The interrelationships among certain physical and chemical properties of ten cultivars of dry beans (Phaseolus vulgaris L.) were investigated. The length/breadth ratio was similar (1.51–1.65) except for kidney beans (>2.0) and sanilac (1.37) cultivars. The breadth/thickness ratio ranged from 1.17–1.65. The 100-bean weight indicated a wide variation of 15.03–50.33 g. The density, bulk density, and porosity characteristics were within a narrow range of 1.18–1.36 g/cc, 68–75 g/100 cc, and 40.7–48.5%, respectively. Water uptake rates during the first 6 h of soaking at room temperature (21 °C) were characteristic of the cultivar. At the end of 24-h soaking, however, all cultivars had absorbed similar amounts of water (approximately 1 g/g bean). Leaching losses (g solids leached/100 g beans) had characteristic trends and ranged from 0.54 for cranberry to 3.46 for sanilac cultivars after 24-h soaking. The physical properties of extruded products from three Mexican common bean cultivars were investigated. Common bean cultivars Flor de Mayo, Pinto Villa and Bayo Victoria from the same harvesting season (2006) were used in this work. Beans were milled and the flour was hydrated to 24, 26 and 28 g of water/100 g of dry weight. Two temperatures, 130 degrees C and 165 degrees C at the end of the extruder barrel without die, were experimented. Common bean flour extrudates were evaluated for water absorption index (WAI), water absorption capacity (WAC), oil absorption capacity (OAC), and emulsifying capacity (EC). Flor de Mayo extrudates showed the highest WAC and WAI values. Thus starch from Flor de Mayo beans showed minor restricted water availability. In all cases, the OAC of extruded products was lower than the crude bean flour. The EC for Bayo Victoria flour increased as a consequence of the extrusion process. The EC for Flor de Mayo was higher at lower temperature and lower moisture content than Pinto Villa and Bayo Victoria beans. EC behavior of Pinto Villa was similar to Bayo cultivar. These results indicate that it is possible to produce new extruded products with good physical properties from these common bean cultivars.  相似文献

Protein concentrates and starches were prepared by a wet extraction process from five dry bean (Phaseolus vulgaris L.) cultivars. The protein contents ranged from 69.7–76.4%. Concentrates prepared from dehulled beans under similar conditions had higher protein contents (80.6–87.9%). Each additional washing of the concentrates with distilled water increased their protein content. However, the protein recovery progressively decreased. The yield of starch ranged from 48.0–51.1% of the starting material. The solubility of bean proteins was minimal at pH 4.0, and under alkaline conditions, it was influenced by the tannin contents of the concentrates. Protein concentrates had lower trypsin, chymotrypsin, and amylase inhibitory activities as well as lower phytic acid and tannin contents compared to whole bean flours.  相似文献

The characteristic of proteins, starch and pectic substances in cotyledons of two bean cultivars varying in cooking time were determined to investigate their possible contribution to bean cooking quality. Both cultivars showed the same enthalpies of starch gelatinization but different protein denaturation enthalpies. The proportion of hot water soluble pectins was higher in Michigan, the cultivar with the lower cooking time, than in Ojo de Cabra, the cultivar with the higher cooking time. These results were not due to differences in pectin methylation or in the ratio of monovalent to divalent cations in the tissue, suggesting that in fresh beans the β-elimination reaction is not the sole or predominant route of thermal pectin degradation. Overall, this study indicates that varietal differences in bean cooking quality may be reflections of the rate of pectin loss during soaking/heating and that the thermal properties of starch and protein fractions seem to have a minor contribution. Researchers involved in this study propose that in fresh beans, the thermal pectin loss results from a two step mechanism: pectin enzymic breakdown during the bean soaking followed by thermal solubilization rather than β-elimination during the bean heating.  相似文献

Imazamox plus bentazon has the potential to provide broad spectrum weed control in dry bean (Phaseolus vulgaris L.). Field trials were conducted in Ontario over a two year period (2003 and 2006) to evaluate the effect of imazamox plus bentazon applied post-emergence at 25 + 600 and 50 + 1200 g ai ha−1 on black, brown, cranberry, kidney, otebo, pinto, white and yellow eye beans. Treatments included a non-treated check. All treatments were maintained weed free during the growing season. The eight market classes responded similarly to imazamox plus bentazon. Imazamox plus bentazon applied post-emergence caused less than 4% visible injury at 7, 14 and 28 days after treatment. Imazamox plus bentazon applied post-emergence did not have any effect on plant height, shoot dry weight, seed moisture content and yield of dry bean. Based on these results, imazamox plus bentazon at the proposed maximum use dose can be safely used for weed management in black, brown, cranberry, kidney, otebo, pinto, white and yellow eye bean production in Ontario. Additional research is needed to determine if cultivars within a market class of dry bean differ in their response to imazamox plus bentazon.  相似文献

