Three promising new improved lines of lima beans (Tpl 1B, Tpl 7A and Tpl 175A) were evaluated for physicochemical properties and cooking quality. The beans varied in seed dimensions and weights with Tpl 1B and Tpl 7A having smaller seed volume than Tpl 175A. Seed coat percentages, leached solids and swelling capacities were within a range of 10.2–19.6% (w/w), 0.44–0.92 g/100 g and 94.0–121.0 g/100 g dry bean, respectively. Cooking times varied between 62 and 81 min without soaking and were reduced by about 34%following a presoaking treatment in water for 12 h at room temperature (28 ± 1 °C). Small seeds absorbed higher amounts of water during soaking and required more cooking time than larger seeds. No significant (p>0.05) difference in cooked texture was found between unsoaked beans cooked for 50 min and soaked beans cooked for 30 min,suggesting that cooking times and cooked texture for all lines were improved through soaking.  相似文献

Protein concentrates and starches were prepared by a wet extraction process from five dry bean (Phaseolus vulgaris L.) cultivars. The protein contents ranged from 69.7–76.4%. Concentrates prepared from dehulled beans under similar conditions had higher protein contents (80.6–87.9%). Each additional washing of the concentrates with distilled water increased their protein content. However, the protein recovery progressively decreased. The yield of starch ranged from 48.0–51.1% of the starting material. The solubility of bean proteins was minimal at pH 4.0, and under alkaline conditions, it was influenced by the tannin contents of the concentrates. Protein concentrates had lower trypsin, chymotrypsin, and amylase inhibitory activities as well as lower phytic acid and tannin contents compared to whole bean flours.  相似文献

The purpose of this study was to determine the effect of bean polyphenolics on bean protein digestibility in humans. Steam pressure cooking decreased tannic acid in beans by: 38.2 (white), 23.9 (red), 38.5 (white:black mixture, 50:50), 20.5 (Ipala black) and 44.4% (Jalpatagua black). The reduction in catechin was: 57.5, 97.6, 83.0, 78.7 and 88.4%, respectively. The content of tannic acid in dried cooked beans was: 284.9 in white, 834.5 in red, 620.2 in the white:black mixture, 1,021 in Ipala black and 1,009 mg/100 g in the Jalpatagua black bean. These percentages correlate significantly with fecal nitrogen (r=0.29, p<0.05). Catechin of the dried cooked beans was 7.5 in white, 27.4 in red, 25.4 in the white:black mixture (50:50), and 60.1 and 55.5 mg/100 g in each of the black cultivars, and correlated significantly with fecal nitrogen (r=0.34, p<0.01), absorbed nitrogen (r=–0.37, p<0.01) and protein digestibility (r=–0.35, p<0.01). It was concluded that one of the factors that reduces bean protein digestibility is the polyphenlic compound.  相似文献

The effect of pretreatment (soaking in sodium salts and blanching) on hydration coefficient (HC), chemical composition, texture, and color of African yam bean (AYB) was investigated. Soaking in water and in salt solutions increased the HC and about 90% of final HC values were attained at 12 and 4 hr of soaking for whole and dehulled beans, respectively. Protein content was slightly increased by soaking and blanching while ash and fat contents were reduced. Generally, a combination of dehulling and wet-processing reduced firmness of the beans more than soaking or blanching of the whole beans. Antioxidant activity was lowest (3260 TE3100 g) in cream-colored beans and highest (16,600 TE/100 g) in brown-colored beans. The tannin contents of unprocessed cream-colored beans and dehulled wet-processed marble variety were not significantly different (p > 0.05). The levels of tannins in the marble variety were reduced by blanching for 40 min (19.2%), soaking for 12 hr (16.0%), dehulling (72.0%), dehulling and blanching (88.8%). The whiteness of bean flours was increased significantly by dehulling, slightly by wet-processing of marble variety, and reduced significantly by wet-processing of cream-colored beans. Koki is a nutritious cowpea-based food product usually processed by steam cooking whipped cowpea (Vigna unguiculata) paste mixed with spices and palm oil. A study was carried out to investigate the effect of the partial replacement of cowpeas (CP) with hard-to-cook (HTC) beans on the chemical, nutritional and sensory characteristics of koki. Towards this objective, two varieties of beans – Phaseolus vulgaris (red kidney beans – RKB and mottled brown beans – MBB), each with the HTC defect, were separately incorporated into cowpea paste in the following Bean:CP ratios 0:100, 20:80, 30:70, 40:60, 50:50, 60:40 and processed into koki. Incorporation of dry HTC beans into cowpeas in the making of koki affected the bulking properties of the uncooked paste, the nutrient composition, essential amino acid content, antinutritional factors, digestibility as well as the sensory attributes of cooked koki. Sensory tests showed that a highly acceptable, nutritious and digestible koki can be processed from cowpeas partially replaced with dry HTC bean paste up to levels of about 40–50% depending on the variety of dry bean used.  相似文献

