以大豆为原料,通过感官评定对胶体磨技术自制的全豆豆浆和一般机械磨加工的传统豆浆中的永和豆浆和普通豆浆的感官品质进行了比较,通过营养成分检测对全豆豆浆和永和豆浆的营养成分进行了比较,同时将检测的全豆豆浆营养成分与中国食物成分表中的普通豆浆的营养成分进行比较。结果表明:全豆豆浆口感浓厚,细腻爽滑,豆香味浓郁,无豆腥味,感官评价总得分高于传统豆浆中的永和豆浆和普通豆浆,差异有统计学意义(P0.01);全豆豆浆中蛋白质、脂肪、总膳食纤维、维生素B1、维生素B2、钙、磷脂及大豆异黄酮等营养成分含量均高于永和豆浆,更高于普通豆浆。全豆豆浆的普及不仅可以提高豆浆的营养价值,还可以减少资源的浪费,具有一定的社会和经济效益。  相似文献

以藏羊肉和蕨麻为主要原料进行新型复合型蕨麻佐餐藏羊肉酱的制作,在单因素试验基础上采用感官品评和正交试验分析,对复合酱配比、植物油添加量、藏羊肉添加量、蕨麻添加量以及复合酱添加量5个因素进行正交试验,依据感官评分表进行感官品评,确定蕨麻佐餐藏羊肉酱加工的最佳配方。结果表明,对蕨麻佐餐藏羊肉酱品质影响的因素依次为复合酱配比>复合酱添加量>植物油添加量>蕨麻添加量>藏羊肉添加量;并确定最终配方为植物油20.7%、羊肉17.2%、蕨麻3.4%、辣椒酱13.8%、甜面酱5.2%、花生酱5.2%、牛肉精膏0.3%、葱沫8.6%、蒜沫8.6%、盐1.0%、鸡精2.0%、味精1.7%、白糖3.1%、生姜粉0.3%、海天酱油3.1%、白芝麻1%、瓜子仁1%、辣椒粉3.4%。  相似文献

为解决草莓采后果实腐烂变质问题,将草莓置于甘草提取液、乳酸钙溶液、蒸馏水中浸泡1 min,取出晾干后常温贮藏,比较3组草莓失重率、腐烂率、可溶性糖、维生素C含量、超氧化物歧化酶SOD活性的变化。与对照组相比,贮藏7天后,甘草提取液组草莓失重率降低34.72%、腐烂率降低31.56%、可溶性糖含量提高99.10%、维生素C含量提高154.55%、超氧化物歧化酶SOD活性提高206.24%,乳酸钙处理和甘草提取液保鲜效果没有显著差异(P>0.05)。实验期内,2种处理方法均可提高草莓保鲜效果。  相似文献

BACKGROUND: A sensory ataxic neuropathy has been observed in Swedish Golden Retrievers recently. ANIMALS: Twenty-one affected Golden Retrievers. METHODS: Clinical and neurologic status, electrophysiologic, and pathologic status as well as pedigree analyses were evaluated. RESULTS: Clinical signs had an insidious onset between 2 and 8 months of age and a slowly progressive course. Affected dogs were ataxic and dysmetric. They had abnormal postural reactions and decreased spinal reflexes but no apparent muscle atrophy. Clinical pathology, radiography, and electrophysiology of motor systems were all within reference values. Sensory nerve conduction results of affected dogs were significantly different from those of a group of control dogs. Necropsy revealed a chronic progressive central and peripheral sensorimotor axonopathy; the proprioceptive pathways were most severely affected. CONCLUSIONS AND CLINICAL IMPORTANCE: This disease in these Golden Retrievers is distinct from other canine breed-related neurodegenerative diseases or hereditary neurodegenerative diseases described in humans. Pedigree analyses indicated a hereditary background, but the mode of inheritance could not be established.  相似文献

