试验旨在研究南阳黑猪脂肪酸组成及含量,以期为中国地方猪种遗传资源的保护及开发利用提供理论依据。以南阳黑猪和大白猪为研究对象,每品种猪各12头,测量背最长肌脂肪酸含量及种类,以脂肪酸种类及数量、单不饱和脂肪酸(monounsaturated fatty acid,MUFA)、多不饱和脂肪酸(polyunsaturated fatty acid,PUFA)、饱和脂肪酸(saturated fatty acid,SFA)、12-16碳饱和脂肪酸(饱和脂肪酸1,SFA1)、其他饱和脂肪酸(饱和脂肪酸2,SFA2)、不饱和脂肪酸(unsaturated fatty acids,UFA)、SFA2/SFA1、PUFA/MUFA、必需脂肪酸(essential fatty acid,EFA)、共轭亚油酸(conjugated linoleic acids,CLA)、PUFA/SFA、ω-6 PUFA/ω-3 PUFA等为指标,从营养、健康、风味及储存方面综合评价两个猪种猪肉脂肪酸品质。结果显示,两个猪种背最长肌中共检出30种脂肪酸,其中23种脂肪酸在两个猪种间有显著或极显著差异(P<0.05;P<0.01);除SFA2/SFA1和ω-6 PUFA /ω-3 PUFA外,南阳黑猪其他指标均高于大白猪;SFA1、MUFA、PUFA、SFA、UFA、UFA/SFA、SFA2/SFA1、PUFA/MUFA、EFA、CLA、PUFA/SFA、ω-6 PUFA/ω-3 PUFA 11个指标在两个猪种间存在显著或极显著差异(P<0.05;P<0.01),SFA2和PUFA/MUFA在两个猪种间无显著差异(P>0.05)。综合以上结果,南阳黑猪肌肉脂肪酸品质总体优于大白猪。  相似文献

The experiment was carried out to study the composition and contents of fatty acids of Nanyang Black pig, and to provide a theoretical basis for the protection and exploitation of local pig genetic resources in China. 12 Nanyang Black pigs and 12 Large White pigs were chosen, and the composition and contents of fatty acids in longissimus dorsi muscle were measured, and the quality of fatty acids was comprehensive evaluated from nutrition, health, flavor and storage aspects. Monounsaturated fatty acid (MUFA), polyunsaturated fatty acid (PUFA), 12-16 carbon saturated fatty acids (SFA1), other saturated fatty acids (SFA2), unsaturated fatty acids (UFA), saturated fatty acids (SFA), SFA2/SFA1, MUFA/PUFA, essential fatty acid (EFA), conjugated linoleic acids (CLA), PUFA/SFA and ω-6 PUFA/ω-3 PUFA were used as the indexes of multiple comparison. The results showed that there were 30 kinds of fatty acids were detected and 23 of them had significant or extremely significant differences between the two pig breeds (P<0.05;P<0.01). Nanyang Black pig had higher values of above measured indexes than that of Large White pig in addition to SFA2/SFA1 and ω-6 PUFA/ω-3 PUFA. 11 indexes such as SFA1,MUFA,PUFA,SFA,UFA, UFA/SFA,SFA2/SFA1,PUFA/MUFA, EFA,CLA, PUFA/SFA and ω-6 PUFA/ω-3 PUFA differed significantly or extremely significantly between the two pig breeds (P<0.05;P<0.01), while SFA2 and PUFA/MUFA had no significant differences between the two pig breeds (P>0.05). In conclusion, the fatty acids of Nanyang Black pig were significantly better than that of Large White pig.  相似文献

1. Capons and intact male broilers were used to investigate the effects of caponisation on intramuscular fat and abdominal adipose tissue lipid content and fatty acid profile. 2. Capons had significantly higher total lipid content (P<0·05). 3. Neutral lipids were the major fractions in intramuscular and abdominal fat but their proportions differed significantly among groups and tissues (P<0·05). 4. The predominant saturated, monounsaturated and polyunsaturated fatty acids in all samples were C16:0, C16:1 ω-9, C18:0, C18:1 ω-9, C18:1 ω-7, C18:2 ω-6 and C20:4 ω-6. 5. Caponisation resulted in a significant ω-6/ω-3, PUFA and PUFA/SFA ratio reduction as well as a significant increase in atherogenic and thrombogenic indices increase in intramuscular fat (P<0·05) without affecting their appropriate value for a healthy diet.  相似文献

