壳聚糖复合涂膜保鲜剂对南果梨的保鲜作用

摘    要:以南果梨为试材,研究壳聚糖复合涂膜处理对不同预熟度的果实在冷藏条件下贮藏效果及其生理变化,以及冷藏后常温货架期间果实表观品质的影响。结果表明:在冷藏条件下壳聚糖复合涂膜处理可以明显抑制南果梨果实的脂氧合酶活性、丙二醛含量,延缓可溶性固形物含量、叶绿素含量和果实硬度的变化进程。用稀释一倍的壳聚糖复合涂膜保鲜剂处理可以有效的抑制冷藏后南果梨在常温货架期间果皮的褐变。

Abstract:The effects of chitosan coating on the prevention,physiological changes and shelf life at ambient temperature after refrigeration storage of different pre-maturity Nanguo pear were studied.The results showed that chitosan coating inhibited obviously the increasing of LOX activity,the content of MDA.It also delayed the changes of total soluble solid content,chlorophyll content and firmness of the fruit.Coating with 50% of chitosan preservative could inhibit rind browning of the fruit during the shelf life at ambient temperature after refrigeration.