A combination of near infrared spectroscopy (NIR) instrumental measurements and sensory analysis was investigated to predict solids soluble content (SSC, assessed as Brix) and to classify preference in table grape cv Italia. SSC was monitored in each berry of whole bunches in order to evaluate intra-bunch distribution and variability. NIR spectra were recorded in the spectral region 12,000–4000 cm−1 (833–2500 nm) using a set of 682 berries. The Partial Least Square (PLS) model based on cross-validation provided acceptable value for the main statistical parameters (coefficient of determination of cross-validation, r2: 0.85; standard error of cross-validation, SECV: 1.08; residual predictive deviation, RPD: 2.6) and was confirmed by external validation performed with 115 independent berries (coefficient of determination of prediction, rp2: 0.82; standard error of prediction, SEP: 0.83). For consumer testing, the selected PLS model was used to predict the Brix value in 400 berries and Discriminant Analysis (DA) was then carried out to classify berries in terms of preference by relating NIR data to consumer judgment. The three defined preference clusters of berries were fully classified obtaining 100% membership. In cross-validation the value decreased especially for class 1 (78.5%) and 3 (75%) whereas class 2 obtained comparable values (98.7%). According to our results, NIR technology appears to be a promising technique for predicting SSC and obtaining information with regard to consumer preference in ‘Italia’ table grape for application of efficient and low cost on-line instruments in the fruit industry.  相似文献

选择稳定剂品种、稳定剂添加量、芦荟与椰果添加量组合三因素采用L9(3^4)正交设计,从感官评分及稳定性方面对芦荟及椰果双颗粒配方进行优化,优化的结果显示:双果粒配方为0.4%稳定剂添加量、W3型稳定剂、5%芦荟与3%椰果果粒,此时能得到最佳的感官品质与稳定性效果。  相似文献

This study is part of an effort to improve the quality of dried shiitake mushrooms (Lentinula edodes) in accordance with consumer preference. Results are presented of a trend survey that examined the preferences of consumers using questionnaires combined with sensory evaluation. From the original preference (OP) survey, the distributions of OP divided by age class (AC) were statistically equal to the results obtained in 2000. The medians of OP for teenagers and twenties were “neutral” and “slightly like,” respectively. A firm preference change occurred between teenagers and those in their twenties. It is empirically realized that sensory intensity (SI) scores that were too high or too low led to a low hedonic preference (HP) score. The same tendency was seen for “neutralists” and “likers.” In addition, almost all distributions concerned with HP had no significant difference between 2000 and 2005; for example, that of SI divided by AC. These results showed that the preference for dried shiitake mushroom has been unaffected by the passage of the past 5 years. Dried shiitake mushrooms have been used from ancient times and for many dishes; therefore, the overall preference appears to have remained unchanged.  相似文献

超甜玉米具有口感香甜和营养丰富的特点,能提供人体所需的多种营养素,营养价值和保健作用很高,受到很多人青睐。本研究通过真空冷冻干燥(加热板温度30-50 ℃,预冻温度-20 ℃,冷阱温度-75 ℃,真空度60 Pa,干燥时间24 h)的方式对玉米进行脱水干制处理,通过对干制产品的含水量、总糖含量、VC含量、蛋白质含量、复水性以及感官评定进行对比分析。结果表明:真空冷冻干燥在加热板温度为35 ℃,干燥时间为24 h的条件下,得到的干制超甜玉米的外观和色泽较好,感官评分较高,此时的玉米营养损失率较低,复水性最好。本研究为提为工业化干燥玉米提供理论依据。  相似文献

本试验以大豆和牛奶为主要原料制作大豆乳饮料,对牛奶、大豆粉、白砂糖和稳定剂的用量对感官品质的影响进行了研究。结果表明,产品的最佳配比为:40%牛奶、2%大豆粉、6.0%白砂糖和0.30%复配稳定剂(单硬脂酸甘油酯23%、蔗糖脂肪酸酯10%、微晶纤维素40%、卡拉胶27%),51.7%水分。  相似文献

The first attempts at applying aquacultural techniques to sharpsnoutseabream (Diplodus puntazzo) have proved very promising.One of the factors to keep in mind when analysing the viability of a speciesforindustrial farming is that of consumer acceptance of the product, a variablethat can be measured by sensory evaluation tests. To that end, 107 participantsfrom a number of work centres were assessed with hedonic sensory tests usingsharpsnout seabream samples. For reference purposes, the tasting also includedgilthead seabream samples. Participants were asked to fill out a questionnairethat included questions concerning their preferences for any one fish. Weanalysed the sensory attributes of both fish species using a hedonic scale, andalso their acceptability (disposition to purchase) to consumers. The resultsproved fairly encouraging with a view to sharpsnout seabream large-scaleproduction. All attributes tested in the sensory profile analysis werepositively rated. About 60% of the surveyed population would consider buyingsharpsnout seabream at a price similar to that of gilthead seabream (10),and 85% found it to be pleasing to the eye. Aside from flavour, its texture,juiciness and fat level are the most important appraisal attributes. Efforts toimprove the organoleptic characteristics of the species should focus mainly onthese attributes.  相似文献