The hypothesis tested was that the feeding of n‐6 polyunsaturated fatty acids (PUFA) results in more whole‐body fatty acid oxidation than the feeding of saturated fatty acids (SFA). It was reasoned that the increased fatty acid oxidation would be associated with enhanced whole‐body energy expenditure and stimulated de novo fatty acid synthesis. To put the hypothesis to the test, broiler chickens were fed diets containing either beef tallow as source of SFA or an oil blend as source of n‐6 PUFA. The broilers either had free access to their diet or were fed a restricted amount. Seven‐day‐old, male broiler chickens were used; they were kept individually in cages from 1 to 4 weeks of age. In the birds fed ad libitum, the n‐6 PUFA diet reduced average daily feed intake (ADFI), but did not significantly affect average daily weight gain (ADG) and the feed:conversion ratio (FCR). The lower ADFI on the n‐6 PUFA diet was associated with a higher apparent digestibility of total fatty acids. The ratio of deposition in the body to intake of digestible total PUFA, which reflected n‐6 PUFA, was significantly decreased by the n‐6 PUFA diet, pointing at preferentially increased n‐6 PUFA oxidation on the n‐6 PUFA diet. The ratio for n‐9 monounsaturated fatty acids (MUFA) was higher than 1.0, which agrees with net de novo synthesis, but the n‐6 PUFA diet induced a lower value than did the SFA diet. Feeding either the n‐6 PUFA or SFA diet did not influence energy expenditure expressed as percentage of energy intake. This study supports the idea that dietary n‐6 PUFA instead of SFA are preferentially oxidized, but no proof was obtained for enhanced energy expenditure and contrary to the hypothesis put forward, the n‐6 PUFA diet depressed de‐novo fatty acid synthesis.  相似文献

The apparent digestibility and deposition in carcass of individual dietary fatty acids (FA) were determined in growing-finishing pigs fed diets containing either beef tallow or sunflower oil. The beef tallow was rich in saturated FA (SFA) and the sunflower oil had a high content of polyunsaturated FA (PUFA). A total of 39 barrows was used. The experimental diets contained 5% (w/w) of the variable fat source and were fed ad libitum . The dietary fat type had no effect (p > 0.05) on growth performance, even though the apparent digestibilities of crude fat and crude protein were higher (p < 0.05) in the animals fed sunflower oil. The pigs fed the sunflower oil diet showed higher apparent digestibilities (p < 0.05) of the sum of SFA, monounsaturated FA (MUFA) and PUFA, but had a lower digestibility (p < 0.05) of stearic acid. The intakes of individual digestible FA were derived feed intake data, FA contents of the diets and the digestibility of individual FA. For the entire feeding period of 13 weeks, the ratio of deposition in carcass to intake of digestible FA was increased (p < 0.05) for palmitic and stearic acid in the pigs fed sunflower oil, but the ratios for oleic acid and linoleic acid were decreased (p < 0.001). In the pigs fed sunflower oil instead of beef tallow, the deposition:intake ratio was raised for the SFA (p < 0.001), but diminished for the MUFA (p < 0.05). The calculated minimum de novo synthesis of SFA was increased (p < 0.05) and that of MUFA decreased (p < 0.05) in the pigs fed sunflower oil. It is concluded that the feeding of a diet with sunflower oil instead of beef tallow improved apparent digestibility of SFA, MUFA and PUFA, increased the deposition:digestible intake ratio for SFA, but lowered that for MUFA and PUFA.  相似文献

