Five Holstein steers (235 kg of BW) fitted with ruminal, duodenal, and ileal cannulas were used in a 5 x 5 Latin square design experiment to determine the effects of supplemental fat source on site and extent of nutrient digestion and ruminal fermentation. Treatments were diets based on steam-flaked corn containing no supplemental fat (control) or 4% (DM basis) supplemental fat as tallow, dried full-fat corn germ (corn germ), corn oil, or flax oil. Fat supplementation decreased (P < 0.08) ruminal starch digestion but increased (P < 0.03) small intestinal starch digestion as a percentage of intake. Feeding corn germ decreased (P < 0.09) ruminal starch digestion and increased (P < 0.03) large intestinal starch digestion compared with steers fed corn oil. Large intestinal starch digestion was less (P < 0.04), and ruminal NDF digestion was greater (P < 0.09) for steers fed tallow compared with steers fed other fat sources. Small intestinal (P < 0.08) and total tract NDF digestibilities were greater (P < 0.02) for steers fed corn germ than for those fed corn oil. Feeding tallow increased total ruminal VFA (P < 0.03) and NH(3) (P < 0.07) concentrations compared with steers fed the other fat sources. Feeding corn germ led to a greater (P < 0.02) rate of ruminal liquid outflow compared with corn oil. A diet x hour interaction (P < 0.04) occurred for ruminal pH, with steers fed corn oil having the greatest ruminal pH 18 h after feeding, without differences at other time points. Fat supplementation increased (P < 0.09) ruminal concentrations of Fusobacterium necrophorum. Duodenal flow of C18:3n-3 was greater (P < 0.01) for steers fed flax oil compared with those fed corn oil. Feeding corn germ led to less (P < 0.01) ruminal biohydrogenation of fatty acids compared with corn oil. Steers fed tallow had greater small intestinal digestibility of C14:0 (P < 0.02) and C16:1 (P < 0.04) than steers fed the other fat sources. Fat supplementation decreased (P < 0.06) small intestinal digestibility of C18:0. Feeding corn germ decreased (P < 0.10) small intestinal digestibility of C18:1 compared with corn oil. It appears that source of supplemental fat can affect the site and extent of fatty acid and nutrient digestion in steers fed diets based on steam-flaked corn.  相似文献

A feeding trial involving 160 crossbred steers (357 kg) and a metabolism trial involving eight Holstein steers (189 kg) cannulated in the rumen and proximal duodenum were conducted to evaluate the interaction of dietary Mg level (.18 vs .32%, DM basis) and supplemental fat (0% supplemental fat vs 4% tallow [T], yellow grease [YG], or griddle grease [GG]) on growth performance and NE value of the diet. Dietary Mg level did not influence (P > .10) growth performance. Daily weight gain was lower (11%, P < .05) for steers fed GG than for those fed YG. Supplemental fat decreased (5%, P < .10) DMI and increased (P < .05) gain efficiency (7%). There was a fat x Mg level interaction (P < .01) for dietary NE. The increase in dietary NEg with T and YG supplementation was similar (8.6 vs 8.0%) for diets containing .18 and .32% Mg. In contrast, the increase in dietary NEg with GG supplementation was 8.9% with .18% dietary Mg, but the NEg value of the diet did not increase when GG was added to diets with .32% dietary Mg. Dressing percentage was lower (1.5%, P < .1) and retail yield was greater (2.2%, P < .05) for steers fed GG- than for steers fed YG-supplemented diets. Increasing dietary Mg level increased kidney, pelvic, and heart fat (5.5%, P < .05). There was a fat x Mg level interaction (P < .1) for marbling score. With diets containing no supplemental fat, increasing dietary Mg decreased (15.2%) the marbling score, and with diets containing supplemental fat, increasing dietary Mg increased (7.2%) the marbling score. Fat supplementation decreased (P < .01) ruminal and total tract digestion of OM (10 and 3.5%, respectively) and NDF (37 and 17%, respectively). Supplemental fat did not affect (P > .10) Ca digestion but decreased (41.7%, P < .01) apparent Mg digestion. Increasing dietary Mg level increased (77.7%, P < .05) apparent Mg digestion. There were no treatment effects (P > .10) on postruminal fatty acid digestion. Fat supplementation decreased (17.3%, P < .01) the acetate:propionate molar ratio. Total ruminal protozoal counts were increased (12.7%, P < .05) by increasing dietary Mg level and decreased (12.9%, P < .05) by fat supplementation. We conclude that supplemental fats may depress Mg absorption. Increasing dietary magnesium levels beyond current recommendations may increase marbling scores in cattle fed fat-supplemented diets but may not affect growth performance or dietary NE. The NE value of fat is a predictable function of level of fat intake.  相似文献

