硒代蛋氨酸对肥育猪生产性能和肉品质的影响   总被引:7,自引:0,他引:7  
本试验旨在研究硒代蛋氨酸对肥育猪生产性能和肉品质的影响.选用64头体重约60 kg的杜×长×大三元杂交肥育猪,随机分为4个处理,各处理饲粮中分别添加0(空白对照组)、0.15和0.30 mg/kg硒代蛋氨酸硒、0.30 mg/kg亚硒酸钠硒,试猪体重达95 kg左右结束试验.结果表明:1)饲粮添加不同水平硒代蛋氨酸或亚硒酸钠均未改善肥育猪平均日增重、平均日采食量、料重比(P>0.05);2)饲粮添加不同水平硒代蛋氨酸或亚硒酸钠均未显著影响肥育猪背最长肌剪切力、肌内脂肪含量和滴水损失(P>0.05);各硒处理宰后12 h背最长肌pH均显著高于对照组(P<0.05);与对照组相比,添加硒代蛋氨酸或亚硒酸钠显著降低了宰后不同时间点肉色亮度(L*)值(P<0.05),提高了肉色红度(α*)值(P<0.05),0.15 mg/kg硒代蛋氨酸硒处理也显著降低了宰后12 h肉色黄度(b*)值(P<0.05);3)添加0.30 mg/kg硒代蛋氨酸硒显著降低了背最长肌中乳酸含量(P<0.05);0.30 mg/kg硒代蛋氨酸硒处理和0.30 mg/kg亚硒酸钠硒处理的氧合肌红蛋白含量均极显著高于对照组(P<0.01)和显著高于0.15 mg/kg硒代蛋氨酸硒组(P<0.05).以上试验结果提示,在肥育猪日粮中添加0.15~0.30 mg/kg硒代蛋氨酸硒对改善猪肉肉色十分有利.  相似文献

选择48头体重接近(86.0±5.1)kg的杜长大肥育阉公猪,研究天冬氨酸镁和吡啶羧酸铬对猪宰前应激肉品质的影响。试验猪分为4组,Ⅰ组为对照组,Ⅱ、Ⅲ、Ⅳ组为试验组,每组3个重复,每个重复4头,采食玉米-豆粕型日粮(DE,13.18MJ/kg;CP,14.6%)。Ⅰ组饲喂基础日粮;Ⅱ组饲喂基础日粮+1.0%天冬氨酸镁(MgAsp);Ⅲ组饲喂基础日粮+0.3mg/kg吡啶羧酸铬(Crpi);Ⅳ组饲喂基础日粮+1.0%MgAsp+0.3mg/kgCrpi。每头猪每日饲喂2.8kg上述试验日粮,7d后运到屠宰场。结果表明,日粮中补充吡啶羧酸铬、天冬氨酸镁、吡啶羧酸铬+天冬氨酸镁均降低了血清中皮质醇含量,减缓了屠宰前的应激反应;给宰前的育肥猪补充吡啶羧酸铬、吡啶羧酸铬+天冬氨酸镁均可降低宰后糖原分解(P0.05),补充天冬氨酸镁也有降低宰后糖原分解的趋势。补充吡啶羧酸铬、天冬氨酸镁及吡啶羧酸铬+天冬氨酸镁均可显著降低宰后短时间内猪背最长肌和股二头肌乳酸含量(P0.05);日粮中补充吡啶羧酸铬、天冬氨酸镁及吡啶羧酸铬+天冬氨酸镁均可极显著(P0.01)降低背最长肌和股二头肌pH和滴水损失,分别降低PSE肉发生率75.1%、49.8%和75.1%(P0.05),而对系水力无显著影响(P0.05));复合添加吡啶羧酸铬、天冬氨酸镁组猪的滴水损失、背最长肌和股二头肌色值都显著低于单独添加吡啶羧酸铬、天冬氨酸镁组,这说明吡啶羧酸铬、天冬氨酸镁在改善肉质指标方面具有一定的加性效应,二者同时添加效果最好。  相似文献