In two experiments with growing-finishing pigs six different dietary fats were added to a conventional diet (control--C) to study the effects of dietary monounsaturated (MUFA) and polyunsaturated fatty acids (PUFA) on the fatty acid composition of backfat and kidney fat at similar amounts of double bonds in feed (Exp. 1:7% pork fat--PF, 4.95% olive oil--OO, 3.17% soybean oil--SO) or a constant amount of 5% of processed fats (Exp. 2: partially hydrogenated fat--SAT, fractionated pork fats: olein--OLE, stearin--STE). Compared with the control, PUFA were only slightly increased in backfat of pigs fed PF, OLE, STE or OO, although dietary PUFA intake was up to 70% higher. With SO PUFA were significantly increased in adipose tissues, predominantly at the expense of MUFA. Consequently, a non-linear relationship was found between PUFA intake and proportion in backfat. MUFA were incorporated at the expense of SFA, therefore, adipose tissues of OO fed animals were lowest in SFA. Despite comparable amounts of double bonds in feed (Exp. 1), the degree of unsaturation measured as fat score (sum of double bonds) was in the order SO > OO > PF > C. In contrast, the proportion of SFA was C > PF = SO > OO. Regarding the decisive role of SFA for fat consistency it may be concluded that MUFA should also be considered in feeding recommendations for pigs. Furthermore, in case of a high dietary supply of MUFA, a simple index of double bonds might not be sufficiently conclusive to judge pig fat quality.  相似文献

Seventy-two Simmental bulls, weighing 489 kg initially and approximately 15 months old, were divided into four groups to determine the effects of feeding intensity and time on feed on intramuscular fatty acid (FA) composition. Two groups of 18 bulls each were extensively (E) or intensively (I) fed on maize silage and concentrates with a daily gain of 943 g (E) or 1371 g (I). Half of each group were slaughtered after 100 days (S) or 138 days (L) on feed. In addition to carcass fatness parameters, intramuscular FA composition was also measured. Only small differences in the sum of saturated FA (SFA) percentages were found with 47.7 and 47.5% FA methyl esters (FAME) for SE and LE, respectively, and 48.7% FAME for each of SI and LI. Monounsaturated fatty acids (MUFA) significantly increased with longer, and higher feeding intensity to 44.2% FAME (LI), whereas the other groups had similar contents of 41.9, 42.2 and 42.0% FAME (SE, LE and SI respectively). Polyunsaturated FA (PUFA) decreased with higher feeding intensity to 8.39% (SI) and 6.71% (LI) FAME (p < 0.05) in comparison with 9.48% (SE) and 9.54% (LE). Intensive feeding decreased the ratio of PUFA : SFA to 0.17 (SI) and 0.14 (LI, p < 0.05) in comparison with 0.20 (SE and LE). The mean conjugated linoleic acid (CLA) concentration was 0.41% FAME. Time on feed had only a small effect on the FA composition compared with feeding intensity. No significant relationships were detected between meat quality attributes and the pattern of FA.  相似文献

以40 ̄90kg6个体重阶段莱芜猪和新莱芜猪为试验对象(n=6),研究肌肉脂肪酸组成的发育性变化及其与肉质特性的关系。结果表明:①随着体重的增大,莱芜猪肌肉总脂含量显著(P<0.01)增加;饱和脂肪酸(SFA)总量的比例有下降的趋势,不饱和脂肪酸(UFA)总量有增加的趋势,但差异不显著;在UFA中,多不饱和脂肪酸(PUFA)总量及亚油酸的比例显著(P<0.01)下降,油酸比例显著(P<0.01)增加;②总体上,莱芜猪肌肉中的SFA+单不饱和脂肪酸总量、总脂、棕榈酸、棕榈烯酸的比例显著高于新莱芜猪,而PUFA总量、硬脂酸、亚油酸、花生烯酸的比例显著(P<0.01)低于新莱芜猪。各体重阶段2个品种间的脂肪酸组成也存在着较大的差异;③莱芜猪肌肉中的PUFA总量与总脂、水分、失水率、大理石纹评分相关显著;总脂与水分、大理石纹相关极显著(P<0.01);SFA、UFA总量与大理石纹呈显著(P<0.05)相关。  相似文献

