This study evaluated the effect of transport time up to 14 hours and the effects of vehicle design on animal welfare, stress and meat quality. 18 transports (six short, medium and long) with a total of 486 animals (118 sample animals, heifers and bulls) were carried out on commercial vehicles in summer 2000 and winter 2001. Animal welfare and stress were evaluated by blood serum parameters, heart rate monitoring, behaviour recording and occurrence of carcass bruising. Meat quality was evaluated by post mortem muscle glycogen content, pH value, temperature, drip loss, colour and tenderness measurements. Heifers had lower heart rates than young bulls during loading (95 vs 114 beats per minute, bpm), whereas during transport, both had an average heart rate of 100 bpm, furthermore during unloading, heifers had higher heart rates than bulls (109 vs 100 bpm). Blood sampling during unloading could have marginally increased heart rates during the unloading procedure. Studied cattle had lower heart rates during medium and long distance transports compared with short transports. Monitoring of animal behaviour during transport showed that the former settled down faster than the latter. Single- and two-animal pens in medium and long distance vehicles prevented nervous and stressful movements of cattle, which were more prominent in large pens of short distance lorry. Present results suggest that larger pens of three or four animals could increase cattle stress during transport. Moreover during unloading, cattle loaded in single- or two-animals pens had significantly lower blood cortisol content than those loaded in larger groups of three or four animals (P < 0.01). The amount of severe carcass bruising was highest in animals transported over short times and loaded into groups of four cattle. Severe damages occurred most often on perianal and hipbone area of the carcass surface. Present results showed that muscle glycogen level was highest after long transport. These animals were fed more regularly from the last feeding up to stunning than medium or short distance animals. Animals in single-pens had the highest muscle glycogen level. Transport distance or number of animals in one pen had a minor effect on muscle pH values or temperatures during 24 hours post mortem (pm). Drip loss of the M. longissimus dorsi (LD) was highest after long transport, but animal number in one pen had no effect on drip loss. Colour of the LD muscle was independent on transport conditions. Light colour of three animal groups resulted from high amounts of heifers, which had lighter colour than bulls. All meat samples were quite tender. However, heifers had significantly tender meat than young bulls (P < 0.001). Higher amounts of heifers had the most tender meat after short transports. Mean DFD (dark, firm, dry) meat occurrence was 2.1% in this project, DFD frequency was lowest after short, then after long and highest after medium distance transports. Because of not evenly distributed numbers of bulls (low) and heifers (high) it was difficult to compare short and long distance transport effects.  相似文献

The aim for this study was to derive economic values for meat quality traits. Meat quality experts from 10 slaughter and retail companies in Switzerland were asked to give an interview in which they indicated their willingness to pay different prices for carcasses from different quality classes. Economic values for the seven meat quality traits color (L*), drip loss, intramuscular fat content, iodine value, pH1 (45 min after slaughtering), pH2 (24 to 30 h after slaughtering), and proportion of premium cuts were derived from the answers. For each trait, a weighted mean of these economic values was calculated using the number of pigs slaughtered by a company per year as a weighting factor. Population mean and standard deviation of the investigated traits were taken from station test results of Swiss Large White pigs (intramuscular fat content, iodine value, pH1, pH2, and proportion of premium cuts) and from the literature (color and drip loss). Weighted means (range among companies) of economic values per slaughter pig on the basis of one phenotypic standard deviation of the trait in Swiss Francs (SFr.) were -22.92 (0 to -62.46) for color, -10.27 (0 to -43.64) for drip loss, 10.84 (0 to 29.43) for intramuscular fat content, -29.90 (-15.54 to -43.58) for iodine value, 11.50 (.67 to 19.79) for pH1, 0 (0) for pH2, and 10.92 (-2.30 to 33.67) for proportion of premium cuts.  相似文献

Two groups of 26 lambs were transported for 15 hours either on smooth highways or on rougher secondary roads. Nine of the animals in each group were monitored for heart rate and the plasma levels of cortisol, creatine kinase and lactate dehydrogenase, before the journey began, after four, eight and 12 hours and at slaughter. The pH of the meat was measured 45 minutes and 24 hours postmortem and its colour was assessed 24 hours postmortem. The lambs transported on smooth roads had a lower heart rate and lower plasma cortisol concentrations after eight and 12 hours than the lambs transported on rougher roads. Twenty-four hours after slaughter the pH of the meat of the lambs transported on smooth roads was lower than that of the lambs transported on rougher roads.  相似文献