育肥猪屠宰前饲粮中短期添加乙酸镁,研究其对氟烷基因杂合子育肥猪肌肉加工品质的影响。选用体重相近的氟烷基因杂合子(HalNHaln)大长猪(大白猪×长白猪)36头随机分为2组,即对照组、乙酸镁组,每组18头。乙酸镁组在屠宰前5 d,基础日粮中添加镁1 500mg/kg(以乙酸镁形式),对照组饲喂基础日粮。试验表明:在猪屠宰前饲粮中短期添加1 500 mg/kg水平的镁对试验猪的平均日采食量没有明显影响(P>0.05);可以显著降低肌肉的滴水损失(P<0.05),提高猪肉的熟肉率,从而提高猪肉的加工品质。  相似文献

选择体重20kg左右的杜大长144头,按体重、公母基本一致分成4组,每组3个重复,每个重复12头。对照组在基础饲粮中添加无机硒0.3mg/kg,试验组Ⅰ添加无机硒0.3mg/kg和VE100mg/kg,试验组Ⅱ添加有机硒0.3mg/kg,试验组Ⅲ添加有机硒0.3mg/kg和VE100mg/kg。经100天的饲养试验和测试表明,各试验组与对照组相比均有提高日增重、降低料重比的趋势,但差异不显著(P>0.05)。试验组Ⅰ、试验组Ⅱ和试验组Ⅲ与对照组相比,4℃条件下24h滴水损失分别下降13.96%(P<0.01)、15.77%(P<0.01)和31.08%(P<0.01),但屠宰率、瘦肉率、眼肌面积、背膘厚无显著性差异;肌肉谷胱甘肽过氧化物酶(GSH-px)活力分别提高2.34%(P>0.05)、21.08%(P<0.05)和21.82%(P<0.05);肌肉硒含量分别提高4.17%(P>0.05)、78.33%(P<0.01)和90.00%(P<0.01)。结果表明,在生长育肥猪基础饲粮中添加有机硒0.3mg/kg和VE100mg/kg,猪生产性能最好,猪肉滴水损失最低,肌肉GSH-px活力、硒含量最高。  相似文献

试验研究了宰前短期添加不同剂量镁对PIC育肥猪肉质的影响。试验以PIC育肥猪为研究对象,共分4个处理,每个处理4头。分别在限饲基础日粮基础上每日补饲0、2、4、6 g镁。结果表明:每头添加镁2 g/d有提高色素含量趋势(P>0.05),添加4 g/d可极显著提高肌肉色素含量7.41%(P<0.01),添加6 g/d显著提高肌肉色素含量(P<0.05);肉色评分随添加剂量的增加而提高,2 g/d可以显著提高肉色评分(P<0.05),4、6 g/d可极显著提高肉色评分(P<0.01);随镁添加量的增加,肌肉pH值显著提高(P<0.05),6 g/d添加组与对照组相比较差异极显著(P<0.01)。宰前5 d补镁可增加肉色,显著提高肌肉pH值,改善猪肉品质。  相似文献

