Meat quality characteristics of Bafra ram lambs slaughtered at different weights were investigated. A total of 24 lambs fattened intensively was slaughtered at four slaughter weights of 30, 35, 40, and 45 kg. Water-holding capacity, cooking loss, tenderness, color, as well as protein content did not vary significantly among the slaughter weight groups, although the 30-kg slaughter weight lambs displayed the greatest postmortem pH fall in musculus longissimus dorsi (P < 0.05). As slaughter weight increased, intramuscular fat of musculus longissimus dorsi showed an increasing nutritive value (P < 0.05), total unsaturated fatty acids/saturated fatty acids ratio (P < 0.05), and n6/n3 ratio (P < 0.05). However, atherogenic index and thrombogenic index values decreased with increasing slaughter weight, although this effect was not significant. The effect of slaughter weight on total cholesterol was not pronounced.  相似文献

The essential oil from the gum of Pistachio (Pistacia vera L. (Anacardiaceae)) grown in Turkey was obtained by the hydro-distillation method, and its chemical composition was analyzed by GC and GC-MS. Moreover, the antimicrobial activities of the oil against the growth of 13 bacteria and 3 pathogenic yeasts were evaluated using the agar-disk diffusion and minimum inhibitory concentration (MIC) methods. The results showed that the essential oil contained about 89.67% monoterpenes, 8.1% oxygenated monoterpenes and 1.2% diterpenes. alpha-Pinene (75.6%), beta-pinene (9.5%), trans-verbenol (3.0%), camphene (1.4%), trans-pinocarveol (about 1.20%), and limonene (1.0%) were the major components. The antimicrobial results showed that the oil inhibited nine bacteria and all the yeasts studied, and the activities were considerably dependent upon concentration and its bioactive compounds such as carvacrol, camphene, and limonene. Moreover, the essential oil of the gum was found to be more effective yeastcide than Nystatin, synthetic yeastcide. Furthermore, the antibacterial activities of the oil were lower than those of standard antibiotics, ampicillin sodium, and streptomycine sulfate under the conditions studied.  相似文献

In this study three soil profiles located in the Western Taurus (Turkey) at different altitudes (10, 1900, and 3080 m a.s.l.) were compared with respect to their soil organic matter characteristics. The soil samples were fractionated by density to plant residues, slightly altered plant material, organo-mineral complexes, and organic-free minerals. Bulk samples and fractions were analyzed for C and N, the bulk samples additionally for total sugars, lignin signature, and bulk soil organic matter composition by CP/MAS 13C NMR spectroscopy. The first step of litter decomposition and humification is a very strong degradation of polysaccharides without the loss of O-alkyl structures. This process is slowing down very fast and the polysaccharides are stabilized. Lignin is decomposed as fast or even faster than polysaccharides. The data obtained by wet-chemical analysis and by NMR spectroscopy are not or only weakly correlated to each other. This leads to the conclusion that the two types of methods give complementary rather than equivalent information. For the study of soil organic matter it is important to combine different methods and to draw the advantages of either type.  相似文献