Two experiments were performed to assess the effect of different amounts of dietary polyunsaturated fatty acids (PUFA) on fatty acid composition of chickens. The contribution of de novo fatty acid synthesis to fatty acid profile was also estimated. In trial 1, different fat sources were blended in different ratios allowing a gradient of dietary PUFA (from 15 to 61 g/kg), keeping added fat constant (9%). In trial 2, PUFA-rich oil was added at increasing inclusion rates (2, 4, 6 and 8%), achieving a dietary PUFA content ranging between 27 and 59 g/kg. Increasing dietary PUFA inclusion resulted in an increase in PUFA deposition, with higher efficiency when dietary fat also provided saturated (SFA) and monounsaturated (MUFA) fatty acids (trial 1). Increasing dietary PUFA in both trials resulted in a decrease in SFA and MUFA concentration in the whole body. The estimated deposition of fatty acids from de novo synthesis was reduced when dietary fat content increased from 0 to 10%, varying between 35.34 and 17.66% for SFA and between 52.70 and 7.01% for MUFA in the whole body. The greater variation range for the MUFA supports the existence of a mechanism maintaining the SFA: (MUFA + PUFA) ratio within a specific range in biological membranes.  相似文献

Feline chronic gingivitis/stomatitis (FCGS) is a painful inflammatory disease in cats. Extraction of teeth, including all premolars and molars, has been shown to be the therapy of choice in cats not responding sufficiently to home care (e.g. tooth brushing) and/or medical treatment (corticosteroids and/or antibiotics). In this study, we hypothesize that a cat food with an omega‐6 polyunsaturated fatty acid (ω6 PUFA) to ω3 PUFA ratio of 10:1 reduces inflammation of the FCGS and accelerates soft tissue wound healing of the gingiva after dental extractions, compared to a cat food with a ω6:ω3 PUFA ratio of 40:1. The cats were fed diets with chicken fat and fish oil as sources of fatty acids. In one diet, part of the fish oil was replaced by safflower oil, resulting in two diets with ω6:ω3 PUFA ratios of 10:1 and 40:1. This double‐blinded study in two groups of seven cats revealed that dietary fatty acids influence the composition of plasma cholesteryl esters and plasma levels of inflammatory cytokines. The diet with the 10:1 ratio lowered PGD2, PGE2 and LTB4 plasma levels significantly, compared to the diet with the 40:1 ratio (p = 0.05, p = 0.04, and p = 0.02 respectively). However, feeding diets with dietary ω6:ω3 PUFA ratios of 10:1 and 40:1, given to cats with FCGS for 4 weeks after extraction of all premolars and molars, did not alter the degree of inflammation or wound healing.  相似文献

1. In a cross-over trial, the egg cholesterol and fatty acid composition of Araucana hens was compared with those of two commercial breeds (Lohmann Selected Leghorn and ISA Brown) under two feeding regimes, either high (Hn-3) or low (Ln-3) in long-chain n-3 fatty acids. 2. The Hn-3 diet was formed by isocaloric substitution of animal fat in the control diet (Ln-3) by a dry product containing stabilised fish oil with standardised concentrations of eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA). 3. Both breed and diet had influences on egg composition, without interactions. 4. The Araucana breed showed lower feed intake and lower egg weights than the other two breeds. The yolk weight was similar, leading to a much higher yolk:albumen ratio in the Araucana eggs. 5. In comparison to commercial breeds, Araucanas produced eggs with higher cholesterol content per g of yolk, which was even more pronounced when expressed per g of egg, due to the high yolk content of the eggs. The cholesterol content of an egg remained unchanged by the diet, irrespective of the dietary fat source. 6. Changing to the Hn-3 diet led to greater concentrations of polyunsaturated fatty acids (PUFA) and lower concentrations of monounsaturated fatty acids (MUFA) contents in the yolk, without a change in the ratio of saturated (SFA) to unsaturated fatty acids (UFA). 7. Within the PUFA, the n-3 fatty acids increased at the expense of the n-6 fatty acids, indicating a competition between n-3 and n-6 fatty acids for incorporation in the yolk.  相似文献

