An experiment was conducted to determine the effect of dietary betaine (0, 0.125, 0.250, or 0.500%) on growth, carcass traits, pork quality, plasma metabolites, and tissue betaine concentrations of cross-bred finishing pigs. Four replications of three pigs (two barrows and one gilt) each were used for each treatment. The basal diet contained 0.85 (69 to 88 kg BW) or 0.65% Lys (88 to 115 kg BW). Overall ADG and gain:feed were not affected (P > 0.10) by betaine, but overall ADFI was decreased (quadratic, P < 0.05; 0 vs betaine, P < 0.01) by betaine; pigs fed 0.250% betaine had the lowest ADFI. Loin muscle area, average back-fat, dressing percentage, percentage lean, total fat, lean:fat, and leaf fat weight were not affected (P > 0.10) by betaine. Tenth-rib backfat thickness was decreased (quadratic, P < 0.05; 0 vs betaine, P < 0.05); pigs fed 0.250% betaine had the lowest 10th-rib backfat thickness. Carcass length was increased (linear, P < 0.05; 0 vs betaine, P < 0.10) as the level of betaine was increased. Fat-free lean, lean gain per day, ham weight, ham fat-free lean, and ham percentage lean were increased (quadratic, P < 0.10), but percentage fat, total ham fat, percentage ham fat, and butt-fat thickness were decreased (quadratic, P < 0.10); these traits were respectively highest or lowest in pigs fed 0.250% betaine. Thaw loss and 24-h pH were increased (quadratic, P < 0.10; 0 vs betaine, P < 0.05) and cook loss was decreased (linear, P < 0.05) in pigs fed betaine. The CIE L* value for the biceps femoris was decreased (quadratic, P < 0.10; 0 vs betaine, P < 0.10); pigs fed 0.250% betaine had the lowest CIE L* value. Subjective color, firmness-wetness, marbling, percentage moisture and bound water of the loin muscle, and shear force were not affected (P > 0.10) by betaine. Betaine was not detectable (< 0.07 mg/g) in the loin muscle of pigs fed 0% betaine, but betaine was detectable and relatively constant in pigs fed 0.125, 0.250, or 0.500% betaine (0.22, 0.17, and 0.21 mg/g, respectively). Plasma urea N, total protein, albumin, triglycerides, and HDL cholesterol concentrations were not affected (P > 0.10). Plasma total cholesterol (linear, P < 0.10) and NEFA (quadratic, P < 0.10) were increased in pigs fed betaine. Betaine improved carcass traits when provided at 0.250% of the diet and improved some aspects of pork quality.  相似文献

Pea chips are produced as a by-product when field peas are processed to produce split peas for human consumption. The objective of this experiment was to test the hypothesis that inclusion of pea chips in diets fed to finishing pigs does not negatively influence pig growth performance, carcass composition, and the palatability of pork. A total of 24 barrows (initial BW: 58.0 ± 6.6 kg) were allotted to 1 of 4 treatments and fed early finishing diets for 35 d and late finishing diets for 35 d. A corn-soybean meal (SBM) control diet and 3 diets containing pea chips were formulated for each phase. Pea chips replaced 33.3, 66.6, or 100% of the SBM in the control diet. Pigs were housed individually, and all pigs were slaughtered at the conclusion of the experiment. Overall, there were no differences (P > 0.11) in final BW, ADFI, and G:F of pigs among treatments, but there was a quadratic response in ADG (P = 0.04), with the smallest value observed in pigs fed the control diet. Dressing percentage linearly decreased (P = 0.04) as pea chips replaced SBM in diets, but there were no differences (P > 0.20) among treatments in HCW, LM area, 10th-rib backfat, lean meat percentage, and marbling. Likewise, pH in loin and ham, drip loss, and purge loss were not influenced (P > 0.13) by treatment. However, there was a quadratic response (P = 0.08) in 24-h pH in the shoulder, with the smallest value present in pigs fed the diet, in which 66.6% of the SBM was replaced by pea chips. Subjective LM color and Japanese color score standard were reduced (quadratic, P = 0.03 and 0.05, respectively) and LM b* values and hue angle were increased (quadratic, P = 0.09 and 0.10, respectively) when pea chips replaced SBM in the diets. Ham L* (quadratic, P = 0.04), a* (linear, P = 0.02), b* (quadratic, P = 0.07), color saturation (linear, P = 0.02), and hue angle (quadratic, P = 0.05) were increased when pea chips replaced SBM. However, there were no differences (P > 0.16) in shoulder and fat color. Moreover, cook loss percentage, shear force, juiciness, and pork flavor of pork chops were not different (P > 0.10) among treatments, but tenderness of pork chops linearly decreased (P = 0.04) as SBM replaced pea chips. It is concluded that all the SBM in diets fed to growing-finishing pigs may be replaced by pea chips without negatively influencing growth performance or carcass composition. However, pigs fed pea chips will have pork chops and hams that are lighter, and chops may be less tender if pigs are fed pea chips rather than corn and SBM.  相似文献