Two trials that utilized 356 yearling steers were conducted to evaluate the effects of fat sources (3.5% of diet dry matter) in steam-flaked milo finishing diets. Fats differed in fatty acid composition and level of free fatty acids. In Trial 1, soybean oil, tallow and yellow grease were compared to a nonfat control. Feeding fat increased (P less than .05) daily gain, feed efficiency, estimated diet NE concentration, carcass weight and dressing percentage of steers. In Trial 2, fat treatments were control, acidulated soybean soapstock (SBSS), tallow, a blend of 70% SBSS:30% tallow, and yellow grease. Feeding tallow or the SBSS:tallow blend improved (P less than .05) feed efficiency and estimated dietary NE compared to control. Proportions of palmitic, stearic, oleic, linoleic and linolenic acid in longissimus muscle of steers were altered (P less than .05) by source of supplemental fat. Potential variability in animal response to fat blends was demonstrated by differences in animal response to yellow grease in the two trials. It was concluded that fats vary in feeding value and may alter carcass composition, contrary to putative thought. Further, potential associative effects of fat blends and interactions of fat with other dietary components in high-grain finishing diets require further investigation.  相似文献

Use of poultry fat in the finishing diets of steers has not been studied as a potential source of added energy. Therefore, 60 Angus crossbred steers were fed 1 of 3 dietary treatments consisting of 1) a corn-soybean meal control diet devoid of added fat; 2) the control diet formulated with 4% tallow; or 3) the control diet formulated with 4% poultry fat. Addition of fat did not (P = 0.17) affect ADG for the 112-d study. The inclusion of tallow in the diet reduced (P < 0.05) ADFI of steers compared with those on the control diet; however, ADFI of steers fed poultry fat did not differ from those fed the control (P = 0.06) or the tallow (P = 0.36) diets. At d 55, steers consuming either fat source had improved (P < 0.05) G:F compared with steers fed the control diet. For the entire 112 d, steers consuming the poultry fat diet gained more efficiently (P < 0.05) than the control steers, and the tallow-fed steers were intermediate and not different from the other groups (P > or = 0.14). The inclusion of fat in the diet did not (P > or = 0.15) affect carcass characteristics. Steaks from the steers consuming diets with added fat were darker (lower L* value; P < 0.05) than the controls; however, dietary treatments did not (P > or = 0.10) affect any other objective color measurements or discoloration scores during retail display. Thiobarbituric acid reactive substances for LM steaks did not differ (P = 0.21) by dietary treatment. The cooked LM steaks from steers fed poultry fat did not (P > or = 0.80) differ in juiciness or flavor intensity from steaks of steers fed the control or tallow diets. There were also no differences (P = 0.18) in off flavors as a result of added dietary fat. In the LM and adipose tissue, percentages of total SFA were increased (P = 0.05) by adding supplemental fat to the diet, regardless of source. In the LM, total MUFA were decreased (P = 0.02) by adding supplemental fat. Conversely, diet did not (P > or = 0.14) affect the proportions of total PUFA in either tissue or total MUFA in the adipose tissue. Results indicated that replacing beef tallow in finishing diets with poultry fat, a more economical energy source, had no detrimental effects on growth performance, carcass characteristics, retail display life, fatty acid profiles, or palatability.  相似文献

In Exp. 1 two groups of 18 sows were used to evaluate the effects of supplemental dietary fat on sow and litter performance and milk production and composition. Sows were provided ad libitum access to either a corn-soybean meal (control) diet or a similar diet containing 10% tallow. Feed intake, ME intake, and milk yield did not differ (P > .10) between treatments. The percentage of solids in milk was greater (P < .05) for sows fed the tallow diet, due to an increase (P < .05) in the fat and ash content. Compared with percentages of fatty acids in milk of sows fed the control diet, the percentages of C10:0, C14:0, C16:0, C16:1, and C18:3 fatty acids were lower (P < .05) and the percentages of C18:0 and C18:1 fatty acids were higher in milk of sows fed tallow diets (P < .05). In Exp. 2, 30 sows were fed diets similar to those fed in Exp. 1, and the effects of a tallow diet on pig carcass composition at weaning were determined. Litter size was standardized to 10 pigs. There were no differences (P > .10) in ADFI of sows. Daily ME intake was greater for sows fed tallow than for control sows during wk 2 (P < .05), wk 3 (P < .10), and the entire lactation (P < .05) period. Litter weaning weight was greater (P < .05) for pigs from sows fed tallow diets than for pigs from control sows. Pigs from tallow-fed sows had greater carcass fat weight and fat percentages (P < .05) and lower water and protein percentages (P < .05). These data indicate that the increased fat content of milk from sows fed tallow diets resulted in an increased weight gain for litters nursing these sows. The composition of the increased weight gain is almost exclusively fat.  相似文献

