火龙果果皮红色素的微波提取工艺

摘    要:就微波提取火龙果果皮天然红色素的工艺进行探讨。采用单因素和正交试验,研究微波功率、提取时间、料液比对色素提取的影响,确定微波提取火龙果果皮红色素的最佳工艺条件,并与传统溶剂浸提法进行比较。结果发现,微波萃取的最佳条件为:以纯净水为溶剂,微波功率60%(480W),提取时间80s、料液比(g:ml)1:3,提取次数为3次。微波提取火龙果色素的效果明显优于常规的溶剂浸提法。

Abstract:Microwave-assisted extraction(MAE)method was studied for the extraction of a natural red pigment from the pericarp of Pitaya (Hylocereus undatus Britt &; Rose). Several factors, such as microwave power, extraction time and the ratio of solid to liquid were investigated, and the optimal MAE conditions were obtained from each factor and their orthogonal test. The MAE method was compared with the traditional solvent extraction for its advantages. The results showed that the optimum conditions for MAE is extracting for 80 seconds in the ratio of solid to liquid 1:3(g:ml)by microwave of 480 W with purified water as solvent. The MAE method is a fast, efficient, energy saving method, which is recommendable to the application for the extraction of natural red pigment from the pericarp of Pitaya.
