Rice is the staple food for more than half of the world's population and, hence, the main source of a vital micronutrient, zinc (Zn). Unfortunately, the bioavailability of Zn from rice is very low not only due to low content but also due to the presence of some antinutrients such as phytic acid. We investigated the effect of germination and Zn fortification treatment on Zn bioavailability of brown rice from three widely grown cultivars using the Caco-2 cell model to find a suitable fortification level for producing germinated brown rice. The results of this study showed that Zn content in brown rice increased significantly (p < 0.05) as the external Zn concentrations increased from 25 to 250 mg/L. In contrast, no significant influence (p > 0.05) on germination percentage of rice was observed when the Zn supply was lower than 150 mg/L. Zn fortification during the germination process has a significant impact on the Zn content and finally Zn bioavailability. These findings may result from the lower molar ratio of phytic acid to Zn and higher Zn content in Zn fortified germinated brown rice, leading to more bioavailable Zn. Likewise, a significant difference (p < 0.05) was found among cultivars with respect to the capacity for Zn accumulation and Zn bioavailability; these results might be attributed to the difference in the molar ratio of phytic acid to Zn and the concentration of Zn among the cultivars evaluated. Based on global intake of Zn among the world population, we recommend germinated brown rice fortified with 100 mg/L ZnSO(4) as a suitable concentration to use in the germination process, which contains high Zn concentration and Zn bioavailability. In the current study, the cultivar Bing91185 fortified with Zn through the germination process contained a high amount as well as bioavailable Zn, which was identified as the most promising cultivar for further evaluation to determine its efficiency as an improved source of Zn for target populations.  相似文献

为解决传统工艺生产发芽糙米浸泡时间长、生产效率低等问题,提出以纤维素酶和木聚糖酶的复合溶液代替蒸馏水浸泡发芽前糙米的新工艺。以糙米为原料,探究复合酶预处理工艺中酶解时间、酶解温度、复合酶浓度及配比对发芽糙米得率的影响规律,采用二次正交旋转中心组合设计试验,建立了各因素对发芽糙米得率影响的数学模型。结果表明:酶解时间、酶解温度、复合酶浓度及酶配比对发芽糙米得率影响显著(P0.05),得到优化参数组合为:酶解时间135 min,酶解温度35℃,复合酶浓度0.57 g/L、纤维素酶和木聚糖酶质量比1.86:1,在此条件下,与传统工艺相比浸泡时间缩短62.5%、发芽糙米得率及γ-氨基丁酸含量分别提高约3.90%和3.86 mg/(100 g)。通过对酶解后糙米皮层微观结构的观察分析,糙米皮层在复合酶作用下部分降解,胚乳中淀粉更易与水分子相结合,从而吸水速率提升。研究结果可为发芽糙米生产提供参考。  相似文献

Physical characteristics, amino acids composition, protein profiling, pasting characteristics, and phenolic compounds of brown rice (BR) and germinated brown rice (GBR) from different paddy cultivars (PB1, PS44, PB1509, PB1121, and PS5) were investigated. L* (lightness) decreased, but a* (redness and greenness) and b* (yellowness and blueness) increased with germination. Protein and ash content increased, whereas fat and amylose contents decreased with germination. GBR showed lower hardness and gumminess than BR. Foam stability and water absorption capacity from GBR flour were higher compared with BR flour. Accumulation of γ‐aminobutyric acid, histidine, arginine, proline, methionine, and acidic amino acids increased significantly with germination, and increase was related to change in accumulation of glutelin and prolamins. The accumulation of prolamins and glutelin acidic and basic subunits decreased with germination. GBR flour showed lower pasting viscosities compared with BR flour. Ferulic acid, p‐coumaric acid, and quercetin were present in both fractions of the bound form. GBR showed improved nutritional quality that varied in different cultivars. PB1121 was observed to be the best for producing GBR owing to greater changes brought in protein content, essential amino acids, catechin, chlorogenic acid, protocatechuic acid, vanillic acid, and foam stability.  相似文献