为评价宁乡猪和杜洛克猪的杂交效果,本实验分别测定了91头宁乡猪和76头杜宁二元杂种猪的胴体性状和肉质性状指标,并对不同性状指标进行相关性分析。结果表明:在胴体性状方面,与宁乡猪相比,杜宁二元杂种猪的体直长、体斜长、胴体重、肋骨数和眼肌面积极显著提高,背膘厚和皮厚极显著降低;在肉质性状方面,杜宁二元杂种猪的肉色红度(a*)、pH45min和熟肉率极显著高于宁乡猪,pH24h显著低于宁乡猪。相关性分析显示,宁乡猪体斜长和胴体重存在极显著正相关(r=0.71),a*值与黄度(b*)值之间存在高度正相关(r=0.58);杜宁二元杂种猪体直长与体斜长存在极显著正相关(r=0.64),亮度(L*)值与b值极显著相关(r=0.54)。说明杜宁二元杂种猪在导入杜洛克血缘后,其胴体性状较宁乡猪得到较大改善,但肉质性状改善效果不明显。  相似文献

为探究荒漠草原放牧与舍饲对滩羊屠宰性能和肉品质的影响,本研究将39只3月龄滩羊公羔分为荒漠草原放牧组(GZ)、限时放牧4 h补饲组(TG)和舍饲组(SF)3组,测定滩羊的屠宰性能与肉品质指标。结果显示:SF组滩羊的宰前活重、胴体重、屠宰率、净肉率和肉骨比显著优于TG组,TG组滩羊除肉骨比和净肉率外,显著优于GZ组(P<0.05);3种饲养模式滩羊的肉色、pH、剪切力、滴水损失指标差异不显著(P>0.05),但SF组的蒸煮损失显著低于GZ组与TG组(P<0.05);TG组与GZ组滩羊肌肉中的多不饱和脂肪酸C18?3n3,C20?5n3,C22?6n3,C18?2n6,C20?3n6,C20?4n6等含量显著高于SF组(P<0.05),且n-6/n-3脂肪酸比例显著低于SF组(P<0.05)。综上表明,荒漠草原放牧会提高滩羊肌肉中的不饱和脂肪酸含量,但会提高滩羊肌肉的蒸煮损失,降低滩羊的屠宰性能,而限时放牧补饲可以较大程度保留滩羊肌肉脂肪酸组成,同时提高滩羊的屠宰性能。  相似文献

选取体质量约为100 kg、氟烷基因型为NN的长×大二元杂交猪60头,随机分为3组:不休息组,休息3 h组,休息3 h+玩具组,公母各半.根据评分标准分别记录休息过程中猪的精神状况.放血时收集血样,用于分析血浆中皮质醇、促肾上腺皮质激素(ACTH)浓度,乳酸脱氢酶、肌酸激酶活性,乳酸、血糖浓度;添加EDTA-K<,2>抗凝剂的血样用于血细胞分析.同时在放血时,测定血温.屠宰后.测定背最长肌24 h滴水损失;背最长肌(LM)、半膜肌(SM)45 min以及24 h的pH、色值、导电率.结果表明:①休息3 h+玩具组在3个时间段的精神评分要极显著高于休息3 h组,随着时间的延长猪都表现出趋于平静的趋势;②休息3 h+玩具组和休息组3 h组在皮质醇、促肾上腺皮质激素要显著低于不休组(P<0.05),相反乳酸脱氢酶、肌酸激酶要显著高于不休息组(P<0.05),而休息3h+玩具组与休息3 h组差别不显著(P<0.05);③3个休息处理组在肉质指标上没有出现显著差别(P<0.05);④休息3 h+玩具组、休息3 h组在红细胞数(RBC)、血红蛋白含量(HGB)均要显著低于不休息组(P<0.05);休息3h+玩具组在白细胞数(WBC)上显著高于不休组(P<0.05);休息3 h组的淋巴细胞绝对值(W-SCC)显著高于不休息组(P<0.05);而休息3 h+玩具组与休息3 h组在所有的免疫指标上都没有显著差异(P>0.05).根据上述的结果显示,宰前一定要让猪有一个休息的过程,这种措施能有效缓解猪的应激,并能恢复其免疫能力;在休息的过程中,添加部分福利玩具,至少对猪的精神状态有明显的好处.  相似文献