The nutrient and antinutrient components of tubers from seven cultivars ofDioscorea alata were determined. The average crude protein content ofD. alata tubers was 7.4%. Starch (75.6–84.3%) was the predominant fraction of the tuber dry matter. Significant differences in crude protein and starch contents were observed among cultivars. Vitamin C content of the yam tubers ranged from 13.0 to 24.7 mg/100 g fresh weight. The results showed yams to be reasonably good sources of minerals. Phytic acid contents of the yams were low, with values ranging from 58.6 to 198.0 mg/100 g dry matter. Total oxalate levels in yam tubers were found to be in the range of 486–781 mg/100 g dry matter, but may not constitute a nutritional concern since 50–75% of the oxalates were in the water-soluble form. The overall results are suggestive of the nutritional superiority of yams compared to other tropical root crops.  相似文献

The characteristic of proteins, starch and pectic substances in cotyledons of two bean cultivars varying in cooking time were determined to investigate their possible contribution to bean cooking quality. Both cultivars showed the same enthalpies of starch gelatinization but different protein denaturation enthalpies. The proportion of hot water soluble pectins was higher in Michigan, the cultivar with the lower cooking time, than in Ojo de Cabra, the cultivar with the higher cooking time. These results were not due to differences in pectin methylation or in the ratio of monovalent to divalent cations in the tissue, suggesting that in fresh beans the β-elimination reaction is not the sole or predominant route of thermal pectin degradation. Overall, this study indicates that varietal differences in bean cooking quality may be reflections of the rate of pectin loss during soaking/heating and that the thermal properties of starch and protein fractions seem to have a minor contribution. Researchers involved in this study propose that in fresh beans, the thermal pectin loss results from a two step mechanism: pectin enzymic breakdown during the bean soaking followed by thermal solubilization rather than β-elimination during the bean heating.  相似文献

Out of sixty six faba bean (Vicia faba) cultivars and genotypes grown locally in Egypt and in Syria, the genotype 123 A/45/76 proved to be lowest in its vicine and convicine contents. Furthermore, soaking of this bean variety in 1% acetic acid at 40°C for 48 h resulted in reducing the total vicine and convicine contents of the beans by 90%. Home-made faba beans processing including soaking prior to cooking as in the case of bean cakes resulted in considerable reduction of the vicine and convicine contents by 56 and 34% respectively.  相似文献

The effect of dehulling, soaking and soaking/cooking on sucrose, raffinose and stachyose in mature dry seeds of nine varieties of cowpea (Vigna unguiculata) and one variety of tropical African yam bean (Sphenostylis stenocarpa) were investigated. The results showed a progressive decrease in sucrose, raffinose, and stachyose contents. Soaking for 12 hours and cooking for 30 min eliminated most of the sucrose, raffinose and stachyose. The sugar contents in whole raw cowpea were sucrose 0.73–4.58%, raffinose 0.71–6.86% and stachyose 2.38–3.87%, and for tropical African yam bean sucrose 4.08%, raffinose 1.08% and stachyose 4.14% while the seeds soaked for 12 hours and cooked for 30 min had for cowpea sucrose 0.03–0.81%, raffinose 0.04–0.20% and stachyose 0.12–0.72%, and tropical African yam bean sucrose 0.70%, raffinose 0.40% and stachyose 0.41%.  相似文献

The physical properties of extruded products from three Mexican common bean cultivars were investigated. Common bean cultivars Flor de Mayo, Pinto Villa and Bayo Victoria from the same harvesting season (2006) were used in this work. Beans were milled and the flour was hydrated to 24, 26 and 28 g of water/100 g of dry weight. Two temperatures, 130 degrees C and 165 degrees C at the end of the extruder barrel without die, were experimented. Common bean flour extrudates were evaluated for water absorption index (WAI), water absorption capacity (WAC), oil absorption capacity (OAC), and emulsifying capacity (EC). Flor de Mayo extrudates showed the highest WAC and WAI values. Thus starch from Flor de Mayo beans showed minor restricted water availability. In all cases, the OAC of extruded products was lower than the crude bean flour. The EC for Bayo Victoria flour increased as a consequence of the extrusion process. The EC for Flor de Mayo was higher at lower temperature and lower moisture content than Pinto Villa and Bayo Victoria beans. EC behavior of Pinto Villa was similar to Bayo cultivar. These results indicate that it is possible to produce new extruded products with good physical properties from these common bean cultivars.  相似文献