Dehulled and/or germinated black bean flours were physicochemically characterized, including pasting properties, along with the trypsin inhibitor and antioxidant phenolics. To our best knowledge, this is the first study that, using nonparametric correlations and principal component analysis, identifies the parameters affecting the pasting properties of germinated black bean flour. The carbohydrate loss observed after black bean germination was indirectly correlated with the crude fiber content. Therefore, germination increased the protein and crude fiber contents compared with raw seeds (from 19.1 and 2.4% to 24.0 and 5.1%, respectively). Additionally, the highest protein digestibility was obtained in dehulled germinated black bean flour (78.4%), followed by whole germinated seed flour (74.1%). The dehulling process increased the total starch content 13.5 and 18.8% compared with raw and germinated whole bean flours, respectively. Dehulling decreased both trypsin inhibitor activity and antioxidant phenolics. Germination reduced by twofold the peak and final viscosities of black bean flours. Interestingly, both viscosities were negatively correlated with protein and positively correlated with fat and insoluble dietary fiber. Although resistant starch content was not affected by germination or dehulling, its interactions with fat and insoluble dietary fiber were responsible of the changes observed in pasting properties of germinated black bean flour.  相似文献

Dynamic alterations in the polyphenols, tocols, antioxidant activities (AOA), and γ‐aminobutyric acid (GABA) contents of white, red, and black germinated rice upon different germination periods were studied. The results indicated that the contents of the free, bound, and total phenolics and AOA steadily increased during germination, even though the free part of colored germinated brown rice (GBR) showed a notable decline at the earlier stages, but still higher than the white rice. The compositions of the nine phenolic acids and six tocols generally accumulated in a time‐ and variety‐dependent manner during the germination process. However, the contents of p‐coumaric, ferulic, and sinapic acids displayed a pronounced increase with the duration of germination in all cultivars. The GABA in white, red, and black GBR accumulated to the highest content at the end of germination, which was 4.7, 14.2, and 6.7‐fold of their respective nongerminated counterparts. Interestingly, the total anthocyanin content in black GBR displayed a constant drop at earlier stages and then a rise at the later stages. These results suggest that prolonged germination may further increase the functional properties of GBR.  相似文献

Germinated brown rice is popular in Asia for its increased γ‐aminobutyric acid (GABA) content and sweeter and softer texture compared with conventional brown rice. However, most studies investigated germinated rice properties on medium‐grain or aromatic rice. The objective of this study was to compare differences between a medium‐grain (Jupiter) and a long‐grain (Wells) rice under similar germination conditions on their milling, physicochemical, and textural properties over the course of germination. Rough rice was soaked in water at 25°C for 12 h and then incubated at 30–34°C for four germination durations. Wells had a higher breakage percentage and a greater weight decrease than Jupiter during germination. Wells had a significantly lower GABA content before germination and at the first two germination durations than Jupiter, but the GABA content in Wells significantly increased at the third germination duration to become significantly higher than that of Jupiter. There were no significant changes in gelatinization temperatures and pasting properties of germinated rice from both cultivars at different germination durations. The cooked rice hardness from Wells decreased at the longest germination duration, whereas Jupiter showed a more significant decrease in cooked rice stickiness from germination. The results demonstrate that the impacts of germination on physical, chemical, and textural properties of rice were affected by grain type and germination duration.  相似文献

The effect of germination on bioactive components in legume seeds was investigated in terms of the antioxidant capacity and total phenolic contents. Germination increased the total phenolic content and antioxidant capacity of most seeds. Particularly in chickpea seeds, the isoflavone contents increased by over 100 fold, mainly due to the increase of formononetin and biochanin A level. As a result, these two compounds were conveniently isolated from the germinated seeds in preparative scale and structurally confirmed by UV-vis, ESI-MS, and (1)H NMR spectroscopies. Isoflavonoid fingerprints analyzed by HPLC-PDA and LC-ESI-MS demonstrated that germination could significantly increase isoflavonoids diversity. Twenty-five isoflavonoids were detected and identified tentatively. These include 20 isoflavones, 2 isoflavanones, and 3 pterocarpan phytoalexins. Total isoflavonoid content of germinated chickpea was approximately 5-fold of that of germinated soybean. Our findings suggest that the germinated chickpea seeds could serve as a promising functional food rich in isoflavonoids.  相似文献

Germinated brown rice is considered a more nutritious and palatable cooked product than conventional brown rice. However, germination usually decreases rice milling yield and alters some physicochemical properties. Parboiling is commonly used to increase milling yield and retain nutrients, but it also changes rice color and texture. The objective of this study was to investigate the effect of parboiling on milling, physicochemical, and textural properties of a medium‐grain and a long‐grain rice after germination at varying durations. Germinated rice samples of three germination durations were prepared with one germination time before the optimum time at which 70% of rice revealed hull protrusion, the optimum time, and one time after. Germinated rice was then immediately parboiled at 120°C for 20 min and was then immediately dried. The milling, physicochemical, and textural properties of parboiled germinated rice from both cultivars were determined. Parboiling significantly decreased the percentage of brokens, whiteness, and the apparent amylose content and increased γ‐aminobutyric acid content (GABA) in the nongerminated rice and rice at the first germination duration for both cultivars. Parboiling reduced pasting viscosities for both cultivars, but Jupiter still exhibited higher pasting viscosities than Wells. Cooked parboiled germinated rice was overall softer than nonparboiled rice because of kernel splitting, but Wells remained harder and less sticky than Jupiter. In conclusion, it is beneficial to combine parboiling with germination to enhance nutritional values and improve milling properties without affecting textural properties for both rice cultivars.  相似文献

