Our report shows the calcium ion diffusion process through the different parts of maize kernels (pericarp, endosperm, and germ) during the traditional nixtamalization process as a function of steeping time (t) 0–24 hr. The cooking step of the nixtamalization process used 3 kg of maize kernels in 6L of water and 2% calcium hydroxide (w/w). The cooking temperature was 92°C for 40 min. The calcium content of the samples was measured using atomic absorption spectroscopy. We found that the whole instant corn flour, pericarp, endosperm, and germ, had a nonlinear relationship to steeping time, showing a local maximum at 9 hr. Analysis of the different parts of the nixtamalized kernels showed that in short steeping times (0–5 hr) calcium diffusion took place mainly in the pericarp. Calcium diffusion in the endosperm and germ occurred gradually over longer steeping times. However, the physical state of the kernels (broken kernels) accelerated the diffusion process. Calcium diffusion occurred first in the pericarp, followed by the endosperm and germ. Immediately after cooking (t = 0 hr), we found a 1.148% calcium content in the pericarp, 0.007% in the germ, and 0.028% in the endosperm. After 24 hr of steeping, the calcium contents were 2.714% in the pericarp, 0.776% in the germ, and 0.181% in the endosperm. In another study, the calcium content in the endosperm was measured by first separating the 10% from the outermost, followed by another 10% from the next endosperm tissue, and concluding with the remaining 80%. Calcium ions were present mainly in the outermost layers of the endosperm. The damaged kernels steeped for more than 5 hr showed greater calcium concentrations than the undamaged counterparts.  相似文献

The entry of calcium ions from the nixtamalization solution into maize kernels over time was followed in model experiments using radiolabeled calcium ions, with autoradiographic evaluation of the kernels after different cooking and steeping times. Calcium ions immediately entered the pericarp and were rapidly fixed at the outer boundary of the endosperm, especially at the external surface of the germ. Entry of calcium into the endosperm occurred gradually after long steeping times, except in the case of broken kernels, for which massive invasion by calcium was observed. After extended steeping times, a moderate amount of calcium‐45 was evident in the germ. Specific perforation of the outer layers of the grains provided a defined route of facilitated entry of calcium into the endosperm. No fundamental difference with respect to penetrability by calcium ion was seen in a comparison between flint‐type grains and grains containing only floury endosperm.  相似文献

In this report, the effect of temperature on the calcium content of Quality Protein Maize (QPM H-368C) during the nixtamalization process as a function of the steeping time for three cooking temperatures (72, 82, and 92°C) is presented. Also, for the first time, we report in physico-chemical terms the end of the cooking stage during the nixtamalization process that was established when the moisture content in corn kernels reached a value of 36% (w/w) with a lime concentration of 1% (w/v), independent of the cooking temperature. Atomic absorption spectroscopy was used to determine the calcium concentration in the whole kernel and in its different anatomical components (pericarp, endosperm, and germ) as well as in 10% of the outermost layers, the next 10%, and the remaining 80% of the endosperm as a function of the steeping time. It was found that if the cooking temperature increases, the calcium content increases also. For steeping times in the range of 5–7 hr, a relative maximum was found in the calcium contents of 0.24, 0.21, and 0.18% (w/w) in QPM H-368 flours at 92, 82, and 72°C, respectively. Calcium was found in the most external layers in the endosperm and minimum diffusion occurs in the internal 80%. Phosphorous was measured by using UV spectroscopy and the results showed that it remains constant at 0.24% throughout the process. Scanning electron microscopy analysis was used to explain the calcium ion diffusion in the kernel. The physical changes in the pericarp govern the calcium diffusion process.  相似文献

Naturally aflatoxin-contaminated corn (Zea mays L.) was made into tortillas, tortilla chips, and corn chips by the traditional and commercial alkaline cooking processes. The traditional nixtamalization (alkaline-cooking) process involved cooking and steeping the corn, whereas the commercial nixtamalization process only steeps the corn in a hot alkaline solution (initially boiling). A pilot plant that includes the cooker, stone grinder, celorio cutter, and oven was used for the experiments. The traditional process eliminated 51.7, 84.5, and 78.8% of the aflatoxins content in tortilla, tortilla chips, and corn chips, respectively. The commercial process was less effective: it removed 29.5, 71.2, and 71.2 of the aflatoxin in the same products. Intermediate and final products did not reach a high enough pH to allow permanent aflatoxin reduction during thermal processing. The cooking or steeping liquor (nejayote) is the only component of the system with a sufficiently high pH (10.2-10.7) to allow modification and detoxification of aflatoxins present in the corn grain. The importance of removal of tip, pericarp, and germ during nixtamalization for aflatoxin reduction in tortilla is evident.  相似文献

