This study was conducted to evaluate the effect of dietary resveratrol (Res) supplementation on serum parameters, meat quality and muscle antioxidant status of broilers under heat stress (HS). A total of 270 21‐day‐old male Cobb broilers were randomly assigned to three treatment groups with six replicates of 15 birds each. The three treatment groups were as follows: the control group, in which birds were reared at 22 ± 1°C, and the HS and HS + Res (400 mg/kg) groups, in which birds were reared at 33 ± 1°C for 10 h (08.00–18.00 h) and 22 ± 1°C for the rest of the time. Compared with birds in the control group, birds in the HS group exhibited increased serum corticosterone (CORT) and triacylglycerol contents, L*, drip loss and muscle malondialdehyde content, and decreased serum glucose content, pH24 h, muscle total antioxidant capacity (T‐AOC), catalase (CAT) and glutathione peroxidase (GSH‐PX) activities (< 0.05). Compared with birds in the HS group, birds in HS + Res group exhibited increased serum glucose content, a*, pH24 h, muscle T‐AOC and CAT activities, and decreased serum CORT and triacylglycerol contents, L*24 h, drip loss and muscle malondialdehyde content (< 0.05). In conclusion, Res beneficially protects against HS‐impaired meat quality of broilers through regulating muscle antioxidant status.  相似文献

The relationship between color change and other physical and chemical characteristics of sliced cooked cured beef (SCCB ) during chilled storage were investigated using principal components analysis (PCA ) to determine the color fading causes. Samples were prepared and stored at 8°C for up to 35 days in a vacuum package to simulate a supermarket storage environment; related indicators were measured periodically every week. The results showed that the first PC explained 59.82% of the total variation, and the second explained 22.28%. PC 1 was a concentrated reflection of color changes of SCCB during storage and PC 2 was an environment factor causing the change of color. The change in apparent redness is mainly caused by redox reaction of the nitroso hemochromogen (NH ) (eigenvectors of a* , C and NH in PC 1 were all the maximum value of 0.28); a* was correlated with NH (0.96), free sulfhydryls (0.98), carbonyl derivatives (?0.95) formed during protein oxidation, and malondialdehyde (?0.98) and dienes (?0.92) formed by lipid oxidation. Color fading was significantly correlated with oxidizing and reducing power, existing forms of nitrogen and with the pH of the meat matrix. 试验以通城猪为母本,长白猪(瑞典)、大白猪(英国)为父本进行三元杂交,对两个三元杂交猪(长×(大×通)、大×(长×通),简称为长×大×通、大×长×通)及亲本分别从生长性能、胴体性状及肉品质方面进行了比较。结果显示,长×大×通和大×长×通三元杂交猪的生长性能、胴体性状及肉品质均表现出较好的杂种优势。长×大×通三元杂交猪的测定期平均日增重、料重比、活体背膘厚、剪切力、大理石纹和肌内脂肪含量的杂种优势率分别为12.54%、-13.89%、10.39%、-8.71%、-8.33%和8.57%,大×长×通的杂种优势率分别为10.81%、-11.05%、10.55%、-6.50%、6.67%和2.44%。长×大×通和大×长×通两者比较,长×大×通三元杂交猪的试验期平均日增重、眼肌面积及腿臀肉骨率分别为843.4 g/d、34.51 cm2和73.54%,大×长×通三元杂交猪分别为808.6 g/d、31.45 cm2和70.67%,二者差异均显著(P<0.05)。综上所述,以通城猪为母本进行的两个三元杂交猪的生长和胴体性状显著优于亲本通城猪,肉质显著优于亲本长白猪和大白猪,且长×大×通组合优于大×长×通组合。  相似文献

The aim of this study was to explore the relationship between residual feed intake (RFI) and some production performances including slaughter performance and meat quality. The RFI and production performances from 400 Beijing-You chickens were used to analyze the correlation of these traits. The results showed that the average daily feed intake (ADFI) and the average daily gain(ADG)of male chickens were extremely significantly higher than female ones (P<0.01), while the feed conversion ratio (FCR) was decreased extremely significantly (P<0.01). The percentage of carcass and thigh muscle as well as the redness (a*) were extremely significantly higher in male chickens than female ones (P<0.01). In male chickens, RFI had positive correlation with FCR, ADFI (P<0.01)and percentage of abdominal fat(P<0.05) and negative correlation with percentage of breast muscle and percentage of thigh muscle(P<0.01). In female chickens, RFI had positive correlation with FCR, ADFI (P<0.01) and ADG (P<0.05), but negative correlation with percentage of thigh muscle (P<0.01). In male chickens, RFI was correlated positively with lightness (L*) (P<0.01) and chroma (C*) (P<0.05). While in female chickens, RFI had positive correlation with L*, yellowness (b*) (P<0.05), a* and C*(P<0.01), but had extremely negative correlation with Hue (H*) and pH (P<0.01). Therefore, RFI had correlation with some production performances including slaughter performance and meat quality.  相似文献

