Carcass (n = 854) and longissimus thoracis palatability (n = 802) traits from F1 steers obtained from mating Hereford, Angus, and MARC III cows to Hereford or Angus (HA), Tuli (Tu), Boran (Bo), Brahman (Br), Piedmontese (Pm), or Belgian Blue (BB) sires were compared. Data were adjusted to constant age (444 d), carcass weight (333 kg), fat thickness (1.0 cm), fat trim percentage (21%), and marbling (Small00) end points. Results presented in this abstract are for age-constant data. Carcasses from BB- and HA-sired steers were heaviest (P < 0.05) and carcasses from Bo- and Tu-sired steers were lightest (P < 0.05). Adjusted fat thickness was greatest (P < 0.05) on carcasses from HA-sired steers and least (P < 0.05) on carcasses from BB- and Pm-sired steers. Numerical USDA yield grades were lowest (P < 0.05) for carcasses from Pm- and BB-sired steers and highest (P < 0.05) for carcasses from HA- and Br-sired steers. Marbling scores were highest (P < 0.05) for carcasses from HA- and Tu-sired steers and lowest (P < 0.05) for carcasses from Br-, BB-, and Pm-sired steers. Longissimus thoracis from carcasses of HA-, Pm-, and Tu-sired steers had the lowest (P < 0.05) 14-d postmortem Warner-Bratzler shear force values. Carcasses from HA-sired steers had longissimus thoracis with the highest (P < 0.05) tenderness ratings at 7 d postmortem. Longissimus thoracis from carcasses of Br- and Bo-sired steers had the highest (P < 0.05) Warner-Bratzler shear forces and the lowest (P < 0.05) tenderness ratings at 7 d postmortem. Adjustment of traits to various slaughter end points resulted in some changes in sire breed differences for carcass traits but had little effect on palatability traits. Carcasses from BB- and Pm-sired steers provided the most desirable combination of yield grade and longissimus palatability, but carcasses from HA-cross steers provided the most desirable combination of quality grade and longissimus palatability. Tuli, a breed shown to be heat-tolerant, had longissimus tenderness similar to that of the non-heat-tolerant breeds and more tender longissimus than the heat-tolerant breeds in this study.  相似文献

This study evaluated the reproductive performance of gilts inseminated at three intervals before ovulation (0-12, 13-23, 24-30 h) with sperm doses (SD) stored for 0-48 and 96-120 h. A total of 218 PIC Camborough 22 gilts were inseminated once with SD of 1.5 x 10(9) sperms. Pregnant gilts (n = 166) were slaughtered 30.8 +/- 3.7 days after artificial insemination. The number of corpora lutea (CL) and total embryos (TE) was counted. Pregnancy rates (PR) were analysed by chi-square test. TE and embryonic survival (ES), obtained as the ratio between viable embryos and CL, were analysed by GLM procedure (SAS) and mean values were compared by Tukey's test. Pregnancy rate was similar among artificial insemination-ovulation (AIOV) intervals when semen was stored for 0-48 h. However, the lowest PR was observed in the 24-30 h AIOV interval with storage time (ST) of 96-120 h (p < 0.05). There was a significant effect of the interaction between ST and AIOV (p < 0.05) on TE and ES variables. Total embryos and ES did not differ (p > 0.05) among AIOV intervals in ST of 0-48 h. However, gilts inseminated at 24-30 h AIOV interval with ST of 96-120 h showed a reduction of 6.7 embryos (p < 0.05) compared with gilts in the same interval inseminated with semen stored for 0-48 h. ES for the 24-30 h AIOV interval and ST of 96-120 h was lower than that observed in the other groups (p < 0.05).  相似文献

The objectives of this study were to evaluate the efficacy of a system for classifying beef for tenderness based on a rapid, simple method of measuring cooked longissimus shear force. Longissimus steaks (2.54 cm thick) were trimmed free of s.c. fat and bone and rapidly cooked using a belt grill. A 1-cm-thick, 5-cm-long slice was removed from the cooked longissimus parallel with the muscle fibers for measurement of shear force. Slices were sheared with a flat, blunt-end blade using an electronic testing machine. The entire process was completed in less than 10 min. Therefore, in commercial application, this process could be completed during the 10- to 15-min period that carcasses are normally held to allow the ribeye to bloom for quality grading. In Exp. 1, the repeatability of slice shear force (SSF), as determined by evaluation of duplicate samples from 204 A-maturity carcasses, was .89. In Exp. 2, A-maturity carcasses (n = 483) were classified into three groups based on SSF (< 23, 23 to 40, and > 40 kg) at 3 d postmortem that differed (P < .001) in mean trained sensory panel tenderness ratings (7.3 +/- .04, 6.4 +/- .06, and 4.4 +/- .20) and the percentages (100, 91, and 28%) of samples rated "Slightly Tender" or higher at 14 d postmortem. Therefore, this tenderness classification system could be used to accurately segregate beef carcasses into expected tenderness groups. Further research is needed to test the feasibility and accuracy of this system under a variety of commercial processing conditions.  相似文献

