中草药源保鲜剂对黄桃保鲜效果的研究

摘    要:目的]研究中草药提取液对黄桃的保鲜效果。方法]以具有防霉抑菌作用的天然中草药丁香、黄连等的提取物制成抗菌液,用卡拉胶、蔗糖酯等可食性乳化剂制成成膜剂,对砀山黄桃进行常温保鲜试验。结果]按照"黄连、丁香提取液+2.5%蔗糖脂+0.5%卡拉胶"配方制成的复合保鲜剂具有较好的保鲜效果,可将黄桃的保鲜时间延长2 d以上。结论]一定浓度中草药提取液+成膜剂能够抑制黄桃的呼吸作用,推迟黄桃呼吸高峰的到来,延缓果实的成熟劣变,具有防腐抑菌作用和开发为天然保鲜剂的潜力。

Abstract:Objective] The purpose was to study the fresh-keeping effect of Chinese herbal extract liquid on yellow peach.Method] The experiment of Dangshan yellow peach preservation at normal temperature was conducted with antibacterial liquid made by the extracts of natural Chinese herb with moldproof and bacteriostatic function,such as cloves,coptis and film forming agents made by edible emulsifier such as carrageenan,sucrose ester.Result] The composite preservative made by the formula of cloves,coptis extract liquid 2.5 % sucrose ester 0.5 % carrageenan got better fresh-keeping effect,which could prolong the fresh-keeping time of yellow peach for over two days.Conclusion] Chinese herbal extract liquid with some concentration film forming agent could restrain the respiration of yellow peach and delay its respiration peak,mature and deterioration,which had moldproof and bacteriostatic function and the potential of being developed into natural preservative.