Two comparative slaughter trials and a metabolism trial were conducted. Treatments consisted of: 1) 0 fat, 0 monensin; 2) 4% yellow grease, 0 monensin; 3) 0 fat, 33 mg/kg monensin and 4) 4% yellow grease, 33 mg/kg monensin. Trial 1 involved 104 crossbred beef steers (267 kg) in a 140-d comparative slaughter trial. There were no interactions (P greater than .20) between supplemental fat and monensin on steer performance. Monensin supplementation decreased rate of weight gain (P less than .10) and feed intake (P less than .05) with no effect on energy value of the diet (P greater than .20). Fat supplementation increased (P less than .01) rate of weight gain 12.5% and increased the net energy for maintenance (NEm) and net energy for gain (NEg) value of the diet 8.5 and 9.4%, respectively. Trial 2 involved 154 Holstein steers (290 kg) in a 94-d comparative slaughter trial. There were no interactions between supplemental fat and monensin (P greater than .20). Monensin supplementation did not affect rate or composition of gain (P greater than .20), but supplementation reduced (P less than .05) feed intake and feed required per unit weight gain 3.6%. Fat supplementation increased (P less than .01) fat and energy gain 12.5 and 10.3%, respectively, and the NEm and NEg content of the diet 7.5 and 8.4%, respectively. Trial 3 utilized four crossbred beef steers (220 kg) with cannulas in the rumen, proximal duodenum and distal ileum. There were no interactions between supplemental fat and monensin with respect to site of digestion (P greater than .20). Supplemental fat did not affect (P greater than .20) organic matter, starch, fiber or N digestion. Intestinal digestibility of fat averaged 77.3%. Monensin increased (P less than .10) intestinal digestibility of fat 7.4%. There were negative associative effects between supplemental fat and monensin on ruminal acetate:propionate ratios and estimated methane production. It was concluded that the feeding value of feed fat is underestimated in tables of feed standards currently in use, and that the net effects of monensin on these estimates are additive.  相似文献

Twenty-four steers initially averaging 221 kg BW were used to evaluate the effects of lysocellin and calcium (Ca) level on performance and ruminal and plasma characteristics. Lysocellin at 0 or 22 mg/kg of diet and Ca at .3 or .6% were fed in a 2 X 2 factorial arrangement of treatments. Steers in individual pens had ad libitum access to a diet consisting of 80% corn silage and 20% (DM basis) of a protein, mineral and vitamin supplement. Ruminal fluid and blood samples were collected on d 42 and 85 of the 113-d trial. Steers fed the .6% Ca diet gained faster and required less feed/unit of gain than those fed the .3% Ca diet (P less than .05). There was a tendency for a lysocellin X Ca interaction for gain and feed efficiency (P less than .10). Lysocellin tended to depress performance when fed with .3% Ca, but it tended to improve gain and feed efficiency when fed with .6% Ca. Molar proportions of propionate were higher and those of acetate were lower (P less than .01) for steers fed lysocellin. Ruminal-soluble Zn, Fe and Cu levels were higher (P less than .01) in steers fed lysocellin. Ruminal-soluble Ca (P less than .01) was higher and ruminal-soluble P and Na were lower (P less than .01) in steers fed .6% Ca. Plasma K was higher (P less than .05) in steers fed .6% Ca but it was lower (P less than .05) in steers fed lysocellin. Results of this study indicate that dietary Ca affects certain metabolic responses to lysocellin in growing cattle.  相似文献