Two experiments were conducted to determine the effect of soy isoflavones on growth, meat quality, and carcass traits of growing-finishing pigs. In Exp. 1, 36 barrows (initial and final BW, 26 and 113 kg, respectively) were used and each treatment was replicated four times with three pigs each. The dietary treatments were 1) corn-soybean meal (C-SBM), 2) corn-soy protein concentrate (low isoflavones, C-SPC), or 3) C-SPC + isoflavones (isoflavone levels equal to those in C-SBM). Daily gain and ADFI were increased (P < 0.10) in pigs fed the C-SPC relative to pigs fed the C-SPC + isoflavone diet in the late finishing period; otherwise, growth performance was not affected (P > 0.10) by diet. Longissimus muscle area, 10th-rib fat depth, percentage muscling (National Pork Producers Council), 24-h pH and temperature, color, firmness-wetness, marbling, drip loss, and CIE L*, a*, and b* color values were not affected (P > 0.10) by diet. Dressing percentage, carcass length, weight and percentage of fat-free lean in ham and carcass, lean gain per day, lean:fat, and ham weight were increased (P < 0.10), and ham fat and percentage fat in ham and carcass were decreased (P < 0.10) in pigs fed the C-SPC + isoflavone diet compared with pigs fed the C-SPC diet. Pigs fed the C-SPC + isoflavone diet had similar (P > 0.10) carcass traits as pigs fed the C-SBM diet, except carcass length, percentage ham lean and thaw loss were greater (P < 0.10), and total ham fat was less (P < 0.10) in pigs fed the C-SPC + isoflavone diet. In Exp. 2, 60 gilts (initial and final BW, 31 and 116 kg, respectively) were used, and each treatment was replicated five times with four pigs per replicate. The treatments were 1) C-SBM, 2) C-SBM + isoflavone levels two times those in C-SBM, and 3) C-SBM + isoflavone levels five times those in C-SBM. Daily feed intake was linearly decreased (P < 0.10) in the growing phase and increased (P < 0.10) in the late finishing phases as isoflavone levels increased; otherwise, growth performance was not affected (P > 0.10) by diet. Diet did not affect (P > 0.10) carcass traits; however, CIE a* and b* color scores and drip loss were decreased (P < 0.06) as isoflavone levels increased. Soy isoflavones decreased fat and increased lean in barrows when fed within the dietary concentrations found in typical C-SBM diets but not when fed to gilts at concentrations above those present in C-SBM diets.  相似文献

An experiment was conducted to determine the effects of betaine, pen space, and preslaughter handling method on growth, carcass traits, and pork quality of finishing barrows. For the growth trial, a 2 x 2 factorial arrangement of treatments was used: betaine (0 or 0.250%) and(or) pen space (m2/pig; adequate, 0.035 BW0.67 kg, or inadequate, 0.025 BW0.67 kg). Each treatment was replicated five times with four barrows per replicate. At trial termination, two barrows from each pen were selected to receive either minimal or normal preslaughter handling. Reducing pen space decreased (P < 0.05) overall ADG and gain:feed and tended (P = 0.12) to decrease overall ADFI. Betaine had no affect (P > 0.10) on overall ADG, ADFI, or gain:feed. Pigs fed betaine had decreased (P < 0.10) carcass length. Other carcass and ham measurements were not affected (P > 0.10) by betaine. Pigs with inadequate pen space had increased (P < 0.10) ultimate pH, subjective color, cooking loss (fresh and frozen chop), and shear force but decreased rectal temperature, loin muscle CIE L*, biceps femoris CIE b*, and drip loss. Pigs subjected to minimal preslaughter handling had decreased (P < 0.10) rectal temperature, plasma cortisol, loin muscle CIE b*, and fresh chop total loss (drip + cooking loss). Pigs fed betaine had increased (P < 0.01) initial pH and decreased (P < 0.10) drip loss (fresh chop). Cooking loss and total loss (frozen chop) were decreased in pigs fed betaine with adequate pen space but increased in pigs fed betaine with inadequate pen space (betaine x pen space, P < 0.01). Pigs fed betaine may have improved pork quality.  相似文献

