摘    要:目的]研究不同产地烤烟陈化期间烟叶化学成分和香气成分变化特点。方法]从贵州黔南、云南大理和福建三明等地选择有代表性中部烟样,复烤后置于自然条件下进行陈化,12个月后检定各项指标。结果]陈化对K326烟叶感官评吸质量有明显改善,而云烟85烟叶感官评吸质量因产地不同差异明显;陈化过程中,多数样品总糖、还原糖、总氮和烟碱含量呈下降趋势,酸性香气成分总量降低;陈化后,多数样品中性香气总量增加,碱性香气总量有的增加、有的下降;陈化能提高烤烟主体香味成分茄酮和巨豆三烯酮的含量,降低了多数烤烟的主体香味成分大马酮含量。结论]黔南QN-1品种陈化特性较好,特别是烟叶主体香味成分和香气指数B值的改善明显优于其他样品。

Abstract:Objective] The aim was to study variation characteristics of chemical composition and aroma components of tobacco leaf during aging of flue-cured tobacco in different areas.Method] The representative mid-part tobacco samples were selected from the places of Qiannan,Guizhou;Dali,Yunnan and Sanming,Fujian,the aging was conducted under natural conditions after the tobacco sample redrying,and each index was examined 12 months later.Result] The aging had a significant improvement on sensory smoking quality of K326 tobacco leaf,but sensory smoking quality for tobacco Yunyan 85 had obvious difference because of different areas.During aging,for most of the samples,the total sugar,reducing sugar,total nitrogen and nicotine content showed a decline tendency,total amount of acid aroma components was dropped.The neutral aroma total amount in most of the samples was increased after aging,and for the alkaline aroma total amount,some were raised and some reduced.The aging could enhance the content of solanone and megastigmatrienone,in the major fragrance components of flue-cured tobacco,and reduced damascenone content in main fragrance component for majority tobacco.Conclusion] The aging characteristics of variety of Qiannan QN-1 was good,particularly the improvement on main flavoring component and B value of aroma index for tobacco leaf were superior to the other samples significantly.