本试验研究镁的来源、水平和添加时间对肥猪运输和屠宰应激及肉品质的影响.试验以杜长哈杂交肥猪为研究对象,以玉米-豆粕-棉粕-小麦麸型日粮作基础日粮,试验Ⅰ和试验Ⅱ按试验要求随机分组,每个处理6个重复,每个重复5头猪.结果表明:天门冬氨酸镁组、硫酸镁组和氯化镁组的血清镁含量都显著高于对照组(P<0.05),天门冬氨酸镁组、硫酸镁组和氯化镁组的肾上腺素和去甲肾上腺素含量都低于对照组(P<0.05);血清肾上腺素和去甲肾上腺素含量随着天门冬氨酸镁添加量的提高而下降,但过1 000 mg/kg后开始趋向于稳定.天门冬氨酸镁组背最长肌糖元含量显著高于对照组(P<0.05),提高了5.43%~12.98%;相反乳酸含量显著降低(P<0.05);背最长肌pH较对照组显著升高(P<0.05);天门冬氨酸镁组背最长肌滴水损失降低45.25%,显著低于对照组(P<0.05),二头肌滴水损失降低2.15%,但差异不显著(P>0.05);天门冬氨酸镁组PSE肉比对照组降低100%.结论:本试验条件下,天门冬氨酸镁、硫酸镁和氯化镁,均可以缓解运输和屠宰给猪造成的应激,但是天门冬氨酸镁要强于硫酸镁和氯化镁.在肥猪屠宰前7 d,日粮中添加镁(天门冬氨酸镁)1 000 mg/kg,使血液镁浓度提高11.31%,不但能缓解运输和屠宰给猪造成的应激,而且能改善由于应激对肉质造成的影响.  相似文献

为了研究不同水平茶多酚对苏姜育肥猪的生长性能和肉质的影响,以确定适宜添加量,试验选用胎次一致,营养状况、体重相近的苏姜育肥猪40头,每头体重约为60 kg,随机分成4组,即对照组和试验Ⅰ、Ⅱ、Ⅲ组,每组10头,对照组饲喂基础日粮,试验Ⅰ、Ⅱ、Ⅲ组分别在基础日粮中添加300,400,500 mg/kg茶多酚,测定平均日增重、体长、膘厚等生产性能指标,大理石纹评分、pH值、滴水损失、剪切力、肉色、肌肉水分、脂肪等肉品质和营养成分指标。结果表明:日粮添加茶多酚对苏姜育肥猪生长性能、肌肉水分含量和脂肪含量、pH值、滴水损失、黄度值(b~*)均无显著影响(P0.05);饲粮添加300 mg/kg茶多酚可显著提高育肥猪肌肉大理石花纹评分和肉色比色板评分(P0.05),并在一定程度降低剪切力。Ⅱ、Ⅲ组(400,500 mg/kg茶多酚添加组)改善肉品质的效果较Ⅰ组(300 mg/kg添加组)有所减弱。说明在本试验条件下,300 mg/kg为茶多酚在苏姜育肥猪日粮中的适宜添加量。  相似文献

肌肽与维生素E对育肥猪肉品质和抗氧化性能的影响   总被引:1,自引:0,他引:1  
本试验旨在研究肌肽与维生素E单独及联合使用对育肥猪肉品质和抗氧化性能的影响。试验采用2因素2×3析因设计,设3个肌肽水平(0、50、100 mg/kg),2个维生素E水平(0、200 mg/kg),选择90头体重约为70 kg的“杜×长×大”三元杂交育肥猪,按体重相近、性别比例相同原则,随机分为6组,每组3个重复,每个重复5头猪。预试期为7 d,试验期为42 d。结果表明:1)饲粮中添加肌肽能显著提高屠宰后45 min肌肉的p H和降低贮存48 h肌肉的滴水损失(P<0.05),极显著提高屠宰24 h后肌肉的p H和降低贮存24 h肌肉的滴水损失(P<0.01);维生素E能极显著降低贮存24和48 h肌肉的滴水损失(P<0.01),二者均能显著改善肉色(P<0.05)。肌肽与维生素E在改善肉色和降低贮存24 h肌肉的滴水损失上存在互作效应(P<0.05),且联合添加优于单独添加。2)饲粮中添加肌肽可显著提高育肥猪血清总抗氧化能力(T-AOC)及总超氧化物歧化酶(T-SOD)和过氧化氢酶(CAT)活性(P<0.05),极显著提高谷胱甘肽过氧化物酶(GSH-Px)活性(P<0.01),维生素E可极显著提高育肥猪血清T-AOC及T-SOD和GSH-Px活性(P<0.01)。在提高血清的T-AOC和GSH-Px活性上,二者存在显著互作效应(P<0.05),且联合添加优于单独添加。3)肌肽可显著降低贮存24 h背最长肌的丙二醛(MDA)含量(P<0.05),极显著降低贮存48、72和96 h背最长肌的MDA含量(P<0.01);维生素E可极显著降低贮存24、48、72和96 h背最长肌的MDA含量(P<0.01),且肌肽与维生素E对贮存48 h背最长肌的MDA含量存在显著互作效应(P<0.05)。综上,饲粮中添加100 mg/kg的肌肽、200 mg/kg的维生素E为最优组合。  相似文献