One hundred forty British x Exotic crossbred, yearling steers (370 kg) were used in a 2 x 2 factorial experiment to evaluate main effects and the interaction of grain type (steam-flaked sorghum grain [SFSG] or steam-flaked corn [SFC]) and level of supplemental far (0 or 4% yellow grease [YG]) on feedlot performance, diet NE concentration, carcass traits, and chemical composition and sensory properties of longissimus muscle. Steer performance and estimated dietary NEm and NEg values were not different between SFSG and SFC. Supplemental YG improved (P less than or equal to .05) gain/feed and estimated NEm and NEg of both SFSG and SFC diets. Compared with steers fed SFSG, steers fed SFC had a more yellow (P less than .05) subcutaneous fat color. Supplemental YG had an additive effect (P less than .025) on yellow color of subcutaneous fat but improved (P less than .08) the lean color of longissimus muscle. Grain type or supplemental YG had no effect on sensory properties or mechanical shear of longissimus muscle. Longissimus muscle cholesterol content was elevated (P less than .05) by supplemental YG (.49 vs .52 mg/g of wet tissue for 0 vs 4% YG, respectively); however, the biological significance of this result is questionable. Similarly, effects of YG on increased (P less than .05) stearic acid concentration and a higher concentration (P less than .05) of linoleic acid measured in longissimus muscle of steers fed SFSG vs SFC were small in magnitude. An experiment was conducted to evaluate the effects of grain processing and lipid addition to finishing diets on cattle performance, carcass characteristics, and meat quality. Eighty Hereford x Angus steers (384 kg +/- 17 kg of BW) were fed diets containing steam-flaked corn (SFC) or dry-rolled corn (DRC) with and without the addition of tallow (SFC/Fat and DRC/Fat) or steam-flaked corn with ground flaxseed (SFC/Flax). Ribeye steaks from steers fed SFC, SFC/Fat, or SFC/ Flax were used to evaluate the effects of fat source on meat quality. Cattle fed SFC and SFC/Fat tended to have greater ADG, G:F, HCW, and USDA yield grade, compared with those fed DRC and DRC/Fat (P < 0.10). Steaks from steers fed SFC/Flax developed a detectable off-flavor (P < 0.05) compared with steaks from steers fed SFC and SFC/Fat, and steaks from steers fed SFC retained desirable color longer than those from steers fed SFC/Flax (P < 0.05). Feeding SFC/Flax increased deposition of alpha-linolenic acid in muscle tissue compared with feeding SFC or SFC/Fat (P < 0.01). Dietary treatment did not cause differences in tenderness, juiciness, or flavor intensity. Ground flaxseed can replace tallow in finishing diets without loss in performance, but flax may affect flavor and color stability of beef. Feeding flaxseed can effectively alter composition of carcass tissues to yield beef that is high in n-3 fatty acids.  相似文献

Forty-five Angus steers (avg initial wt 330 kg) were individually fed for 112 d to assess the value of supplemental Zn and source on performance and carcass quality. Steers had ad libitum access to a control diet (81 ppm Zn) of 33% whole corn, 33% ground milo, 15% cottonseed hulls and 13% cottonseed meal, or this control diet with 360 mg Zn/d added from either zinc methionine or zinc oxide. Steers were slaughtered on d 114, and carcass composition was determined by specific gravity. Average daily gain and feed efficiency were not affected by dietary treatments. Steers fed zinc methionine had a higher (P less than .05) USDA quality grade than those fed the control and zinc oxide diets. Marbling score was higher (P less than .05) for steers fed zinc methionine than for those fed control and zinc oxide treatments (4.4 vs 4.0 and 4.0, respectively, where 3 = slight, 4 = small, 5 = modest). Steers fed zinc methionine tended to have more (P less than .10) external fat (13 mm) than steers fed the control diet (10 mm); steers supplemented with zinc oxide had intermediate amounts of external fat (11 mm). Steers fed zinc methionine had 10.5 and 12.8% more (P less than .05) kidney, pelvic and heart (KPH) fat than steers fed control or zinc oxide diets, respectively. The effects of zinc methionine on carcass quality grade and marbling score may be due to Zn and (or) methionine. Regardless of the mechanism, the difference represents a potential economic benefit to producers.  相似文献

Sixty-four Angus steers initially averaging 354 kg were allotted to a 2 X 2 factorial arrangement of treatments to determine the effects of dietary Ni (0 or 5 mg/kg supplemental), monensin (0 or 33 mg/kg) and their possible interaction on performance, methane production and N metabolism. The basal diet was a high energy, corn-cottonseed hull based diet containing 10.2% crude protein and .30 mg/kg Ni on a dry matter basis. Monensin reduced (P less than .05) feed intake, did not affect average daily gain and improved (P less than .05) feed conversion over the 102-d study. Nickel supplementation did not significantly alter or interact with monensin to affect steer performance. However, steers fed Ni tended to have higher average daily gains and improved feed conversions. Monensin decreased (P less than .05) in vitro methane production, altered several carcass traits, increased (P less than .05) molar proportion of ruminal propionate and decreased (P less than .05) molar proportion of ruminal acetate. Nickel did not alter methane production, carcass characteristics or ruminal volatile fatty acid proportions. Both monensin and Ni increased (P less than .05) ruminal fluid urease activity when samples were obtained before feeding. A significant monensin X Ni interaction was found to affect ruminal epithelial urease activity. Monensin increased ruminal epithelial urease in steers not receiving supplemental Ni, but had no effect on ruminal epithelial urease activity in steers fed supplemental Ni. Ruminal fluid protein and ammonia-N were decreased (P less than .05) by monensin. Results of this study indicate that Ni may interact with monensin to affect ruminal epithelial urease activity but not performance or methane production in finishing steers.  相似文献