选用不同致晕、放血法及烫毛方法对140头杜长大和杜大长三元杂商品猪进行屠宰,测定其肌肉的肉色、pH值、剪切力、失水率等指标。结果表明:在其他条件相同的情况下,烫毛水温为60℃时,烫毛6min,胴体质量最佳。电击致晕生猪,采用悬挂放血,有出现PSE猪肉的倾向;而CO2致晕生猪,采用水平放血或悬挂放血,肉质指标差异不显著。较好的组合是:电击致晕生猪,采用水平放血;而CO2致晕生猪,采用悬挂放血较好。  相似文献

The aim of this study was to validate previously reported associations between microarray gene expression levels and pork quality traits using real‐time PCR. Meat samples and meat quality data from 100 pigs were collected from a different pig breed to the one tested by microarray (Large White versus Pietrain) and a different country of origin (Denmark versus Germany). Ten genes (CARP, MB, CSRP3, TNNC1, VAPB, TNNI1, HSPB1, TNNT1, TIMP‐1, RAD‐like) were chosen from the original microarray study on the basis of the association between gene expression levels and the meat quality traits meat %, back fat, pH24, drip loss %, colour a*, colour b*, colour L*, WB‐SF, SFA, MUFA, PUFA. Real‐time PCR detection methods were developed for validation of all ten genes, confirming association with drip loss (two of two genes), ultimate pH (three of four genes), a* (redness) (two of six genes) and L*(lightness) (two of four genes). Furthermore, several new correlations for MUFA and PUFA were established due to additional meat quality trait information on fatty acid composition not available for the microarray study. Regression studies showed that the maximum explanation of the phenotypic variance of the meat quality traits was 50% for the ultimate pH trait using these ten genes only. Additional studies showed that the gene expression of several of the genes was correlated with each other. We conclude that the genes initially selected from the microarray study were robust, explaining variances of the genes for the meat quality traits.  相似文献

Establishing relationships among specific quality traits is important if significant progress toward developing improved pork quality is to be realized. As part of a study to examine the individual effects of genes on meat quality traits in pigs, a three-generation resource family was developed. Two Berkshire sires and nine Yorkshire dams were used to produce nine F1 litters. Sixty-five matings were made from the F1 litters to produce four sets of F2 offspring, for a total of 525 F2 animals used in the study. These F2 animals were slaughtered at a commercial facility upon reaching approximately 110 kg. Carcass composition traits, pH measurements, and subjective quality scores were made at 24 h postmortem. Loin samples (n = 525) were collected at 48 h postmortem, and meat quality traits were evaluated. These traits included pH (48 h), Hunter L-values, drip loss, glycolytic potential, ratio of type IIa/IIb myosin heavy chains (IIa/IIb), total lipid, instrumental measures of tenderness using the Star Probe attachment of the Instron, cook loss measurements, and sensory evaluations. Significant phenotypic correlations were found between many carcass, instrumental, and biochemical measurements, and sensory quality traits. Star Probe measurements were significantly correlated with drip loss (0.29), glycolytic potential (0.30), pH (-0.29), total lipid (-0.14), and Hunter L-values (0.28). Drip loss was significantly correlated with glycolytic potential (0.36), pH (-0.28), IIa/IIb (-0.10), and Hunter L-values (0.33). Hunter L-values were also significantly correlated with total lipid (0.33) and IIa/ IIb (-0.11). Sensory tenderness, flavor, and off-flavor scores were significantly correlated with drip loss, pH, and glycolytic potential measurements. Marbling score, total lipid, and drip loss were not significantly correlated with sensory juiciness scores, but cooking loss was. Marbling and total lipid were significantly correlated with firmness scores (0.37 and 0.31, respectively). Taken together, the data in this study suggest that changes in some meat quality traits can affect many other meat quality attributes. The correlations yield information that could aid in directing future studies aimed at understanding the underlying biological mechanisms behind the development of many quality traits.  相似文献

1. Early post-mortem pH was used to identify PSE-like turkey meat, characterised by a low water-holding capacity and pale colour. In a commercial turkey processing facility, the pH value of turkey breast muscle was measured at 0, 9, 10, 14, 154, 231, and 246 min post mortem. 2. At 14 min post mortem, the carcases were separated into 3 pH classes: low (<5.70), medium (5.70 to 6.18), and high (>6.18). Low pH carcasses (<5.70) had higher drip loss(1.75%) than medium (0.81%) and high pH carcases (0.75%). Furthermore, high pH carcases (>6.18) had a lower L* value (darker) than low and medium pH carcases. 3. The effects of using CO2 'snow' on turkey breast muscle quality were also investigated. Light CO2 'snow' treatment (57 g snow/kg breast) and heavy CO2 treatment (113 g snow/kg breast) resulted in higher drip losses than the control no CO2 snow) group.  相似文献