本试验旨在探索杜仲提取物(EUOE)对猪生长性能、胴体品质及肌肉氨基酸含量的影响。试验选用胎次相同、体重相近的42日龄杜×长×大三元杂交猪300头,平均初始重为(9.96±0.05)kg,随机分成5个处理,每个处理6个重复,每个重复10头猪。试验分成3个阶段,阶段Ⅰ:9.96~20kg;阶段Ⅱ:20~60kg;阶段Ⅲ:60~90kg。试验日粮分别在基础日粮中添加杜仲提取物0,1500,2000和2500mg/kg或黄霉素12mg/kg(阶段Ⅰ)或8mg/kg(阶段Ⅱ和Ⅲ)。结果表明,1500mg/kg杜仲提取物显著降低阶段Ⅰ和Ⅱ日均腹泻评分(P<0.05),显著提高了阶段Ⅱ猪群日均增重(P<0.05),降低了阶段Ⅱ和Ⅲ料重比(P<0.05)。杜仲提取物(除2000mg/kg)和黄霉素组均能显著提高试验全期日增重(P<0.05),而杜仲提取物与黄霉素间不存在显著差异(P<0.05),动物日均采食量存在增加趋势(0.050.05);而黄霉素的添加显著降低了肌肉肌内脂肪含量(P<0.05)。黄霉素和杜仲提取物组均能不同程度地降低胴体皮厚(0.05相似文献

试验旨在研究能量与吡啶羧酸铬的互作效应对肥育猪肉质性状的影响。选择体重60 kg左右,杜×长×大三元杂交肥育猪36头,分为4组,分别饲喂低能日粮、低能+吡啶羧酸铬日粮、高能日粮、高能+吡啶羧酸铬日粮进行试验,对肥育猪背最长肌的肉色、pH值(屠宰后24 h)、大理石花纹、肌内脂肪(intramuscular fatI,MF)含量、剪切力、滴水损失、熟肉率、肌肉糖原含量指标进行测定。结果表明:①能量水平对肉色评分、滴水损失有极显著的影响(P<0.01);②能量水平对肌内脂肪(IMF)有显著影响(P<0.05);③能量水平对pH值、大理石花纹、剪切力、熟肉率、肌糖原含量均无显著影响(P>0.05);④添加吡啶羧酸铬对肉色评分、pH值I、MF、大理石花纹、滴水损失有极显著的影响(P<0.01);⑤添加吡啶羧酸铬对熟肉率、肌糖原含量有显著影响(P<0.05);⑥添加吡啶羧酸铬对剪切力无显著影响(P>0.05);⑦能量与吡啶羧酸铬互作对大理石花纹、熟肉率有显著影响(P<0.05);对其他肉质性状均无显著影响(P>0.05);⑧在低能日粮中添加200μg/kg吡啶羧酸铬,提高了肉色评分p、H值I、MF含量、大理石花纹和熟肉率;并降低了肌糖原含量。综上所述,在育肥后期采用低日粮能量水平并添加200μg/kg吡啶羧酸铬可改善肉质。  相似文献

