review of published literature on FDI into the food sector was conducted. SETTING: The nutrition transition is a public health concern owing to its connection with the rising burden of obesity and diet-related chronic diseases in developing countries. Global health leaders are calling for action to address the threat. Highly processed foods often have considerable fat, sugar and salt content, and warrant closer examination. RESULTS: FDI into food processing, service and retail has risen rapidly since the 1980s, mainly from transnational food companies (TFCs) in developed countries. As FDI has risen, so has the proportion invested in highly processed foods for sale in the host market. FDI has proved more effective than trade in generating sales of highly processed foods, and enables TFCs to cut costs, gain market power and obtain efficiencies in distribution and marketing. The amount of FDI targeted at developing countries is increasing; while a disproportionate share enters the larger developing economies, foreign affiliates of TFCs are among the largest companies in low- and low- to middle-income countries. The effect of FDI is to make more highly processed foods available to more people. FDI has made it possible to lower prices, open up new purchasing channels, optimise the effectiveness of marketing and advertising, and increase sales. CONCLUSION: FDI has been a key mechanism in shaping the global market for highly processed foods. Notwithstanding the role of demand-side factors, it has played a role in the nutrition transition by enabling and promoting the consumption of these foods in developing countries. Empirical data on consumption patterns of highly processed foods in developing countries are critically needed, but since FDI is a long-term investment vehicle, it is reasonable to assume that availability and consumption of highly processed foods will continue to increase. FDI can, however, bring considerable benefits as well as risks. Through its position 'upstream', FDI would therefore be an appropriate entry-point to implement a range of public health policies to 'redirect' the nutrition transition.  相似文献

The principles of modern pesticide residue chemistry were articulated in the 1950s. Early authors pointed out the advantages of systematizing and standardizing analytical methods for pesticides so that they could be widely practiced and the results could be reproduced from one laboratory to the next. The availability of improved methods has led to a much more complete understanding of pesticide behavior and fate in foods and the environment. Using methods based largely upon gas chromatography (GC) and high-performance liquid chromatography (HPLC) coupled increasingly with mass spectrometry (MS) and MS(n) as the detection tool, residues can be measured at parts per billion levels and below in a variety of food and environmental matrices. Development of efficient extraction and cleanup methods, techniques such as ELISA, efficient sample preparation techniques such as QuEChERS, and automated laboratory and field instrumentation has also contributed to the tools available for use in modern pesticide residue analysis. As a result, great strides have been made in improving food and worker safety and in understanding environmental behavior and fate of pesticides. There are many challenges remaining in the field of pesticide residue chemistry that will continue to stimulate analytical chemists. New chemistries are emerging, often patterned on complex natural products. Analyzing for the parent chemicals and potentially multiple breakdown products will require analytical ingenuity. The development of more sensitive bioassays and knowledge of unintended side effects will challenge residue chemistry as well, as in the case of following the fate of environmental endocrine disruptors associated with some pesticides as well as nonpesticide contaminants from packaging materials and other familiar articles. Continued funding and other resources to ensure better training, international cooperation, and accelerated research and development activities will be a constant need in pesticide residue chemistry as it is for all areas of science that aim to mitigate or eliminate contaminants that can affect human and environmental health and safety.  相似文献

A high pressure liquid chromatographic (HPLC) method for determining 5 common carbohydrates in food products was evaluated. Reproducibility data were generated showing a relative standard deviation of 2.8%. Recovery studies on a variety of foods gave an average recovery of 98.8%. The HPLC data for 3 varieties of ready-to-eat cereals were compared with data from 4 independent laboratories using current AOAC chemical methods. The HPLC mean values differed from the chemical mean values by 3.2%.  相似文献

食品安全已引起国内外的广泛关注。我国食品安全与提高人民生活质量、保证人民健康,维护社会稳定、建设和谐社会等密切相关。维护食品安全,就是维护生态安全、维护经济安全、维护国家安全。目前,我国食品安全面临的主要问题,一是食品数量不足,合格率不高;二是食品中有毒有害物质残留量高,食物中毒事件增多;三是资源、生态、环境问题突出,食品可持续生产能力面临潜在威胁;四是食品安全的法律、法规尚不健全,执法与管理力度不够。生态农业是当今社会农业发展的重要方向,具有显著的增产、增收、增效和环境保护功能,对改善和优化农业生态环境、生产健康优质的安全食品具有重大意义。生态农业在解决当前及今后我国面临的食品数量、质量安全及食品可持续生产能力等方面,将发挥着重要与不可替代的作用。为保障新世纪我国的食品安全,必须大力发展生态农业。主要措施包括:提高对生态农业的认识;大力普及生态农业知识;全面应用与推广生态农业技术;加强生态农业的科学研究;重视实行生态农业的产业化。  相似文献