本试验研究了日粮不同ω6/ω3多不饱和脂肪酸(PUFA)比值(ω6/ω3)对6周龄爱拔益加(AA)肉仔鸡肉品质、血液脂质指标及脂肪酸组成的影响.采用重量替代法使各处理日粮ω6/ω3比例分别为∶30∶1、20∶1、10∶1、5∶1和2.5∶1.选用体重接近的1日龄AA鸡母雏180只,随机分为5个处理,每个处理6个重复,每个重复6只鸡,试验期为6周,分1~4周和5~6周2个阶段.测定肉品质性状及腿肌脂肪酸组成.结果表明,随着日粮ω6/ω3的降低:(1)肌肉滴水损失极显著下降(P<0.001);当ω6/ω3为5∶1时,pHt最低,日粮ω6/ω3对肌肉肌内脂肪含量、肌苷酸含量没有显著影响(P>0.05);血液总胆固醇显著降低(P<0.001);(2)腿肌,ω3 PUFA极显著增加(P<0.001),尤其是C18∶3、C20∶5和C22∶5,ω6 PUFA显著下降(P<0.05),ω6/ω3从3.50降至1.60,多不饱和脂肪酸与饱和脂肪酸的比值在1.0左右(0.96~1.04);(3)极显著地增加了腿肌中C18∶3向C20∶5和C22∶5的转化效率(P<0.001),长链ω3 PUFA(除了C18∶3)在腿肌的含量高达7.24%.日粮ω6/ω3和腿肌中C20∶5和C22∶5的关系可分别用y=2.946 7 x-1.0413(R2=0.9901)及y=-0.642 3 Ln(x)+2.56(R2=0.993 6)表示.本试验证明降低日粮ω6/ω3,能在一定程度改善肉品质,并有效地增加腿肌中人体必需的ω3长链PUFA沉积,获得了营养丰富的鸡肉.  相似文献

旨在研究代乳粉中添加枯草芽孢杆菌(Bacillus subtilis)对7~28日龄羔羊生长性能、组织器官、腹泻率及肌肉组织脂肪酸含量的影响。本研究选取体况发育良好的7日龄湖羊公羔(双羔)30只,按同质性原则将羔羊随机分为2组,每组15只,每只为1个重复,给2组羔羊分别饲喂枯草芽孢杆菌含量为0和0.2%的代乳粉,试验期为21 d。在7、14、21和28日龄晨饲前进行称重,计算各生长阶段的平均日增重(average daily gain,ADG)。并且每天饲喂羔羊的同时观察羔羊腹泻情况,计算羔羊腹泻率。在28日龄时每组随机选择8只羔羊进行屠宰,屠宰后称量各组织器官重量,计算其相对指数,并采集羔羊背最长肌和肱二头肌,测量肌内脂肪含量。结果表明:1)枯草芽孢杆菌显著降低了7~14日龄羔羊的末重(P<0.05),显著提高了15~21日龄和22~28日龄羔羊的平均日增重(P<0.05),有提高7~28日龄羔羊平均日增重的趋势(P=0.100);对7~28日龄羔羊腹泻率的无显著影响(P>0.05)。2)枯草芽孢杆菌显著降低了7~28日龄羔羊胰腺重量(P<0.05),显著增加了蹄占宰前活重比例(P<0.05),对其他组织器官没有显著影响(P>0.05)。3)枯草芽孢杆菌对7~28日龄羔羊皮张发育无显著影响(P>0.05)。4)枯草芽孢杆菌显著降低了羔羊背最长肌不饱和脂肪酸(unsaturated fatty acid,UFA)、单不饱和脂肪酸(monounsaturated fatty acid,MUFA)、棕榈酸、硬脂酸、二十烷酸、棕榈烯酸、油酸含量和MUFA∶多不饱和脂肪酸(polyunsaturated fatty acid,PUFA)(P<0.05),显著提高了十五烷酸、肉豆蔻烯酸、神经酸含量和饱和脂肪酸(saturated fatty acid,SFA)∶UFA (P<0.05);显著降低了羔羊肱二头肌UFA、SFA、MUFA、棕榈酸、硬脂酸、二十烷酸、棕榈烯酸、油酸含量和MUFA∶PUFA (P<0.05),显著提高了PUFA、n-6PUFA、肉豆蔻烯酸、神经酸含量和SFA∶UFA、PUFA∶SFA (P<0.05)。结果表明,在代乳粉中添加枯草芽孢杆菌对7~28日龄湖羊羔羊腹泻率、器官和皮张的发育无显著影响,但羔羊平均日增重和胴体重有升高趋势。枯草芽孢杆菌显著降低了湖羊羔羊背最长肌中UFA、MUFA、MUFA∶PUFA的含量和肱二头肌UFA、SFA、MUFA、MUFA∶PUFA的含量,显著提高了湖羊羔羊背最长肌中SFA:UFA的含量和肱二头肌中PUFA、n-6PUFA、SFA∶UFA、PUFA∶SFA的含量,表明枯草芽孢杆菌可通过对肌内脂肪酸组成比例和含量的影响,起到改善湖羊羔羊肉品质的作用。  相似文献