A total of 144 barrows and gilts (initial BW = 44 kg) were used in an 82-d experiment to evaluate the effects of dietary fat source and duration of feeding fat on growth performance, carcass characteristics, and carcass fat quality. Dietary treatments were a corn-soybean meal control diet with no added fat and a 2 × 4 factorial arrangement of treatments with 5% choice white grease (CWG) or soybean oil (SBO) fed from d 0 to 26, 54, 68, or 82. At the conclusion of the study (d 82), pigs were slaughtered, carcass characteristics were measured, and backfat and jowl fat samples were collected. Fatty acid analysis was performed, and iodine value (IV) was calculated for all backfat and jowl fat samples. Pigs fed SBO tended to have increased (P = 0.07) ADG compared with pigs fed CWG. For pigs fed SBO, increasing feeding duration increased (quadratic, P < 0.01) ADG and G:F. For pigs fed CWG, increasing feeding duration improved (quadratic, P < 0.01) G:F. For pigs fed SBO or CWG, increasing feeding duration increased carcass yield (quadratic, P < 0.04) and HCW (quadratic, P < 0.02). Dietary fat source and feeding duration did not affect backfat depth, loin depth, or lean percentage. As expected, barrows had greater ADG and ADFI (P < 0.01) and poorer G:F (P = 0.03) than gilts. Barrows also had greater last-rib (P = 0.04) and 10th-rib backfat (P < 0.01) and reduced loin depth and lean percentage (P < 0.01) compared with gilts. Increasing feeding duration of CWG or SBO increased (P < 0.10) C18:2n-6, PUFA, PUFA:SFA ratio, and IV in jowl fat and backfat. Pigs fed SBO had greater (P < 0.01) C18:2n-6, PUFA, PUFA:SFA ratio, and IV but decreased (P < 0.01) C18:1 cis-9, C16:0, SFA, and MUFA concentrations compared with pigs fed CWG in jowl fat and backfat. Barrows had decreased (P = 0.03) IV in jowl fat and backfat compared with gilts. In summary, adding SBO or CWG increased the amount of unsaturated fat deposited. Increasing feeding duration of dietary fat increases the amount of unsaturated fatty acids, which leads to softer carcass fat.  相似文献

The gene (Cbg) encoding cortisol-binding globulin (CBG) has been proposed as a candidate gene to explain genetic variation in cortisol secretion and carcass composition in pigs. The objective of this study was to evaluate the association between CBG and pork quality in 5 European breeding lines, Piétrain, Large White (LW), and Landrace purebred lines, a Duroc synthetic line, and a Meishan (MS) x LW advanced intercross. Cortisol-binding globulin maximum binding capacity (CBG-Bmax) was twice as high (P < 0.05) in MS x LW pigs compared with the other lines. There was no (P > or = 0.364) association between CBG-Bmax and carcass quality traits in Piétrain gilts, but CBG-Bmax was associated with increased loin yields in LW (P = 0.010) and Landrace (P = 0.103) gilts, decreased ham yields (P = 0.082) in Duroc gilts, and increased fat depth (P = 0.064) and leaf fat (P = 0.001) in MS x LW gilts. There was no association between CBG-Bmax and pork quality traits in Piétrain (P > or = 0.269) and Duroc (P > or = 0.114) gilts. Conversely, CBG-Bmax was associated with lighter (higher L* values; P < 0.05) pork in Land-race gilts, as well as lower (P < or = 0.055) ultimate pH in the LM and semimembranosus, and a tendency for lower (P = 0.095) L* values of pork from LW gilts. Within MS x LW pigs, CBG-Bmax was associated with increased drip loss (P = 0.001) and decreased i.m. fat in the semimembranosus (P = 0.005). Because drip loss is an economically important pork quality trait, results of this study could be used in the selection of improved water-holding capacity of pork from synthetic lines involving the MS breed.  相似文献

An experiment was conducted to evaluate the dietary effects of Cr propionate (CrProp) and metabolizable energy (ME) on growth, carcass traits, and pork quality of growing-finishing pigs. One hundred forty-four Cambrough-22 barrows were allotted to four dietary treatments in a randomized complete block design (six replicates of six pigs per replicate; average initial and final body weight were 27 and 113 kg, respectively). The dietary treatments were: 1) corn-soybean meal basal (B; low ME), 2) B + 200 ppb of Cr (as CrProp), 3) B + 200 kcal ME/kg (4.5% added fat; high ME), or 4) B + 200 kcal ME/kg + 200 ppb of Cr. At trial termination, three pigs per replicate were killed to determine dietary effects on carcass traits and pork quality. Overall average daily gain, average daily feed intake, and gain:feed ratio were not affected (P > 0.10) by diet. During the early growing period, average daily gain was increased in pigs fed the CrProp-low-ME diets, but decreased in pigs fed the CrProp-high ME diets (Cr x ME, P < 0.04). Feed intake was increased (P < 0.05) in pigs fed the high-ME diets during the early growing period. Forty-five min and 24 h pH were not affected (P > 0.10) by diet. The CIE L* tended (P = 0.07) to be increased and shear force tended (P = 0.06) to be decreased in pigs fed high-ME diets. Subjective marbling was increased (P < 0.03) and longissimus muscle percentage moisture and thaw loss were decreased (P < 0.04) in pigs fed CrProp. Chromium propionate had no consistent effect on growth and carcass traits in this experiment; however, CrProp did affect some aspects of pork quality.  相似文献

