高强度凝花菜胶制备的研究

摘    要:高强度是当前市场对琼胶质量的一种要求。凝花菜(Gelidiella aceyosa)经碱改性处理后凝胶强度有了很大的提高,从原来的800g/cm^2提高到l650g/cm^2,并提出了提高凝花菜胶强度的最佳工艺条件为碱浓度2.5%,时间3小时,温度75—80℃。讨论了碱处理对凝花菜产胶率的影响。

Abstract:The strength of the agar was increased from 800g/cm2to 1 650 g/cm2 by alkaline process.The optimum concentration of the alkaline was 2.5%,and the period of the treatment was 3 hours.the optimum temperature was 75-80t.