为了研究不同季节对水牛乳脂肪酸组成的影响,试验选取春、夏、秋、冬4个季节广西地区生鲜水牛原乳720份,采用气相色谱法测定水牛原乳脂肪酸组成和含量,以分析水牛乳脂肪酸四季的变化规律。结果显示,水牛原乳共检出38种脂肪酸,除C13:0、C15:0、C16:0和C20:4n6外,季节对其他脂肪酸含量均有显著影响(P<0.05);多不饱和脂肪酸(PUFA)总含量在四季差异不显著(P>0.05),冬季短链脂肪酸(SCFA)总含量显著高于其他季节(P<0.05),夏季长链脂肪酸(LCFA)总含量和单不饱和脂肪酸(SUFA)总含量均显著高于其他季节(P<0.05),而夏季中链脂肪酸(MCFA)总含量和饱和脂肪酸(SFA)总含量均显著低于其他季节(P<0.05);夏季ω6系列脂肪酸含量显著高于冬季(P<0.05),春、秋两季ω3系列脂肪酸总含量显著高于夏、冬季节(P<0.05);ω6与ω3系列脂肪酸比值在春季最低(4.43),其次是秋季和冬季,夏季ω6/ω3值最高(6.32)。由此可见,不同季节对水牛原乳脂肪酸组成有显著影响,欲优化脂肪酸组成应合理改善日粮结构并提高饲养管理水平。  相似文献

本试验旨在研究饲粮n-6/n-3多不饱和脂肪酸(PUFA)比值对冬毛期北极狐生长性能、肝脏脂肪酸组成及肝脏型脂肪酸结合蛋白(L-FABP)和脂肪酸转运蛋白(FATP)基因表达的影响。试验选取48只157日龄、平均体重为(5 658±47)g的健康雄性北极狐,随机分成4组,每组12个重复,每个重复1只。Ⅰ组饲粮中添加12.00%鱼油和2.00%豆油,n-6/n-3 PUFA比值为3.00;Ⅱ组饲粮中添加9.38%玉米油和4.62%豆油,n-6/n-3 PUFA比值为18.03;Ⅲ组饲粮中添加12.00%玉米油和2.00%豆油,n-6/n-3 PUFA比值为40.83;Ⅳ组饲粮中添加1.50%鱼油和12.50%玉米油,n-6/n-3 PUFA比值为136.36。各组饲粮除油脂组成和配比不同外,其他原料一致。预试期7 d,正试期40 d。结果表明:1)饲粮n-6/n-3 PUFA比值对冬毛期北极狐的平均日增重(ADG)、平均日采食量(ADFI)和料重比(F/G)有极显著影响(P0.01)。Ⅰ和Ⅳ组的ADG极显著高于Ⅱ和Ⅲ组(P0.01),Ⅰ、Ⅱ和Ⅳ组的ADFI极显著高于Ⅲ组(P0.01),Ⅳ组的F/G极显著低于Ⅱ和Ⅲ组(P0.01)。2)饲粮n-6/n-3 PUFA比值对冬毛期北极狐肝脏单不饱和脂肪酸(MUFA)、PUFA、n-3 PUFA和n-6 PUFA的含量有显著或极显著影响(P0.05或P0.01),对肝脏饱和脂肪酸(SFA)含量无显著影响(P0.05)。Ⅰ和Ⅳ组肝脏n-3 PUFA含量极显著高于Ⅱ和Ⅲ组(P0.01),Ⅱ和Ⅲ组肝脏n-6 PUFA含量极显著高于Ⅰ和Ⅳ组(P0.01)。3)饲粮n-6/n-3 PUFA比值对冬毛期北极狐肝脏L-FABP mRNA相对表达量无显著影响(P0.05),但极显著影响肝脏FATP mRNA相对表达量(P0.01)。Ⅰ和Ⅳ组肝脏FATP mRNA相对表达量极显著高于Ⅱ和Ⅲ组(P0.01)。由此可见,饲粮添加1.50%鱼油与12.50%玉米油的混合油脂,即饲粮n-6/n-3 PUFA比值为136.36时,上调了肝脏中FATP基因的表达,增加了肝脏长链脂肪酸的转运及利用效率,促进了冬毛期北极狐的生长。  相似文献

  1. The present study was conducted to evaluate the role of extruded flaxseed (EFS) and α-tocopherol acetate (ATA) for the enhancement of polyunsaturated fatty acids ratio (PUFA) over saturated fatty acids (SFA) in broiler meat as a source of healthier meat.