An experiment was conducted to test the hypothesis that field peas may replace soybean meal in diets fed to growing and finishing pigs without negatively influencing pig performance, carcass quality, or pork palatability. Forty-eight pigs (initial average BW 22.7 +/- 1.21 kg) were allotted to 1 of 3 treatments with 2 pigs per pen. There were 8 replications per treatment, 4 with barrows and 4 with gilts. The treatments were control, medium field peas, and maximum field peas. Pigs were fed grower diets for 35 d, early finisher diets for 35 d, and late finisher diets for 45 d. Pigs receiving the control treatment were fed corn-soybean meal diets. All diets fed to pigs receiving the medium field peas treatment contained 36% field peas and varying amounts of corn; soybean meal was also included in the grower and the early finisher diets fed to pigs on this treatment. In contrast, no soybean meal was included in diets fed to pigs on the maximum field peas treatment, and field peas were included at concentrations of 66, 48, and 36% in the grower, early finisher, and late finisher diets, respectively. Pig performance was monitored within each phase and for the entire experimental period. At the conclusion of the experiment, carcass composition, carcass quality, and the palatability of pork chops and pork patties were measured. Results showed that there were no effects of dietary treatments on ADFI, ADG, or G:F. Likewise, there were no differences in carcass composition among the treatment groups, but gilts had larger (P = 0.001) and deeper (P = 0.003) LM, less backfat (P = 0.007), and a greater (P = 0.002) lean meat percentage than barrows. The pH and marbling of the LM, and the 10th rib backfat were not influenced by treatment, but there was a trend (P = 0.10) for more marbling in barrows than in gilts. The subjective color scores (P = 0.003) and the objective color score (P = 0.06) indicated that dietary field peas made the LM darker and more desirable. Pork chops from pigs fed field peas also had less (P = 0.02) moisture loss compared with chops from pigs fed the control diet. Treatment or sex did not influence palatability of pork chops or pork patties. In conclusion, field peas may replace all of the soybean meal in diets fed to growing and finishing pigs without negatively influencing pig performance, carcass composition, carcass quality, or pork palatability.  相似文献

Crossbred pigs (n = 192) from Piétrain x Large White sires mated to Landrace x Large White dams, with a mean BW of 75 +/- 1.3 kg, were used to investigate the effects of gender and slaughter weight (SW) on growth performance, carcass characteristics, and meat quality. Pens of pigs (eight pigs/pen) were assigned randomly to one of six treatments arranged in a 2 x 3 factorial design with two genders (barrows or gilts) and three SW (116, 124, or 133 kg). Each treatment was replicated four times. Over the entire trial, barrows had higher (P < 0.001) ADFI (as-fed basis) and ADG than gilts; however, gilts had higher (P < 0.05) gain-to-feed ratios (G:F) than barrows. Barrows had lower (P < 0.01) dressing percents than gilts and produced fatter (P < 0.001) carcasses that had lower trimmed shoulder (P < 0.10) and ham (P < 0.001) yields than gilts. There was a trend for the semimembranosus muscle (SM) from barrows to have a higher (P < 0.10) 45-min pH than that of gilts, but 24-h pH was 0.11 pH unit higher (P < 0.01) in the SM of barrows than gilts. Gender had no (P > 0.10) effect on the moisture and lipid content of the longissimus muscle (LM), nor did gender affect (P > 0.10) LM color, myoglobin content, or thaw loss percentage. However, the LM from barrows had lower (P < 0.05) cooking loss percentages and tended to have lower (P < 0.10) shear force values than the LM from gilts. Pigs slaughtered at 116 kg had higher (P < 0.05) ADG than pigs slaughtered at 124 and 133 kg. Daily feed intake (as-fed basis) was not (P > 0.10) different among SW; however, pigs slaughtered at 116 and 124 kg had higher (P < 0.001) G:F than those slaughtered at 133 kg. Dressing percent, backfat depth, carcass length, and ham and shoulder weights increased (P < 0.001) as SW increased from 116 to 133 kg. The initial (45-min) pH of the SM from pigs slaughtered at 133 kg was higher (P < 0.05) than from pigs slaughtered at 116 or 124 kg; however, 24-h pH was not (P > 0.10) affected by SW. The LM from pigs slaughtered at 133 kg was darker (lower L* values; P < 0.001), redder (higher a* value; P < 0.01), and had more (P < 0.001) myoglobin than the LM of pigs slaughtered at 116 and 124 kg. Barrows and gilts of this particular crossbreed can be used to produce acceptable quality fresh pork when slaughtered at 116 kg; however, increasing SW to 124 kg, or more, decreased live pig performance and carcass leanness without any additional benefits to pork quality attributes.  相似文献