Two common bean (Phaseolus vulgaris) varieties were seeded in the same location, harvested and cleaned. Three hardening procedures were used (soaking in acetate buffer, pH 4.1 at 37°C for 5 h; storage at 37°C, 100% RH for 28 days; and storage at 31–33°C, 76% RH for 120 days) to have seeds in a hard-to-cook (HTC) state. The adverse effects of HTC condition, in terms of cooking time as assessed by a Mattson bean cooker, were practically eliminated by soaking seeds in salt solutions (1% NaCl+0.75% NaHCO3; and 0.75% NaHCO3) instead of only water. Ultrastructural changes of cotyledon cells from fresh, HTC and softened seeds were observed. Results of this study may be used for the development of a technological procedure to utilize properly HTC beans generated by unefficient storage systems.  相似文献

Water uptake during cooking of ten dry bean (Phaseolus vulgaris L.) varieties was investigated. Water uptake during early stages of cooking was characteristic of the variety. Although the optimal cooking times varied widely (52–85 min), all the beans absorbed similar amounts of water when cooked for their optimal times. Cooking times were significantly correlated with W20 min (r=–0.92) and hardness index (r=0.76) of beans. Most other physical characteristics excepting the surface area of beans were generally unrelated to theW 20 min,W opt, and cooking times. No significant correlation was observed between phytate content and cooking times of beans. On cooking for their respective optimal times, all varieties absorbed nearly 1.5 times their weight of water and attained a moisture content of about 65% (wet basis).  相似文献

Bean cooking broth or liquor is a food preparation that results from cooking beans under a number of circumstances. This preparation is the first bean-derived food provided by mothers to their children as young as two months of age. Because of this, bean cooking plays an important nutritional role that must be evaluated. The present study attempted to evaluate, through a number of experiments, the significance of cultivars, method of cooking — either under atmospheric or vapor pressure — cooking time, salt addition, soaking and grain size on bean broth content. This was established mainly by solid content, and also by protein, ash and tannin content in different experiments.The results indicated that cultivars, but mainly cooking and soaking time, cooking method, and seed size were all important factors in determining brean-broth composition, mainly of total solids. Protein and ash contents were less affected. Prolonged cooking of the bean-broth resulted in a decrease in polyphenolic content. Proximate composition and selected functional properties of four cultivars of bambara groundnut ( Voandezeia subterranea Thoura) were ascertained. Crude protein ranged from 17.5 to 21.1 percent; crude fat 7.3–8.5 percent; total ash 4–5 percent; crude fiber 1.8–2.0 percent; carbohydrate and moisture content for the different cultivars were 53.0–60.8 percent and 7.5–12.3 percent, respectively. The results of functional property determinations indicated that the bulk density ranged from 0.65 to 0.75 g/ml; water binding capacity 2.1–2.9 g/2g sample; oil binding capacity 0.9–1.6 g/2g sample; emulsifying activity 55.-1–60.0 percent and emulsifying stability 10–12 percent. The results show that bambara groundnut has great potential for incorporation into various human foods where it could provide useful plant proteins.  相似文献

Biosynthesis of ascorbic acid in irradiated and unirradiated germinating rapeseed cultivars was studied at ambient room temperature (20–35 °C). Appreciable quantities of ascorbic acid (19.8–24.1 mg/100 g) were detected in the seeds and synthesis of this vitamin increased significantly (three fold) with increasing germination time depending upon rapeseed cultivars (p<0.05). Soaking of seeds in tap water (1:2) for 24 hours resulted in the decrease of the vitamin in each case. Among the radiation treatments (0.05–0.20 kGy), maximum amounts of ascorbic acid were found in 0.10 kGy (342.1 mg/100 g dry weight) and 0.15 kGy (113.8 mg/100 g wet weight) samples after 96 hours of germination. An overall significant linear relation (r=0.96) was observed between vitamin biosynthesis and germination time upto 96 hours in rapeseed.  相似文献

The seeds of three promising advanced lines of soybeans (TGx 923-2EN, TGx 1019-2EN and TGx 1497-1D) which were part of a larger collection evaluated in agronomic field trials in Nigeria were selected for characterization of physicochemical properties, chemical composition, water absorption, cooking time and cooked texture as a function of soaking and cooking. Seed density, leached solids, swelling capacity and seed coat percentage were within a range of 1.15 to 1.26 g per ml, 1.00 to 1.26 g per 100 g, 80.25 to 84.35 g per 100 g and 6.6 to 10.1% w/w of dry beans, respectively. The total polyphenol content of the cream colored beans was similar (0.75 to 0.76 mg/g) but higher than the amount (0.60 mg/g) found in the white beans. Cooking times varied between 71 and 96 min without soaking and were reduced by about 32.0% following a presoaking treatment in water for 12 hours at room temperature (28±1°C). Small seeds absorbed higher amounts of water during soaking and required less cooking time than larger seeds. Unsoaked beans required 40 min of cooking to achieve the same degree of cooked texture as the soaked beans cooked for 20 min, suggesting that cooking times and cooked texture for all lines were improved through soaking.  相似文献