  2. A total of 96 one-d-old Cobb 550 broilers were randomly divided into 8 treatments with three replicates having 4 birds in each. EFS (extruded at 155°C) at 100, 150 and 200 g/kg alone and in combination with ATA at 200 mg/kg were supplemented through normal feed from the third week onward.

  3. During the 6-week growth period, body weight gain (BWG), feed intake (FI), feed conversion ratio (FCR) and mortality were recorded. At slaughter, weight of liver, heart and kidney and fat content in breast and leg meat were measured. Fatty acid profiles in breast and leg meat were developed to estimate the PUFA to SFA ratio.

  4. The results revealed that FI and FCR changed significantly in all groups and BWG increased in all the supplemented groups. The weight of liver, kidney and heart increased more in the supplemented group containing the maximum level of EFS with ATA compared with single supplementation of EFS.

  5. The fat content in breast and leg meat decreased as the inclusion level of EFS increased. The level was low in leg meat compared with breast meat. Mortality decreased in all supplemented groups.

  6. The PUFA to SFA ratio was significantly higher in leg meat (3.23) compared with breast meat (1.81) and the study therefore indicates that ATA and EFS supplementation could be used to improve the PUFA to SFA ratio in broiler meat.

The objective of this study was to estimate the effects of breed, sex, and halothane (HAL‐1843TM) genotype on fatty acid composition of triacylglycerols (TAG) and phospholipids (PL) extracted from porcine longissimus muscle (LM). Purebred Yorkshire (n = 131), Duroc (n = 136), Hampshire (n = 49), Spotted (n = 35), Chester White (n = 74), Poland China (n = 51), Berkshire (n = 169) and Landrace (n = 82) pigs (n = 727; 427 barrows and 300 gilts) from the 1994 and 2001 National Barrow Show Sire Progeny Tests were used. For statistical analyses, a mixed model was used that included fixed effects of breed, sex, HAL‐1843TM genotype, year, slaughter date within each year, interaction of breed × sex and random effects of sire and dam within breed. Breeds and sex were significantly associated with the percentages of the majority fatty acids in TAG. Duroc pigs had greater total saturated fatty acids (SFA) and lower total monounsaturated fatty acids (MUFA) (p < 0.05) contents than did pigs of all other breeds except Berkshire (p > 0.05). The concentration of total polyunsaturated fatty acids (PUFA) was the greatest in Hampshire pigs (p < 0.05). The content of total SFA was greater (p < 0.01), whereas the concentrations of total MUFA and PUFA were lower (p < 0.01) in barrows than those in gilts. The contents of major SFA in PL did not differ significantly among pigs from different breeds and sex groups. However, breed and sex significantly affected the concentrations of major MUFA and PUFA in PL and strong negative correlation between the total contents of MUFA and PUFA in PL was observed in the current study. Chester White pigs had greater total MUFA and lower total PUFA contents (p < 0.05) in PL than did pigs of all other breeds except Spotted (p > 0.05). In contrast to breed and sex effects, the concentrations of fatty acids in PL were more affected by HAL‐1843TM genotype than those in TAG. The content of C16:0, a major SFA in PL, differed significantly in pigs with different HAL‐1843TM genotypes. In conclusion, these results suggest that breed and sex are important sources of the variations for fatty acid composition of TAG and PL in LM.  相似文献