Nixtamalization is the primary step in the production of products such as corn chips, tortilla chips, tacos, and corn tortillas. The process involves cooking and steeping of corn in lime and excess water to produce nixtamal. Commercial nixtamalization results in 5–14% corn solids loss in the liquid generated during cooking‐steeping and washing. Loss of corn solids not only causes economic loss to corn processors but also creates costly waste and wastewater disposal problems. Empirical results show that, besides corn kernel characteristics, processing parameters are critical variables influencing corn solids loss and effluent pH during nixtamalization. This work was designed to systematically study the impact of processing parameters on corn dry matter loss and effluent pH generated during nixtamalization by using response surface methodology. Corn cooking temperature and lime concentration were more critical factors influencing corn solid loss than were cooking and steeping time. In the ranges studied, total dry matter loss increased only up to ≈8 hr of steeping and then leveled off. By optimizing the nixtamalization protocol, effluent dry matter loss can be minimized.  相似文献

Using a continuous decorticating machine, white dent corn was efficiently separated, after brief steeping in water, into two fractions: the first (12.5%) consisting mainly of pericarp, germ, and tip cap (PGT); the second (87.5%) consisting of endosperm. Nixtamalization of the maize fractions in the presence of 0.6% (w/w) lime caused an increase in the hot‐paste viscosity at 90°C, while nixtamalization of PGT at lime inputs <0.6% (w/w) resulted in decreased viscosity. Three domains were found for the viscosity of nixtamalized endosperm at 90°C: lower concentrations of lime (< 0.15%, w/w) resulted in lower viscosity values; increased lime (0.15% – <0.3%, w/w) increased the viscosity values; and a lime concentration of 0.3% (w/w) resulted in a lower viscosity value. The response variables (water absorption index, water solubility index, initial viscosity, and viscosity at 90°C for nixtamalized PGT, and compression force and compression area of tortillas) indicated that the mathematical models fit the experimental data and the variance of the models was highly significant. Tortillas of good functional characteristics similar to tortillas produced by the traditional process were obtained when 5% nixtamalized fractions of PGT were blended with 95% nixtamalized endosperm.  相似文献

Phytic acid (myo‐inositol‐1,2,3,4,5,6‐hexakisphosphate) is the most abundant form of phosphorus (P) in cereal grains and is important to grain nutritional quality. In mature rice (Oryza sativa L.) grains, the bulk of phytic acid P is found in the germ and aleurone layer, deposited primarily as a mixed K/Mg salt. Phosphorus components and minerals were measured in whole grain produced by either the rice (Oryza sativa L.) cv. Kaybonnet (the nonmutant control) or the low phytic acid 1‐1 (lpa1‐1) mutant, and in these grains when milled to different degrees (10, 12, 17, 20, 22, and 25%, w/w). Phytic acid P is reduced by 42–45% in lpa1‐1 whole grain as compared with Kaybonnet, but these whole grains had similar levels of total P, Ca, Fe, K, Mg, Mn, and Zn. In both genotypes, the concentration of phytic acid P, total P, Ca, Fe, K, Mg, and Mn in the milled products was reduced by 60–90%, as compared with whole grain. However, a trend was observed for higher (25–40%) total P, K, and Mg concentrations in lpa1‐1 milled products as compared with Kaybonnet milled products. The reduction in whole grain phytic acid P in rice lpa1‐1 is accompanied by a 5‐ to 10‐fold increase in grain inorganic P, and this increase was observed in both whole grain and milled products. Phytic acid P was also reduced by 45% in bran obtained from lpa1‐1 grain, and this was accompanied by a 10‐fold increase in inorganic P. Milling had no apparent effect on Zn concentration. Therefore, while the block in the accumulation of phytic acid in lpa1‐1 seed has little effect on whole grain total P and mineral concentration, it greatly alters the chemistry of these seed constituents, and to a lesser but detectable extent, alters their distribution between germ, central endosperm, and aleurone. These studies suggest that development of a low phytate rice might improve the nutritional quality of whole grain, milled rice and the bran produced during milling.  相似文献