A 2 x 2 factorial experiment with 48 crossbred steers (with Hereford, Angus, and Charolais genetics, and an initial BW of 373 +/- 8.4 kg) was conducted to evaluate the effects of dietary sunflower seeds (SS) and tylosin phosphate (TP) on production factors, carcass characteristics, liver abscess incidence, and fatty acid composition of the muscle (pars costalis diaphragmatis; PCD) and subcutaneous fat. Individually penned steers were fed either a control diet of 84.5% rolled barley, 14% barley silage, and 1.5% mineral and vitamin mix on a DM basis, or an SS diet, in which SS replaced 15% of the diet. Half the animals fed each diet received TP at 11 mg/kg of DM as a top dressing. Interactions were significant for all production factors. A reduction (P = 0.008) in DMI was observed from 10.1 +/- 0.4 kg/d, in steers fed the control diet, to 8.9 +/- 0.3 and 8.6 +/- 0.3 kg/d, in steers fed the SS and SS + TP diets, respectively. Greater (P = 0.014) ADG was observed for steers fed the control diet than for those fed the SS or SS + TP diet (1.4 vs. 1.1 and 1.2, SE = 0.1 kg/d, respectively); however, G:F ratios were greater (P = 0.011) in steers fed the control diets than in those fed the SS diets. Steers fed the control and SS diets had the heaviest and lightest HCW (347 +/- 6.9 vs. 325 +/- 8.4 kg; P = 0.025), respectively. Lean meat yield (%) of steers fed SS was greater (P = 0.117) than in steers fed the control diets, whereas total lean yield [(HCW x lean meat yield)/100] was similar (P = 0.755). Provision of the SS or SS + TP diet eliminated (P = 0.08 for interaction) liver abscesses compared with the 36 and 9% incidence in steers fed the control or control + TP diet, respectively. Fatty acid weight percentages (wt%) followed similar patterns in PCD and subcutaneous fat. Feeding the SS diets led to greater (P = 0.001) wt% of 18:0 and 18:2n-6, but reduced the wt% of 16:0, 9-cis (c)-18:1, and 18:3n-3 in PCD compared with that in steers fed the control diets, but the wt% of 9c,11-trans (t), and 10t,12c CLA were increased (P = 0.001) by 36 and 400% in PCD. Dietary SS increased (P < 0.001) the wt% of trans-18:1 isomers. The 10t-18:1 and 11t-18:1 isomers were the greatest, but dietary TP elevated (P = 0.004) only 10t-18:1, and total trans-18:1 (excluding 11t-18:1) was 0.47 +/- 0.06 g/100 g of PCD. Dietary SS for finishing steers reduced the incidence of liver abscesses without affecting total lean yield of the carcass, with modest increases in trans fatty acids and in potentially beneficial fatty acids (11t-18:1 and CLA).  相似文献

Two hundred twenty-eight crossbred steers (304 kg) were used in a 125-d comparative slaughter trial to evaluate the influence of level and source of supplemental fats on their feeding value for feedlot cattle. Dietary treatments consisted of a steam-rolled, barley-based finishing diet containing 1) no supplemental fat; 2) 4% yellow grease (YG); 3) 4% blended animal-vegetable fat (BVF); 4) 8% YG; 5) 8% BVF or 6) 6% BVF and 2% crude soybean lecithin. Increasing level of supplemental fat in the diet resulted in linear improvements (P less than .01) in weight gain, feed conversion and NE value of the diet. Estimated NE values of YG and BVF were similar and did not appear to be influenced by level of supplementation, averaging 5.78 and 4.61 Mcal/kg for maintenance and gain, respectively. Fat supplementation resulted in linear increases in empty body fat (P less than .01), kidney, pelvic and heart fat (P less than .01) and marbling score (P less than .05). Partially replacing BVF with lecithin did not influence (P greater than .10) steer performance, carcass merit or estimated NE value of the diet. The comparative feeding value (in terms of both diet acceptability and NE value) of the supplemental fats tested was similar and was apparently not influenced by level of supplementation up to 8% of diet DM.  相似文献