Five hundred thirty-four steers were evaluated over a 2-yr period to determine the accuracy of ultrasonic estimates of carcass 12th-rib fat thickness (CFAT) and longissimus muscle area (CLMA). Within 5 d before slaughter, steers were ultrasonically measured for 12th-rib fat thickness (UFAT) and longissimus muscle area (ULMA) using an Aloka 500V real-time ultrasound machine equipped with a 17.2-cm, 3.5-MHz linear transducer. Overall, correlation coefficients between ultrasound and carcass fat and longissimus muscle area were 0.89 and 0.86, respectively. Correlations for UFAT with CFAT were similar between years (0.86 and 0.90), whereas the relationship between ULMA and CLMA was stronger in yr 1 (r = 0.91; n = 282) than in yr 2 (r = 0.79; n = 252). Differences between ultrasonic and carcass measurements were expressed on both an actual (FDIFF and RDIFF) and absolute (FDEV and RDEV) basis. Mean FDIFF and RDIFF indicated that ultrasound underestimated CFAT by 0.06 cm and overestimated CLMA by 0.71 cm2 across both years. Overall mean FDEV and RDEV, which are indications of the average error rate, were 0.16 cm and 3.39 cm2, respectively. Analysis of year effects revealed that FDIFF, FDEV, and RDEV were greater (P < 0.01) in magnitude in yr 1. Further analysis of FDEV indicated that leaner (CFAT < 0.51 cm) cattle were overestimated and that fatter (CFAT > 1.02 cm) cattle were underestimated with ultrasound. Similarly, steers with small CLMA (< 71.0 cm2) were overestimated, and steers with large CLMA (> 90.3 cm2) were underestimated. The thickness of CFAT had an effect (P < 0.05) on the error of UFAT and ULMA measurements, with leaner animals being more accurately evaluated for both traits. Standard errors of prediction (SEP) adjusted for bias of ultrasound measurements were 0.20 cm and 4.49 cm2 for UFAT and ULMA, respectively. Differences in SEP were observed for ULMA, but not UFAT, by year. These results indicate that ultrasound can be an accurate estimator of carcass traits in live cattle when measurements are taken by an experienced, well-trained technician, with only small differences in accuracy between years.  相似文献

OBJECTIVE: To determine the effect of osteotomy angle, reduction technique, and tibial plateau rotation angle on angular and rotational limb deformities. STUDY DESIGN: Geometric comparison using bone models. METHODS: Rotational osteotomies were made in the proximal metaphysis of artificial tibias at 0 degrees, 10 degrees, 20 degrees, -10 degrees, and -20 degrees from perpendicular with respect to either the proximodistal and craniocaudal tibial axes. Negative-numbered angles represented osteotomies made from distal to proximal or caudal to cranial. Changes in tibial angulation and torsion were measured using a 3-dimensional digitizing instrument at tibial plateau rotation angles from 0 degrees to 30 degrees at 5 degrees increments. Two osteotomy reduction techniques were used: complete osteotomy reduction and alignment of the medial cortex. The mean of 5 measurements of torsional and angular tibial deformity for each of the 9 osteotomy orientations in each reduction technique group was obtained. RESULTS: All had increasing angular and rotational deformity as tibial plateau rotation angle increased. In the medially aligned cortex group, all tibias had valgus deformity, and 8 of 9 tibias were internally rotated. In the reduced osteotomy group, minimal angular deformity was seen in tibias with osteotomy variation along the proximodistal axis; however, tibias with osteotomy variation along the craniocaudal axis had angular deformity ranging from 6.0 degrees of varus deformity to 14.3 degrees of valgus deformity. Rotational deformity was affected similarly by osteotomy variation along either axis. Reduction technique had greater affect on angular and rotational deformity than osteotomy angle variation. CLINICAL RELEVANCE: These results suggest that osteotomy reduction may play a greater role in angular and rotational deformity than osteotomy angle, although extreme osteotomy angles should be avoided. To decrease the severity of deformity, we recommend that the osteotomy be made perpendicular to the craniocaudal and proximodistal axes and be completely reduced with less regard for alignment of the medial cortex.  相似文献