The content of gamma-oryzanol and the composition of steryl ferulates were determined in brown rice of European origin using on-line coupled liquid chromatography-gas chromatography (LC-GC). Analysis of 30 brown rice samples of various cultivars, grown at different sites and in different seasons, revealed the gamma-oryzanol content to range from 26 to 63 mg/100 g. Cycloartenyl ferulate and 24-methylenecycloartanyl ferulate were the major components of gamma-oryzanol followed by campesteryl ferulate, campestanyl ferulate, and beta-sitosteryl ferulate. The proportions of individual steryl ferulates exhibited enormous variability. However, irrespectively of the great variations observed for single steryl ferulates, the proportions of the sum of 4,4'-dimethylsteryl ferulates (cycloartenyl ferulate, 24-methylenecycloartanyl ferulate) and the sum of 4-desmethylsteryl ferulates (campesteryl ferulate, campestanyl ferulate, and beta-sitosteryl ferulate) were rather constant. The significant natural variability observed for gamma-oryzanol content and composition of steryl ferulates were shown to be influenced by environmental conditions but not by the degree of maturity of rice grains.  相似文献

Common bean effects on health have been related to its dietary fiber content and other active compounds. This study assessed the content of flavonoids, coumestrol, phenolic acids, galactooligosaccharides, and phytic acid in wild and cultivated Mexican common bean seeds (raw and cooked) and that of flavonoids, coumestrol, and phenolic acids in germinated bean seeds. The presence of isoflavones in raw bean seeds was not confirmed by the UV spectra. Quercetin, kaempferol, p-coumaric acid, ferulic acid, p-hydroxybenzoic acid, and vanillic acid mean contents were 10.9, 52.3, 10.1, 9.6, 5.4, and 18.2 microg/g, respectively; raffinose, stachyose, verbascose, and phytic acid mean contents were 8.5, 56.3, 5.5, and 11.5 mg/g, respectively, in raw seeds. All compounds were affected by autoclaving, and germination resulted in a de novo synthesis of flavonols, phytoestrogens, and phenolic acids. The impact on health of common bean seed is affected by dietary burden, specific compounds content, and processing. On the other hand, germinated bean seed or beans sprouts may be sources of antioxidants and phytoestrogens.  相似文献

The influence of deficit irrigation (Deficit) and reflective mulch (Reflective) of Caldesi 2000 nectarines on the content of individual phenolic compounds was studied at harvest and during storage for 2, 4, and 6 weeks at 2 °C during two consecutive years (2007 and 2008). Individual phenolic groups in the edible fruit part consisted mainly of proanthocyanidins (200 mg/100 g fw), lower content of phenolic acids (17 mg/100 g fw), and minor content of flavonols (5 mg/100 g fw) and anthocyanins (1.2 mg/100 g fw). Deficit irrigation increased the content of total phenolics, including proanthocyanidins and phenolic acids, reaching similar amounts in both years. Sun-exposed fruit (upper part of canopy) showed higher content than shaded fruit (lower part of canopy). However, Reflective significantly increased the content of total phenolics, particularly phenolic acids and proanthocyanidins, of fruit located in the lower part of the canopy. During storage, Deficit and Reflective did not affect the content of phenolic acids, flavonols, and proanthocyanidins when compared to the content at harvest. Optimizing cultural practices can be a way to increase the phenolic content of nectarines.  相似文献

This study investigated the effect of solid‐state yeast fermentation on the nutritional and antioxidant properties of brown rice flour (BRF). Three brands of commercial baker's yeast (Eagle, Saf‐levure, and Mauripan) were used to ferment BRF at 25°C for 12 h. There were significant increases in protein, ash, insoluble and soluble fiber, phosphorus, zinc, magnesium, calcium, and iron contents after yeast fermentation. Fermented BRF with Eagle yeast possessed the highest contents of protein, ash, zinc, and calcium. Fermentation of BRF with Eagle yeast was more effective in increasing antioxidant activity and total phenolic contents from 1.01 to 1.54 mmol of Trolox equivalents per gram and from 1.09 to 1.21 mg of gallic acid equivalents per gram, respectively. Yeast fermentation reduced phytic acid content of BRF (124.59 ± 0.48 µg/g), and the Eagle yeast‐fermented sample had the lowest value (36.55 µg/g) compared with the other fermented samples. Fermented flour with Eagle yeast also had the highest α‐amylase activity, because it recorded the lowest stirring number. Solid‐state fermentation with commercial yeast, particularly Eagle yeast, was effective in improving the nutritional and antioxidant properties of underutilized BRF as a food ingredient.  相似文献