试验考察宰前添加天冬氨酸镁(MgAsp)与维生素D3(VD3)对试猪血液理化指标、猪肉品质以及μ-Calpain和Calpastatin基因mRNA含量的影响。选体重约90 kg DLY杂交猪48头,随机分到4个处理:对照、加MgAsp、加VD3和加MgAsp与VD3。试验期为9 d,试验结束后选取24头进行屠宰。结果表明:宰前短期添加MgAsp和VD3对育肥猪胴体品质无影响;与对照相比,添加MgAsp提高血清镁含量(P<0.05),添加VD3提高血清磷(P<0.05)和钙的含量,MgAsp和VD3联合添加可进一步提高血清镁含量(P<0.01);添加MgAsp降低臀肌L值(P<0.01),并有提高肌肉pH值和降低滴水损失的趋势,提高了μ-Calpain与Calpastatin mRNA的比值,改善了嫩度;添加VD3降低了臀肌的L24h值(P<0.05),有提高pH和嫩度的趋势;MgAsp和VD3联合添加除对剪切力略有改善而外,对其他肉质指标并没有进一步改善。  相似文献

研究天门冬氨酸镁(MgAsp)的不同添加水平和饲喂时间对肉仔鸡胸肌品质的影响。在试验一中,256只AA肉仔鸡随机分配到4个处理组,每组8个重复,每个重复8只鸡,各处理MgAsp的添加量分别为0%、0.3%、0.6%、0.9%;在试验二中,试验分4个处理组, 分别在第6、5、4周开始使用加镁日粮(MgAsp的添加水平为0.9%),以不添加MgAsp的日粮作为对照。试验一结果表明,肉仔鸡胸肌的pH随MgAsp添加量的增加成二次性的提高(P<0.01),胸肌的TBARS值随MgAsp添加量的增加呈线性降低(P<0.01),日粮中添加镁显著提高肌肉匀浆液中的LDH活性(P<0.05)。随着日粮中MgAsp添加量的增加,肌肉的亮值增加(P<0.05),蓝值下降(P<0.05);试验二结果表明,随着MgAsp添加时间的延长,除胸肌的TBARS外,肉品质的指标并未进一步改善,而且胸肌的pH和蓝值呈下降趋势。日粮添加MgAsp可以改善肉仔鸡胸肌品质;短时间(1周)的添加MgAsp对改善肉仔鸡胸肌品质是有效的。  相似文献

为了解江泉黑猪的产肉和肉质特性,本试验选取在相同条件下饲养的100 kg左右的江泉黑猪阉公猪、母猪和杜长大三元杂交猪各10头按照相关规定进行屠宰和肉品质测定。对两种猪胴体指标(胴体重、胴体长、眼肌面积、背膘厚等)、肉质的物理指标(pH、肉色、大理石纹、滴水损失等)、常规化学指标(粗蛋白质、肌内脂肪、水分、灰分含量等)及江泉黑猪氨基酸含量进行了测定。结果表明,与杜长大三元杂交猪相比,江泉黑猪胴体瘦肉率较低,眼肌面积降低了30%左右(P<0.05),而胴体背膘厚较高(P<0.05)。江泉黑猪在肉色、大理石纹、滴水损失、失水率、烹饪损失和肌内脂肪含量等指标上均显著优于杜长大三元杂交猪(P<0.05),其中滴水损失、失水率和烹饪损失分别降低了约4.0%、3.1%和2.7%,肌内脂肪含量提高了约150.0%。由此可见,江泉黑猪在瘦肉产量上低于杜长大三元杂交猪,但在保水性、肌内脂肪含量、肉色、大理石纹等肉质指标上明显优于杜长大三元杂交猪,可为消费者提供品质优良的猪肉。  相似文献