Starch yield was significantly affected by all three main unit operations in alkali wet‐milling (debranning, roller milling, and steeping). The conditions for the three unit operations were studied using a single hybrid. Studies on debranning showed that optimal separation between pericarp and corn endosperm was obtained when corn was soaked in a 1.5–2% NaOH solution at 85°C for 5 min. Passing debranned corn through smooth roller mill once or twice did not affect the product yields, but passing the corn through the roller mill three times decreased the germ yield because of a large amount of broken germ. A 62% higher processing rate could be achieved when passing corn through the mill twice than by passing it through the mill once. The gap should be set at 2.0 mm when passing corn through the mill once, and it should be set at 3.5 mm for the first pass and 2.0 mm for the second pass when passing corn through the mill twice. Starch yield was more sensitive to NaOH concentration and steep temperature than to steep time. The highest starch yield was obtained when steeping corn in 0.5% NaOH for 1 hr at 45°C.  相似文献

Nixtamalization is the process of steeping dried corn in hot water with calcium hydroxide (lime) with subsequent removal of all or most of the pericarp through washing. The resulting product is called nixtamal. Approximately 60% of corn tortillas in Mexico are produced from nixtamal, with the remainder prepared from nixtamalized corn flour. Nixtamal was fortified with micronutrient premix containing iron, zinc, folic acid, niacin, riboflavin, and thiamin. Premix composition followed a proposed Mexican regulation for corn flour fortification, adjusted for moisture. Effects of premix on masa adhesiveness, hardness, and pH, as well as tortilla sensory properties, stretchability, rollability, and color were measured. Micronutrient levels were tested in the dry corn, nixtamal, masa, and tortillas. There were no significant differences in masa texture or pH, tortilla rollability, or consumer acceptance of tortillas when comparing unfortified control and fortified treatments. Added thiamin was almost entirely degraded during processing. Folic acid and riboflavin decreased 26 and 45%, respectively, through the masa‐tortilla manufacturing process. Niacin showed no significant loss. Despite processing losses, fortification resulted in significant nutrient increases compared with control tortillas. Folic acid increased 974%, riboflavin increased 300%, niacin increased 141%, iron increased 156%, and zinc increased 153% in fortified tortillas.  相似文献

The present investigation provides a new method for the nixtamalization process wherein corn endosperm fractions (corn meal) are treated in an alkaline solution that yields quality masa or instant masa flour like traditional nixtamalization process (alkaline cooking of corn with lime). The objective of this work was to determine the best combination of nixtamalization process variables for producing nixtamalized instant flour (NIF) from corn meal. Nixtamalization conditions were selected from factorial combinations of process variables including nixtamalization time (NT 8–22 min) and cooking temperature (CT 78–88°C). A central composite rotable experimental design was chosen. Lime concentration was 1% (10 g of Ca(OH)2/L of water) and ratio of corn meal to cooking medium was 1:4. At the end of each cooking, each treatment was steeped for 5 hr at room temperature (25°C). Nixtamalized corn meal was dried (55°C/12 hr) and milled to pass through 80 U.S. mesh to obtain NIF. Response surface methodology (RSM) was applied as an optimization technique over four response variables: masa firmness (MF), masa adhesiveness (MA), tortilla cutting force (CF), and tortilla tensile strength (TS). Predictive models for response variables were developed as a function of process variables. Conventional graphic methods were applied to obtain response variable values similar to the control (MASECA). Contour plots of each response variable applied superposition surface methodology to obtain a contour plot for observation and for selecting the best combination of nixtamalization time (NT 15 min) and cooking temperature (CT 83°C) for producing an optimized NIF from corn meal. Values of MF, MA, CF, and TS obtained from the predictive models were compared with those derived from experimental tests; a close agreement (coefficient of variance < 10%) between both values was observed.  相似文献