试验旨在研究延边黄牛ACTA1基因的遗传变异,分析其多态性对肉质性状的影响。采用PCR-RFLP和PCR-SSCP方法探讨ACTA1基因多态性及其与肉质性状的关联性。结果发现,延边黄牛ACTA1基因存在2个突变位点:A193G突变,导致氨基酸Arg → Gly的错义突变;A298G突变,导致氨基酸Lys →Arg的错义突变。χ2检验显示,A193G和A298G位点于检测群体中处于Hardy-Weinberg平衡状态(P>0.05)。关联分析显示,延边黄牛ACTA1基因2个突变位点的不同基因型与肌肉中肉豆蔻酸、油酸含量、眼肌面积、大理石花纹等级呈显著相关(P<0.05)。初步认为ACTA1基因对延边黄牛肉质性状有显著影响,可作为延边黄牛新品种早期选择的候选基因。  相似文献

本研究旨在探讨肌肉生长抑制素(myostatin,MSTN)基因多态性及其与赤水乌骨鸡肉质的关联性。采用DNA池、PCR产物直接测序方法对赤水乌骨鸡MSTN基因的外显子进行多态性检测,结果发现,在赤水乌骨鸡MSTN基因的外显子1中检测到1个SNP位点C324T,表现为3种基因型,分别命名为CC、CT和TT,而在MSTN基因外显子2、3上没有发现多态位点。对基因型与肉质性状关联分析显示,CT基因型胸肌、腿肌pH均显著高于CC和TT基因型(P<0.05),CT基因型剪切力显著高于TT基因型(P<0.05),其他肉质性状在不同基因型间差异均不显著(P>0.05)。此结果提示,MSTN基因对赤水乌骨鸡pH和剪切力具有较大的遗传效应,初步推断 MSTN是控制这一性状的众多基因之一,且可能是影响赤水乌骨鸡pH和剪切力的一个主效基因或与主效基因相连锁,可作为选育赤水乌骨鸡pH和剪切力的分子标记,用于标记辅助选择意义重大。  相似文献

为了明确云岭牛不同解剖部位肉的品质特性,本试验测定了云岭牛冈上肌(SU)、冈下肌(IF)、臀三头肌(TB)、菱形肌(RH)、颈腹侧锯肌(SVC)、夹肌(SP),中部胴体的腰大肌(PM)、背最长肌(LD)、背阔肌(LA),后部胴体的半膜肌(SM)、半腱肌(ST)、股二头肌(BF)、臀中肌(GM)、股直肌(RF)、股外侧肌(VL)和阔筋膜张肌(TFL)共16个解剖部位肉的压力失水率、蒸煮损失、剪切力、pH、亮度(L*)、红度(a*)、黄度(b*)、粗蛋白质、脂肪、水分10项品质指标,并通过方差分析、相关性分析和标准化分析研究其品质特性。结果显示,云岭牛不同解剖部位肉之间的10项品质指标均存在显著差异(P<0.05)。冈上肌、冈下肌、腰大肌、颈腹侧锯肌和阔筋膜张肌的嫩度较好,其剪切力均低于4 kg。夹肌、半腱肌和股外侧肌的保水性较差,半腱肌的L*值最高。相关性分析结果表明,剪切力和压力失水率、蒸煮损失呈显著正相关。标准化分析发现,背最长肌和半腱肌具有相似的品质特征;股二头肌、臀中肌和股外侧肌具有相似的品质特征。结果表明,部位因素对云岭牛肉品质具有显著影响,云岭牛胴体前部肉品质较好,可以作为开发高档产品的原料来源。  相似文献

肌细胞生成素(myogenin,MyoG)基因在肌细胞分化过程中起着中心调节作用,直接影响着动物的产肉能力。本研究以大尾寒羊、小尾寒羊、豫西脂尾羊、兰州大尾羊、蒙古羊、同羊6个绵羊品种为试验材料,利用非变性聚丙烯酰胺凝胶电泳检测MyoG基因外显子1的多态性,并与绵羊的肉质性状进行关联分析,探讨MyoG基因外显子1对绵羊肉质性状的影响。结果表明,MyoG基因外显子1在6个绵羊群体中均检测到3种基因型(AA、BB、AB)和2个等位基因(A、B),在小尾寒羊、大尾寒羊、豫西脂尾羊、兰州大尾羊、蒙古羊、同羊群体中检测到MyoG基因外显子1的A等位基因频率分别为:0.5167、0.2500、0.4375、0.6500、0.5750和0.7125,MyoG基因外显子1的B等位基因频率分别为:0.4833、0.7500、0.5625、0.3500、0.4250和0.2875。MyoG基因外显子1主要对羊肉的水分和色泽有影响,主要表现为BB基因型水分极显著高于AB基因型(P< 0.01),显著高于AA基因型(P< 0.05);AB基因型的色泽极显著高于BB基因型(P< 0.01),显著高于AA基因型(P< 0.05)。  相似文献

为了提高荷斯坦奶牛后代的产肉性能和肉品质,将德系西门塔尔牛冻精冷配荷斯坦奶牛,选择杂交一代的公牛(试验组)和荷斯坦公牛(对照组)各20头,通过育肥和屠宰试验比较其生长发育指标、屠宰性状指标和肉品质指标。结果表明,与对照组相比,18月龄试验组体质量极显著提高7.74%,优质肉块质量牛柳+西冷、大米龙+小米龙分别极显著提高30.56%、27.07%,眼肌面积极显著提高21.09%,牛肉中粗蛋白、总氨基酸、谷氨酸、甘氨酸和天门冬氨酸的含量分别显著提高17.63%、8.19%、10.39%、19.19%和28.75%。综上,利用德系西门塔尔牛冻精冷配荷斯坦奶牛可以提高荷斯坦牛后代公牛的生长性能、产肉性能和肉品质。  相似文献
