以牛背最长肌为原料,分别加入调料、腌制剂、嫩化剂进行处理,采用真空和充气包装两种方式,研究了小包装嫩化牛排的颜色、持水性、嫩度和微生物学变化规律。结果表明,加入保水剂成功地解决了肌肉汁液流失问题;嫩化剂处理显著地提高了产品的嫩度;采用充气包装有一定的护色作用;结合颜色变化和微生物学变化综合考虑,在0℃~4℃条件下贮藏,产品货架期以7d左右较为适宜。 相似文献

屠宰年龄、体重相近45头优质南阳黄牛,对高档部位-西冷进行中温、低温和低温电刺激处理,测定高档牛肉在三种条件下成熟WB-S、pH的变化。试验结果表明:在低温电刺激条件下pH值很快下降,第1天达5.82,第2天最低达5.5,然后开始缓慢上升;第4天WB-S值达3.16,三种处理在第4天从肌肉组织状态、颜色和持水性比较,以低温电刺激为最好。 相似文献

Although chromosome set manipulation techniques including polyploidy induction and gynogentic induction in flatfish are becoming increasingly mature, there exists a poor understanding of their effects on embryonic development. PAX3 plays crucial roles during embryonic myogenesis and neurogenesis. In olive flounder (Paralichthys olivaceus), there are two duplicated pax3 genes (pax3a, pax3b), and both of them are expressed in the brain and muscle regions with some subtle regional differences. We utilized pax3a and pax3b as indicators to preliminarily investigate whether chromosome set manipulation affects embryonic neurogenesis and myogenesis using whole-mount in situ hybridization. In the polyploid induction groups, 94 % of embryos in the triploid induction group had normal pax3a/3b expression patterns; however, 45 % of embryos in the tetraploid induction group showed abnormal pax3a/3b expression patterns from the tailbud formation stage to the hatching stage. Therefore, the artificial induction of triploidy and tetraploidy had a small or a moderate effect on flounder embryonic myogenesis and neurogenesis, respectively. In the gynogenetic induction groups, 87 % of embryos in the meiogynogenetic diploid induction group showed normal pax3a/3b expression patterns. However, almost 100 % of embryos in the gynogenetic haploid induction group and 63 % of embryos in the mitogynogenetic diploid induction group showed abnormal pax3a/3b expression patterns. Therefore, the induction of gynogenetic haploidy and mitogynogenetic diploidy had large effects on flounder embryonic myogenesis and neurogenesis. After feeding female Eriocheir sinensis on an optimized formulated diet or fresh razor clam Sinonovacula constricta for 7 months, their reproductive performance and offspring quality were compared. To evaluate diet nutrient contents, the proximate, fatty acid and amino acid compositions of the formulated diet and the razor clam were analysed. The nutritional value of the diets was determined by assessing survival, gonadosomatic index (GSI) and hepatosomatic index (HSI) of female crabs from both diet treatments, together with the percentage of females that spawned, total egg production per female and fecundity (number of eggs g?1 female wet weight). Furthermore, the quality of eggs and newly hatched larvae from the two dietary treatments were determined using the following parameters: egg diameter, wet weight and dry weight, hatchability, proximate and fatty acid profile of eggs, larval carapace length, resistant to starvation and osmotic shock, larval survival and development to the zoea II stage. Higher protein, phospholipids (PL) and amino acids (AA) contents were found in the razor clam while the formulated diet contains higher levels of ash, total lipid (TL) and 18:1n‐9, 18:2n‐6 and 22:6n‐3 fatty acids. Although female crabs fed the two different diets showed similar reproductive performances, newly hatched zoea I larvae produced by the crabs fed the formulated diet had significantly longer mean carapace length and shorter development time to the zoea II stage under identical culture condition (P<0.05). Moreover, dietary fatty acid appeared to have more significant effects on the fatty acid composition of the hepatopancreas than it did on mature ovaries or eggs. This suggests that the fatty acid profile of mature ovaries is indicative of the specific fatty acid required for ovarian development in E. sinensis. In conclusion, our results show that the optimized formulated diet developed in this laboratory can totally replace the razor clam, a broodstock food widely used in E. sinensis hatcheries in China. This encouraging result should facilitate more reliable hatchery production of this important aquaculture species. 相似文献