Ruminally cannulated steers (281 +/- 18 kg) were used to evaluate effects of choline on digestion and metabolism. Four steers were implanted with 24 mg of estradiol and 120 mg of trenbolone acetate, and four steers were not implanted. Cattle were assigned to concurrent 4 x 4 Latin squares. Dietary treatments were a 2 x 2 factorial: 0 or 4% tallow (DM basis) in corn-based diets, and 0 or 5 g/d supplemental choline administered abomasally. Blood collected before and 6 h after the initial choline infusion was used to assess acute responses to choline. Digestibility and blood metabolites were measured after adaptation to choline, as well as after an abomasal dose of 100 g of lipid. Digestibilities of dietary DM (P = 0.29) and of dietary total fatty acids (P = 0.42) were not affected by choline. Apparent digestibilities of C18:0 and C18:1 fatty acids were greater (P < 0.05) when diets contained 4% tallow. Digestibilities of fatty acids in the lipid dose were less than those in the diet, and no biologically important differences in fatty acid disappearance resulted from the treatments. No significant acute responses to choline were detected. After adaptation to choline, no important differences in plasma metabolites occurred in response to choline infusion. Plasma urea was less (P < 0.05) for implanted cattle, reflecting increased deposition of protein. Plasma cholesterol was greater (P < 0.05) for steers fed 4% tallow. Changes in plasma triglycerides in response to an abomasal lipid dose were less (P < 0.05) for steers fed 4% tallow, probably due to greater triglyceride concentrations at the time of lipid dosing. In summary, few responses to abomasally infused choline were observed in either digestion or plasma metabolites.  相似文献

To measure the effects of dietary fat on feedlot performance and carcass characteristics, and on beef appearance, moisture binding, shelf life, palatability, and fatty acid content, 126 crossbred beef steers (321.1 +/- 0.57 kg of BW) were allotted to a randomized complete block (3) design with a 3 x 2 + 1 factorial arrangement of dietary treatments. The main effects were level of yellow grease (0, 3, or 6%) and alfalfa hay (3.5 or 7%) in corn-based diets containing 15% potato by-product (PB). The added treatment was 6% tallow and 7% alfalfa in a barley-based diet containing 15% PB. Dry matter intake and ADG were not affected by diet; however, G:F and diet NE content increased linearly (P < 0.10) with yellow grease. Kidney, pelvic, and heart fat (2.0 to 2.3 +/- 0.07) and yield grade (2.8 to 3.1 +/- 0.09) increased linearly (P < or = 0.05) with yellow grease. Steers fed corn plus 6% yellow grease had lower (P < 0.05) beef firmness and beef texture scores but greater (P < 0.01) fat color score than those fed barley plus 6% tallow. Moisture retention of beef was not affected by dietary treatment, except purge score during retail storage, which was decreased linearly (P < 0.01) from 2.1 to 1.6 +/- 0.06 by level of yellow grease. Steaks from steers fed barley plus 6% tallow had greater (P < 0.05) shear force than those from steers fed corn plus 6% yellow grease, and beef flavor increased linearly (P < 0.05) from 6.2 to 6.7 +/- 0.11 as the level of yellow grease increased. Level of yellow grease linearly increased (P < 0.01) transvaccenic acid (TVA) by 61% and CLA content of beef by 48%. Beef from steers fed corn plus yellow grease had lower (P < 0.05) palmitoleic and oleic acids and greater (P < 0.05) linoleic, TVA, and CLA than beef from steers fed the barley-tallow diet. Feeding yellow grease increased diet energy content, which increased carcass fatness, and altered beef fatty acid content, which increased beef flavor without affecting moisture retention, shelf life, or cooking properties of the beef. Additionally, beef from steers fed corn plus 6% yellow grease was more tender and had more polyunsaturated fatty acid content and CLA than beef from steers fed barley plus 6% tallow.  相似文献