Supplementation of pigs with vitamin E, the most important lipid-soluble antioxidant, has been shown to improve meat quality and animal health. Previous studies in cultured cells and laboratory animals indicate synergistic effects between polyphenols and vitamin E. The present feeding trial was undertaken to investigate the effects of dietary green tea polyphenols (GTP) on vitamin E status, antioxidative capacity and parameters of meat quality in growing pigs. Eighteen castrated, crossbred, male pigs received a flavonoid-poor diet based on corn starch, caseinate and rapeseed oil with a total vitamin E content of 17 IU/kg diet over a period of 5 weeks. This basal diet was supplemented with green tea extract to provide daily doses of 0 (control), 10 and 100 mg GTP/kg body weight. Dietary supplementation of growing pigs with GTP did not affect serum, liver, lung and muscle vitamin E (α- and γ-tocopherol) concentrations, plasma antioxidant capacity (ferric reducing ability of plasma, trolox equivalent antioxidant capacity) or parameters of meat quality including meat temperature, pH, conductivity, colour and drip loss. In conclusion, supplementation of pig diets with green tea catechins is not associated with improved antioxidant status and meat quality under practice-oriented conditions.  相似文献

1. Pectoralis major (P. major) muscle pH and meat quality traits were studied in relation to bird response to ante-mortem stress in three chicken lines: a fast-growing standard line (FGL), a slow-growing French 'Label Rouge' line (SGL) and a heavy line (HL). Ninety-nine birds of the three genetic types were slaughtered at their usual marketing age (6, 12 and 6 weeks for FGL, SGL and HL birds, respectively) on the same day. The birds of each line were divided into three different ante-mortem treatment groups: minimum stress (shackling for 10 s) (C), shackling for 2 min (SH) and acute heat plus shackling stress (exposure to 35 degrees C for 3.5 h and shackling for 2 min before stunning) (H + SH). 2. Regardless of chicken line, wing flapping duration (WFD) between hanging and stunning was strongly negatively related to P. major muscle pH at 15 min post-mortem. It was also moderately negatively related to P. major muscle glycolytic potential (GP), which represents glycogen level at death. Increasing WFD induced an increased ultimate pH (pHu) only in HL. The consequences of increased WFD for breast meat traits were dependent on the chicken line: it induced lower L* and b* and higher a* and drip loss in SGL while it only increased breast a* in HL birds. By contrast, WFD variations did not alter breast meat quality traits of FGL birds. Regardless of the chicken line, increased GP was associated with lower pHu and higher L* and drip loss. In SGL, it also increased b* and decreased curing-cooking yield of breast meat. 3. Struggling activity on the shackle line and muscle glycogen content at death could partly explain line and pre-slaughter variations in breast meat pH and quality traits. The water holding capacity of the raw and cooked meat was impaired by long shackling in the case of SGL birds while it was barely affected by ante-mortem conditions in the two standard lines. In conditions which minimised bird struggling (C), SGL and FGL birds had meat with a better water holding ability than that of broilers from the heavy line. However, when broilers were subjected to SH or H + SH conditions, the breast meat water holding capacity of SGL birds was lowered to the same level as that of the heavy line birds.  相似文献

1. The objective of this study was to evaluate the effect of sex and gas stunning on quality attributes of turkey breast meat.

2. One hundred B.U.T. Premium turkeys (50 males and 50 females) were divided into four groups of 25 animals and subjected to one of two CO2 stunning procedures: G1 stepwise (step 1: 30% CO2, 15 s; step 2: 55% CO2, 40 s; step 3: 70% CO2, 45 s) or G2 fixed concentration (80% CO2, 100 s). The pH and meat colour at 20 min post-mortem, and pH, colour (L*, a*, b*), water holding capacity (WHC), drip loss (DL), cooking loss (CL) and Warner–Bratzler shear force (WBSF) in breast samples at 24 h and 7 d post-mortem were assessed.

3. There were significant differences between stunning groups for pH, meat colour and CL, whereas no significant differences were found for DL and WBSF. Sex had a significant effect on pH and b* and ageing of meat affected pH, colour coordinates, DL and WBSF.