The oligosaccharide profile of raw mature seeds of seven different legumes indigenous to the Philippines was measured in 70% ethanol extracts of the seeds by thin layer chromatography using HPTLC plates and quantified by a densitometer. Based on the results, the legumes could be ranked according to decreasing oligosaccharide content or flatulence potential as follows: Sam-samping (Clitoria ternatea)>hyacinth bean (Dolichos lablab)> sabawel (Mucuna pruriens)>lima bean (Phaseolus lunatus)>swordbean (Canavalia gladiata)>rice bean (Vigna umbellata)>jack bean (Canavalia ensiformis). Sam-samping had 4.79% total oligosaccharides and hyacinth bean or batao, 3.66%. A jack bean accession had 1.79% oligosaccharides.Simple processing methods were tested to detoxify the oligosaccharides. Soaking the batao seeds had no effect while boiling even resulted in a net 23–31% increase in the levels of raffinose, stachyose and verbascose. On the other hand, two min of dry roasting resulted in complete removal of oligosaccharides whereas germination resulted in about 30–40% decrease after 1 and 2 days, respectively.Part of MS thesis of the senior author.  相似文献

Jamapa bean is a black Phaseolus vulgaris variety rich in condensed tannins, anthocyanins and flavonols with interesting biological activities. The objective of this work was to evaluate the antiradical capacity (ARC) of a Jamapa bean methanolic extract (BME) and some of the proanthocyanidin-rich fractions derived from it, using the 1,1-diphenyl-2-picrylhydrazyl (DPPH) assay. The effect of the BME on some proteins involved in apoptosis on HeLa cells was also evaluated. A strong correlation between proanthocyanidin concentration in BME and antiradical capacity was found, suggesting that these compounds contribute significantly to antiradical activity. BME was a better radical scavenger than butylated hydroxytoluene (45.6 and 33.9% ARC at 400 μM, respectively). Two proanthocyanidin-rich fractions obtained after a preliminary separation of the BME using Toyopearl (TP4 and TP6) exhibited a higher antiradical activity than the parent extract. The treatment of HeLa cells with 35 μg BME/ml/24 h increased the expression of Bax and Caspase-3, pro-apoptotic proteins (6.13 and 1.2 times for Caspase-3 and Bax, respectively). The mechanism of action of some proteins involved in apoptosis was also evaluated, and the results suggest that black Jamapa bean could be an important source of polyphenolic compounds with potential biological use as antioxidant and anticancer agents.  相似文献

Dry common beans (Phaseolus vulgaris L.) were evaluated for potential conversion of starch to ethanol. Eight varieties of beans with average starch content of 46% (db) were assayed in a laboratory-scaled process based upon the commercial corn dry grind fermentation process. Ethanol yield was 0.43-0.51 g ethanol/g glucose (0.19-0.23 g ethanol/g beans). The average ethanol yield for the eight bean types was 92% of maximum theoretical yield, demonstrating that starch from beans could be efficiently converted to ethanol. Ethanol concentration obtained from 20% (w/w) solids loading was 3.5-4.4% (w/v). The residual fermentation solids contained, on a dry basis, 37.1-43.6% crude protein, 10.8-15.1% acid detergent fiber and 19.1-31.3% neutral detergent fiber.  相似文献

