淮南猪生长发育与肥育性能的研究

摘    要:对淮南猪5 4头公猪和30 8头母猪的生长发育进行了测定,并对82头育肥猪进行了屠宰测定和胴体分析。结果表明,淮南猪的体重、体高、体长、胸围等指标在3月龄以前公母猪无明显差异,4月龄以后母猪的体重和体尺逐渐大于公猪。后备猪6月龄体重,公猪(4 1.2 8±3.2 3)kg ,母猪(4 5 0 8±3.86 )kg ;体长,公猪(88.37±4 .2 )cm ,母猪(90 .6 9±4 .36 )cm ;体高,公猪(5 1.73±3.94 )cm ,母猪(5 3.0 4±4 .4 2 )cm。胴体组织的早熟顺位为骨、皮、肉、脂,体躯各段的早熟顺位是蹄、头、腰、腿臀、颈胸。其体型大小在我国地方猪种中居中等。育肥期日增重(375 .182±4 0 .2 6 )g ,屠宰率为70 738% ,瘦肉率为4 9.0 75 % ,眼肌面积(2 3.32 8±3.75 2 )cm2 ,含脂率为33.5 % ,与多数地方猪种含脂率相当。育肥猪适宜屠宰体重90kg左右,适宜屠宰期8月龄,饲料转化率3.84∶1。淮南猪肉质优良,肉色3.5 ,为正常鲜红色,大理石纹3.5 ,肌肉脂肪分布为理想分布,pH值6 .3~6 .5 ,属正常范围,无PSE肉

Abstract:The determination of growth and development of 54 boar and 308 sow in Huainan pig have been made in this study and 82 fattening pigs are slaughtered to analyses body measurement and carcass composition. The result showed that the difference between the male and female in Huainan pig in weight ,length ,height,and chest size are not distinctive (P>0.05) before three month age, the weight and length of the female are larger than those of the male after four month age.Huainan pig weight at the six month is (41.28±3.23)kg for boar and (45.08±3.86)kg for sow, body length at six month is (88.37±4.2)cm for boar, (90.69±4.36) cm for sow, body height at the six month is (51.73±3.94)cm for boar,(53.04±4.42) cm for sow,The early maturing order of the body structures is:bone peel meat fat,and the early maturing order of body sections is:hoof head waist leg buttocks neck chest.During fattening stage, the average daily gain is (375.182±40.26) g, dressing percentage is 70.738%, lean percentage is 49.075%, loineye area is (23.328±3.752) cm 2. The butchering weight of pigs is about 90 kg, with ages of eight months. Feeding conversion ratio is 3.84:1. Huainan pork has fine quality.The meat color is 3.5 grade normal brilliant red, the marble line is 3.5 grade,and muscle fats is evenly distributed. pH is 6.3-6.5 which is in normal range. There is no PSE meat.