The phenolic acid composition and concentration of four manually separated fractions (pericarp, aleurone layer, germ, and endosperm fractions) as well as whole grains of yellow corn, wheat, barley, and oats were analyzed by HPLC‐MS/MS following microwave‐assisted alkaline aqueous extraction. Phenolic acid compositions in whole grains and their fractions were similar, with minor differences among the grain fractions. Significant differences (P < 0.05), however, were observed in phenolic acid concentrations among cereal types, within cereal varieties, and among grain fractions, with yellow corn exhibiting the highest values. The concentrations of p‐coumaric and syringic acid in the pericarp were 10‐ to 15‐fold and 6‐ to 10‐fold higher, respectively, in yellow corn than in wheat, barley, and oats. In the aleurone layer, sinapic and vanillic acids in yellow corn were about 8‐ and 30‐fold more than in wheat. The germ fraction of wheat had 1.8 times more syringic acid than yellow corn germ. Grain fractions, excluding endosperm, had enhanced levels of phenolic acids compared with whole grain. Sinapic acid was more concentrated in the pericarp and germ of wheat, whereas isoferulic acid was concentrated in the germ of purple barley. Syringic and vanillic acids were concentrated in the pericarp and sinapic acid in the aleurone layer of yellow corn. These findings are important in understanding the composition and distribution of phenolic acids, and they act as a guide in identification of grain fractions for use as food ingredients. In addition, yellow corn fractions (aleurone and pericarp) may be potential alternative phenolic‐rich functional food ingredients in grain‐based food products.  相似文献

Broken corn created by grounding sound corn kernels was added back at levels of 0, 4, 8, 12, or 16%, by weight, to whole kernels of three corresponding hybrids: FR27 × FRMo17 (a soft endosperm corn), FR618 × FR600 (amedium‐hard endosperm corn), and FR618 × LH123 (a hard endosperm corn). The samples had been dried from 28% moisture content to 15% moisture content either by using ambient air at ≈25°C or at 110°C. Samples were steeped for 36 hr at 52°C in 0.15% sulfur dioxide and 0.5% lactic acid steeping solution. The steepwater characteristics, such as water absorption, solids and protein content in the steepwater, and steepwater pH, were measured by periodic sampling and analyzed. Broken corn level has a significant effect on the amount of solids released during steeping and steepwater protein content for all samples. Both steepwater solids and protein content increased linearly as broken corn content increased. Corn drying temperature, kernel hardness, and interactions between drying temperature and kernel hardness has a significant effect on steepwater solids and protein content and steepwater pH in both broken and unbroken corn. Corn dried at low temperature released more soluble solids and protein into the steepwater than corn dried at high temperature. Soft endosperm and medium‐hard endosperm corn released more soluble solids and protein into the steepwater than hard endosperm corn. Soft endosperm corn resulted in a higher steepwater pH than medium‐hard and hard endosperm corn. No significant effect of broken corn content on final moisture content of steeped corn and steepwater pH was observed.  相似文献

Micronutrient deficiency is one of the most common and widespread nutritional issues. Among the factors mitigating the bioavailability of Zn (zinc) and Fe (iron), phytic acid plays a key role; therefore, in order to scrutinize genetic alterations ?related to micronutrient and phytate contents, we examined the concentrations of zinc, iron, and phytic acid, as well as its mole ratio to ?zinc in various wheat species grown in two planting seasons. The concentrations of phytic acid and its mole ratio to zinc were 0.61?1.55 g kg?1 dry weight and 1.88?4.17 for autumn, and 0.97?2.02 g kg?1 dry weight and 2.10?4.05 for spring planting. There was a significant discrepancy among wheat species; tritipyrum had the highest concentration of iron, phytic acid and its mole ratio to zinc, and T. monococcum and T. aestivum recorded reasonable zinc bioavailability. Correlation studies between grain phytic acid concentrations and other measured traits revealed various relationships, denoting an irrefutable impact of planting season and wheat ploidy levels on modification of wheat genotypes. The characters contributing more positively with principal component (PC) 1 were Zn and Fe under spring planting and Fe under autumn planting. Spike number per square meter, biological yield and grain yield in spring cultivation, and grain zinc concentration in autumn cultivation were positively correlated to principal component (PC) 2. Given that the concentration of Fe and Zn in all the studied genotypes is relatively high and due to the existence of other desirable agronomic traits, this study believes that it could possibly enhance the applicability of some of these genotypes for breeding purposes.  相似文献