Coloured potatoes (Solanum tuberosum L.) rich in anthocyanins are gaining increasing interest on the markets, mainly due to beneficial health effects. Potato varieties containing colour pigments are therefore utilized more and more in actual breeding programmes. In this study, 10 purple-fleshed potato cultivars were compared in their resistance to soft rot caused by Pectobacterium carotovorum (Pc) with 10 white/yellow-fleshed potato cultivars. The results revealed that coloured potato cultivars exhibited on average better resistance to soft rot than white/yellow-fleshed potato cultivars. On tuber halves of purple-fleshed cultivars, the extent of rotting caused by Pc was on average 28.6% lower than on white/yellow-fleshed cultivars. The greater resistance of coloured potatoes coincided with the presence of anthocyanins, higher concentrations of soluble phenols and elevated polyphenol oxidase activity in tuber tissue. These three components were significantly correlated with the extent of rotting caused by Pc. However, coloured and white/yellow-fleshed cultivars were not very different in phenylalanine ammonia-lyase and peroxidase activity. There were also no significant differences in concentrations of dry matter, starch, crude protein and glycoalkaloids. Key findings reveal that total soluble phenols and anthocyanins contributed crucially to resistance expression in tuber tissue of coloured potato cultivars.  相似文献

Out of sixty six faba bean (Vicia faba) cultivars and genotypes grown locally in Egypt and in Syria, the genotype 123 A/45/76 proved to be lowest in its vicine and convicine contents. Furthermore, soaking of this bean variety in 1% acetic acid at 40°C for 48 h resulted in reducing the total vicine and convicine contents of the beans by 90%. Home-made faba beans processing including soaking prior to cooking as in the case of bean cakes resulted in considerable reduction of the vicine and convicine contents by 56 and 34% respectively.  相似文献

This work was carried out to investigate the pulp composition of four mango cultivars (Haden, Tommy Atkins and Ubá) at the ripening stage in relation to three components with antioxidant potential (total phenolics, carotenoids and ascorbic acid). Total phenolic compound content was estimated by the Folin-Ciocalteu reagent and total carotenoid content by spectrophotometry at 450 nm. The contents of β-carotene and total vitamin C (ascorbic acid and dehydroascorbic acid) were quantified by high performance liquid chromatography. Differences were found among the four mango cultivars in all the components analyzed. The content of phenolic compounds ranged from 48.40 (Haden) to 208.70 mg/100 g (Ubá); total carotenoid from 1.91 (Haden) to 2.63 mg/100 g (Palmer); β-carotene from 661.27 (Palmer) to 2,220 μg/100 g (Ubá) and total ascorbic acid ranged from 9.79 (Tommy Atkins) to 77.71 mg/100 g (Ubá). These results corroborated previous information that mangoes are a good source of antioxidants in human diet.  相似文献

The contents of total phenolic compounds, flavonoids, and phenolic acids were determined in selected garlic cultivars grown at four locations. The total phenolic content varied from 3.4 mg gallic acid equivalents (GAE)/g of dry matter (dm) to 10.8 mg GAE/g of dm with a mean value of 6.5 mg GAE/g of dm. The myricetin, quercetin, kaempferol, and apigenin flavonoids were not detected in any of the samples. Caffeic acid and ferulic acid were the major phenolic acids found with mean values of 2.9 mg/kg of dm and 2.6 mg/kg of dm, respectively. The mean contents of vanillic, p-hydroxybenzoic, and p-coumaric acids were comparable (0.4–0.8 mg/kg of dm), and the level of sinapic acid was negligible (< 0.1 mg/kg of dm). There was a significant effect of location but an insignificant effect of genotype on contents of caffeic, vanillic, p-hydroxybenzoic, and p-coumaric acids. However, genotype but not location affected the contents of total phenolics and ferulic acid. On average, the white garlic cultivars and Chinese garlic cultivars contained higher contents of total phenolics and ferulic acid than the purple garlic cultivars. However, the differences in the total phenolic content between the purple and white garlic cultivars were not significant.  相似文献

Rhizoctonia solani causes economically important root and hypocotyl diseases in common bean throughout the world. Root health is a vital factor in plant development and root diseases would negatively influence water and nutrient uptake as well as cause direct stand reduction and root rot damage to the crop. An efficient common bean screening method to evaluate damping-off and early root/hypocotyl damage from R. solani was developed and used to identify dry bean lines with levels of resistance to this disease. Two sets of 163 and 111 lines previously evaluated for drought tolerance in Nebraska and Puerto Rico were evaluated for damping-off resistance and early root/hypocotyl damage under greenhouse conditions. Disease severity on plants was identified based on above-ground symptoms, seedling survival and root lesions using a rating scale of 1 (resistant) to 9 (susceptible). In the first set of lines representing commonly grown dry bean cultivars, germplasm and sources of damping-off resistance, the Rhizoctonia mean rating ranged from 1.7 to 3.9; Phaseolus vulgaris lines PI 310668 and PI 533249 had the highest damping-off resistance. In the second set of the best lines from a drought tolerance shuttle breeding program the Rhizoctonia mean rating was between 2.6 and 5.7. The availability of drought tolerant dry bean lines allowed the testing of the hypothesis that there was a correlation between selecting for drought tolerance and R. solani damping-off resistance. No correlation between mean disease rating and drought tolerance was found, but adapted dry bean lines such as NE14-08-176 released as SB-DT1, and NE14-08-225 were identified with moderate damping-off resistance and drought tolerance. Lines with both traits and other attributes will facilitate development of resistant bean cultivars to manage damping-off caused by R. solani.  相似文献

