摘    要:本文综述了甘蔗中酚类色素、铁、氨基氮、总胶体、淀粉、蛋白质等的非常规分析成分的分析方法,测定了云南某厂及广西某厂甘蔗中多种成分的含量,并分析了这些成分对甘蔗制糖过程的影响.

Abstract:the anaysis methods for unconventional ingedients of sugar cane,including Phenolic pigment,iron,amino nitrogen,total colloid,starch and Protein etc.were reviewed in this paper,and the contents of these ingredients in sugarcanes from Yunnan and Guangxi were determined respectively.The influences of these components on sugar were discussed based on the experiment results.