Brown rice flour was mixed with a Chinese medical plant (Euryale ferox Salisb.) and processed to make ready‐to‐eat breakfast cereals using twin‐screw extrusion. Levels of 15 and 20% feed moisture in flour, and 200 and 250 rpm screw speed were set, and the physicochemical properties and content of α‐, β‐, γ‐, and δ‐tocopherols were determined. The data showed that 15% feed moisture gave a low bulk density and water absorption index but a high expansion ratio and water solubility index. High screw speed (250 rpm) produced a result similar to that of 15% feed moisture. A sample with 85% brown rice flour with 15% E. ferox Salisb. retained the highest content of α‐, β‐, γ‐, and δ‐tocopherols (125, 6, 78, and 9 μg/g), respectively. The optimum extrusion conditions determined were 15% E. ferox Salisb. mixed with brown rice at 15% feed moisture and at 250 rpm screw speed.  相似文献

为了研究组配改良剂(石灰石+海泡石,LS)对于重金属Pb、Cd、Cu和Zn复合污染稻田的修复效果,在湘南某矿区附近稻田中进行了组配改良剂的田间试验。结果表明:施用0~1.8 kg m-2的组配改良剂LS使土壤pH和CEC显著增加,使土壤中Pb、Cd、Cu和Zn交换态含量显著降低。土壤Pb、Cd、Cu和Zn交换态含量的降低是pH升高,土壤胶体的CEC增加及土壤吸附能力增强的共同作用。施用组配改良剂LS显著降低了3个水稻品种(黄华占、丰优9号、Ⅱ优93)糙米中Pb、Cd和Cu的累积量,最大降幅分别为55.8%、66.9%、37.4%,而对糙米中Zn的含量没有明显影响。当LS施用量为1.8 kg m-2时,能使丰优9号糙米中Cd含量(0.195 mg kg-1)达到国家食品中污染物限量标准(0.20 mg kg-1)以下。土壤中交换态Pb、Cd和Cu含量的降低是糙米中重金属累积量减少的原因。土壤交换态Pb、Cd和Cu含量的对数值(lnC交换态)与其糙米中含量(lnC糙米)的对数值之间存在显著的线性相关关系。  相似文献

It is imperative that there be a diet designed specifically to improve lipid profile in order to impede the progress of atherosclerosis. Because rice is a staple food in Asia, it will be chosen as the diet of interest. This study sets out to discover whether consumption of different processed rice diets may result in a change of the lipid profile. The experiment was done on male New Zealand white rabbits after 10 weeks of treatment with diet containing 0.5% cholesterol. The experimental diets include white rice (WR), brown rice (BR), and germinated brown rice (GBR). Among them, rabbits fed a GBR diet demonstrated significantly lower levels of total cholesterol (TC), low-density lipoprotein (LDL), LDL/HDL, and atherogenic index (AI) and a higher level of high-density lipoprotein (HDL). Results from atherosclerotic plaque assessment further support the findings. The level of malondialdehyde (MDA), which acts as an indicator for oxidative stress, was also reduced by GBR diet. The positive change in lipid profile in the rabbits fed GBR appeared to correspond with the higher amounts of γ-oryzanol, tocopherol, and monounsaturated fatty acid (MUFA) content.  相似文献

The nutritional bioavailability of zinc from cooked milled, undermilled, and brown Philippine rice (variety PSB Rc14) was evaluated in rats, comparing results based on weight gain, tibia zinc incorporation (slope ratio analyses), and zinc radiotracer retention. Milling reduced the phytic acid and mineral content of the rice, resulting in zinc concentrations of 16.5, 19.4, and 27.2 microg/g and phytate/zinc molar ratios of 4, 20, and 28 for milled, undermilled, and brown rice, respectively. Measured zinc bioavailability was similar whether using growth, bone zinc, or radioisotope retention as criteria, at approximately 92, 86, and 77% of zinc sulfate, for milled, undermilled, and brown rice, respectively. However, the higher percent bioavailability of the zinc after milling was insufficient to compensate for the lower zinc content. With respect to zinc, the nutritional value was inversely related to milling, providing approximately 15, 17, and 21 microg bioavailable zinc/g rice, respectively, for milled, undermilled and brown rice of this variety.  相似文献