A total of 120 pigs (60 barrows and 60 gilts; TR4 × PIC 1050; 54.4 kg initial BW) were used in an 83-d study to evaluate the effects of added fat in corn- and sorghum-based diets on growth performance, carcass characteristics, and carcass fat quality. Treatments were arranged in a 2 × 3 factorial with grain source (corn or sorghum) and added fat (0, 2.5, or 5% choice white grease; CWG) as factors. There were 2 pigs (1 barrow and 1 gilt) per pen and 10 replicate pens per treatment. Pigs and feeders were weighed on d 14, 22, 39, 53, 67, and 83 to calculate ADG, ADFI, and G:F. At the end of the trial, pigs were slaughtered and jowl fat and backfat samples were collected and analyzed for fatty acid profile. No interactions were observed for growth performance. Pigs fed sorghum-based diets had greater (P < 0.01) ADG than pigs fed corn-based diets. Adding CWG improved (linear, P < 0.01) ADG. Pigs fed corn-based diets tended to have greater (P < 0.09) carcass yield, 10th-rib backfat, and percentage lean than pigs fed sorghum-based diets. Adding CWG increased (linear, P = 0.02) 10th-rib backfat, tended to increase (linear, P = 0.08) HCW, and tended to decrease (linear, P = 0.07) percentage lean. There was no grain source × fat level interaction for iodine value (IV) in backfat, but an interaction (P = 0.03) was observed for IV in jowl fat. Adding CWG increased (P < 0.01) IV in jowl fat for pigs fed sorghum- and corn-based diets; however, the greatest increase was between 0 and 2.5% CWG in sorghum-based diets and between 2.5 and 5% CWG in corn-based diets. Pigs fed corn-based diets had less (P = 0.01) C18:1 cis-9 and MUFA but greater (P = 0.01) C18:2n-6, PUFA, and backfat IV than pigs fed sorghum-based diets. Increasing CWG in the diet increased (linear, P = 0.01) backfat IV. Of the 2 fat depots, backfat generally had a reduced IV than jowl fat. In summary, feeding sorghum-based diets reduced carcass fat IV and unsaturated fats compared with corn-based diets. As expected, adding CWG increased carcass fat IV regardless of the cereal grain in the diet.  相似文献

Two hundred sixteen crossbred barrows and gilts (84.3 kg BW) were used to test the effects of dietary energy density and lysine:energy ratio (Lys:ME) on the performance, carcass characteristics, and pork quality of finishing pigs fed 10 ppm ractopamine. Pigs were blocked by BW and gender, allotted to 36 pens (six pigs per pen), and pens were assigned randomly within blocks to dietary treatments (as-fed basis) arranged in a 2 x 3 factorial design, with two levels of energy (3.30 or 3.48 Mcal/kg) and three Lys:ME (1.7, 2.4, or 3.1 g lysine/Mcal) levels. Pigs were fed experimental diets for 28 d, and weights and feed disappearance were recorded weekly to calculate ADG, ADFI, and G:F. Upon completion of the feeding trial, pigs were slaughtered and carcass data were collected before fabrication. During carcass fabrication, hams were analyzed for lean composition using a ham electrical conductivity (TOBEC) unit, and loins were collected, vacuum-packaged, and boxed for pork quality data collection. Energy density had no (P > 0.22) effect on ADG or ADFI across the entire 28-d feeding trial; however, pigs fed 3.48 Mcal of ME were more (P < 0.02) efficient than pigs fed 3.30 Mcal of ME. In addition, ADG and G:F increased linearly (P < 0.01) as Lys:ME increased from 1.7 to 3.1 g/Mcal. Carcasses of pigs fed 3.48 Mcal of ME were fatter at the last lumbar vertebrae (P < 0.08) and 10th rib (P < 0.04), resulting in a lower (P < 0.03) predicted fat-free lean yield (FFLY). Conversely, 10th-rib fat thickness decreased linearly (P = 0.02), and LM depth (P < 0.01) and area (P < 0.01) increased linearly, with increasing Lys:ME. Moreover, FFLY (P < 0.01) and actual ham lean yield (P < 0.01) increased as Lys:ME increased in the diet. Dietary energy density had no (P > 0.19) effect on pork quality, and Lys:ME did not (P > 0.20) affect muscle pH, drip loss, color, and firmness scores. Marbling scores, as well as LM lipid content, decreased linearly (P < 0.01) as Lys:ME increased from 1.7 to 3.1 g/Mcal. There was a linear (P < 0.01) increase in shear force of cooked LM chops as Lys:ME increased in the finishing diet. Results indicate that 3.30 Mcal of ME/kg (as-fed basis) is sufficient for optimal performance and carcass leanness in pigs fed ractopamine. The Lys:ME for optimal performance and carcass composition seems higher than that currently used in the swine industry; however, feeding very high Lys:ME (> 3.0 g/Mcal, as-fed basis) to ractopamine-fed pigs may result in decreased marbling and cooked pork tenderness.  相似文献