Four trichothecene-producing strains of Fusarium graminearum were grown on three maize grain fractions, whole grain, degermed grain, and the germ, to determine the effect of natural substrates on mycotoxin production. Monitoring the ergosterol content after 25 days of incubation indicated that fungal growth on all grain fractions was comparable. Trichothecene (TCT) production was highest on degermed grain, less on whole grain, and very low or nondetectable on the germ; similar results were found with four different strains. It was concluded that inhibitor(s) of TCT biosynthesis were present in maize germ. The presence of phenolic compounds was investigated in the different fractions. The hydroxamate 4-acetylbenzoxazolin-2-one (4-ABOA), a known inhibitor of mycotoxin production, was found in the degermed and whole grain fractions but not in the germ. Therefore, the TCT inhibition observed on the maize germ fraction used in our study is clearly not linked to 4-ABOA. Other soluble phenolic compounds were found at a much higher concentration in the germ than in the two other fractions. The inhibition property of the soluble ester-bound extracts was tested in liquid culture. A possible role for these compounds is discussed.  相似文献

The efficiency of fractionating cereal grains (e.g., dry corn milling) can be evaluated and monitored by quantifying the proportions of seed tissues in each of the recovered fractions. The quantities of individual tissues are typically estimated using indirect methods such as quantifying fiber or ash to indicate pericarp and tip cap contents, and oil to indicate germ content. More direct and reliable methods are possible with tissue‐specific markers. We used two transgenic maize lines, one containing the fluorescent protein green fluorescent protein (GFP) variant S65T expressed in endosperm, and the other containing GFP expressed in germ to determine the fate of each tissue in the dry‐milling fractionation process. The two lines were dry‐milled to produce three fractions (bran‐, endosperm‐, and germ‐rich fractions) and GFP fluorescence was quantified in each fraction to estimate the tissue composition. Using a simplified laboratory dry‐milling procedure and our GFP‐containing grain, we determined that the endosperm‐rich fraction contained 4% germ tissue, the germ‐rich fraction contained 28% germ, 20% endosperm, and 52% nonendosperm and nonembryo tissues, and the bran‐rich fraction contained 44% endosperm, 13% germ, and 43% nonendosperm and nonembryo tissues. GFP‐containing grain can be used to optimize existing fractionation methods and to develop improved processing strategies.  相似文献

土施和喷施锌肥对冬小麦子粒锌含量及生物有效性的影响   总被引:17,自引:5,他引:12  
为揭示潜在性缺锌土壤上不同施锌方式对小麦子粒锌含量及其生物有效性的影响,选用5个冬小麦品种进行了土施和喷施锌肥的田间裂区试验。结果表明,供试土壤条件下,不同施锌方式对小麦产量均无明显影响,但是在一定施锌方式下小麦子粒锌含量大幅度提高。与对照相比,土施、喷施及土施+喷施锌肥提高小麦子粒锌含量幅度分别为-6.1%、64%和83%,提高小麦子粒锌携出量幅度分别为-3.6%、69%和83%。3个施锌处理降低子粒中植酸含量的幅度分别为-2.4%、7.2%和1.5%,降低植酸与锌摩尔比的幅度分别为-25%、41%和44%,且不同品种之间也存在一定差异;虽然植酸与锌的摩尔比有所下降,但仍高于20。此外,单独土施锌肥虽可大幅度提高耕层土壤有效锌含量,但对子粒锌含量及生物有效性的影响很小。总之,在小麦生长后期喷施锌肥是提高潜在性缺锌土壤上小麦子粒锌含量和生物有效性较为经济的方式,对改善小麦锌营养品质有较好作用。  相似文献