通过种肥接触水稻育苗试验,比较秧苗叶片中几种酶活性和激素含量,探明接触性施肥提高肥料利用率的效应和机理,以确定控释肥在水稻育苗上的最佳施用量和施用方法。研究结果表明,水稻种子与大量控释氮肥接触的条件下仍能安全萌发,且用量为800 g/盘和1000 g/盘时能够明显促进水稻秧苗的生长发育;在同等施肥量的条件下,肥料在种子下方接触施用的方法最有利于秧苗的生长;控释氮肥用量为800 g/盘和1000 g/盘时,秧苗叶片中的超氧化物歧化酶(SOD)、过氧化氢酶(CAT)和抗坏血酸-过氧化物酶(AsA-POD)活性高于常规尿素处理,而丙二醛(MDA)含量则低于常规尿素处理,这有利于促进水稻秧苗的生长;控释氮肥用量为1200 g/盘时,会导致叶片内的SOD、CAT和AsA-POD活性明显降低和MDA含量的相对增加;随控释氮肥用量的增加,秧苗叶片生长素(IAA)逐渐增加,但当达到1200 g/盘时,IAA含量突然增加;另外,氮素缺乏和过多都会诱导秧苗体内脱落酸(ABA)含量明显增加而不利于秧苗正常生长。  相似文献

Seven cane brown sugars (four from La Réunion, two from Mauritius, and one from France) were investigated for their polyphenol content and volatile composition in relation to their free radical scavenging capacity determined by ABTS and DPPH assays. The thin layer coated on the sugar crystal was extracted by Soxhlet extractor with dichloromethane. The volatile compounds of brown sugars were studied by GC-MS, and 43 compounds were identified. The total phenolic content of brown sugars was determined according to the Folin-Ciocalteu method. Phenolic compounds were quantified in the brown sugar extracts by LC-UV-ESI-MS. Brown sugar aqueous solutions exhibited weak free radical scavenging activity in the DPPH assay and higher antioxidant activity in the ABTS assay at relatively high concentration. The brown sugar extracts showed interesting free radical scavenging properties despite the low concentration of phenolic and volatile compounds. Sugar is a common foodstuff traditionally used for its sweetening properties, which might be accompanied by antioxidant properties arising from molecules (polyphenols, Maillard products) other than sucrose of the cane brown sugars.  相似文献

利用农业废弃物稻壳粉能有效提高污泥的脱水性能。该文研究了稻壳粉投加量对污泥脱水性能的影响及调理机理,同时分析稻壳粉调理对污泥滤液和脱水后污泥主要性质的影响,并进行技术经济分析。试验结果表明,稻壳粉的最佳投加量为70%污泥干质量(DS);在最佳调理条件下,与单独投加三氯化铁(FeCl_3,138.09g/kg)相比,污泥比阻降低了59.73%,污泥净产率提高了45.27%,污泥泥饼的含固率从13.99%提高到23.97%;扫描电镜结果表明,稻壳粉调理后的污泥泥饼具有不可压缩性和可渗透性,有利于污泥中水分的脱出;同时,稻壳粉的投加可有效降低滤液浊度和溶解性化学需氧量。因此,利用稻壳粉来调理污泥具有较大的潜力。  相似文献

Simple phenolic acid levels were determined on pooled millstreams of five different classes of Canadian wheat milled to ~75, 80, and 85% extraction. Pooled flours and whole grain were analyzed by reversed-phase high-performance liquid chromatography (RP-HPLC) to establish endogenous levels of insoluble bound, soluble esterified, and free phenolic acids. Only ferulic acid was detected in the insoluble bound category, which accounted for >80% of the total phenolic acids present in every flour. The soluble esterified phenolic acids accounted for up to 17% of the overall total phenolic acid content within a flour. The major constituents were sinapic, ferulic, and vanillic acids, with minor amounts of coumaric, caffeic, and syringic acids. Free phenolic acids accounted for a maximum of 6% of the total phenolic content of any prepared flour. Ferulic acid was the major free phenolic acid, while sinapic acid was not detected in any flour. Significant correlations (r = 0.64–0.97, P < 0.05) were observed between insoluble bound ferulic acid, individual soluble esterified acids, and most free acids with polyphenol oxidase activity, as well as color and ash content for each class.  相似文献