An experiment was conducted to determine the effects of phytase addition, reduced Ca and available P (aP), and removing the trace mineral premix (TMP) on growth performance, plasma metabolites, carcass traits, pork quality, and tissue mineral content in growing-finishing swine. One hundred twenty cross-bred pigs (initial and final BW of 22 and 109 kg, respectively) were allotted to five dietary treatments on the basis of weight within gender in a randomized complete block design. There were three replications of barrows and three replications of gilts, with four pigs per replicate pen. The dietary treatments were as follows: 1) corn-soybean meal (C-SBM), 2) C-SBM with reduced Ca and aP, 3) C-SBM with reduced Ca and aP plus 500 phytase units/kg of diet, 4) Diet 1 without the TMP, and 5) Diet 3 without the TMP. The Ca and aP were reduced by 0.10% in the low Ca and aP diets and the diets with added phytase. Daily gain, hot carcass weight, dressing percent, kilograms of carcass lean, bone ash percent, and bone strength were decreased (P = 0.10), but liver and kidney weight were increased (P = 0.10) in pigs fed diets with reduced Ca and aP; adding phytase reversed these responses (P = 0.10). The Commission Internationale de I'Eclairage L* was decreased (P = 0.09) in pigs fed the low Ca and aP diet plus phytase relative to those fed the control diet. Removing the TMP had no effect on overall growth performance, but it increased (P = 0.03) 10th-rib backfat thickness and fasting glucose and decreased (P = 0.03) carcass length and ham weight. Liver weight and liver weight as a percentage of final BW were not affected when phytase was added to the control diet, but removing the TMP increased liver weight and liver weight as a percentage of final BW; adding phytase reversed these responses (phytase x TMP, P = 0.06). Removing the TMP decreased (P = 0.08) Zn concentrations in the bone, muscle, and liver, and Cu and Fe concentrations in the bile but increased (P = 0.08) Mn concentrations in the bile and liver of pigs. The addition of phytase reversed the negative effects of the reduced Ca and aP diets. These data indicate that removing the TMP in diets for growing-finishing pigs has no negative effects on growth performance or pork quality, but it had negative effects on carcass traits and had variable effects on tissue mineral content.  相似文献

Dried corn distillers grains with solubles (DDGS) fed to swine may adversely affect carcass quality due to the high concentration of unsaturated fat. Feeding CLA enhances pork quality when unsaturated fat is contained in the diet. The effects of CLA on growth and pork quality were evaluated in pigs fed DDGS. Diets containing 0, 20, or 40% DDGS were fed to pigs beginning 30 d before slaughter. At 10 d before slaughter, one-half of each DDGS treatment group was fed 0.6% CLA or 1% choice white grease. Carcass data, liver- and backfat-samples were collected at slaughter. Longissimus muscle area, 10th-rib back-fat depth, last rib midline backfat depth, LM color, marbling, firmness and drip loss, and bacon collagen content were not altered by DDGS or CLA. We investigated conjugated linoleic acid (CLA) supplementation administered to heavy pigs, assessing carcass characteristics, meat quality, and sensory characteristics of dry-cured (Parma) ham. Thirty-six pigs, averaging 97 kg BW, were assigned randomly to three feeding groups in which diets were supplemented with either 0, 0.25, or 0.5% (as-fed basis) of a CLA preparation containing 65% CLA isomers. All pigs were slaughtered at 172 kg BW. No (P > 0.05) differences were observed in dressing percentage, loin and ham weight, or pH and color of longissimus and semimembranosus muscle. Tenth-rib backfat thickness tended to be lower (P < 0.10) in carcasses from CLA-fed pigs. The oxidative stability of longissimus muscle was greater (P < 0.05) in pigs fed CLA than control, but only at the longer (300 min) oxidation time. Acetyl-CoA carboxylase activity in adipose tissue of CLA-fed pigs was less (P < 0.05) than that of pigs fed diets devoid of supplemental CLA. Composition of ham fat was markedly affected (P < 0.01) by dietary CLA, with higher saturated fatty acids, lower monounsaturated fatty acids, and higher CLA in the fat of CLA-fed pigs regardless of supplementation level. Although melting quality was improved (P < 0.05), most sensory characteristics and the chemical composition of dry-cured hams were not (P > 0.05) affected by incorporation of CLA. Results indicated that dietary CLA alters lipid metabolism, producing lower concentrations of monounsaturated fatty acids and increased concentrations of CLA isomers in the fat of heavy pigs. Moreover, supplementing diets with CLA produced only minimal improvements in Parma ham sensory traits and had no appreciable effects on fresh pork quality.  相似文献

Two experiments were conducted to determine the effect of substituting a more available dietary carbohydrate (CHO) for portions of corn or fat in the diet on growth performance, carcass traits, meat quality, and serum or plasma metabolites in growing-finishing pigs. A three-phase feeding program was used with corn-soybean meal diets formulated to provide 105% of the Lys requirement for barrows or gilts gaining 325 g of lean daily in Exp. 1 or gilts gaining 350 g of lean daily in Exp. 2. Diets were isoenergetic within experiments. All other nutrients met or exceeded suggested requirements. In Exp. 1, pigs were allotted to three dietary treatments (0, 7.5, or 15.0% sucrose), with three replications of barrows and three replications of gilts, and with three or four pigs per replicate pen; average initial and final BW were 25.2 and 106.7 kg. In Exp. 2, gilts were allotted to two dietary treatments (waxy [high amylopectin] or nonwaxy [75% amylopectin and 25% amylose] corn as the grain source), with five replications of four gilts per replicate pen; average initial and final BW were 37.7 and 100.0 kg. In Exp. 1, ADG and gain:feed ratio increased linearly (P < 0.02) as dietary sucrose increased. Minolta color scores, a* and b*, and drip loss (P < 0.06) also increased linearly with added sucrose. In Exp. 2, ADG, carcass weight and length, and the Minolta a* value were greater for pigs fed waxy corn (P < 0.08) than for those fed nonwaxy corn. Feed intake, longissimus muscle area, 10th-rib and average backfat thickness, dressing percentage, fat-free lean, percentage of lean and muscling, lean gain per day, total fat, percentage fat, lean:fat ratio, serum or plasma metabolites (Exp. 1: serum urea N; Exp. 2: serum urea N, and plasma nonesterified fatty acids, triacylglycerols, total and high-density lipoprotein cholesterol, insulin, and total protein), pH of the longissimus muscle, and subjective muscle scores (color, firmness-wetness, and marbling) were not affected by diet in either experiment. In summary, increasing availability of dietary CHO in growing-finishing pig diets improved growth performance, but it did not affect carcass traits.  相似文献

