抗菌药通过直接用药或用作饲料添加剂投入养殖业中,用于治疗或预防动物疾病。养殖业不当使用抗菌药,不可避免地造成抗菌药在动物源性食品中残留过量。微生物学法是最早用于抗菌药残留检测的方法,较其他检测方法而言,微生物学法操作简单、成本低、高通量,广泛应用于牛奶、畜禽组织等动物源性食品中抗菌药残留快速筛选检测,为后期的化学分析确证法节约大量成本。文章主要综述了微生物学法的发展历程及微生物学法在牛奶、可食性畜禽组织、鸡蛋、水产品、蜂蜜等动物源性食品中抗菌药残留检测的应用情况,为后续研制新微生物学法提供理论依据和实践基础,并对未来的微生物学法的发展做出展望。 相似文献

奶牛乳房炎是影响世界奶牛业发展的最主要疾病之一,不仅给奶牛养殖业带来严重的经济损失,而且还影响牛奶的产量和质量,危及人类健康。引起奶牛乳房炎的病因很复杂,但最主要的病因是病原微生物感染,其中葡萄球菌、链球菌和肠道菌感染是引起奶牛乳房炎的最主要病原菌。为有效治疗奶牛乳房炎,对奶牛乳房炎病原菌的早期快速诊断至关重要。作者对目前用于奶牛乳房炎病原菌诊断的常规微生物生化鉴定法、全自动微生物鉴定系统、刃天青微量板法、免疫诊断法、核酸探针杂交、16S rRNA基因序列测定、PCR、基因芯片及环介导等温扩增技术等的研究进展进行了综述,并比较分析了这些方法的优缺点,同时对未来奶牛乳房炎病原菌诊断的研究方向和前景进行了展望,以期为进一步开发快速、特异、敏感的奶牛乳房炎病原菌诊断技术提供理论依据。 相似文献

Dairy cow mastitis is one of the most costly diseases affecting the development of the world dairy industry. It causes a serious economic loss to dairy farming, and affects the yield and quality of milk, endangers human health. The cause of dairy cow mastitis is complex, but the main cause is pathogen infection, particularly Staphylococcus, Streptococcus and intestinal bacterial infection. The rapid diagnosis of pathogenic bacteria of mastitis is crucial for the effectively treatment of the dairy cow mastitis. 对酸奶中的霉菌酵母菌同时采用实时光电微生物检测系统与国标法进行检测,分析比较两种检测方法所得的检测数据.本实验利用实时光电微生物检测系统的霉菌酵母检测试剂瓶对市售酸奶及阳性添加样品采用半定量的检测方法进行快速检测,能快速地检测到目标菌存在,继而给系统提前预警.结果表明,当霉菌酵母菌含量在10~3.5×105CFU/mL时,实时光电微生物检测方法在1.8~33h内预警.当平板计数法的检测结果小于10CFU/mL时,实时光电微生物检测方法的检测时间均大于33h,在仪器设置运行48h内未出现预警现象.实时光电微生物检测技术与国标平板法两种检测方法的检测结果相当吻合.应用实时光电微生物检测技术能快速便捷,对酸奶产品中霉菌酵母菌进行监测,其检测速度和灵敏度均能满足工厂实验室的快速筛选检测,还利于产品的关键控制点的监测. 相似文献

SUMMARY The microbiological quality of carcases, meat and environmental surfaces was evaluated in commercial boning rooms processing beef and lamb. There was considerable variation in the level of microbial contamination on both carcases and meat, with counts ranging from less than 20 to 108/cm2 on carcases and to 2 times 107/cm2 on meat. The level of microbial contamination on meat was influenced by the level of carcase contamination at boning and by the boning process itself. Carcase contamination was the major determinant of microbiological quality, as more than 70% of carcases had microbial counts greater than 103/cm2. Cutting boards were a major source for microbial dissemination during boning, particularly when carcase counts were less than 103/cm2. If carcases were heavily contaminated, the contamination of processing surfaces was irrelevant in determining microbial loads on meat. Where carcase contamination was at low to moderate levels, the contribution of the boning process to the contamination on meat assumed increased significance. Under these conditions, improved sanitation of cutting surfaces in the boning room resulted in a significant reduction in microbial contamination on the surface of meat. These results can form the basis for ensuring that improvements made in carcase management before boning, to improve microbiological quality, will be preserved through attention to cutting board hygiene during boning. 相似文献

Antibacterials are used for the treatment or prevention of animal diseases by direct administration or feed additives. The inappropriate use of antibacterials in aquaculture inevitably lead to excessive residue of antibacterials in animal food. Microbiological methods are the earliest methods for the detection of antibacterials residues. Compared with other detection methods, microbiological methods are widely used for detecting residual antibacterials in livestock and poultry, milk and others animal food because it is easy to operate, low cost and high throughput. The purpose of this paper is to review the development history of microbiological methods and its application status for the detection of residual antibacterials in milk, feeding livestock and poultry, eggs, aquatic products and honey, which provides a theoretical and practical basis for the subsequent development of new microbiological methods.
