| 摘 要： | 虾青素是一种酮式非维生素A源的类胡萝卜素，常被用作水产动物的饲料添加剂，具有多种生理功能。笔者主要就虾青素的理化性质、存在形式、抗氧化性、增强免疫力及在水产动物养殖中的着色作用等方面进行综述，说明虾青素具有很好的着色和增强水产动物免疫力的作用，在水产动物养殖中有良好的应用前景。

| Abstract: | Astaxanthin is a non-vitamin A-sourced ketonic carotenoid.Astaxanthin often serves as feed additives of aquaculture animals,which has multi-physiological functions.The authers summarized the physical and chemical features,general molecular patterns and origin of astaxanthin,the function of pigmentation,antioxidation,immunology.In aquaculture production,astaxanthin may render a practical significance in the future. |