One hundred thirty crossbred steers (324 kg) were used in a 121-d comparative slaughter trial to evaluate the feeding value of fat in steam-flaked corn- (SFC) or wheat- (SFW) based diets. Treatments consisted of an 88% concentrate finishing diet containing 1) SFC, no fat; 2) SFC, 6% yellow grease (YG); 3) SFC, 6% cottonseed oil soapstock (COS); 4) SFW, no fat; 5) SFW, 6% YG; and 6) SFW, 6% COS. There were no interactions (P greater than .10) between grain type and performance response to supplemental fat. Fat supplementation increased (P less than .05) ADG by 7.3% and decreased (P less than .01) DMI/gain by 10.6%. Fat supplementation decreased (P less than .05) ruminal OM digestion by 5% and net flow of microbial N to the small intestine by 14.5% but did not affect (P greater than .10) total tract digestion of OM, ADF, or starch. Substituting SFW for SFC did not influence (P greater than .10) ADG but tended (P greater than .10) to increase DMI/gain and decreased (P less than .05) the NEm and NEg of the diet by 3.4 and 4.3%, respectively. Ruminal OM digestion was similar (P greater than .10) for SFC and SFW. Flow of microbial N to the small intestine was 12% greater (P less than .05) with SFW. Total tract digestibilities of OM and starch were similar (P greater than .10) for both grains. However, ADF digestion was lower (34%, P less than .01) with SFW. It is concluded that the feeding value of supplemental fat is similar for wheat- and corn-based finishing diets. The performance response to supplemental YG and COS was similar. The NEm and NEg values of YG were 6.35 and 4.93 Mcal/kg, respectively, whereas the corresponding values for COS were 5.69 and 4.60 Mcal/kg. Supplementation of growing-finishing diets with up to 6% (.45 kilograms/day) of fat did not directly influence body composition. Two experiments were conducted with Polypay ewes nursing twin lambs to evaluate the effects of supplementing fat (calcium salts of palm oil fatty acids or hydrogenated tallow) on ewe lactation. In Exp. 1, ewes were fed a 52% concentrate:48% hay-based diet (as-fed basis) consisting of alfalfa hay (n = 4), endophyte-free fescue hay (n = 4), or fescue hay with 3.7% fatty acids (n = 4) from d 4 to 56 of lactation. In Exp. 2, ewes were fed similar diets that had endophyte-free fescue hay (n = 6), fescue hay with 3.7% fatty acids (n = 5), or fescue hay with 3.1% tallow (n = 6) from d 14 before lambing until d 57 of lactation. Diet formulations with supplemental fat were more nutrient dense, and treatments were fed to meet ewe nutrient requirements; this caused diets with added fat to be offered at 10 and 17% lower rates than unsupplemented diets in Exp. 1 and 2, respectively. Lambs were maintained to consume only ewe milk. Ewe milk production and composition were determined using a portable milking machine following a 3-h separation from lambs. In Exp. 1, milk fat content was increased (P < 0.01) when ewes consumed fescue hay with fatty acids vs. the fescue hay diet (11.4 vs. 8.3%). Ewes fed fescue hay with fatty acids lost the most (P < 0.05) weight over lactation (-8.6 kg) compared with ewes fed the alfalfa hay (-2.4 kg) and fescue hay (-3.8 kg) diets. Other milk measures, lamb gain, and production efficiencies were not changed. In Exp. 2, ewes supplemented with fatty acids produced more (P < 0.05) milk fat than those fed tallow (290 vs. 210 g/d). The proportion of synthesized milk fat 14:0 was decreased (P < 0.01), but the percentage of incorporated 16:0 increased (P < 0.05) when fatty acids were fed. Dietary fat digestibility by ewes was increased (P < 0.01) by fatty acid supplementation but decreased (P < 0.01) when tallow was added. Although ewe weight measures were not changed in Exp. 2, twin lamb gain per ewe organic matter intake was most efficient (P < 0.05) when ewes were supplemented with fatty acids. Results suggest that feeding hydrogenated tallow decreased nutrient availability for ewe milk fat production. A complete diet based on endophyte-free fescue hay can replace a traditional alfalfa hay diet, whereas supplementing with the calcium salts of palm oil fatty acids may be more feasible when energy is limiting during ewe lactation.  相似文献