在调查鄂尔多斯沙棘(Hippophae rhamnoidesL.)状况的基础上,以意愿评估法(CVM)为依据,设计了250份问卷,调查了鄂尔多斯地区居民对沙棘景观服务的支付意愿(WTP),并利用SPSS软件对影响居民支付意愿的因素进行了相关性分析。研究结果表明:WTP与收入水平和旅游意愿显著相关,与受访者的文化程度及其对沙棘生态作用的认知度也存在较显著的相关性。每位居民支付意愿的中位值为110.62元/年,平均值为221.17元/年,并基于中位值法和Spike修正模型的平均值法将此结论推广到整个鄂尔多斯地区,得出鄂尔多斯沙棘景观服务的总价值为1.759×108元/年~3.095×108元/年。 相似文献

为探明黑龙江垦区农村居民点的适宜耕作半径及主要影响因素,该文以黑龙江农垦总局建三江管理局所辖八五九农场为研究区,以农场内的农村居民点为研究对象,利用2010年国土资源第二次调查矢量数据库,通过空间分析和多元线性回归的方法,进行了定量化的研究。研究结果表明:研究区内各个管理区的适宜耕作半径均值是5 055 m,耕作半径的最大、最小值分别为7 438和3 265 m;平均耕作半径对应农机出行时间为20 min,摩托车出行时间为10 min;适宜耕作半径与水田种植比例、土地面积、聚居居民点与对应连队几何中心偏差距离均值的显著性检验F值远大于F0.01,三者对适宜耕作半径具有极显著的影响,三者的回归系数依次为-17.892、0.208、-0.147,即水田种植比例较高的区域,适宜耕作半径相对较小;土地面积较大的区域,适宜耕作半径相对较大;偏差距离均值较大的区域,适宜耕作半径相对较小。 相似文献

We applied under pot-culture conditions and the double-casing pot method to study the characteristics of photosynthetic gas exchange and chlorophyll fluorescence in the leaves of Physocarpus amurensis Maxim(PA) and Physocarpus opulifolius under flooding stress.Our results indicate a significantly higher flooding tolerance of P.opulifolius compared to P.amurensis.Especially in P.amurensis, the limitation of non-stomatal factors played a major role in the advanced stages of flooding stress,observed as a rapid increase of the intercellular CO_2 concentration(C_i) and a decrease of the stomatal limitation value(L_s).The maximal PSII photochemical efficiencies(F_v/F_m) and actual photochemical efficiency(?_(PSII)) in the leaves of P.opulifolius were significantly higher, and the extent of decrease during the flooding process was smaller than in P.amurensis.In addition, the non-chemical quenching(NPQ) in the leaves of P.opulifolius significantly increased from the 10 th day under flooding stress,while the variation of NPQ in the leaves of P.amurensis was much smaller.This indicates that the leaves of P.opulifolius had not only higher PSII photochemical activity, but also improved tolerance to flooding stress, which may be caused by its ability to dissipate excess excitation energy by starting NPQ.At the 16 th day under flooding stress, the PIABSsignificantly decreased with greater extent of decrease than F_v/F_m in the leaves of both Physocarpus,but the decreasing extent of PIABSin P.opulifolius was significantly smaller than in P.amurensis.In the 16 th day under flooding stress, the fluorescence at J and I point(V_J and V_I) in P.amurensis were significantly higher, and the extent of increase in V_J was greater than V_I.However, the variations of V_Jand V_I in the leaves of P.opulifolius were smaller, suggesting that the damage sites of flooding stress to PSII in the leaves of P.amurensis were mainly located in the electron transport process from Q_A at the PSII receptor side to Q_B.Flooding stress reduced the proportion(φ Eo) of luminous energy absorbed by the PSII reaction center for the electron transport following Q_A~-, while the maximum quantum yield(φ Do) of non-photochemical quenching increased.However, the TR_o/RC and ETo/RC in the leaves of P.amurensis decreased accompanied by a dramatic increase of energy(DI_o/RC) from the dissipation in the reaction center.This further indicated that the function of the PSII reaction center in the leaves of P.amurensis was significantly lower than in P.opulifolius. 相似文献
