摘    要:为了解不同类型茄子品质性状,进一步选育高品质茄子新品种,以3种类型(罐茄类型、圆茄类型和长茄类型)25个茄子品种为试材,测定分析了茄子果实单宁含量、硝酸盐含量、抗坏血酸(AsA) 含量、氨基酸含量和可溶性糖含量等品质指标。结果表明:果实中单宁含量依次为罐茄类型>长茄类型>圆茄类型,硝酸盐含量依次为长茄类型>圆茄类型>罐茄类型,AsA含量依次为罐茄类型>圆茄类型>长茄类型,氨基酸含量依次为圆茄类型>长茄类型>罐茄类型,可溶性糖含量依次为长茄类型>罐茄类型>圆茄类型。对于果实颜色来说,紫茄果实中单宁含量、硝酸盐含量、AsA含量、氨基酸含量和可溶性糖含量均高于绿茄;白茄的可溶性糖含量最高,其余指标均介于紫茄和绿茄之间;茄子果实单宁含量与AsA含量呈极显著正相关,硝态氮含量与氨基酸含量呈显著正相关。可根据不同品质性状需求,选择相应茄子品种进行品质改良育种。

Abstract:Abstract: In order to find out the quality characters of different types of eggplant and further breeding high-quality new cultivars of eggplant, taking 25 eggplant cultivars of three types (canning eggplant type, round eggplant type and long eggplant type) as test materials, the quality indexes such as tannin content, nitrate nitrogen content, ascorbic acid (AsA) content, amino acid content and soluble sugar content of eggplant fruit were determined and analyzed. The results showed that the tannin content in the eggplant fruit was in the order of canning eggplant type > long eggplant type > round eggplant type, the nitrate nitrogen content was in the order of long eggplant type > round eggplant type > canning eggplant type, the AsA content was in the order of canning eggplant type > round eggplant type > long nightshade type, the amino acid content was in the order of round eggplant type > long eggplant type > canning eggplant type, and the soluble sugar content was in order of long eggplant type > canning eggplant type > round eggplant type. For fruit color, the contents of tannin, nitrate nitrogen, AsA, amino acid and soluble sugar in purple eggplant were higher than those in green eggplant. The content of soluble sugar in white eggplant was the highest, and the other indexes were between purple eggplant and green eggplant. There was a significant positive correlation between tannin content and AsA content, and a significant positive correlation between nitrate nitrogen content and amino acid content in eggplant fruit. The corresponding eggplant cultivars could be selected for quality improvement and breeding according to the needs of different quality characters.
