摘 要: | 研制了一种以发酵乳和金针菇菌汁为主要原料加工调制成的发酵乳饮料,确定了金针菇菌汁发酵乳饮料的生产工艺和最佳配方,得出了最佳工艺配方为金针菇菌汁的添加量30%、蔗糖的添加量9%、稳定剂CMC-Na+PGA=0.25%0+0.30‰。