Experiments were conducted to determine the effects of increasing supplement protein concentration on performance and forage intake of beef cows and forage utilization of steers consuming stockpiled bermudagrass forage. Bermudagrass pastures were fertilized with 56 kg of N/ha in late August. Grazing was initiated during early November and continued through the end of January each year. Treatments for the cow performance trials were: no supplement or daily equivalents of 0.2, 0.4, and 0.6 g of supplemental protein per kilogram of BW. Supplements were formulated to be isocaloric, fed at the equivalent of 0.91 kg/d, and prorated for 4 d/wk feeding. Varying the concentration of soybean hulls and soybean meal in the supplements created incremental increases in protein. During yr 1, supplemented cows lost less weight and condition compared to unsupplemented animals (P < 0.05). During yr 2, supplemented cows gained more weight (P = 0.06) and lost less condition (P < 0.05) compared to unsupplemented cows. Increasing supplement protein concentration had no affect on cumulative cow weight change or cumulative body condition score change. Forage intake tended to increase (P = 0.13, yr 1 and P = 0.07, yr 2) in supplemented cows. Supplement protein concentration did not alter forage intake. In a digestion trial, four crossbred steers were used in a Latin square design to determine the effects of supplement protein concentration on intake and digestibility of hay harvested from stockpiled bermudagrass pasture. Treatments were no supplement; or 0.23, 0.46, and 0.69 g of supplemental protein per kilogram of BW. Forage intake increased (P < 0.05) 16% and OM intake increased (P < 0.01) 30% in supplemented compared to unsupplemented steers. Diet OM digestibility increased (P = 0.08) 14.5% and total digestible OM intake increased (P < 0.05) 49% in supplemented compared to unsupplemented steers. Supplement protein concentration did not alter forage intake, total digestible OM intake, or apparent digestibility of OM or NDF. During the initial 30 d after first killing frost, beef cows did not respond to supplementation. However, later in the winter, supplementation improved utilization of stockpiled bermudagrass forage.  相似文献

Micromolar calcium activated neutral protease (CAPN1) was evaluated as a candidate gene for a quantitative trait locus (QTL) on BTA29 affecting meat tenderness by characterization of nucleotide sequence variation in the gene. Single-nucleotide polymorphisms (SNP) were identified by sequencing all 22 exons and 19 of the 21 introns in two sires (Piedmontese x Angus located at the U.S. Meat Animal Research Center in Clay Center, NE; Jersey x Limousin located at AgResearch in New Zealand) of independent resource populations previously shown to be segregating meat tenderness QTL on BTA29. The majority of the 38 SNP were found in introns or were synonymous substitutions in the coding regions, with two exceptions. Exons 14 and 9 contained SNP that were predicted to alter the protein sequence by the substitution of isoleucine for valine in Domain III of the protein, and alanine for glycine in Domain II of the protein. The resource populations were genotyped for these two SNP in addition to six intronic polymorphisms and two silent substitutions. Analysis of genotypes and shear force values in both populations revealed a difference between paternal CAPN1 alleles in which the allele encoding isoleucine at position 530 and glycine at position 316 associated with decreased meat tenderness (increased shear force values) relative to the allele encoding valine at position 530 and alanine at position 316 (P < 0.05). The association of maternal alleles with meat tenderness phenotypes is consistent with the hypothesis of CAPN1 as the gene underlying the QTL effect in two independent resource populations and presents the possibility of using these markers for selective breeding to reduce the numbers of animals with unfavorable meat tenderness traits.  相似文献

Syringohydromyelia secondary to foramen magnum overcrowding is described in seven Cavalier King Charles spaniels. Clinical signs were consistent with a central spinal cord lesion. The most common signs were persistent scratching at the shoulder region with apparent neck, thoracic limb, or ear pain and thoracic limb lower motor neuron deficits. The diagnosis was made by magnetic resonance imaging. The syringohydromyelia is postulated to be a consequence of an occipital bone malformation resulting in a small caudal fossa and cerebellar herniation. Clinical signs improved but did not completely resolve when the dogs received treatment with corticosteroids or nonsteroidal anti-inflammatory drugs.  相似文献