In the milling process, efficient separation between the starchy endosperm and the other grain tissues is a key parameter estimated by ash measurement. Because this separation occurs near the aleurone layer interface, better understanding of this tissue fractionation is critical for a better analysis of the wheat milling behavior. Samples from hard and soft common wheat cultivars that had the same protein content were processed on a pilot mill, and whole grain meals or flour streams were analyzed for ash content. The para‐coumaric acid (p‐CA) and phytic acid flour contents were compared with ash measurement and used as markers of the aleurone cell walls or aleurone cell content, respectively. A greater amount of phytic acid in hard wheat flour compared with soft wheat flour was found and reveals a distinct milling behavior between those wheat classes, mainly at the breaking step. Therefore simple ash content measurement is not sufficient to analyze flour purity. At the reduction stage, quantity of phytic acid increases with the other markers and may result from the overall mechanical resistance of the aleurone tissue. As a consequence, wheat hardness not only determines grain milling behavior but also affects flour composition.  相似文献

Studies were undertaken to determine the fate of the mycotoxins, fumonisins, during the process of alkaline cooking (nixtamalization), using normal-appearing corn that was naturally contaminated with fumonisin B(1) (FB(1)) at 8.79 ppm. Corn was processed into tortillas, starting with raw corn that was cooked with lime and allowed to steep overnight; the steeped corn (nixtamal) was washed and ground into masa, which was used to make tortillas. Calculations to determine how much of the original fumonisin remained in the finished products took into consideration that FB(1) will be converted to hydrolyzed fumonisin B(1) (HFB(1)) by the process of alkaline cooking. All fractions, including steeping and washing water, were weighed, and percent moisture and fumonisin content were determined. Tortillas contained approximately 0.50 ppm of FB(1), plus 0.36 ppm of HFB(1), which represented 18.5% of the initial FB(1) concentration. Three-fourths of the original amount of fumonisin was present in the liquid fractions, primarily as HFB(1). Nixtamalization significantly reduced the amount of fumonisin in maize.  相似文献

A laboratory nixtamalization process was developed to imitate larger scale cooking/steeping conditions. Corn (45 kg) was cooked in a pilot plant gas‐fired cook/steep tank and temperature was monitored every 30 sec. Cooling and heating rates were mimicked in the laboratory using a digital temperature programmable hot plate that adjusted grain‐water‐lime temperature changes at a specified rate. A Response Surface Central Composite Design was used to model pasting and thermal properties of nixtamal and masa as a function of cooking temperature (86–96°C), cooking time (20–40 min), and steeping time (3–11.77 hr). Nixtamal and masa moisture, dry matter loss, nixtamal and masa RVA peak temperature, shear thinning, nixtamal peak viscosity, masa final viscosity, nixtamal and masa DSC enthalpy peak and end temperatures, and nixtamal onset temperature were explained by the same regression terms for results obtained using both processes conditions. The intercept and slopes of the fitted models for the pilot plant and laboratory responses were not significantly different (P < 0.05). The laboratory method can be used to mimic larger scale processing over a wide range of nixtamalization conditions.  相似文献

The effect of adding lactic acid and sulfur dioxide at different times from the start of batch steeping on corn starch yields was studied. Five commercial hybrids were steeped with 0.5% lactic acid or 0.2% sulfur dioxide added over the first 15 hr of steeping and wet-milled following a 100-g corn wet-milling procedure. No significant differences were observed in starch yields when lactic acid was added to the steep solution (SO2 and water) from 0 hr (start of steeping) to 15 hr. Addition of SO2 to the steep solution (lactic acid and water) resulted in significantly higher average starch yields when SO2 was added between 5 and 15 hr compared with addition at 0 hr (SO2 and lactic acid for full 24 hr of steeping). Based on the results of the first experiment, a second experiment was done in which one of five original hybrids was steeped for 24 hr, during which lactic acid or SO2 was added until 23.9 hr (i.e., 5 min before milling) after the start of steeping. Similar results were found in the second experiment. Residual protein in starch samples did not exceed 0.85%. Steepwater protein content decreased with delays (16–20 hr) in adding either chemical to the steep solution. A significant effect on starch pasting properties of chemicals and duration of chemicals in steep-water was observed. Testing these findings using a larger scale (1,000 g) corn wet-milling procedure produced results similar to those obtained with the 100-g corn wet-milling procedure.  相似文献
