Carotenoids and flavonoids are the main tomatoes antioxidants, having an important role for human health. This study investigates the effects of different water regime and of the industrial processing on the concentration of these compounds in tomato fruits and in tomato products. Two biotypes of Corbarini small tomatoes were cultivated in the Sarno valley (Salerno, Italy) using three different water regimes. A biochemical characterization of the fresh and of the corresponding canned products was performed. Results show that water regime influenced the antioxidant profile of tomato fruits, with marked differences between the two biotypes. Data obtained highlight that water regime markedly influenced the productivity and the quality of the tomatoes. Results also demonstrated that industrial process increased carotenoids content without causing a significant flavonoids degradation. 相似文献

An instrumental texture analysis method has been optimized for the differentiation of grape ripening stages based on the simultaneous determination of mechanical and acoustic parameters of the seeds. Two factorial central composite design was used to optimize the most influencing operative conditions (speed and deformation) on mechanical and acoustic measurements. This experimental design in combination with response surface methodology showed that the most responsive parameters to changes in seeds during ripening were Young's modulus of elasticity, many acoustic parameters measured with instrumental gain set to 0 (acoustic energy, linear distance, and number of peaks) and others measured at 24 dB gain (linear distance, number of peaks, and average pressure level). However, the optimal operative conditions depended on the texture parameter used. A correlation study between texture parameters and phenolic compounds of the seeds revealed that acoustic parameters like the average pressure level could be proposed as phenolic maturity indices. 相似文献

A collecting expedition has been carried out in the inland areas of the Basilicata Region, South Italy. Each of the 14 selected municipalities was subdivided in three strata based on the geographical distribution of population and orography: 1. city boundaries, 2. group of country houses, 3. isolated farm houses. Five sites were selected within each stratum/town for a total of 185 sites. In 101 sites crop species germplasm was collected and the farmer-maintainers were interviewed. Altogether 350 accessions were collected, the most common species were Capsicum annuum, Lycopersicon esculentum and Phaseolus vulgaris. A significant number of landraces are still preserved on farm, mostly in isolated farm houses (average age of farmers: 60?years) adopting traditional farming systems but a number of young farmers were also present. Perspectives for on farm conservation and management are discussed and public economic support for “farmer-maintainers” proposed. 相似文献

Abstract Composting olive oil pomace could solve the problem of disposal, by recycling this organic waste for agricultural purposes. Furthermore, application of composted organic waste could be a way to sustain both soil fertility and production, especially in organic farming. Therefore, the aim of this research was to evaluate the phytotoxicity and the effects of application of olive pomace composts on emmer performance and soil properties. Two types of olive pomace composts, with a different initial C/N ratio, were stopped at the active phase and processed until maturation. The obtained four olive pomace composts were compared with a commercial fertilizer in a two-year field experiment. Before the field trial, a bioassay was performed to assess phytotoxicity both for the raw pomace and the not-stabilized composts. Growing and yielding data for emmer were determined during the two-year period and soil characteristics were measured at the start and at the end of the experiment. The composts were not phytotoxic (germination index was higher than 90%) and their total organic carbon content was always higher than the minimum values established by the Italian fertilizers legislation. The emmer protein content was significantly higher in the matured compost treatment with low C/N, than in the other compost treatments. Its value was comparable with that of the commercial fertilizer, suggesting a good performance on crop yield quality. Although not significant, this compost showed an increase of 9.8% in grain yield compared with commercial fertilizer treatment. On the whole, it can be suggested that repeated compost application might preserve the soil organic carbon content and supply macronutrients to a crop. 相似文献

The combined effect of gluten glycation and proteolysis on the release of compounds exhibiting in vitro angiotensin-converting enzyme (ACE) inhibitory, antioxidant and antibacterial activities was investigated. Model systems consisting of wheat gluten and glucose were heated at 120 °C for 45 min, 150 °C for 30 min and 220 °C for 30 min to produce various Maillard reaction products mimicking reactions occurring in bread crusts. Progress of the Maillard reaction was estimated through indirect measurement of Amadori compounds as 2-furoylmethyl-amino acids. Glycation was followed by digestion with Pronase E and ultrafiltration. The anti-hypertensive activity was measured as the ability to inhibit the activity of angiotensin I-converting enzyme involved in hypertension regulation. The Oxygen Radical Absorbance assay was used to measure the peroxyl radical scavenging capacity of the products and their effect on microbial growth of Escherichia coli ATCC 25922 and Staphlococcus aureus ATCC 25923 was also studied. Advanced products of the reaction enhanced the antioxidant and antibacterial properties of gluten hydrolysates and decreased the overall ACE inhibitory activity. Ultrafiltration provided a useful method for separating compounds (< 3000 Da) with ACE inhibitory activity and advanced Maillard reaction products (>3000 Da) which scavenged peroxyl radicals and inhibited the microbial growth. 相似文献

Ten accessions of wild Borago officinalis were collected during missions in the course of a research activity carried out on plants producing nutraceutical compounds. The aim was to identify populations that produce a higher content of γ-linolenic acid, as this compound has important therapeutic properties and has been used in medical tests to treat rheumatoid arthritis, eczema, and psoriasis with good therapeutical results. The present study reports on the characterization of both the polyunsaturated fatty acid composition and on genetic diversity estimated by means of AFLP markers in several B. officinalis accessions collected in Southern Italy and grown in isolation by means of screen houses specifically designed for each single population. Polyunsaturated fatty acid were found in different amounts in all investigated accessions. The populations were very variable at the molecular level, and the analysis of relationships based on AFLP data, showed that similarity based on Jaccard’s index ranged between 0.330 and 0.742. A simple and rapid procedure was developed for the direct measurement of the antioxidant capacity of cereals. It entails grinding of cereals, mixing with 2,2′-azinobis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) reagent, centrifugation and measure of the absorbance. The ABTS reagent was dissolved in a mixture of ethanol:water (50:50, v/v), instead of 100% ethanol, in order to overcome low solubility of water-soluble antioxidant compounds of some cereals. A reaction time of 30 min allowed plateau values to be reached during the antioxidant capacity measurement of cereal samples. The accuracy of the direct procedure was confirmed by measuring, in solid state, the antioxidant activity of pure phenolic compounds.The direct procedure gave results of total antioxidant capacities significantly higher than those determined by the traditional procedure (multiple extraction followed by alkaline hydrolysis) for most whole meal cereals, suggesting that such a procedure was not always sufficient to properly assess the antioxidant capacity of bound phenolic compounds in cereals. The proposed extraction-independent procedure for measuring antioxidant capacity of cereals will facilitate the inter-laboratory data comparison, the construction of reliable antioxidant capacity database and the screening of large sampling of cereals for their nutraceutical characteristics. 相似文献

A base-promoted cyclisation of 4-nitroso-5-benzylsulphonamidopyrazoles (VII) afforded 6 H -pyrazolo[3,4-c][1,2,5]thiadiazine-2,2-dioxides (VIII). They were tested in vitro for antifungal activity against a series of phytopathogenic fungi of different taxonomic classes. Five of the compounds had noteworthy activity; in particular 6H-3-phenyl-5-methyl-7–(3,4-dichlorophenyl) pyrazolo[3,4-c][1,2,5]thiadiazine-2,2-dioxide (VIIIc) at the concentration of 200 mg litre?1 completely inhibited the growth of Pythium ultimum, Corticium solani and Sclerotinia minor. 相似文献