This study was conducted to determine the effect of dietary carnosine (β‐alanyl‐l ‐histidine) supplementation on antioxidant capacity and meat quality of pigs. 72 pigs approximately 60 kg were fed a corn‐ and soybean meal‐based diet supplemented with 0, 25, 50 or 100 mg carnosine per kg diet for 8 weeks. Carnosine supplementation did not affect growth performance and carcass traits of pigs. However, the addition of 100 mg carnosine per kg diet increased pH value of muscle at 45 min, 24 h and 48 h postmortem. It also decreased drip loss at 48 h postmortem and increased redness value of muscle at 45 min postmortem (p < 0.05). The addition of 100 mg carnosine per kg diet enhanced glycogen concentration and Ca‐ATPase activity at 24 and 48 h postmortem, and reduced malondialdehyde and carbonyl protein complexes concentrations in muscle at 24 h postmortem (p < 0.05). The addition of 100 mg carnosine per kg diet increased glutathione peroxidase (GSH‐Px), superoxide dismutase (SOD) and catalase (CAT) activities in plasma, liver or muscle, as well as SOD and GSH‐Px genes expression in muscle (p < 0.05). Taken together, these findings indicate that carnosine supplementation improves antioxidant capacity and meat quality of pigs.  相似文献

研究比较了天门冬氨酸镁和氧化镁对肉仔鸡镁营养状态及肝脏和脾脏等组织抗氧化酶能力的影响。将252只1日龄的AA肉仔鸡随机分为7个处理组,每个处理6个重复,每个重复6只鸡。天门冬氨酸镁和氧化镁的添加水平为0.9、1.8、2.7g/kg日粮,基础日粮组作为不添加镁的对照组。日粮中添加镁能显著提高血清、肝脏和脾脏中的镁浓度(P<0.01),天门冬氨酸镁比氧化镁更能有效地提高血清和肝脏中的镁含量(P<0.01)。肝脏过氧化氢酶(CAT)的活性,随天门冬氨酸镁添加量的增加线性增加(P<0.01),随氧化镁添加量的增加呈二次曲线增加(P<0.05)。天门冬氨酸镁比氧化镁更有效地增强肝脏中CAT的活性(P<0.01)。脾脏CAT的活性随天门冬氨酸镁(P<0.05)或氧化镁(P<0.01)添加量的增加线性增加。肝脏(P<0.05)和脾脏(P<0.01)丙二醛MDA的浓度随氧化镁或天门冬氨酸镁添加量的增加线性降低。天门冬氨酸镁比氧化镁更有效地降低肝脏中的MDA浓度(P<0.01)。结果表明:日粮中添加镁能显著改善肉仔鸡各种组织中镁的含量,并能提高肝脏和脾脏等组织中抗氧化酶的活性,降低脂质过氧化水平。  相似文献

Crossbred "heavy" pigs (average weight 120 kg, slaughter weight above 160 kg) were supplemented with all-rac-alpha-tocopheryl acetate during the last 60 d of late finishing at doses of 25 (control), 50, 100, 200, or 300 mg/kg of diet. At the end of this period, the pigs were slaughtered. Carcass characteristics and the meat quality of pork chops from longissimus muscle (LM) at the last lumbar vertebra were evaluated on eight barrows from each dosage group. Alpha-tocopherol levels were determined in plasma during supplementation and in LM muscle after slaughter. Thiobarbituric acid reactive substances (TBARS) and drip loss were also evaluated in meat. Plasma alpha-tocopherol levels increased (P < .005) during supplementation in treated animals compared to controls, with a peak at 40 d. Alpha-tocopherol levels were higher (P < .05) in LM from pigs treated with 300 mg/kg than in controls (8.4 vs 5.6 microg/g). Dressing percentages correlated (P < .05) with the ratio of plasma alpha-tocopherol levels to the sum of cholesterol and triglycerides. Inhibition of TBARS during storage was related (P < .005) to vitamin E supplementation level, but drip losses in chops were not related to supplementation levels. We concluded that dietary vitamin E supplementation to heavy pigs during the last 60 d of finishing improves dressing percentage, reduces lipid oxidation, and increases the alpha-tocopherol concentration of tissues.  相似文献