4. It was concluded that the G2 treatment affected negatively the pH value and colour coordinates. However, G2 stunning affected positively the WHC parameters. Female turkeys had better results than males for pH, and the colour of female turkey breast meat was less yellow than male breast meat.  相似文献

Forty-eight slaughter bulls were transported by road in groups of eight for approximately 30 min, 3 h and 6 h in two replicates. Animal welfare during the transport process was assessed. Loadings and unloadings were evaluated with a scoring method. Heart rates were monitored at the farm before loading and during all stages of transport. Blood samples were taken from all animals a week before transport and at sticking and analysed in terms of haematological values: hematocrit, haemoglobin, red and white blood cells (RBC and WBC), differential WBC counts and neutrophil:lymphocyte ratio. Glucose, creatine kinase, lactate and cortisol were also determined. To evaluate differences in meat quality, pH and water-holding capacity (WHC) were measured 24 h after slaughter. The loading and unloading scores were very low (low stress) but were associated with changes in heart rate, especially loading. Animals recovered their resting heart rate during the journey in medium and long transports. On the other hand, animals transported around 30 min maintained an elevated heart rate during the whole journey. All animals showed a stress response with significantly higher (p < 0.05) levels of erythrocyte series, N:L ratio, glucose and lactate. Animals transported for 3 and 6 hours had significantly (P<0.05) higher levels of cortisol than controls or 30 min transports, without differences between control and the shortest journey. Different transport times did not influence meat quality. Under good conditions, the transport had a slight effect on welfare, meat quality or physiological parameters related with stress.  相似文献

为了探讨复方中药健胃促长剂对肉仔鸡鸡肉品质的影响,本研究按照单因子试验设计,将体重接近的160只14日龄AA肉鸡随机分为4组,每组10重复,每重复4只。其中1组为空白对照组,饲喂基础日粮;2、3、4组为试验组,从15日龄起,分别在基础日粮添加0.5%、1%、2%复合健胃促长剂,连续饲喂3周。测定各组肌肉的pH、滴水损失、鸡肌肉的丙二醛含量(MDA)以及总抗氧化能力(T-AOC)。结果表明,试验组肉仔鸡24 h滴水损失率、45 min pH、24 h pH较对照组有改善趋势(P<0.05),48 h滴水损失率差异显著(P<0.05),0 h与48 h MDA、T-AOC差异显著(P<0.05)。结果显示在肉仔鸡日粮中添加复合绿色健胃促长剂对肉仔鸡肌肉品质无不良影响。  相似文献

本试验旨在研究不同品种牛肌肉的抗氧化特性,为优质牛肉的生产提供试验数据。选用5个品种牛(利木赞牛、中国西门塔尔牛、鲁西牛、秦川牛、晋南牛)的背最长肌,测定肌内脂肪含量、24小时的滴水损失以及在0~4℃下肉色、过氧化物值(PV)及硫代巴比妥酸反应物(TBARS)在72h内的变化动态。结果表明,背最长肌的肌内脂肪含量与24小时滴水损失率在不同品种牛肌肉之间没有显著差异(P>0.05);在整个储存时期(0~72h),5个品种牛肌肉的a*、b*值均呈下降趋势;4~72h内,利木赞牛肌肉的a*值均是最高的,且在冷藏8、12h时,利木赞牛肌肉的a*值显著大于鲁西牛肉和秦川牛(P<0.05),24h后利木赞牛的a*值显著大于西门塔尔牛(P<0.05);随着储存时间的延长,5个品种牛背最长肌的PV和TBARS值均有不同程度的增加,利木赞牛肌肉的PV和TBARS值增加最慢,秦川牛和鲁西牛肌肉的PV和TBARS值增加较快。结果表明,5个品种牛的肌内脂肪含量和滴水损失差异不显著,利木赞牛肌肉能够较长时间保持肉色和抗氧化特性。  相似文献

Effects of pre‐slaughter showering and ventilation on stress, meat quality and energy metabolism of broilers in summer were investigated. After transport, 84 Arbor Acres broilers were randomly divided into four treatment groups: (i) control group without ventilation and showering (C); (ii) 10 min ventilation without showering (VWS); (iii) 10 min showering without ventilation (SWV); (iv) 5 min showering and then 5 min ventilation (SV). Compared with the control group, plasma lactate dehydrogenase and creatine kinase activities in the other three treatment groups were (P < 0.05) lower; however, the plasma glucose level did not show any significant changes among all the groups. The breast meat in the SV group had significantly (P < 0.05) higher pHu, glycogen content, lower L*, ΔpH, drip loss, cook loss, R‐value and lactate content than the control group; however, there was no significant difference in shear force values among all the groups. In conclusion, this study indicated broilers in the SV group showed a lower stress level and greater meat quality, which suggest that showering and ventilation after transportation may be a good measure to relieve stress caused by transport under high temperature and improve the meat quality of broilers.  相似文献
