有斑百合花色素的稳定性研究

摘    要:对有斑百合花色素的稳定性进行研究,为开发天然色素提供试验依据.在常温下用90%乙醇-0.1 mol/L HCl溶液浸提有斑百合花瓣,过滤、定容得到色素原液,然后对该色素液在酸碱性、热、光、食品添加剂、金属离子及氧化剂、还原剂等作用下的稳定性进行了测定和分析.结果表明,有斑百合花色素为水溶性、醇溶性色素,其耐热性、耐光性和耐氧化性都很差,有一定耐还原能力,对食品添加剂如蔗糖、有机酸等适应能力较强;强碱性环境以及部分金属离子(Cu2+、Mn2+)对色素稳定性的影响较大,多数金属离子如Na+、K+、Al3+、Mg2+、Ca2+对该色素无明显影响.表明该色素在食品、化妆品等工业方面具有很大的开发应用前景.

Abstract:The purpose was to underst and the stability of the pigment estracted from Lilium concolor var.buschi num Baker.,so that to provides the experiment for the development natural pigment to rest on.The pigment in fresh flower was extracted by using 90% ethanol 0.1 mol/L acid under room temperature.Its resist ance to acid,alkali,light,oxidation and reduction was analyzed.The result showed that this pigment was stable in acid ethanol but unstable at high temperatures,under direct sunlight or in alkaline environment.The presente of organic acid,oxidants,reductants and part of metalions,such as Cu2+ and Mn2+,could reduce the stability of the pigment.But food additive like sucrose,organic acid as well as low price metalion pair pigment not adverse effect.This study provids a support for the application of this natural pigment in food and cosmetic industries.
