1. The experiment was conducted in order to determine the effect of the direction of turkey crossing on quality traits of their thigh muscle.

2. In total, 1358 turkeys of slow- (SG) and fast-growing (FG) lines as well as SF crosses (SG × FG) and FS crosses (FG × SG) were reared with access to free range to 21 weeks of age in the case of males and 15 weeks of age in the case of hens.

After slaughter of 15 males and 15 hens from each genetic line, their thigh muscles were examined and the following traits were measured after 5-min, 45-min, 2-h and 24-h post-mortem: temperature, pH, glycogen content (G), lactate content (L) and electrical conductivity (EC). Quality attributes were evaluated based on chemical composition, water holding capacity, cooking loss (%) and colour.

The rate of post-mortem changes in temperature, G, L and pH in muscles differed among the 4 lines of turkeys, with the highest metabolic rate determined for muscles of SG turkeys, followed by muscles of SF, FS and FG birds. A more beneficial muscle water holding capacity of both sexes of turkeys and better results of cooking loss in male muscles were found in SG and SF turkeys. The thigh muscles of the crosses were characterised by a higher content of protein and a lower content of fat compared to the muscles of FG turkeys, and in the case of the males also by a higher protein content compared to the muscles of SG birds.

Owing to the faster post-mortem metabolism, better water holding capacity, lower cooking loss and fat content at a similar content of protein, the thigh muscles of SF crosses raised in the free range system represent a better quality of meat for consumers compared to the thigh muscles of FS turkeys.  相似文献

After slaughter turkey breast muscles were examined in the following terms: 5 min, 45 min, 2 h and 24 h post-mortem, for: temperature, pH, glycogen content (G), lactate content (L) and electrical conductivity (EC). Quality attributes of the breast meat were evaluated based on chemical composition, water holding capacity (WHC), cooking loss (%), shear force (N) and colour (L*, a*, b*).

  4. Despite differences in the rate of post-mortem changes, the genotype of turkeys had no significant effect upon many quality traits assessed 24 h post-mortem. Meat of lighter birds (SG and SF) was characterised by a lower fat content but a similar protein content compared to meat of FS and FG turkeys. In addition, meat of males from these groups was darker. Meat from the breast muscles of heavier birds (FS and FG) was harder.

  5. Significant negative maternal effects were determined for temperature of meat of both male and female turkeys, for pH2 and EC24 of males as well as for L2, L24 and cooking loss of female meat. Positive heterosis was confirmed only for pH2 of female meat and for G2 of male meat.

  6. In summary, the direction of fast- and slow-growing turkey crossing may affect the quality of their meat. However, meat of both types of hybrids reared under semi-confined conditions (with the possibility of using free range) was characterised by appropriate quality parameters.

The distribution of water in soybean seeds during imbibition varies with the chemical composition of the tissue. To understand the dynamics of imbibition, the proteins, lipids, and carbohydrates of the cotyledons and hilum region in mature soybean seeds were mapped using synchrotron Fourier transformed infrared microspectroscopy, based on characteristic peaks for each component: amide I at 1650 cm(-1) and amide II at 1550 cm(-1) for protein, lipid ester stretch at 1545 cm(-1), and the region from 1200 to 900 cm(-1) for carbohydrates. The amount and configuration of the proteins varied across the cotyledon, as well as the amount of lipid and carbohydrate. It was found that protein distribution across the cotyledon is similar to water distribution during imbibition. The chemistry of the hilum region was also studied, as this is the point of water entry, and differences in the chemical composition of the tissues studied were observed.  相似文献

The effect of two diets enriched with unsaturated fatty acids – one containing the addition of dried distillers grains with solubles (DGS) and the other the addition of false flax – Camelina sativa cake (CS) – on some metabolic parameters and hormone concentration in growing lambs was determined in this experiment. A total of 21 ram lambs of the Polish Whiteheaded mutton sheep were divided into three groups (the control, receiving DGS and CS). The diets were administered to animals for 6 weeks. During the experiment, peripheral blood was collected. Glucose (GL), total cholesterol (CH), triglycerides (TG), free fatty acids (FFA), insulin (IN), leptin (LE), triiodothyronine (T3) and thyroxine (T4) were assayed in serum. The age‐dependent reduction in CH and TG limited by both experimental diets were observed. A significant increase in FFA concentration was observed in samples collected in the last, that is, third, time period. This was most probably caused by a 12‐h pre‐slaughter fasting period. A significantly lower dynamic of FFA increase in that experimental period was found in animals receiving the experimental feed. Insulin concentration in DGS‐receiving lambs was increased, in contrast to the CS‐receiving lambs, in which it was lower when compared to the control. LE concentration was decreased by both experimental diets, more markedly in the DGS‐receiving animals. No differences between the experimental groups and the control were observed in T3 and T4 concentrations. The effect of 12‐h pre‐slaughter fasting was statistically highly significant for the levels of examined blood markers and hormones, except for TG and IN in the group of lambs receiving the experimental diet with CS.  相似文献

