Breadmaking properties such as bread height and specific volume were improved in bread from wheat flour with added disulfides such as dimethy disulfide (M2S2), diethyl disulfide (E2S2), dipropyl disulfide (Pro2S2), and dibutyl disulfide (B2S2). However, the amount of disulfides for maximum breadmaking properties was various and strongly related to the number of carbons (C) in the disulfide. Brabender farinographs of disulfide‐wheat flour showed an interesting profile, and the properties of the modification of the width of the tail. Size‐exclusion high performance liquid chromatography (SE‐HPLC) of the wheat proteins in the control and the disulfide‐added flours showed profiles of low, medium, and high molecular weight peaks. The area of the high molecular weight peak was larger in the disulfide‐added flours than in the control, indicating that this protein was important for the improvement of breadmaking properties. 相似文献

Breadmaking properties (bread height, mm, and specific volume, cm3/g ) showed marked deterioration when bread dough was frozen and stored at ‐20°C for one day. However, these properties of bread dough baked after storage for three to six days were not further deteriorated as compared with that baked after one day of storage. A large amount of liquid was oozed from the frozen‐and‐thawed bread dough. The liquid was separated from the bread dough by centrifugation (38,900 × g for 120 min at 4°C), and collected by tilting the centrifuge tube at an angle of 45° for 30 min. There was a strong correlation between the amount of centrifuged liquid and breadmaking properties (bread height and specific volume). The mechanism responsible for the oozing of liquid in frozen‐and‐ thawed bread dough was studied. The presence of yeast and salt in bread dough was suggested to be closely related to the amount of centrifuged liquid, and fermented products particularly had a large effect on the amount of centrifuged liquid. 相似文献

The necessity of dietary taurine supplementation for preventing green liver symptom and improving growth performance of red sea bream Pagrus major fed nonfishmeal (non-FM) diets was investigated. Yearling red sea bream (initial body weight, 580 g) were fed for 36 weeks on non-FM diets based on soy protein concentrate (SPC) supplemented with taurine at levels of 0%, 0.5%, 1.0%, 1.5%, and 2.0%. Specific growth rate (SGR) and feed conversion ratio (FCR) of fish fed the taurine-unsupplemented SPC diet were markedly inferior. In these fish, incidence of green liver was markedly higher and was accompanied by a decrease of tissue taurine concentration and an increase of hepatopancreatic bile pigment content. The green liver symptom was mainly caused by an increase of hemolysis since the erythrocytes became osmotically fragile due to taurine deficiency. Physiological abnormality and growth performance (SGR and FCR) were markedly improved by taurine supplementation to the SPC diets. These results indicate that dietary taurine supplementation is necessary for yearling red sea bream fed non-FM diet based on SPC to maintain normal physiological condition and growth performance. 相似文献

The requirement of dietary taurine in yellowtail fed a non-fish meal (FM) diet based on soy protein concentrate (SPC) was examined by a feeding trial. A recovery test (RCT) was also conducted to confirm the requirement of dietary taurine in yellowtail fed the SPC diet. The non-FM diet including 58% SPC as the protein source was supplemented with 0% (NTS) and 4.5% taurine (TS). A diet including 58% FM was also included as a reference. Juvenile fish (initial BW; 470 g) were fed one type of experimental diet for 39 weeks. The RCT group was fed the taurine un-supplemented SPC (NTS) diet for the first 23 weeks, and then fed the taurine supplemented SPC (TS) diet for 16 weeks. Tissue taurine concentration of the NTS group was significantly lower (P < 0.05) than that of the FM group. Specific growth rate (SGR) and feed conversion ratio (FCR) of the NTS group was significantly inferior compared to the FM group. In the NTS group, green liver syndrome was observed in all the samples. In contrast, tissue taurine concentration of the TS group increased to a similar level to that of the FM group. Compared to the NTS group, SGR and FCR of the TS group were significantly improved (P < 0.05) by taurine supplementation to the SPC diet. Moreover, yellowtail of this group could be reared for a long term without any physiological abnormalities, and their physiological condition and performance were comparable to the fish fed the FM diet. Although the physiological condition and performance of the RCT group was markedly inferior as the NTS group at the 23rd week (wk23) of the feeding trial, the physiological condition and performance of the RCT group markedly improved by the switch of the NTS diet to the TS diet at the end of feeding trial on the 39th week (wk39). These results indicate that yellowtail fed a non-FM diet based on SPC require taurine as an essential nutrient for maintaining normal physiological condition and growth performance. 相似文献

In tomato plants, salt stress has been induced to improve the quality of fruit. In general, plants under salt stress produce reactive oxygen species (ROS). Plants have their own ROS scavenging systems (antioxidant systems). In tomato plants, salt-induced changes in antioxidant systems have been examined extensively in leaves and roots; however, detailed information about salt-stressed fruits is not available. We examined the salt-induced changes in the antioxidant systems of the pericarp (containing epidermis) and pulp (containing seeds, placenta, and locule) during fruit ripening. Salt treatments were applied by adding 100 mM NaCl to the nutrient solution. In the pericarp and pulp, lipid peroxidation and hydrogen peroxide content were not increased by salt stress during ripening, indicating the absence of salt-induced oxidative stress. In the pericarp, the activities of superoxide dismutase (EC 1.15.1.1) and ascorbate (ASA)–glutathione (GSH) cycle-related enzymes increased with salt stress at the turning stage. Thus, at the turning stage, the antioxidant system may contribute to the enzymatic reaction involved ASA–GSH cycle. However, during the red and over-ripe fruit stages, salt stress produces little effect on antioxidant enzymes. In addition, the concentrations of antioxidants, such as the reduced form of ASA and GSH, increased during ripening in the control fruit, but those in the salt-stressed fruit remained unchanged. Therefore, the antioxidant system may contribute to the nonenzymatic reactions such as ASA and GSH taking place during the red and over-ripe fruit stages. In contrast, in the pulp, salt stress produces little effect on antioxidants and antioxidant enzymes. These results indicate that the salt-stressed fruit has protection mechanisms against salt-induced oxidative stress during ripening in both the pericarp and pulp. Wheat starch granules were separated from waxy wheat flour by the acetic acid (pH 3.5) fractionation technique. Waxy wheat starch samples were stained red‐brown using KI/I2 solution. Subsequently, the concentration of the KI/I2 solution was increased to >2.5% KI and 1.0% I2. Then the appearance of the waxy wheat starch granules quickly became ghostlike. The internal structure of the ghost could be observed. This structure consisted of two parts with different colors: a red‐brown central part and a slightly pinkish surrounding part. Sonication of the ghost at 20 kHz for 20 sec separated the central part from the surrounding part. Each of the separated parts were subjected to gel‐filtration chromatography, and their chromatography profiles indicated only amylopectin and no amylose. The central and surrounding parts had molecular weights of 54.3 × 105 and 23.8 × 106 from Berry plots, respectively. 相似文献