Imazamox plus bentazon has the potential to provide broad spectrum weed control in dry bean (Phaseolus vulgaris L.). Field trials were conducted in Ontario over a two year period (2003 and 2006) to evaluate the effect of imazamox plus bentazon applied post-emergence at 25 + 600 and 50 + 1200 g ai ha−1 on black, brown, cranberry, kidney, otebo, pinto, white and yellow eye beans. Treatments included a non-treated check. All treatments were maintained weed free during the growing season. The eight market classes responded similarly to imazamox plus bentazon. Imazamox plus bentazon applied post-emergence caused less than 4% visible injury at 7, 14 and 28 days after treatment. Imazamox plus bentazon applied post-emergence did not have any effect on plant height, shoot dry weight, seed moisture content and yield of dry bean. Based on these results, imazamox plus bentazon at the proposed maximum use dose can be safely used for weed management in black, brown, cranberry, kidney, otebo, pinto, white and yellow eye bean production in Ontario. Additional research is needed to determine if cultivars within a market class of dry bean differ in their response to imazamox plus bentazon.  相似文献

The phytic acid content of four different varieties of beans under different processing conditions was estimated. It was highest in red kidney (1.86–2.13%) slightly lower in pigeon (1.86–2.03%), white (1.80–1.96%) and black eyed beans (1.15–1.64%). There was no significant change in phytic acid content of beans after soaking at 25°C for 22 hours. However, both soaking and cooking revealed 26–37% loss of phytic acid in all four varieties of beans.The rate of in vitro casein digestibility with and without phytic acid at concentrations found in legumes was determined at pH 8 and 37°C using multienzyme technique. Addition of 5 mg Na-phytate reduced the casein digestibility up to 20% compared to the control. However, only 25% reduction of casein digestibility was observed in the presence of 25 mg of Na-phytate. Higher concentration of Na-phytate had no significant effect on the rate of casein digestibility. Data strongly suggest the formation of protein phytate complex at alkaline pH of small intestine.Part of this work was presented at the XIII International Congress of Nutrition in Brighton, UK in August 1985.  相似文献

Tepary samples were examined for patterns of hydration, dry matter losses during the processes of soaking and cooking, residual hardness in partially cooked samples and heat lability of endogenous proteinaceous antinutritional factors. At 24 °C, teparies imbibed water equivalent to their weight (100% hydration) in 4 h and continued to absorb water rapidly for an additional 4 h before reaching an equilibrium hydration. During the processes of soaking and cooking, materials leached from raw beans represented 7.3 and 13.5% of their dry weight, 4.3 and 12.4% of their protein content, 7.1 and 12.2% of their stored carbohydrate and 22.4 and 33.4% of their mineral levels, respectively. In samples prepared at different cooking times (60, 90, 120, 150, 180 min) and cooking temperatures (80, 85, 90, 95°C), longer times and higher temperatures resulted in greater reductions in residual bean hardness; interactive effects of time and temperature treatments were significant. Residual activity of trypsin and chymotrypsin inhibitors in partially-cooked samples appeared to be negligible. In addition, at least 80% of the original hemaglutinating activity of lectins in raw beans was lost during partial-cooking of samples under all cooking regimes.  相似文献

Soaking three beans cultivars (Phaseolus vulgaris L.: Great Northern, kidney, and pinto) in mixed salt solution (sodium chloride 2.5% + sodium bicarbonate 1.5% + sodium tripolyphosphate 1.0% + sodium carbonate 0.5%) resulted in 80%–85% reduction in cooking time over corresponding controls. Irradiation (-rays) at 500 krads of soaked and dehydrated beans caused a reduction of nearly 50% in cooking time. Water uptake and leaching losses for each treatment during soaking at 22°, 37°, and 45°C were investigated. High temperature (37° and 45°C) and pH (9.0) caused greater water imbibition and total solid loss than at room temperature (22°C). Organoleptic evaluation revealed that quick-cooking Great Northern beans appear to be more acceptable than kidney and pinto beans. Quick-cooking cooked beans had better in vitro protein digestibility than conventionally cooked beans.