The present study was designed to determine the effects of supplemental fat or oil rich in oleic acid on the fatty acid profiles (FAP) and physical and sensory traits of pork carcasses. Sixty barrows and gilts were equally distributed among five dietary treatments consisting of a control diet of corn and soybean meal and four similar test diets that contained 10% animal fat (45.3 oleic), safflower oil (72.1 oleic), sunflower oil (80.9 oleic) or canola oil (57.7 oleic). The pigs were slaughtered after being fed these diets for 90 d at about 100 kg live weight. Carcass traits, FAP and sensory properties were evaluated for each treatment. First-rib fat thickness, ham muscling score and longissimus muscle areas were not different (P less than .05), but last-rib fat thickness was increased (P less than .05) with the supplemental dietary fat or oils. No differences existed for marbling scores, lean color, firmness or texture scores between the controls and pigs supplemented with either animal fat or safflower oil. However, pigs supplemented with sunflower or canola oil had lower marbling scores, lean color, firmness and texture scores. Fat became softer and more oily (P less than .05) with the supplemental dietary safflower, sunflower and canola oils. Sensory evaluation (loin chops) showed no differences (P less than .05) in sustained juiciness, tenderness or flavor intensity evaluations among treatments. However, the pigs fed canola oil had lower (P less than .05) flavor quality scores or overall palatability evaluations. Three experiments evaluated the lipids in distillers grains plus solubles compared with corn or other sources of lipid in finishing diets. Experiment 1 utilized 60 individually fed yearling heifers (349 +/- 34 kg of BW) fed treatments consisting of 0, 20, or 40% (DM basis) wet distillers grains plus solubles (WDGS), or 0, 2.5, or 5.0% (DM basis) corn oil in a finishing diet based on high-moisture corn (HMC) and dry-rolled corn. Cattle fed 20 and 40% WDGS had greater (P < 0.10) G:F than cattle fed 0% WDGS. Cattle fed the 5.0% corn oil had less overall performance than cattle fed the other diets. Results from Exp. 1 indicated that adding fat from WDGS improves performance, whereas supplementing 5.0% corn oil depressed G:F, suggesting that the fat within WDGS is different than corn oil. Experiment 2 used 234 yearling steers (352 +/- 16 kg of BW) fed 1 of 5 treatments consisting of 20 or 40% (DM basis) dry distillers grains plus solubles, 1.3 or 2.6% (DM basis) tallow, or HMC. All diets contained 20% (DM basis) wet corn gluten feed as a method of controlling acidosis. No differences between treatments for any performance variables were observed in Exp. 2. The dry distillers grains plus solubles may be similar to tallow and HMC in finishing diets containing 20% wet corn gluten feed. Experiment 3 used 5 Holstein steers equipped with ruminal and duodenal cannulas in a 5 x 5 Latin square design. Treatments were a 40% WDGS diet, 2 composites, one consisting of corn bran and corn gluten meal; and one consisting of corn bran, corn gluten meal, and corn oil; and 2 dry-rolled corn-based diets supplemented with corn oil or not. Cattle fed the WDGS diet had numerically less rumen pH compared with cattle fed other treatments. Cattle fed WDGS had greater (P < 0.10) molar proportions of propionate, decreased (P < 0.10) acetate:propionate ratios, greater (P < 0.10) total tract fat digestion, and a greater (P < 0.10) proportion of unsaturated fatty acids reaching the duodenum than cattle fed other treatments. Therefore, the greater energy value of WDGS compared with corn may be due to more propionate production, greater fat digestibility, and more unsaturated fatty acids reaching the duodenum.  相似文献

Experiments were conducted to evaluate the effects of dietary energy density or genetic background on protein and fat gain of growing cattle. In Exp. 1, 24 Limousin steers were used in a growing-finishing trial. A 2 X 2 factorial arrangement was used with steers randomly allotted to four treatment combinations and fed the following diets: 80% concentrate, high moisture corn-corn silage diet (HI) or a corn silage diet (LO) during both the growing (GRO) and(or) the finishing (FIN) phases. Body composition for both experiments was determined by a deuterium oxide dilution technique. Empty body weight gains were greater (P less than .05) for HI during GRO, FIN and the total trial. Daily protein gains (DPG) were greater (P less than .05) for HI during GRO and FIN, while cattle receiving HI during at least FIN had the greatest (P less than .05) overall DPG. Daily fat gains (DFG) followed the pattern of DPG, being more rapid (P less than .05) for cattle fed HI during either GRO or FIN. Cattle fed the HI diet also tended to be more energetically efficient. In Exp. 2, large frame (LG) and small frame (SM) cattle were used for the evaluation of frame size effects on protein and fat deposition. Steers were individually fed an 80% concentrate, corn-based diet during the entire trial. Average daily gains and daily dry matter intake (P less than .05, P less than .01) were greater for LG, while feed efficiency was similar for both cattle types. Large cattle had greater (P less than .05) DPG than SM cattle, however, DFG were not different. Small frame steers were energetically more efficient (P less than .05), apparently due to composition of gain difference.  相似文献