Five wildPhaseolus vulgaris beans were compared with five cultivatedPhaseolus vulgaris beans in proximate composition, total (true) protein, amino acid composition, and toxic and antinutritional factors. The wild beans contained more protein (25.5% vs. 21.7%), ash (5.15 vs. 4.15%), crude fiber (7.08% vs. 5.04%) compared to cultivated beans while the former contained less fat (0.56 vs. 0.89%) and carbohydrates (61.64 vs. 68.05%). Sulfur amino acids were found to be limiting in both groups of bean as expected; however, the cultivated beans had a higher content of the limiting amino acids. Therefore, the cultivated beans showed a better amino acid profile than the wild beans. Toxic factors were not found in either type of bean; the determinations included saponins, alkaloids, and cyanogenic glycosides. The antinutritional factors investigated were hemagglutinins (lectins) and trypsin inhibitors. The wild beans presented a higher content of trypsin inhibitors (28 TUI per mg) and lectins (9.6) than the cultivated beans did (21 TUI per mg and 7 respectively). From the chemical point of view, domestication seems to be positive; however, the better protein nutritive quality of the cultivated beans should be further confirmed by biological assays.  相似文献

Changes in the concentrations of vicine, convicine and L-DOPA in two cultivars ofVicia faba L. seeds in different stages of pod development were determined by high performance liquid chromatography (HPLC). The vicine and convincine conent was highest in fresh green cotyledons (moisture content about 80%) and gradually declined until a constant level was reached when seed dry matter percentage was around 40%. A similar pattern of variation in glucoside concentration was observed for the seed coat. The pods contained neither vicine nor convicine but they were particularly rich in L-DOPA. Greater leaf thickness is usually associated with greater leaf carbon assimilation rate, but the tradeoff between thicker versus larger leaves also affects canopy structure and light interception. Many studies equate the ratio of dry leaf mass to area (leaf specific mass) with leaf thickness. This approximation has utility but ignores differences in true thickness due to variation in water or air content and other factors. To understand better variation in leaf thickness in common bean (Phaseolus vulgaris L.), 14 parameters related to thickness were compared for a diverse set of bean cultivars grown in three field environments in Colombia. The parameters included leaf thickness per se as measured anatomically or with a micrometer, leaf specific mass expressed on dry and fresh weight bases, leaf optical density measured at 670 nm, total leaf chlorophyll concentration expressed on a leaf area basis, leaf tissue density, and nitrogen concentration expressed on fresh and dry weight bases. Relative contributions of air, water, and dry matter to leaf thickness were also estimated. Most parameters showed large differences among lines, consistent with previous reports that cultivars from the Mesoamerican genepool have thicker leaves than those of the Andean genepool. Parameters varied greatly with environment and sampling date. The results support the need to control for leaf water content when studying leaf thickness. Furthermore, including mid and lateral rib tissue in leaf samples appeared to bias data sufficiently enough to double estimates of leaf thickness and specific mass. Based on time required for measurement and ability to detect cultivar differences, measuring leaf thickness with a micrometer and leaf optical density appeared the most promising for rapid characterization of leaf thickness.  相似文献