This study investigated the effects of supplemental Mg, Trp, vitamin C, vitamin E, and herbs on stress responses, skin lesions, and meat quality of slaughter pigs (106.0 +/- 8.6 kg of BW). These 5 supplements were tested in 4 similar experiments. In Exp. 1, 2 treatments were tested: 1) control treatment without supplementation, and 2) supplementation of an herbal product (2.5 g/L of drinking water for 2 d). Eighty-eight pigs per treatment were involved, of which 40 were selected for meat quality measurements (over 4 replicates). The experimental design of Exp. 2 and 3 was the same as Exp. 1, except that in Exp. 2 Mg (3 g/L of drinking water for 2 d) was supplemented and in Exp. 3 Trp (6 g/kg of feed, as-fed basis) was supplemented. In Exp. 4, 3 treatments were tested: 1) control treatment without supplementation, 2) supplementation of vitamin C (300 mg/kg of feed for 21 d, as-fed basis), and 3) supplementation of vitamin E (150 mg/kg of feed for 21 d, as-fed basis). In Exp. 4, 66 pigs per treatment were used, of which 42 were evaluated for meat quality (over 6 replicates). Pigs supplemented with vitamin E ate less than control (P = 0.03) or vitamin C-supplemented pigs (P = 0.03). Pigs were transported to a commercial slaughterhouse and were slaughtered after a lairage period. Blood sampling at slaughter revealed no differences between the control and supplemented pigs in plasma cortisol, glucose, lactate, or creatine kinase concentrations. Pigs provided with Mg (P = 0.002) or Trp (P = 0.04) had lower plasma NEFA concentrations than control pigs, and pigs supplemented with vitamin C had greater concentrations than the control (P = 0.03) or vitamin E-supplemented pigs (P = 0.01). Supplementation of the herbal product increased the frequency of pigs with shoulder (P = 0.05) and loin lesions (P = 0.03), whereas Mg lowered the incidence of loin lesions (P = 0.01). Measurements of pH and temperature in the LM and biceps femoris 45 min postmortem revealed no differences among treatments, and no influence of treatments on LM pH, electrical conductivity, and water holding capacity was observed 48 h postmortem. Compared with the control loins, loins of pigs supplemented with vitamin C (Japanese color scale, L*, and a* value; P < 0.05) or vitamin E (Japanese color scale and a* value; P < 0.03) were redder and less pale, and the loin of vitamin E-supplemented pigs was more yellow (b* value; P = 0.04). Generally, Mg could lower loin damage, whereas vitamin C and vitamin E supplementation resulted in a color improvement of the loin.  相似文献

To further understand the germplasm characteristics of Jiangquan Black pig,100 kg Jiangquan Black pigs (10 barrows, 10 sows) and 10 Duroc×Landrace×Yorkshire (DLY) pigs under the same conditions were randomly selected to analyse the slaughter performance and meat quality according to related rules. After slaughtered,the carcass index (carcass weight, loin muscle area, carcass length and backfat thickness etc), meat quality physical indicators (pH, meat color, marbling, drip loss etc), gerneral chemical index (the contents of crude protein, intramuscular fat, moisture and ash etc) and the proportion of amino acids in Jiangquan Black pig were analyzed. The results showed that, Jiangquan Black pig carcass lean meat rate was relatively low, the loin muscle area was reduced by about 30% (P<0.05) compared with DLY pig, while the backfat thickness was higher than that of DLY pig (P<0.05). The meat color, marbling, drip loss, cooking loss, water loss rate index and intramuscular fat content of Jiangquan Black pig were significantly better than that of DLY pigs (P<0.05), the rate of water loss and drip loss and cooking loss were decreased by 4.0%, 3.1% and 2.7%, intramuscular fat content increased by 150.0%. Therefore, The lean yield of Jiangquan Black pig was less than DLY pig, but water retention property, intramuscular fat content, meat color, marbling, meat quality indexes were significantly better than that of DLY pig. In conclusion, Jiangquan Black pig could provide good quality pork for consumers.  相似文献