Creatine monohydrate (CMH) was fed during the final stage of growth to determine its effects on fresh pork quality. Twenty-four Duroc-sired market hogs (107 kg) were individually penned and fed a corn-soybean finishing diet containing 0.55% lysine with 2% added choice white grease. Treatments consisted of a control diet (control) tested against two durations of CMH-supplemented diets (25 g CMH x pig(-1) x d(-1)) fed for 5 (5 d) or 10 (10 d) d before slaughter. Eight pigs were used per treatment. Pigs were slaughtered on day 11 of treatment (118 kg). Postmortem pH was measured in the loin (10th rib) and ham semimembranosus at 45 min (pH1) and 24 h (pH2). At 24 h, Hunter L* values were taken at the 10th rib and the ham semimembranosus. At 48 h, drip loss was determined from the loin (8th rib) and semimembranosus. Percentage of moisture, crude fat, and crude protein were determined for loin (9th rib) and semimembranosus. Treatment 2 semimembranosus tended to have a higher pH1 (P = 0.083) and pH2 (P = 0.05) than controls. Although not statistically different, 10 d semimembranosus had the highest proportion of moisture and lowest CP:moisture ratio, suggesting greater myofiber hydration. No statistical differences were detected across treatments for loin pH1, pH2, CP:moisture, or drip loss. Loins and semimembranosus from 5 d pigs had a numerically higher proportion of chemically determined i.m. fat, suggesting optimal intramuscular creatine phosphate saturation may allow for more energy to be stored as i.m. fat. Standard deviations of ham L* value means for 5 d (SD = 2.53) and 10 d (SD = 2.05) were 26 and 48% lower than controls (SD = 3.95). Standard deviations of loin L* value for 5 d (SD = 2.53) and 10 d (SD = 2.53) were 51 and 64% lower than controls (SD = 1.86). These results suggest that CMH supplementation buffers early postmortem and ultimate pH decline in the semimembranosus, which may reduce 48-h moisture loss.  相似文献

为了解江泉黑猪的产肉和肉质特性,本试验选取在相同条件下饲养的100 kg左右的江泉黑猪阉公猪、母猪和杜长大三元杂交猪各10头按照相关规定进行屠宰和肉品质测定。对两种猪胴体指标(胴体重、胴体长、眼肌面积、背膘厚等)、肉质的物理指标(pH、肉色、大理石纹、滴水损失等)、常规化学指标(粗蛋白质、肌内脂肪、水分、灰分含量等)及江泉黑猪氨基酸含量进行了测定。结果表明,与杜长大三元杂交猪相比,江泉黑猪胴体瘦肉率较低,眼肌面积降低了30%左右(P<0.05),而胴体背膘厚较高(P<0.05)。江泉黑猪在肉色、大理石纹、滴水损失、失水率、烹饪损失和肌内脂肪含量等指标上均显著优于杜长大三元杂交猪(P<0.05),其中滴水损失、失水率和烹饪损失分别降低了约4.0%、3.1%和2.7%,肌内脂肪含量提高了约150.0%。由此可见,江泉黑猪在瘦肉产量上低于杜长大三元杂交猪,但在保水性、肌内脂肪含量、肉色、大理石纹等肉质指标上明显优于杜长大三元杂交猪,可为消费者提供品质优良的猪肉。  相似文献