Pomegranate (Punica granatum L.) fruits are used mainly by the juice industry, for which seeds are a by-product to be disposed of, though they could potentially be a source of bioactive compounds. In this work, germination (total germination percentage, G; mean germination time, MGT; time to reach 80% of germination, TG80; seedling shoot length, fresh weight and dry matter), and nutritional value (total phenolics, TP; total flavonoids, TF; total non-tannins, TNT; antioxidant activities) of pomegranate seeds and sprouts were determined on four commercial pomegranate cultivars (Akko, Dente di Cavallo, Mollar de Elche and Wonderful). Seeds were removed from ripe fruits and incubated in plastic trays containing sterile cotton wetted with distilled water. Sprout shoots were harvested when they reached the complete cotyledon expansion, i.e., the ready-to-eat stage. Akko showed the best germination performance (G = 98%; MGT = 14 days after sowing, DAS; TG80 = 16 DAS), followed by Mollar de Elche. Sprouting dramatically increased TP, TF, TNT and antioxidant activity in all genotypes, with the highest values recorded in Mollar de Elche and Dente di Cavallo. Overall, based on germination performance, Akko and Mollar de Elche would be the best cultivars for sprouting. Sprouting pomegranate seeds appears to be a suitable way of utilizing by-products of the juice industry to obtain bioactive compounds.  相似文献

Summary The response of potato to different rates of nitrogen supply ranging from 0–40 g m−2 N was studied in five field experiments near Wageningen. NL (520 North). In total two late potato cultivars and two sites were used during successive seasons. The results are summarized in a set of regression equations separately for total crop and tubers. The relation between nitrogen taken up (g m−2) in the total crop and total dry matter production (g m−2) could be described with the exponential equation: 1942–1900 * 0.93X (r2=0.953, n=62). Nitrogen concentrations in the dry matter increased linearly with nitrogen uptake. Harvest indices for dry matter and nitrogen tended to decline with increase in N uptake. Cultivars differed only in the effect on N on tuber dry matter concentration. The relation between nitrogen uptake and nitrogen supply could be fitted with quadratic regression models. but coefficients were influenced by site and season.  相似文献

To study the effect of co-inoculation with plant growth-promoting rhizobacteria (PGPR) and Rhizobium, on yield and yield components of common bean (Phaseolus vulgaris L.) cultivars was investigated in 2 consecutive years under field condition of plant growing evidence indicates that soil beneficial bacteria can positively affect symbiotic performance of rhizobia. PGPR strains Pseudomonas fluorescens P-93 and Azospirillum lipoferum S-21 as well as two highly effective Rhizobium strains were used in this study. Common bean seeds of three cultivars were inoculated with Rhizobium singly or in a combination with PGPR to evaluate their effect on growth characters. A significant variation of plant growth in response to inoculation with Rhizobium strains was observed. Treatment with PGPR significantly increased pod per plant, number of seeds per pod, weight of 100 seed, weight of seeds per plant, weight of pods per plant, total dry matter in R6 as well as seed yield and protein content. Co-inoculation with Rhizobium and PGPR demonstrated a significant increase in the yield and yield components. The results showed that all treatments of bacteria increased yield; however, strains Rb-133 with Pseudomonas fluorescens P-93 gave the highest seed yield, number of pods per plant, weight of 100 seed, seed protein yield, number seed per pod, seed protein yield.  相似文献

Abstract

A snap bean (Phaseolus vulgaris L.) cultivar Haibushi shows high productivity under high-temperature conditions. Together with intensive radiation, high temperature enhances transpiration and causes water deficit in plants even when they are irrigated enough. To characterize daily change in water balance of the heat-tolerant cultivar, we compared parameters of water balance, dry matter production and pod yield among cultivars. Four snap bean cultivars, Haibushi, Kurodane-Kinugasa, Oregon and Kentucky Wonder, were grown under optimal temperature (spring cropping) and high temperature (summer cropping) condition in the field. The daily water balance and gas exchange rate in the heat-tolerant cultivar Haibushi were compared with those in the heat-sensitive cultivar Kentucky Wonder, grown in 0.02 m2 Wagner pots. In the summer cropping in the field, dry matter production, pod yield, stomatal conductance, photosynthetic rate and transpiration rate were higher in Haibushi and Kurodane-Kinugasa than in the other cultivars. In a glasshouse, the sap flow rate was lower than the transpiration rate in the morning when the transpiration rate rapidly increased in both Haibushi and Kentucky Wonder. In spite of the higher transpiration rate, Haibushi showed a higher sap flow rate and smaller cumulative water loss in the morning than Kentucky Wonder. We conclude that better growth of the heat-tolerant snap bean cultivar Haibushi under high temperature was due to higher photosynthetic rate resulting from higher stomatal conductance during the daytime, which had a higher water uptake rate.  相似文献
