摘    要:目的]优化向日葵盘中果胶的提取工艺.方法]采用酸提取、乙醇沉淀的方法对影响向日葵盘中果胶提取率的条件进行了分析研究.结果]试验表明,向日葵盘中果胶提取的最优工艺条件为:提取时间2h、提取温度为85℃、浓缩温度为70℃、提取液pH为1.5、乙醇用量为65ml时提取率最高,在此条件下果胶的提取率可达16%.结论]试验确定的果胶提取工艺条件是可行的,果胶质量符合相关要求.

Abstract:Objective] To optimize extraction conditions of pectin from sunflower head.Method] By using acid extraction and ethanol precipitation,conditions influencing pectin extraction rate from sunflower head were studied.Result] The experiment showed that,the optimal conditions are:extraction time 2 h,extraction temperature 85 ℃,condensation temperature 70 ℃,extract liquid pH 1.5,ethanol 65 ml,the extraction rate is the highest,up to 16%.Conclusion] The obtained pectin extraction conditions are feasible,pectin quality meets the relevant requirements.