Pigs were classified as the HAL-1843 normal (NN) genotype (n = 1,718) or the HAL-1843 carrier (Nn) genotype (n = 216). For statistical analysis, a mixed model was used that included fixed effects of breed, sex, halothane genotype, test, slaughter date, interaction of breed x sex, and random effects of sire and dam within breed. Breed significantly affected the concentration of individual fatty acids, total lipid content, and the values of several fatty acid indices of LM. Duroc pigs had the greatest (P < 0.01) content of total SFA. Total MUFA concentration in Poland China pigs was greater (P < 0.05) than in all other breeds except the Spotted (P > 0.05). The concentrations of total PUFA were greater (P < 0.01) in Hampshire, Landrace, and Yorkshire pigs compared with those of other breeds. Significant sex differences for individual fatty acids were detected. Compared with gilts, barrows had greater (P < 0.01) concentrations of SFA and MUFA but lower (P < 0.01) total PUFA. Halothane genotype was a significant source of variation for the percentages of some fatty acids. Pigs with the carrier (Nn) genotype had lower concentrations of SFA (P < 0.05) and MUFA (P < 0.01) but a greater concentration of PUFA (P < 0.01) compared with NN pigs. There were significant negative correlations between total lipid content and individual PUFA and significant positive correlations between lipid concentration and most individual SFA and MUFA. In conclusion, the results suggest that breed and sex are important sources of variation for fatty acid composition of LM.  相似文献

研究了不同性别和日粮能量、蛋白水平对河田鸡胸肌肉中风味前体化合物含量的影响。结果表明:性别对腹脂率、氨基酸(Asp、Thr、Ser、Pro、Cys除外)以及肌内脂肪(IMF)及其饱和脂肪酸(SFA)、单不饱和脂肪酸(MUFA)、多不饱和脂肪酸(PUFA)含量有显著影响(P〈0.05),而对肌苷酸(IMP)含量无显著影响(P〉0.05);公鸡的总氨基酸(TAA)、肌苷酸、肌内脂肪中的SFA、MUFA含量略高于母鸡,母鸡的肌内脂肪及其PUFA含量明显高于公鸡。能量水平对肌苷酸、肌内脂肪及其SFA、MUFA、PUFA以及总氨基酸含量有显著影响(P〈0.05);当鸡采食高能日粮时,肌内脂肪中的SFA、MUFA含量会显著升高(P〈0.05),而IMP、IMF、PUFA含量会显著下降(P<0.05),TAA没有显著变化。蛋白水平对肌内脂肪及其MUFA、PUFA含量以及总氨基酸含量有显著影响(P〈0.05)。当采食高蛋白日粮时,肌内脂肪及SFA、MUFA显著降低,而其PUFA会显著增加(P〈0.05)。风味品尝结果表明,公鸡的香味、鲜味都显著高于母鸡,而嫩度低于母鸡;随着能量和蛋白水平的增加,鲜味和嫩度都显著下降(P〈0.05)。从肉品的总可接受性来看,性别对总可接受性没有显著影响(P〉0.05),低营养水平时的总可接受性大于高营养水平(P〈0.05)。  相似文献

本试验旨在研究饲粮ω-6/ω-3多不饱和脂肪酸(PUFA)比例对鹅肝脏过氧化脂质和肝细胞超微结构的影响。选择160只同批出雏、体质健壮、体重(0.407±0.023)kg的21日龄扬州鹅,随机分成4组,每组4个重复,每个重复10只,分别饲喂ω-6/ω-3 PUFA比例为12∶1、9∶1、6∶1、3∶1的试验饲粮。饲养至42、56和70日龄时分别进行肝脏分离和过氧化脂质测定,并采用电镜观察肝细胞超微结构。结果表明:鹅肝脏丙二醛(MDA)、一氧化氮(NO)含量随日龄的增加呈上升趋势,并以70日龄较高,其中12∶1和9∶1组升高的幅度较大,而3∶1和6∶1组较小。MDA、NO含量随ω-6/ω-3 PUFA比例的降低呈现下降的趋势,各日龄基本以3∶1组最低。12∶1和9∶1组肝细胞糖原颗粒相对减少,线粒体有肿胀现象,但各组线粒体的面积没有显著变化(P>0.05)。由此可见,生长期扬州鹅肝脏抗氧化状态受饲粮ω-6/ω-3 PUFA比例的影响;较低饲粮ω-6/ω-3 PUFA比例(3∶1和6∶1)能够减少肝细胞过氧化脂质的损伤。  相似文献
