Twenty-three seeds of different botanical families growing in India were analysed for their protein content and amino acid compositions. They showed a wide variation in their total protein (8.0 to 42.7%). Some of them were comparable and some were even better than popular food legumes such as kidney bean and chick-pea in protein levels and amino acid compositions.  相似文献

Seven varieties of buckwheat, two Indian selections (F. esculentum, F. tetaricum) and five from Poland (Czernoplodna, Hruszowska, Jubilejna, Emka and Iskra) were cultivated under North Indian conditions and analysed for their protein and amino acid composition. The present studies revealed that European selections can also be successfully cultivated in India. Buckwheat is a good source of lysine, and some other essential amino acids.  相似文献

Seeds of 28 wild growing legumes of India were analysed for their protein content and amino acid compositions. A wide variation was observed in protein contents (18.3 to 50.9%). The amino acid composition and protein content of some of these seeds were in close proximity to that of soybean; however, some legumes registered a higher level of certain amino acids and protein as compared to the latter.  相似文献

Transgenes encoding the HMW subunits 1Ax1 and 1Dx5 have been transferred from “model” wheat lines into the commercial French bread wheat cultivar Soissons, using three backcrosses. Five pairs of BC3 expressing and null lines were isolated from each cross and multiplied to provide grain for functionality studies. Analysis of white flour samples confirmed the expression of the transgenes. SE-HPLC and Reomixer studies showed that the two transgenes had differential effects on dough functional properties. Thus, subunit 1Dx5 resulted in detrimental effects on dough development which were associated with decreased extractability of large glutenin polymers. In contrast, lines expressing subunit 1Ax1 contained increased proportions of extractable large glutenin polymers with three lines showing higher torque at similar mixing times (i.e. increased dough strength). This confirms the results obtained with the model wheat lines and shows that the 1Ax1 transgene can be used to increase dough strength in commercial cultivars.  相似文献

Twenty two lines/accessions belonging to 5 species ofCelosia were analysed for their nutritional and antinutritional composition. The nutrient contents, vitamin C varied from 18.8 to 53.6 mg/100 g, carotenoids 9.1 to 15.1 mg/100g, protein 2.1 to 5.9%, while the antinutritional factors, nitrate 0.18 to 0.46% and oxalate 0.98 to 3.93%. Moisture ranged 81 to 89%. Variation of these parameters with leaf position and the amino acids profile of some promising lines was also evaluated.  相似文献

Seed of 34 cultivars of winged bean of different origin were evaluated for their nutritional composition and the antinutritional factor, the trypsin inhibitor. The values ranged from 14.1–17.6, 6.12–8.73, 21.94–34.89 and 30.86–39.05% for their fat, fibre, carbohydrate and protein contents, respectively. The protein content in defatted seed meal ranged from 33.43–47.25%, whereas the trypsin inhibitor activity (TIA) registered a wide variation from 63–123 mg g?1 with seed coat and 51–98 mg g?1 without seed coat. The strain selection-12 and NBRI selection contained the minimum TIA (63 mg g?1), while the highest value (123 mg g?1) was in variety V7, a 2-fold higher activity.  相似文献

Pentaphyllous mutants in black gram were isolated in M2 generation of a segregating family, irradiated at 20kR. The genetic nature of mutants was tested by hybridizing with controls, and chi-square tests applied to the F2 population, proved it to be a monogenic recessive. The pentaphyllous mutant had a greater number of pods and leaves per plant and larger and more root nodules. It also showed improved nutritional value with increased seed protein percentage and no increase in TIA (trypsin inhibitor activity).  相似文献

The low molecular weight glutenin subunits (LMW-GS) are major components of the glutenin polymers which determine the elastomeric properties of wheat (Triticum aestivum L.) gluten and dough. They comprise a complex mixture of components and have proved to be difficult to purify for detailed characterisation. The mature LMW subunit proteins comprise two structural domains, with one domain consisting of repeated sequences based on short peptide motifs. DNA sequences encoding this domain and a whole subunit were expressed in Escherichia coli and the recombinant proteins purified. Detailed comparisons by spectroscopy (CD, FT-IR) and dynamic light scattering indicated that the repetitive and non-repetitive domains of the proteins formed different structures with the former having an extended conformation with an equilibrium between poly-L-proline II-like structure and type II' β-turns, and the latter a more compact globular structure rich in α-helix. Although the structures of these two domains appear to form independently, dynamic light scattering of the whole subunit dissolved in trifluoroethanol (TFE) suggested that they interact, leading to a more compact conformation. These observations may have relevance to the role of the LMW-GS in gluten structure and functionality.  相似文献