Poland has the largest agricultural area within the Baltic Sea drainage basin and reducing the risk of phosphorus (P) and nitrogen (N) leaching from Polish soils to water is therefore essential. Increased acidity is known to reduce soil fertility and may trigger P leaching from non-calcareous soils. As part of advisor training, 25 farms each in Pomerania and north-western Mazovia were visited and 1500?ha arable soil, including 180?ha grassland soil, were monitored in 2013–2014. The soil was mainly coarse textured, but 25% of the Pomeranian farms were dominated by silty or clayey soils. More or less regular drainage systems were found on 20% of the farms, while 50% had simpler, older (>30 years) systems with a few single pipes. The farmers often used only ammonium sulphate or other acidifying N mineral fertiliser. Median pH on the Pomeranian farms, analysed in potassium chloride solution [pH(KCl)], was 5.2 and liming was advised for fields on most (72%) of these farms. Soil P content, measured by double-lactate extraction (PDL), was positively and significantly correlated (Pearson coefficient 0.57; p?DL (P given in elemental form) tended to be lower on dairy farms and arable farms and was significantly lower (mean 51?mg?PDL?kg?1 soil) on mixed farms (with just a few cows and poultry) than on pig farms (mean 122?mg?PDL?kg?1 soil). Farm-gate balances indicated deficits of P and potassium (K) on many of the small mixed farms in Pomerania and the soil can be expected to be nutrient depleted. In contrast, the pig farms demonstrated surplus farm-gate P balances (mean 27?kg?ha?1). The P leaching risk is discussed relative to soil threshold values and to results from Swedish long-term field experiments.  相似文献

The concentration of ferulic acid (FA), the major phenolic acid in the wheat kernel, was found to differ significantly in the mature grain of six wheat cultivars known to have a range of tolerance to the orange wheat blossom midge (Sitodiplosis mosellana). Differences in FA content were correlated with floret infestation level of the cultivars. The wheat cultivars ranked similarly in FA content at the four locations where they were tested, despite a significant effect of environment. Ferulic acid was synthesized mainly during the early stages of grain filling but at different rates among cultivars. Ferulic acid was concentrated primarily in the shorts and bran fractions in an insoluble-bound form. A high correlation was obtained between FA contents as determined by GLC, fluorometry, UV, and colorimetry. The colorimetric procedure was modified as a qualitative, simple, and rapid test for identifying midge-resistant wheat and evaluated in several field trials. The method should provide a rapid tool in the preliminary screening of experimental lines in the development of midge-resistant wheat cultivars.  相似文献

Dietary effects on the intestinal microflora have gained increasing interest because of the evidence that a balanced micro ecology in the gut is important for health and well being. The aim of the present study was to evaluate the effect of different diets on faecal counts of bifidobacteria and Clostridium perfringens in dogs. Two extruded, dry diets, one supplemented with 3% chicory (1.5% inulin), a non-digestible oligosaccharide (NDO) and the other with 3% glucose (GLU) were compared with a protein rich diet (PR+) based on low quality animal derived protein sources (NDO 265, GLU 259, PR+ 726 g crude protein/kg dry matter; greaves meal and bovine lung as protein sources in PR+). Nine adult beagles were subjected to a consecutive cross-over trial. All dogs started with diet PR+, after which groups of four dogs (group A) received GLU and the other five dogs (group B) received NDO. After an intermediate wash-out period with diet PR+ for 3 weeks the A dogs were switched to diet NDO and B dogs to GLU. In the final period all dogs were fed with diet PR+. Faecal samples were collected during each period for dry matter and pH measurements. Faecal bifidobacteria and Cl. perfringens were quantified in fresh samples at the end of each feeding period and additionally on the first days after feed change from the dry diets to diet PR+. Diets NDO and GLU increased faecal dry matter and reduced faecal pH from 6.9 to 7.4 with the high protein diet to 5.9-6.5. The dry diets induced a firmer faecal consistency and a lower faecal pH, with no significant difference between NDO or GLU. Clostridium perfringens was found in all faecal specimens after feeding PR+ with counts of log 8.2-8.8 colony forming units (cfu)/g faeces. Both dry diets reduced the counts of Cl. perfringens significantly (log 3.3-4.0 cfu/g faeces). Switching from the dry diets to the high protein diet induced an increase of Cl. perfringens within 1 day, independent of the previous diet. In dogs fed PR+, bifidobacteria were detected in only four faecal samples and exclusively in the initial feeding period. During the remainder of the experiment the counts fell below the detection limit (log 6 cfu/g faeces). The faecal concentrations of bifidobacteria increased with both dry diets. Slightly higher concentrations (log 9.6-9.7 cfu/g faeces) were obtained from dogs fed the dry diet containing NDO compared with the diet containing glucose (log 9.3-9.4 cfu/g faeces). The increase was small which may be related to the level of total fermentable carbohydrates in both diets which alone increase remarkably the total counts of bifidobacteria. In conclusion, distinct dietary effects on the faecal counts of Cl. perfringens and bifidobacteria with a clear antagonistic pattern were observed. The main factor was the protein source and level in the diet. In this case, NDO favoured the concentrations of bifidobacteria to a limited degree. Further studies are needed to evaluate time effects, metabolic consequences and the potential implication for health promotion in pets.  相似文献