A study was conducted to evaluate differences in performance and in carcass composition and tissue deposition rates between purebred Duroc pigs sired by boars currently available and those sired by boars from the mid-1980s. Two lines were developed by randomly allocating littermate and half-sib pairs of females to matings by current time period (CTP) or old time period (OTP) boars. Pigs from 2 replications were placed on test at a group mean BW of 63.5 kg. Serial ultrasonic measurements of the 10th-rib LM area (LMA), off-midline backfat (BF10), and intramuscular fat percentage (IMF) were collected every 2 wk in the first replication and used to assess deposition rate differences. Off-test ultrasonic LMA, BF10, and IMF measurements from a total of 557 pigs from 23 CTP sires and 232 pigs from 15 OTP sires across 2 replications and at a mean BW of 109 kg were evaluated. All available barrows and randomly selected gilts (n = 277) were sent to a commercial abattoir, and carcass measurements of 10th-rib backfat, last-rib backfat, last lumbar backfat, and LMA were collected. Analysis of serial backfat measurements revealed a linear relationship between back-fat and BW between 73 and 118 kg for pigs from both time periods. Pigs sired by OTP boars deposited more backfat (P < 0.05) at a faster rate than pigs sired by CTP boars over the entire test period. A curvilinear cumulative tissue deposition pattern was revealed for ultrasonically estimated LMA and IMF within both time periods. Significant linear and quadratic regression coefficient differences between lines indicated that pigs sired by CTP boars deposited more LMA and less IMF per kilogram of BW gain than pigs sired by OTP boars. Pigs sired by CTP boars had more LMA and less BF10 (P < 0.05), whereas pigs sired by OTP boars had more IMF (P = 0.04). Carcass evaluation revealed more (P < 0.01) carcass measurements of LMA and less (P < 0.05) carcass measurements of 10th-rib backfat, carcass measurements of last-rib backfat, and carcass measurements of last lumbar backfat for pigs sired by CTP boars. No difference (P > 0.05) between the time periods was found for ADG over the entire test period. Results from this study illustrate that significant progress in carcass composition has been realized within the Duroc breed since the mid-1980s. The long-term selection response in carcass leanness has also resulted in changes in deposition rates of correlated traits such as LMA and IMF.  相似文献

旨在研究不同脱脂米糠水平日粮对苏淮猪胴体性状及肉品质的影响。选取35头初始体重为(62.9±0.8)kg的健康纯种苏淮阉公猪,随机分为5组,每组7个重复,每个重复1头猪,使用奥斯本种猪生产性能测定系统(OTSS)饲喂。对照组(CTRL)饲喂不含脱脂米糠的基础日粮,试验Ⅰ~Ⅳ组分别饲喂7%、14%、21%和28%脱脂米糠的试验日粮,5组日粮的中性洗涤纤维(NDF)水平分别为8.89%、11.80%、12.93%、14.35%和17.94%,各组日粮除纤维水平不同外,其他营养成分基本一致。试验预饲期10 d,所有猪饲喂基础日粮;正式期28 d,分别饲喂基础日粮和试验日粮。试验结束屠宰全部试验猪,测定其胴体性状(胴体重、屠宰率、胴体直长、胴体斜长、眼肌面积、平均背膘厚和皮厚);采集肉样用于测定肉质性状(滴水损失、剪切力、熟肉率、肌内脂肪含量、pH和肉色);采集背最长肌样品用于猪滴水损失主效基因磷酸化酶激酶γ1(phosphorylase kinase gamma1,PHKG1)表达分析。结果表明:1)日粮脱脂米糠水平对苏淮猪的胴体重、屠宰率、胴体直长、胴体斜长、眼肌面积、平均背膘厚和皮厚等胴体指标没有显著影响。2)随脱脂米糠水平的提高,苏淮猪背最长肌的滴水损失呈先降低后上升的二次曲线变化(P<0.05),猪肉的剪切力线性降低(P<0.05);熟肉率、pH24 h随脱脂米糠水平的增加呈线性增加的趋势(P=0.061,P=0.068);日粮脱脂米糠水平的增加有降低L24 h*的趋势(线性,P=0.085),脱脂米糠水平对其它肉质指标均无显著影响。3)PHKG1基因的相对表达量随脱脂米糠水平的增加趋于二次方升高(P=0.085)。综上所述,日粮脱脂米糠水平对苏淮育肥猪的胴体性状无显著影响,但在日粮中适度添加脱脂米糠可降低苏淮猪猪肉的滴水损失及剪切力,改善苏淮猪猪肉品质,但其背后的机制还有待进一步深入研究。  相似文献

To further understand the germplasm characteristics of Jiangquan Black pig,100 kg Jiangquan Black pigs (10 barrows, 10 sows) and 10 Duroc×Landrace×Yorkshire (DLY) pigs under the same conditions were randomly selected to analyse the slaughter performance and meat quality according to related rules. After slaughtered,the carcass index (carcass weight, loin muscle area, carcass length and backfat thickness etc), meat quality physical indicators (pH, meat color, marbling, drip loss etc), gerneral chemical index (the contents of crude protein, intramuscular fat, moisture and ash etc) and the proportion of amino acids in Jiangquan Black pig were analyzed. The results showed that, Jiangquan Black pig carcass lean meat rate was relatively low, the loin muscle area was reduced by about 30% (P<0.05) compared with DLY pig, while the backfat thickness was higher than that of DLY pig (P<0.05). The meat color, marbling, drip loss, cooking loss, water loss rate index and intramuscular fat content of Jiangquan Black pig were significantly better than that of DLY pigs (P<0.05), the rate of water loss and drip loss and cooking loss were decreased by 4.0%, 3.1% and 2.7%, intramuscular fat content increased by 150.0%. Therefore, The lean yield of Jiangquan Black pig was less than DLY pig, but water retention property, intramuscular fat content, meat color, marbling, meat quality indexes were significantly better than that of DLY pig. In conclusion, Jiangquan Black pig could provide good quality pork for consumers.  相似文献
